Great diversity in terroir and climate

Manuka Hill Marlborough Vineyard

MANUKA HILL ESTATE Waitakere City, North Island The “land of the long white cloud”, as the Maori settlers called New Zealand, has become firmly established as one of the world’s finest environments for the production of cold climate grapes and wines. Sauvignon Blanc from Marlborough, South Island has long enjoyed an unrivalled reputation. Having reached a pinnacle of success, Sauvignon Blanc is being joined by other grapes, notably the Pinot Noir and Pinot Gris. The Fredatovich family has been making wine for close to seventy years, originally concentrating on wines from vineyards close to Auckland, but as the reputation of their wines and those of New Zealand have developed, the family has sourced grapes and wines from further afield, initially concentrating on the Hawke’s Bay and Marlborough districts.

This is a neat wine, its bright, green-tinged, pale straw colour introduces a bouquet alive with fresh gooseberries and the clear mellow fruit tones of kiwis and passion fruit. The palate is tightly focussed on its fine, energetic fruit which is concentrated with depth of flavour and the obvious vitality of youth. Even more impressive is the texture, a seamless sense of smoothness that spreads right through the palate as it complements the weight and fruit flavours. The superb finish with the astringency of fresh acidity make this is a very fine wine. [02] M7 D8

CHARDONNAY, DARTMOOR VALLEY, HAWKE’S BAY, 2009 $23.17

6 BTLS/750 ML $139.00

A bouquet of fragrant lime, orange blossom and touches of soft French cheese, it is unoaked and shows both delicacy and depth. The quality of the upfront citric acidity surrounds the flavours, particularly hazelnut, with a smooth, silky texture and the hardcore centre of concentrated peach, apple, nectarine and pineapple; it is a veritable fruit salad smoothed over by a sense of creaminess in the middle palate. The entry to the mouth has a crispness as fresh as the morning dew, yet it is a big wine with lengthy flavours and a style that will give it an enduring appeal. [02] M7 D8

5276

TUA TUA BAY SAUVIGNON BLANC, WAIRAU VALLEY, MARLBOROUGH, 2009 $26.33

6 BTLS/750 ML $158.00

Big, bold and complex, the nose is all about fruit and ice cream, the initial impression being followed by herbaceous pungency and fine lemon zest. The colour is pale, greentinged silver and is matched by a powerful aroma of papaya and tropical fruit with a huge spoonful of gooseberries. In the mouth, the fruit is textured and creamy with a fine shaft of piercing acidity that helps to balance the concentration of the sweet fruit. Fine now, it needs a touch of bottle age to mellow the parts into a harmonious marriage and release even more flavours. [00] M7 D8

5277

6 BTLS/750 ML $158.00

The pale, straw colour and ripe, earthy bouquet are the introduction to a full load of concentrated fruit. The fruit, from the Wairau Valley region of Marlborough, is the product of vines planted on north facing slopes in the warmest area. This temperate microclimate, coupled with free-draining soils, provides perfect conditions for bunch development. The ripe fruit was hand-picked and whole bunch pressed which allowed for soft, concentrated flavours while cool fermentation in steel tanks helped to preserve the natural fruit flavours. Post fermentation, the wine was left on yeast lees for a further two months with occasional stirring to help build the smooth texture and richness on the palate. [01] M7 D7

TUA TUA BAY PINOT NOIR, MARLBOROUGH, 2009 $30.00

6 BTLS/750 ML $180.00

Three decades ago, it was Oregon that made the headlines for Pinot Noir. Now, the spotlight has moved to cool South Island, New Zealand for the finest Pinot Noir fruit. The grapes for the 2009 vintage were sourced from low-cropping vines on the hills outside Marlborough. Traditional winemaking techniques were used, with ten months in barrel enabling gentle tannin extraction and creating the complex foundation of flavours and texture. The palate shows dense, red and black fruits that highlight a combination of balanced tannins with a firm structure, well-integrated oak and a rounded, lingering earthy finish. Ripe and concentrated with appealing plum and cherry fruit, it has a supple mouth-feel and persistent finish. M6 D6

PAUL SAPIN La Chapellede-Guinchay

Long established as a traditional producer and négociant specializing in the wines of Beaujolais, the old Paul Sapin wine company metamorphosed into one of the most dynamic of all French wineries when it was acquired by current owner, Thierry Coulon. This year Thierry introduces an interesting range of 500 ml bottles in an innovative programme under the title “Wine for 2” designed for members who find a full bottle a tad too generous. Particularly focussed upon the wines of the southern hemisphere, here’s a selection from Paul Sapin’s international portfolio.

