Einbecker Brauhaus

Brewery Description:

The oldest still existing document to prove the sale of Einbecker beer dates back to April 23, 1378. During the 14th and 15th centuries, every citizen in the town of Einbeck had the right to brew beer and by 1616 there were 742 citizens that owned brew houses, and the first bock-style beer in the world was brewed in the town of Einbeck. In 1749, the town of Einbeck combined all brewing rights and the Einbecker brauhaus was created. And in 1851, the first beer to be filled in bottles in the Einbecker steam beer brewery. And from the beginning the “Original Einbecker Bottle” is used. The design of the bottle has not changed since then, and it has become one of the symbols of Einbecker Brauhaus.

Urbock Dunkel

The classic example of one of the great beer styles in the world of beer. Brewed according to its original recipe of 1378. Back in the 14th century the original Ur-Bock Dunkel was strong, malty in the aroma, and yet hoppy in the finish as it was designed to be sent long distances from Northern Germany to Scandinavia, Netherlands, and Italy fermenting out on their way. After primary fermentation of 10 days at between 45-50OF this classic bottom fermenting Bock Beer is matured for another six to ten weeks.

Brewery Description:

In the middle of the old part of Bamberg, directly underneath the cathedral is the Schlenkerla Brewery and Tavern. It was first mentioned in 1405, and now ran by the Trum family in the 6th generation. It is the origin of the Original Schlenkerla Smokebeer, a Bamberg Speciality.

Aecht Schlenkerla Rauchbier Maerzen, unpasteurized, is made entirely from smoked malt. Heller Trum is one of the very few breweries left in Germany that does its own malting. During germination of barley, the smoke of beech wood fire is “forced” through the germinating barley for a total of between twenty four hours and thirty six hours at varying temperatures. Therefore, Aecht Schlenkerla Rauchbier gains an unusual smoky dryness from this process. In contrast, the standard drying procedure for malt is to be heated in a kiln. The brew is mashed by double decoction, hopped once, bottom fermented and matured 7 weeks.

Aecht Schlenkerla Rauchbier Urbock, unpasteurized. Fuller and richer in body than the Maerzen, it uses more malt and is matured at least one week longer (1,805 lbs. of smoked malt is swelled up in one batch [one batch= 340 cases]). It is only brewed once a year for the Urbockcelebration at the Schlenkerla tavern in Bamberg in early October.

The Aecht Schlenkerla Weizen is brewed with the following ingredients: Water, 55 % wheat malt, 45 % barley malt, aroma hops and top-fermenting Bavarian style wheat beer yeast. Only the barley grain is smoked during the malting process while the wheat malt remains unsmoked [Theoretically the wheat grain could be exposed to the Original Schlenkerla smoke kilning process as well. The smokiness of the resulting wheat malt, though, would be almost insignificant as the wheat grain is not able to retain the smoky flavor due to its lack of spelt]. After fermentation in the fermentation cellar a precise amount of unfermented wort and original topfermenting yeast are added to induce secondary fermentation in bottles and kegs.

From Ash Wednesday through Easter Sunday 40 days of ‘fasting” have been practiced by the Christian community since the 2nd century. Since the Middle Ages, many monasteries throughout Europe have reinforced this spirit of “lenting” by brewing stronger versions of their lager beer (bocks & doppelbocks) to ‘survive” these demanding 40 days (“liquida non frangunt ieunum” ie liquid food does not break the rule of fasting).

To celebrate these very special 40 days of fasting Brewery Heller-Trum will introduce a very special unfiltered Aecht Schlenkerla Rauchbier FASTENBIER (“LENT BEER”), which will be only available from end of February through Easter Sunday.

Following century-old recipes, all malts made at the Schlenkerla brewery are dried by wood fire. While for the classic “Aecht Schlenkerla Rauchbier” traditionally beech has been – and still is – used, the malt for Schlenkerla Oak Smoke is kilned with oak wood. The resulting Oak Smoke Malt has a smoother and more multilayered smoky note than the intensely aromatic Beech Smoke Malt. The hence complex smokiness in Schlenkerla Oak Smoke is paired with the multifaceted bitterness of finest Hallertau aroma hops. With 8% alcohol and Bernstein color, it matures for months in the deep brewery cellars underneath Bamberg into a special treat for smoke beer lovers for Christmas.

