Sure, Orange County is famous for its apples, with dozens of varieties like Ginger Crisp, King David, Goldrush, McIntosh, and many more ready for picking— but did you know that the Black Dirt Region is also one of the nation’s top onion-producing areas? The sulfur-rich soil in Pine Island produces red and yellow alliums with a high sugar content, giving them bold, clean flavors perfect for cooking. “It’s a unique terroir,” says Michael Colomeo, executive chef of Pasta D’Oro at The Jolly Onion. “What wine is to Napa is how onions are to the Black Dirt Region.” Curious to learn more? Each summer, Pine Island hosts a Black Dirt Feast, featuring a seven-course Tuscan-style dining menu and live jazz music.

Chefs’ Picks: Local Ingredients on the Menu

Orange County chefs share the local ingredients they love.

Chef Ciarán McGoldrick, Glenmere Farm in Florida: Celery root

“This strange, asteroid-looking root vegetable has such an earthy, sweet, and nutty flavor. Throughout the winter and spring, we feature a celery root velouté served with pancetta, smoked trout, celery, and parsley oil.”

Chef Anthony Mario Acevedo, Catering by Anthony Mario: Fresh apple cider from Soons Orchard

“We use it in one of our most popular dishes: house-made burrata and roasted honey nut squash, with toasted seeds and apple cider reduction.”

Chef Pamela Resch, Pamela’s on the Hudson in Newburgh: Hudson Valley microgreens

“We love to put them on our smoked salmon platter—they certainly help make the plate pop and help take the dish to another flavor level.”

Michael Colomeo, Pasta D’Oro at The Jolly Onion in Pine Island: Pine Island onions

“Our French onion soup uses them front and center—onions are the star of the dish.”

Chef Tony Moustakas of City Winery Hudson Valley in Montgomery: Heirloom tomatoes

“We have our own gardens and we are proud to incorporate our home-grown ingredients into our menu. One of my favorite dishes is the chicken milanese with arugula, heirloom tomatoes, and shaved parmesan reggiano.”