Sapin’s wines come from the sun-drenched Bilbul region of the Riverina where irrigation water, of considerable concern, is used sparingly and where wines of good flavour and quality are produced. The Semillon/Chardonnay blend is an Australian classic, delivering an approachable and easily enjoyable style with lifted citrus, stone fruit aromas and a touch of oak. It is refreshing with a zesty palate offering a burst of fresh lemon/lime citrus, lovely texture, length and a clean and lively finish. [02] M8 D8

5283

SHIRAZ/CABERNET, ON THE BILLABONG, RIVERINA, 2009 $13.00

12 BTLS/750 ML $156.00

Shiraz/Cabernet is typically Australian, the blend of grapes delivering an easy, fruit-driven style. The fruit came from individual parcels of irrigated vines close to Griffiths, New South Wales, where the dry climate easily ripens sun-loving Shiraz and Cabernet. After separate picking and fermentation on the skins in steel tanks, the varieties were blended before bottling. The wine has a lifted nose of dark fruits and spice that carry on to the palate, showing supple blackberry and cherry flavours balanced by understated oak and soft tannins. M8 D8

SAUVIGNON BLANC, MOUNT VERNON, 2009 $19.67

12 BTLS/750 ML $236.00

This outstanding wine has become widely popular among Opimians. Moderate climatic conditions allowed for the grapes to be picked when the flavour profiles were at their highest level and while still retaining good acidity. The fruit was rapidly and gently pressed to produce an elegant, fruitdriven wine with low phenolics. The perfumed aromas of passion fruit and nectarine complement more forceful gooseberry and green leaf notes which augment flinty, mineral elements. Fresh acidity is balanced by a tiny amount of retained sweetness. [02] M8 D8

12 BTLS/750 ML $140.00

This representative wine of the Cape vineyards has a polished, golden colour and a lively, pale green radiance. Fresh orange peel, guavas and youthful aromas appear more clearly cut by a background filled with minerality and flint. The entry to the palate shows immediacy with fine, orangetinged, slight oak impressions ringed around with nuts and oatmeal and the added clarity of refreshing acidity. Impressive throughout the range of the palate, it only softens and lightens as it fades. [01] M8 D8

5286

RUBY CABERNET, KLOOF-EN-BERG, WESTERN CAPE PROVINCE, 2009 $11.75

12 BTLS/750 ML $141.00

The Cape is one of few places where Ruby Cabernet really thrives and produces quality wine. This one, all purplish hues and clearly very young, needs a touch of patience to allow it to marry all the components. The variety results from a cross between Cabernet Sauvignon and Carignan, but it shows more of the character of the latter than the Cabernet Sauvignon. Its bouquet is fleshy and forward, lots of black fruit and notes of compost and earth. A full-bodied and layered palate features flavours of dark berry fruit, spicy black pepper and plenty of acidity. M7 D8

5287

SHIRAZ, KLOOF-EN-BERG, WESTERN CAPE PROVINCE, 2009 $12.50

12 BTLS/750 ML $150.00

Taking the price into account, this is rich, full-bodied and provides terrific value. It has tons of ripe plums, fat black cherries and blackberries. The palate is soft, the entry showing spicy nuances, soft damp earth and good length. Produced by a co-operative in the Robertson area, the huge vineyards, all machine-picked, yield a mighty harvest of small, perfectly ripened fruit. These are the ideal basics for such a well-mannered, ample wine with good length, harmony and accessible flavours. M8 D8

SOUTHERN HEMISPHERE PAUL SAPIN >>

Introducing

from Paul Sapin

Innovation is a key factor of success for the team at Paul Sapin, with careful attention given to new trends and the wishes of the “customer”. In the spring of this year, invited guests gathered at Paul Sapin and attended a conference which found the group debating possible alternatives to 750 ml bottles. Although, it was agreed that the 500 ml bottle format would be attractive, the range of wines available was very limited. The team at Paul Sapin took the idea and ran with it! Thus was born the new concept of Wine for 2. Sourced from the same suppliers that produce their popular wines from Australia, New Zealand and South Africa, a selection from Chile has been added. Packaged in elegant 500 ml bottles, the same height as the standard 750 ml bottles, we invite you to discover Wine for 2, a range of everyday, classic wines perfect for two to share.

WINE FOR 2 - CABERNET SAUVIGNON/MERLOT, PAULITA, 2009 $9.50

12 BTLS/500 ML $114.00

Paul Sapin makes no declaration of which of Chile’s vinecovered valleys provides the fruit for this delicious, fruity red, but it shows much of the style of Curicó. The bright cherry colour is lively and attractive with aromas of black and red fruits, such as strawberries and black cherries, and hints of cloves and toast. Nicely rounded, it has pleasant fullness in the mouth, the fruit volume providing good structure and combining with refreshing acidity to reveal a delightful, soft texture with a ripe and pleasing finish. WINE FOR 2 – SEMILLON/CHARDONNAY, REGENOAK, RIVERINA, 2009 $9.92

12 BTLS/500 ML $119.00

With each vintage, parcels of the ripest grapes are selected to produce this wine under the Regenoak label. The grapes are hand-picked and undergo temperature-controlled fermentation to preserve the pure fruit characteristics. This Semillon/Chardonnay blend is medium-bodied with melon and tropical fruits on the nose intermingled with ripe lemon and citrus. The palate is well-rounded with melon and apple on a crisp, medium dry finish. [02] M8 D8

WINE FOR 2 - SHIRAZ/CABERNET, REGENOAK, RIVERINA 2009 $9.92

12 BTLS/500 ML $119.00

The grapes come from the Riverina where they invariably reach full ripeness in the clear sunshine conditions and where the vines are under continuous water-stressing; irrigation is carefully restricted to provide only enough water to allow for the perfect development of the bunches. The Shiraz provides structure while the Cabernet Sauvignon rounds out the blend. Well-balanced, the fruity aroma of blackcurrants and cranberries is underlined by spicy notes. The palate is full and ends with soft, ripe tannins. M8 D8