Brewery Description:

The largest Kolsch brewery is Privat- Brauerei Heinrich Reissdorf & Co., established in 1894 in the center of Cologne by Heinrich Reissdorf. After his death in 1901, Reissdorf’s wife took over the brewery until 1908 when her five sons- Johann Hurbert, Heinrich, Hermann, Friedrich and Carl began managing her brewery. During WWII, the brewery along with Cologne was heavily bombed. Only one mash tun survived, and the brewery was rebuilt in 1945.

In 1998, construction began on a new, state-of-the-art, computer-controlled, stainless steel brewery on the outskirts of Cologne in an area named Rodenkirchen, where production occurs today.

Reissdorf Kolsch

The town of Cologne, the namesake for Koelsch, not only has more breweries than any other city in the world, but also has a federal law protecting its right to brew this pale, top-fermenting ale (appellation controlee). Koelsch , which has been brewed in Cologne and outlying areas since before 1300, furthermore has a brewers guild (founded in 1396) that mandates certain parameters for its brewing and protects the appellation worldwide.

Founded on October 4, 1894 by Heinrich Reissdorf and his wife Gertrud in the historic “Severinsviertel” of the city of Cologne the Reissdorf brewery has established itself as the pre-eminent brewery of the classic “Koelsch”. These days Reissdorf Koelsch has almost reached a “cult status” with beer connoisseurs around the

world looking at it as a “well preserved secret”. Top fermentation lasts for about eight days with another four weeks of cold conditioning following. “Reissdorf Koelsch” is designed to be pale of color, soft on the palate, restrained on fruitiness, with a delicate dryness in the finish.

The cleanness of the beer is a result of a fairly long, cold maturation of two to six weeks. There are both filtered and unfiltered (called Wiess) versions, some brewers employing wheat in the grist.

pick up as many as 12 beers at a time from the “Zappes” (the “tapper”) which fit in recesses around the perimeter of a metal tray (the “Kranz” or crown) with a central handle. Tabs are run by the Koebes making tick marks on the customers’ coasters and Koelsch keeps coming without asking! Koebes are seldom tipped, but will allow you to buy them a round which they usually finish in one swallow.

Bayrischer Bahnhof

Brewery Description:

Bayrischer Bahnoff was once the starting point and terminal for one of Germany’s most important north to south routes, the Saxony-to-Bavaria Railroad. Over the years, Leipzig’s grander station has resulted in main routes being re-routed from the Bayerischer Bahnhof. Until recently, the railrod’s former offices, halls, and waiting rooms were defaced with graffiti. However, after approximately 14 months of construction, the Bayrischer Bahnhof opened its gates again on July 19th, 1999 as a hotel and Gosebrauerei. Ingrid Biedenkopf, Gattin of the Saxonian Prime Minister opened the doors to the hotel. It has become a beauitful landmark on the Leipziger landscape.

Leipziger Gose

The beer style, gose, is documented in Lower Saxony, Germany as early as 1000 AD when that region was ruled by the Holy Roman Emperor Otto III . Although, gose is usually termed Leipziger Gose, it originates not in Leipzig, but in the small town of Goslar. Like producers of bock beers in Einbeck, the brewers of gose needed to look outside their own town to find large markets for their product. They found those in the trade towns of Halle and Leipzig, about one hundred miles east. By 1900 Leipzig boasted over eighty gose houses. Spread of the bottomfermenting pilsner style as well as the economic decline of East Germany, under communist regime, contributed to the demise of Leipziger Gose. It finally faded out

completely in the mid-1960s. Then, in Leipzig, on July 20, 2000, brewer Thomas Schneider revived the original Leipziger Gose style in the famous Bayerische Bahnhof. As well as housing the first gose brewery of the 21st century, the Bayerische Bahnhof is also the oldest operating train station in the world. Upon arriving there today and finding Leipziger Gose, passengers may believe that this train has not only taken them to Leipzig, but also back in time several hundred years.

Mr. Schneider’s Leipziger Gose is a top-fermenting wheat beer (60% wheat, 40% barley malt) with coriander and salt added during the boil. Leipziger Gose is unfiltered, unpasteurized , and bottle-conditioned. Coincidentally, it shares many stylistic qualities and brewing methods with the Gueuze of Belgium in addition to the almost identical sounds of their names.

Appearance Very bright fold, fairly clear, spritzy leafy undertones.

