Our head chef, Maria Maine was born in Mexico City, Mexico and has been part of our Ol’ Mexico family for over 30 years. As a small girl, Maria began learning the skills of creating authentic Mexican cuisine at the foot of her Grandmother. As a young chef, she traveled extensively throughout all the regions of Mexico taking the best from each region to create many of Ol’ Mexico’s favorite signature dishes.