WINE FOR 2 – PINOTAGE ROSÉ, WHISTLING THORN, WESTERN CAPE PROVINCE, 2009 $9.08

12 BTLS/500 ML $109.00

For a pink wine from the Western Cape, this Pinotage is impressive. The colour is slightly darker than many other rosés due to the thick-skinned, black grape. The charm lies in the bright quality of the red berry fruit, the floral aromatics with trappings of strawberries and black cherries and the small hint of Pinotage's trademark smoky complexity. It is juicy, fresh and approachable. [00] M8 D8

5294

WINE FOR 2 - SHIRAZ, WHISTLING THORN, WESTERN CAPE PROVINCE, 2009 $9.42

12 BTLS/500 ML $113.00

The whistling thorn is an acacia tree commonly seen on the savannas of South Africa. The tree protects itself with three inch long thorns. These spines have a hollow bulbous swelling about one inch in diameter at the base which are home to stinging ants that bore small holes in the wood. When the wind blows, the old and abandoned spines become whistling flutes; hence giving the tree its name. This Shiraz is smooth and elegant with attractive red and black berry aromas and flavours enhanced with warm spicy notes and soft tannins. It is full-bodied, fresh and juicy. M8 D8

It is not all froth and fun; this is quite a package of serious, structured fruit, acidity and balance. The Château de Sours fruit, grown on limestone, is hand-harvested using only the best fruit which produces a modest yield of 100 litres for each 150 kg of grapes. After the initial fermentation, Martin Krajewski, the Château’s proprietor, sends the wine to a specialist “vin mousseux” producer who creates the sparkle, then cellars the bottles for a year to settle and mature. Attractively labelled and dressed, it shows a shimmering, onion-skin pink colour with fine bubbles and a persistent mousse. The bouquet is young and fresh with flavours of pure raspberry and blackcurrant and a lively palate that would leave many famous sparklers standing! [02] M8 D9

LA SOURCE DU CHÂTEAU DE SOURS, AOC BORDEAUX ROSÉ, 2008 $37.17

6 BTLS/750 ML $223.00

Whoever said pink wine was not worth keeping should sip a sample of this world class rosé. Originally produced to ascertain how oak ageing would influence the development of the wine, it has turned into a minor triumph as the liveliness of the fresh Merlot has softened and grown, then fattened by building substantial structure because of the ageing in used oak barrels. It is medium-bodied and multilayered, its youth losing the initial acidic edge and being replaced by a soft, scented, red berry fruit bouquet that precedes the oak and cedar palate with complexity and dry, harmonious balance. Lamblin makes this beauty as naked as the exposed chalky soil. With practically no oak ageing, nothing interferes with the terroir that delivers, through its ripe grapes, an inspiring, concentrated wine that is powerfully expressive. Youthful density, ripe apples, intense flavours and quiet opulence on both the nose and the palate are supported by the reinforcement of a steely, limestone skeleton. [00] M5 D6

6 BTLS/750 ML $108.00

An affordable wine with enduring appeal, quaffing will allow the notes of finely tuned quince, lime, mint and capsicum to be revealed. In the background, easily recognizable flint and vibrant gooseberry aromas provide the mineral balance that reaches right through to the finish. This Sauvignon Blanc, the only one produced in Burgundy, comes from the small Auxerrois village of Saint-Bris-le-Vineux where it was discovered over fifty years ago by Lamblin Fils, one of the first Houses to recognize the merit of a wine rarely seen outside the region of its production. BOURGOGNE BLANC, CÉPAGE CHARDONNAY AC, 2009, FLEURS DU PRINTEMPS $20.83

6 BTLS/750 ML $125.00

Much loved but often maligned, this classic grape has great flavour and body, with concentration and a mild, creamy texture. This is a good example of white Burgundy at an affordable price. It combines the elusive Burgundian characteristics that seamlessly unite grapefruit, limes, apples and pears with oatmeal and a rich, almost waxy, finish. Mellow in the mouth, it has plenty of vigorous appeal, lacking neither flavour nor warmth. [00] M7 D7

BOURGOGNE ALIGOTÉ AC, 2008, FRUITS D’ÉTÉ $20.33

6 BTLS/750 ML $122.00

This little known and underrated grape offers an alternative to widely grown Chardonnay. More tolerant to the cold, the grape ripens early with moderate yields producing wines high in acidity. Despite its lack of recognition, it is Burgundy’s second most popular white grape and many Burgundians prefer it. Lamblin’s Aligoté is refreshing and mouth-watering with an enthusiasm of aromas and flavours that blend notes of apple and lemon. A slightly herbaceous mix of spices develops delightful buttermilk smoothness as it matures. A fine aperitif on its own, it is equally wellknown in a mix with Crème de Cassis as an ingredient for “vin blanc cassis” more simply known as Kir. [00] M7 D7

BOURGOGNE PASSETOUTGRAIN AC, 2008, RAISINS DE L’AUTOMNE $19.33

6 BTLS/750 ML $116.00

From a successful vintage that produced well-rounded, fruity wines, this is another pleasing example of Lamblin’s skilful blending of Gamay and Pinot Noir. For more than three decades Passetoutgrain has featured on Opimian’s shopping list. Medium-coloured, it is most notable for easy, accessible fruit with generous aromas of lush black cherries, a mere hint of balsamic and the pungency of spicy tannin. In the mouth, the stone fruit notes highlight the fresh elements of acidic Gamay fruit which, at this stage, dominates the softer Pinot Noir with persistent, finegrained tannins combining with lively acidity. BOURGOGNE PINOT NOIR AC, 2008, BOUQUET D’HIVER $21.83

