PRO TIP: Plan for 1lb. of turkey per guest and 1 bottle of wine per guest.
1 Clove Garlic, Minced 2 tsp. Minced Shallot 1/4 c. Extra Virgin Olive Oil 1/2 Stick Unsalted Butter Salt and Pepper 1 Jar Artichoke Parmesan Bruschetta
P R E PA R AT I O N Preheat oven to 425F. In a small sauce pot melt and combine the olive oil and butter. Once melted, add the garlic and shallot, stir and set aside. Dry the turkey with paper towels, then season liberally with salt and pepper all over. Place the breast on a cooling rack. Using a pastry brush, coat the turkey with the butter/oil mixture. Put in the oven for 20 mins or until the turkey begins to get a light brown color on the skin. Remove from the oven and turn the temperature down to 350F. Baste the turkey again and put back in the oven for 30 minutes. Remove and baste the turkey a final time before returning to the oven to finish for 20 minutes, or until the internal temperature reaches 160F. Let the turkey rest for 10 minutes on a cutting board under tented aluminum foil to allow the juices to redistribute themselves back through the breast. Slice on a bias and serve with The Artichoke Bruschetta that dreams are made of. No need to heat the sauce, serve it at room temp. 6

P R E PA R AT I O N Using cheesecloth, wring absolutely all of the water out of the potatoes. In a medium/large bowl, combine the potato, shallot, eggs, flour and salt. In a large skillet, preferably cast iron, over medium heat and coated with a thin layer of butter, drop in a 2-tablespoon-sized dollop of the latke mixture. Press down on the latke with the back of the spoon to form a circle that is about a 1/3 of an inch thick. Sear for about 1.5 to 2 minutes then flip and do the same for other side. When fully cooked remove to a paper towel and let rest for a minute before serving with the delicious Ancho Chile Pepper Spread.
Kale & King Crab Salad INGREDIENTS 1 Bunch Organic Kale, Torn 1 Watermelon Radish, Thinly Sliced 1/2 c. Shaved Parmesan Zest from 1 Meyer Lemon 1 btl. Meyer Lemon Olive Oil 1/2 lb. King Crab Legs, Removed from Shell Salt and Pepper to Taste
P R E PA R AT I O N In a medium-sized bowl, lightly dress the kale with Meyer Lemon Olive Oil, salt and pepper. Transfer to your favorite serving dish. Arrange radish and king crab around the salad. Grate lemon zest over the kale and sprinkle the shaved parmesan. Finish with a drizzle of oil and a little more salt and pepper to taste. Voila!