6 BTLS/750 ML $131.00

The fourth member of our “Seasons Collection”, this is a really interesting Pinot Noir showing the early signs of mellowing. Good Pinot is hard to find, but eureka, it is here! Good complexity with slight composty fruit and mineral notes, it is lively and structured in the mouth. On the palate there are traces of fruit sweetness and intensity showing Pinot raspberry with smoky plum tones. Soft and clean, it is approachable, pliable and has plenty of fruit. M6 D7

5309

6 BTLS/750 ML $176.00

It has been suggested that only Burgundy can produce great Pinot Noir. Perhaps it is true for even after many disappointing leads and dead ends, the Côte d’Or of Burgundy still delivers an inimitable mixture of red fruit, glycerine softness and savoury perfume combined with mellow, nutty, cherry fruit and slightly grainy tannins. This is a good intermediary between regional wines and those of the small single vineyards, showing elegance and a harmonious mix of restraint and balance. No rush to open the bottles, over time it will develop more concentration with ripe fruit flavours and a sophisticated structure. M6 D7

VOLNAY AC, 2008 $45.17

6 BTLS/750 ML $271.00

Of all the Côte de Beaune wines, the finest reds originate from this small, picturesque village with only 570 acres of vineyards. Steeped in viticultural history, the growers are very serious about their profession, vocation and the lifeblood of their economy. If they aren’t discussing wine, they are drinking it! Lamblin has secured a consistent source of good quality at reasonable prices which guarantees the classic, genuine expression of Volnay. This fruity wine with vanilla overtones shows aromas of ripe, freshly picked raspberries, fine tannins and a harmonious finish with structured complexity. M6 D6

ALOXE-CORTON AC, 2008 $45.17

6 BTLS/750 ML $271.00

Legend has it that Emperor Charlemagne visited the village in AD 775, ordering the planting of seventy acres with vines. That is the history. Today, the geography is dominated by the Corton hill above the village where a number of world status wines, including Corton-Charlemagne, are produced. Lamblin’s red wine, coming from the foot of the hill, has a classy pink ruby, Pinot Noir colour with concentrated fruit, blackcurrants and cherries, luscious dark chocolate and a smoky flavour with earthy notes. Muscular tannins deliver a tight grip and the complexity required to add interest to the palate. M6 D6

6 BTLS/750 ML $314.00

Gevrey, lying at the northern foot of the Côte d’Or escarpment, is the giant of the wine villages of the Côtes de Nuits. Unique among the villages, it includes twenty-six Premier Crus and eight Grand Crus. Lamblin’s wine displays a more youthful purple colour than those of other communes. With a bouquet made up of many small aromas, none are dominant; all are subtle rather than powerful. Primarily red and black fruit, there is the inclusion of small notes of bacon, liquorice, pencil wood, raspberry jam and dry toast. In the mouth there’s good balance between modest, grainy tannins and flavourful nuances that include fruit, cocoa, mushrooms and dried moss. M6 D6

Beaujolais

romantic journey through the villages and across the hillsides will reveal BERNARD PERRIN, Awhere great wines are made, but all too rarely enjoyed outside the area. Beaujolais is beautiful countryside, an undulating panorama that climbs from the NÉGOCIANT banks of the Saône to the summit of towering uplands. Between the foot of the hills and the summits, hidden in the folding landscape, lie tiny hamlets, ancient farms and vineyards whose greatest wines are too rarely seen. The guide EN VINS through our journey is Bernard Perrin, vigneron and négociant; his own vineyard produces one of the finest of all the wines of Beaujolais. Co-founder with Ken Ternand Christie of Le Cercle de Beaujolais, Bernard runs his own company using the contacts made during a lifetime of school, college and career in the heart of Beaujolais. As a young musician his band played in every village. As a vigneron he shares the passion and problems that befall his neighbours. As a négociant he finds outlets for the hand-crafted masterpieces of the vignerons of the “Crus de Beaujolais” – the ten villages that run along the slope of hills from Brouilly in the south to Saint-Amour in the north. Bernard’s assessment of the 2009 vintage in Beaujolais – It will be considered one of the three best years in Beaujolais between 1960 and 2008!

CRÉMANT DE BOURGOGNE PUR, CHARDONNAY, AOC CRÉMANT DE BOURGOGNE, 2007, BERNARD PERRIN $25.00

6 BTLS/750 ML $150.00

Bernard’s first release of his quality sparkling wine, Crémant is the French description for sparkling wines made outside Champagne, although made in much the same way. The 100% Chardonnay fruit was sourced in Beaujolais where it was whole bunch pressed, fermented and bottled with a mixture of yeast and sugar to create the fermentation inside the bottle. After ageing on the lees, the sediment was removed and the bottles re-corked. With several months in bottle it has developed attractive wholemeal, biscuit notes with a restrained mineral edge and dry, citrus nuances that accompany the soft, creamy mousse. [02] M8 D9

VIN DE PAYS DES GAULES ROSÉ, BERNARD PERRIN, 2009 $15.33

6 BTLS/750 ML $92.00

When producers thought of introducing this new budgetpriced wine they were stopped in their tracks by EU officials who claimed that the name was not sufficiently “geographical”. After pause for reconsideration the new wine is now in place and it is jolly good too. Nothing fancy, it is just a reasonably priced everyday wine; light, easy, plenty of fresh apple and lime-scented aromas and a good dollop of juicy fruit in the mouth. As natural as the idea is to make an attractive alternative to Beaujolais, there will not be much competition as this newcomer will not be permitted to be sold as “Nouveau”. Isn’t it wonderful how politics get in the way of commerce! [00] M8 D9

5316

VIN DE PAYS DES GAULES ROUGE, BERNARD PERRIN, 2009 $15.33

6 BTLS/750 ML $92.00

With such a name this has to epitomize all that is good about the Vins de Pays from France. This is a new denomination, but more importantly, it comes from around the Beaujolais country and it’s been designed to put dull, ordinary wines from many dull ordinary producers out of business. Clean and filled with juicy fruit, a bushel of fresh red apples here and a bowl of red cherries with rather high tannin levels there; these are unexpected flavours in such a light wine. Everything works together to make it likeable. This newcomer is surely on the way to becoming a success. M8 D9

5317

BERNARD PERRIN, AOC BEAUJOLAIS BLANC, 2009 $20.17

6 BTLS/750 ML $121.00

Beaujolais Blanc is becoming increasingly popular. This one, from the 2009 vintage which was being harvested as this offering was written, will be outstanding. The summer has blessed the vines right across France. Never too hot, the long periods of unbroken weather allowed the grapes to develop slowly, steadily, to perfect bunch ripeness. Bernard suggests that this will be a particularly “senior” vintage. His wine, made from the Chardonnay grape known locally as the "Perle Blanche" (white pearl), will develop on the subtle perfumes that were evident at harvest. Notes of white blossom are complemented by touches of citrus fruit. [00] M7 D8

5318

DOMAINE G. THOMAS, AOC SAINT-VÉRAN, 2008 $24.50

6 BTLS/750 ML $147.00

Stylistically, the wines of this Domaine represent a halfway house between the buttery, creamy notes of Mâcon Blanc and the more elegant, mineral-touched elegance of PouillyFuissé. This has the floral quality of a Mâcon Blanc, but with greater body and extract, it is clearly a classic of its type and is a Mâconnais Chardonnay at its best. The nose is youthful and shows sappy, concentrated fruit with overwhelming richness and extracted weight. In the vat, just after fermentation and before bottling, it was already offering luscious fruit that filled the palate with sufficient flavours to provide a lasershow of promises at the end of the palate. DOMAINE DE MILHOMME, AOC BEAUJOLAIS, 2009 $16.83

6 BTLS/750 ML $101.00

The Perrin family’s Milhomme estate is unlike most Beaujolais vineyards which are frequently planted on heavy soils close to the River Saône. At Milhomme, the even rows of vines stride across the summit of a steep hill, far above the narrow valley that funnels cold winds each winter to buffet the dormant vines. It is a difficult terrain, but the clay, limestone and broken flint soil is free-draining and produces wines ranked among the finest of the entire appellation. Vinified with semi-carbonic maceration, the palate is fresh, approachable and features raspberry and cherry fruit. M7 D8

5320

DOMAINE DE THULON, AOC BEAUJOLAIS-VILLAGES, 2009, CARINE, LAURENT JAMBON $18.17

6 BTLS/750 ML $109.00

During our first visit to this Domaine, we tasted the recent vintages in Annie Jambon’s kitchen while she carved thick slices of home-cured ham off the bone for our breakfast. Jambon’s vineyard is divided into many small plots across the village of Régnié, home to the best Beaujolais-Villages wines. The terroir is typically granitic and produces rich, concentrated wines with good depth of colour and plenty of black cherry and raspberry fruit. This vintage appears destined to be sublime. M7 D8

5321

DOMAINE DE THULON, AOC RÉGNIÉ, 2009, CARINE, LAURENT JAMBON $19.67

6 BTLS/750 ML $118.00

Régnié was elevated to the other “Crus” of Beaujolais in 1988. The vineyards’ soil is completely different from those of other villages and the wines reflect that in a lighter style with more fruit-driven characteristics. The Domaine of only twelve acres belongs to René and Annie Jambon who built their vineyard, plot by plot, with all the vines located in the village of RégniéDurette. They are now joined by their children, Laurent and Carine, who share the same passions and tangible enthusiasm as their parents; caring about their vines, careful with their fruit and producing a radiant, raspberry-coloured wine. Fruit aromas are bursting with the perfume of small berries as the rich palate oozes ripe plums that give curvaceous, generous, lip-smacking drinkability. M7 D7

5322

DOMAINE DIT BARRON, AOC BROUILLY, 2009, GILLES AUJOGUES $22.00

6 BTLS/750 ML $132.00

The twenty-four acre Domaine, owned by Muriel and Gilles Aujogues, is one of the leading properties in this most southerly of the “Crus” which spreads like an outstretched skirt around the slopes of the extinct volcano, the Montagne de Brouilly. The diverse extraction from the volcanic soil adds nuances of mineral to the red fruit. Produced from hand-picked whole bunches, the grapes were macerated under pressure for eight days prior to pressing. The fermentation was completed in steel tanks at low temperatures which assisted in the development of the ripe, aromatic bouquet. Full and fleshy, with a mass of soft blackberry fruit, it has fine balance and easily accessed fruit. M7 D7

DOMAINE DESMURES, AOC CHIROUBLES, 2009, ANNE-MARIE AND ARMAND DESMURES $21.67

6 BTLS/750 ML $130.00

Armand Desmures may be the most admired grower within and far beyond his appellation but his wife, Anne-Marie, surely keeps the best kitchen. They produce wines with a shiny, dark colour and impressive small, red berry aromas. The vines of the seven hectare estate are ancient, yielding a restricted crop of high quality, concentrated and complex grapes that carry their intensity into the glass. The silky, smooth palate and harmonious tannins give elegance and suppleness, making this a charming and impressive wine worthy of ageing, but which can be equally enjoyable while still young. M7 D7

5324

DOMAINE CHAMPAGNON, AOC CHÉNAS, 2009, PATRICK CHAMPAGNON $21.83

6 BTLS/750 ML $131.00

We have said it before; Champagnon is simply the finest family of vignerons in the village of Chénas. Patrick comes from this large extended family where each member has learnt something from the skills passed down from older generations. This classic Chénas is Champagnon's flagship wine and is a truly excellent example. With aromas of blackcurrant, violets, and cherry brandy, it is a generously perfumed wine, dark in colour, velvety in texture, with a hint of spice; it is superbly full and well-rounded. This is a sturdy wine with substantial, ripe, mouth-filling tannins. Drink now or lay down, it can be kept for five years or more. M6 D6

5325

DOMAINE DE LA SIONNIÈRE, AOC MOULIN À VENT, 2009, ESTELLE AND THOMAS PATENÔTRE $22.83

6 BTLS/750 ML $137.00

Estelle and Thomas produce their wine in the small “lieudit” known as “Le Bourg”, the finest part of the vineyards. Unlike all the other “Crus” of Beaujolais, there is no village, simply vineyards clustered around the eponymous windmill. These are always powerful wines, with great potential to age well. Robust and full-bodied, much tannin enfolds and hides the fruit which has yet to emerge, but emerge it will to produce a characteristic array of aromas; iris, roses, black fruits and spice. Complex fruit flavours, including dark berries and cherry, struggle to show against the pungency of the tannins. M6 D6

DOMAINE DE LA ROCHE-BRIDAY, AOC MORGON, 2009, THOMAS COLLONGE $21.67

6 BTLS/750 ML $130.00

Of the ten “Crus” of Beaujolais, all made from the Gamay grape, Morgon is perhaps that which has the closest affinity with the schist and granitic soil which carries through the fermentation and makes itself known in the glass. The pivotal secret of these wines lies in their pressurized fermentation, a technique known as “macération semi-carbonique”, in which gas induced pressure, in sealed tanks, fractures the skin and grape cells to release colour, aroma and flavour without adding greatly to the tannin levels. Bottled in the spring following the vintage, it will become notably plump, already offering deep, black fruit aromas with ample flesh and a generous palate. Full-bodied with red and black berry notes and a juicy black cherry flavour, it has a firm muscular structure, grainy tannins and fine acidity. M6 D6

5327

CLOS DE HAUTE-COMBE, AOC JULIÉNAS, 2009, VINCENT AUDRAS $22.33

6 BTLS/750 ML $134.00

The Audras family has farmed this Domaine, on a vertiginous hillside above Juliénas, since 1835. Situated on a southeast facing shoulder, it catches full sunshine exposure throughout the day, yet it is also buffeted by the chill winds that sweep up the Saône in winter. The granite is so close to the surface that the vines have to penetrate cracks and fissures to take up water and the minerals that give the wine its outstanding quality. All the Audras wines are huge, indeed over many years they have been consistently brilliant with concentrated colour and complex perfumes. Filled with succulent raspberry and black fruit and sometimes with a piquant damson flesh, underlying everything is the clean mineral acidity that comes from the difficult terroir M6 D6

5328

DOMAINE DES DEUX LYS, AOC FLEURIE, LES BATAILLONS, 2009, STÉPHANIE AND FRANCK MATHRAY $23.17

6 BTLS/750 ML $139.00

Acquiring the Domaine in 1994, the Mathrays established an estate with a fantastic following, arguably producing the best wines of Fleurie. The first release in 2000, from 24-year-old vines, was a huge success and subsequent vintages have consolidated the position. The bouquet is marked by fine raspberry aromas with light notes of rose petals and ripe strawberries and a secondary bouquet which highlights chocolate and tell-tale iris flowers. In the mouth, typically soft, easy fruit characteristics of fine Fleurie give a soft and juicy impression with redcurrants and raspberry fruit. A great wine for those who want their Beaujolais early, it is sufficiently structured to last and develop over four or five years. M6 D7

Champagne CHAMPAGNE GARDET Chigny-Les-Roses

For more than twenty years Opimian has returned to this most traditional of privately owned Champagne Houses. The company, founded in 1895 by Charles Gardet, is well-established at the heart of the small village of ChignyLes-Roses, where it rests on a shoulder of the vine-clad hillsides of the Montagne de Reims, one of the three important quality producing districts of Champagne. A preeminent producer, the vineyards belong to Gardet and all are rated in the “Premier Cru” category.

Fragrant, flowery, cleanly defined

The fruit for this fine cuvée came from the three best regions of Champagne. Chardonnay grapes are brought from the Côtes des Blancs to be blended with red wines from the Vallée de la Marne and the Montagne de Reims. The young wines are combined with those of the previous year, with the addition of 15% reserve wine from an earlier, great vintage. Bottling is merely a step on the way to fulfilment as the filled bottles are stored below ground to allow a second fermentation to take place in the bottle, a process which keeps the wines fresh and creates the fine “mousse” of bubbles when opened. During two additional years of storage, power and depth of flavour develop with apple, small hints of candied fruit, ginger, vanilla and lemon. [02]

CHAMPAGNE GEORGES GARDET, BRUT ROSÉ, NV $77.33

6 BTLS/750 ML $464.00

There is something really special, almost decadent, about pink Champagne; it is the most beautiful and charming of all sparkling wines. A glass of rosé evokes memories of happy occasions and there is no finer rosé than Gardet`s flagship wine. Only red grapes are used and all come from Premier Cru vineyards in three villages, Ludes, Rilly-la-Montagne and Chigny-Les-Roses. Lively, balanced and fruity, with its salmon pink colour and consistently tiny mousse, it is a tipple that has been gaining enormous popularity. Aromas of red fruit, blackberries and blackcurrants remain delicate. The wine is perfectly balanced. [02]

Spain’s Golden Harvest, the nectar of Andalucia

Sherry

TOMÁS ABAD Jerez de la Frontera Throughout past centuries no wine has been more regularly written about nor idolized in literature. Today, it is no longer the ubiquitous wine that graced the front parlour of millions of homes, reposing in a decanter for offering to guests or to the priest when he came to call. No longer served in large glasses in every bar, sherry lives on to refresh the palate of true aficionados at noon on summer’s hottest days or to warm the heart and dispel the chill, icy fingers of cold through the winter months. We have offered the wines of this small producer for many years and though the company was swallowed by one of the Sherry giants some years ago, the stocks of old, favoured wines remain, for our use, in the Tomas Abad bodegas. $21.17

OPIMIAN RARE BALLAST BUTT FINE AMONTILLADO $21.17

6 BTLS/750 ML $127.00

There are two types of Amontillado, one made up of cheap wines blended to achieve the desired sweetness, the other a blend of aged Fino Sherry that is entirely dry, intensely flavoured and powerful on the palate. Our wine is definitely of that style. Following the pattern of previous years, there is the retention of the walnut and roasted almond complexity of the bouquet together with neat smoky aromas, touches of Muscat-like fruit and hints of caramel toffee. Slightly sweetened at the time of bottling, it is full-bodied and smooth, the dried fruit and apricot flavours ever present and wholesome. It finishes with a dry, nicely rounded structure that offers fading hints of orange peel and molasses. At the table, it marries well with foie gras and many Asian dishes. [02]

SHERRY TOMÁS ABAD

6 BTLS/750 ML $127.00

This style of sherry gained its name from the historical use of filled Sherry Butts as ballast in old sailing ships on voyages between the Spice Islands of the East Indies and Spain. On the return of the ships the wine was found to have darkened in colour and developed fuller, broader attributes. Although this is now a rich Oloroso from a top rated producer, it started life as a light white wine made from Palomino grapes before the addition of neutral alcohol spirit. It is the long ageing in the cathedral-like bodega that allowed for the development of the deep colour. Sweetened during the final blending, it is filled with pleasant fruit depth. Apricot, peach, banana and vanilla lead to a warm roasted walnut complexity and enticing flavour length in the mouth. It is the perfect companion to light desserts or blue cheeses. [09]

The finest and lightest of all sherries, Tomás Abad ages the Manzanilla in oak until it can be described as a “Pasada”, the extra age giving more body to balance the salty tang. It comes from Sanlúcar de Barrameda, a small port in the south-eastern corner of Spain where, as the evening light fades, the gypsies play sad tunes on their guitars while the young dance the haunting flamenco. Filled with great pungency, the chalky characteristics come from the dazzling white limestone terroir. It is traditionally served in a long glass, on a bed of crushed ice, but can also be paired with seafood, oysters and sushi and sashimi. [00]

OPIMIAN EAST INDIA RICH CREAM OLOROSO

5337

OPIMIAN PEDRO XIMÉNEZ $24.17

6 BTLS/750 ML $145.00

Mystery and legend surround the origins of the Pedro Ximénez vine, some suggesting that it was brought to Jerez by a German mercenary soldier and is, in reality, a clone of Riesling. Nothing in its form today could be further from the truth. Produced from grapes which are laid out on mats and left in the sun for as long as possible to dehydrate before pressing, it was once used for sweetening the finest Cream Sherry. Utterly rich and profoundly dark in colour, it tastes like a liqueur and is similarly expensive. Its pronounced dried fruit aroma is sweet, smooth, luscious and everlasting. Serve it iced cold in a long glass to allow the bouquet to develop or use it as a topping over vanilla ice cream. [10]

Scots Malt Whisky

PRÀBAN NA LINNE Isle of Skye, Scotland Almost three decades ago two island Scots, Sir Iain Noble and Guy Nicholson, enthused Ken Christie with their dream of producing the finest blends of Highland and Island whiskies for the demanding palates of the Scots of the Hebridean Islands. They knew that the hardy, independent people would be a tough market to crack but the Gaelic whisky company was founded and continues to flourish. Today, with ever more islanders speaking the Celtic language, the whiskies of Pràban na Linne retain the special qualities that make them clear favourites among the Scots of the Islands.

AM LAMRAIG, BLENDED SCOTCH WHISKY $44.50

5340

6 BTLS/700 ML $267.00

$74.83

This is truly a connoisseur’s blend designed for enlightened Opimians who appreciate the smooth palate and interesting aromas of a fine, unfiltered whisky that comes from long maturation and careful blending. Sir Iain refuses to reveal which distilleries provide the aged whiskies that make up the blend; its fine golden colour gives way to a smooth and slightly peaty flavour. With a high percentage of malt whiskies aged between five and eleven years, it is produced and bottled unfiltered, exclusively for Opimian, after years of maturation in old sherry casks, as is the case with all our whiskies.

5339

CÙL NA CREAGAN, 8 YEAR OLD MALT SCOTCH WHISKY $66.00

6 BTLS/700 ML $396.00

Using whiskies from distilleries selected by Pràban, it is bottled only for Opimian. They say that the word “whisky” comes from the Gaelic “uisge beatha”, meaning “water of life”, but more importantly on Skye they claim that the Gaelic islanders invented whisky, making theirs truly authentic. Cùl na Creagan translates as “the cleft in the rocks” where it was originally distilled to avoid the prying eyes of the English King’s customs officers. It is fine and unfiltered to retain all flavours, an aristocrat with a powerful, pungent, peat-smoke aroma. Robust, well-balanced and smooth, it has light sherry notes on the palate.

OPIMIAN SPECIAL OFFERING 46

CÙL NA CREAGAN. 12 YEAR OLD MALT SCOTCH WHISKY 6 BTLS/700 ML $449.00

This is a real beauty: perhaps at 12 years old the most approachable of the aged Malts, it has a thought-provoking, rich golden colour imparted from maturation in sherry casks. The aroma is complex with hints of heather honey and blackcurrant flowers enriched by the warmth of peatsmoke and nearly forgotten notes of iodine. Gentle and spicy in the mouth, the soft, mossy notes mingle with chocolate nuances, orange peel and dried fruit giving it a distinctive complexity.

5341

CÙL NA CREAGAN 21 YEAR OLD MALT SCOTCH WHISKY $157.00

6 BTLS/700 ML $942.00

Truly special, there is never enough very old whisky: evaporation, as it lay through long years in old barrels, has rendered this expensive, but totally delicious! It has a golden colour tinged with reddish hues and a nose incorporating a hint of jasmine, ginger, dried fruits, citrus, cinnamon and vanilla. Across the palate soft, seductive nuances of clove, wood smoke and spice linger long into the full finish with endless flurries of sweet toffee and orange peel.

CALVADOS, LERICHE $46.67

5344

6 BTLS/750 ML $280.00

$64.00

Visitors to Normandy, the home of Calvados, are invariably impressed by the attractively decorated, half-timbered farmhouses, many dating back three to four centuries. Practically all are surrounded by an orchard, which, as summer turns to fall, produces miserable, misshaped fruit. This green and red horde is transformed by distillation by pot still into Normandy Calvados, the quintessential partner for use in the kitchen. A glass of Calvados, “le Trou Normand”, hits hard and fiery, spreading a warming glow and cleansing the palate. Packed with pungent apple flavour, it makes a superb after dinner digestif.

5343

ARMAGNAC, *** LERICHE $47.50

6 BTLS/750 ML $285.00

Armagnac is distilled in Gascony in south western France, usually from vineyards hidden in the deep forests. There are few large producers as most Armagnac is distilled in pot stills by the vigneron’s wife in farm outhouses. The brandy is eventually sold to visitors who know where to look to find the best. The closest relative is Cognac, but though there is often confusion between the two, Armagnac is very different; different grapes, soil, distillation process, aromas, taste and textures. Our Armagnac selection is amber gold with fine aromatics that suggest almonds with vanilla and smouldering oak chips. In the mouth, the vanilla returns with the addition of spice and an enduring, subtle honey flavour.

COGNAC & BRANDY UNICOGNAC

LAURIAC VS FINE CHAMPAGNE COGNAC 6 BTLS/750 ML $384.00

Famous throughout France, the River Charente would be considered by Canadians to be little more than a serene brook, but flowing through the vineyards of the Cognac region, it acquires a magic associated with the brandy produced on its banks. The area is split into six districts, but only the two best make the wines that after distillation may be called Fine Champagne. This one has an inviting, deep golden colour with pleasing apple, caramel, warm spice and some chocolate and vanilla on the nose. In the mouth the first impression is pungent, but is rapidly followed by soft textures, mocha and finally a rich mouth-feel with length on the palate counted in minutes.

5345

COGNAC XO, ROI DES ROIS $153.00

3 BTLS/700 ML $459.00

The wine for distillation comes from three different vines, Ugni Blanc, Colombard and Folle Blanche. As wines they are thin, acidic and practically undrinkable, but distillation magically transforms these ugly ducklings into beautiful swans. Ageing in oak completes the transformation. The greatest skill of the Cognac distiller is to know just when to take the best part of the distillation, known as the “heart”, leaving the early and final parts of the process for blending with less important brands. Once the best has been isolated it is racked into dark, old oak barrels in above ground warehouses [chais] for many years to soften, concentrate and take on the desired characteristics of the “Roi des Rois” label. This is one of the finest “XO” blends, no part being less than eight years of age and many parts being much older. Smooth, soft and mellow, it is a brandy of supreme quality.