Aroma A hint of apple-skin, champagne-like with leafy undertones. Refreshing acidity and an unusual aroma partly due to the addition of lactic acid bacteria.

Flavor Quite complex with notes of plums, herbs, lemon, orange, coriander on the palate and a subtly refreshing sharpness provided by the additional of salt.

Finish The finish is dry with the lactic acid bacteria providing refreshing undertones. Earthy, dry malt and a hint of fruitcake are apparent.

Berliner Style Weisse

Bayrischer Bahnhof’s interpretation is a slightly softer, more mellow version of the “Berliner Weisse” style with a beautiful balance of tartness, fruitness, and sweetness. The beer goes through open fermentation for 4 days, starting at 68OF going up to 75OF. Then it matures for one week at 74OF, then 2 weeks at 38OF.

This is the regular Leipziger Gose filtered through pine twigs and the idea comes from the traditional Finland “Sahti” style beer that is filtered through juniper twigs. The result is allowing the gose to take on some sour aspects along with some pine aspects.

Appearance A pleasing soft orange hue with a thin white head the subsides to whisps of lace.

Aroma The nose comes across with a massive cardamom presence playing with the soft wheat notes a zesty yeast. Notes of citrus immediately pop.

Flavor Lighter on carbonation but playful enough on the palate. Orange peel and cardamom are prominent in the taste with the cinnamon lightly trickling in. Hints of vanilla toward the finish and you are finally left with the salt lightly playing on the middle of you palate.

Leipziger Gose filtered through PINE NEEDLES!!!

Very common historical way as in the old days a lot of beer was passed through pine needles/juniper to create the bitterness (prior to the popularity of hops).

The flavors of this beer is really interesting because there is tons of pine needle aroma in the nose and then on the palate followed by the traditional sourness/spiceness/saltiness of a Gose. This beer exemplies a very nice balance between the pineness and sourness.

Gose is a top fermented beer that originaled in Goslar, Germany. It is brewed with at least 50% of the grain bill being malted wheat. Dominant flavors in Gose include a lemon tartness, nerbal characteristic and a slight saltiness. The sourness of the gose is usually through inoculation with lactic acid bacteria after the boil. Gose belong to the same sour wheat beers as the Belgian Witbeer, Berliner Weisse and Gueuze. Since the mid 1980s - in Germany there are only three remaining “traditional” gose breweries with Bayerischer Bahnhof being one of the three.

Brewery Description:

Built in 1632 and converted to a brewpub in 1862, Uerige Brewery, named for the cranky owner, Wilhelm Cuerten, has established the Duesseldorfer interpretation of Altbier as the classic of the style. After the building was completely destroyed in World War II, the new owner, Rudi Arnold began reconstructing the brewpub in 1945. In 1949 he finished and in 1976 the Schnitzler family took over the company.

Altbier is Germany’s answer to the copper colored pale ales of England and the fruity/estery interpretations of ales in Belgium . Whereas most German brewers abandoned old brewing methods for the new cold fermented pilsner style in the 1800’s, the brewers in Düsseldorf continued with the old (alt) tradition of ale brewing at warmer temperatures. At around 4.5% alc./ vol, traditional Altbier shows a rm bitterness, medium body, and a malty avor with hints of caramel. Relative to the other beers of this style”

“The Wet hop Sticke is quite good - it’s a bit paler than the Sticke thanks to a small amount of wheat malt added to the grist. Hersbrucker wet hops (which were recommended to him by his hop farmer) were used: almost 400 kilos per 60hL batch. Per Dr. Tenge, Hersbrucker is a nearly forgotten variety - he specifically did not want to use one of the new flavor hop varieties that German hop growers are cultivating because they are too dominant and tropical. The Hersbrucker wet hops provide a discernible, but pleasant hop flavor (herbaceous/grassy) that is not overt, but definitely noticeable. The regular Sticke has some aromatics of dried orange peel, cinnamon, anise, and mulled wine type spices - these are all less noticeable in the Wet Hop version.” by Graham Haverfield

Before larger beers became the mainstay of Germany production (18th and 19th century) two regions were well-known for their wheat beers: Berlin and Bavaria. The former has pretty much died out, and hefeweizens as we know them today are made in the Bavarian style. But Professor Fritz Briem, has re-created the Berlin style. The main difference is its learner, tart character, courtesy of lactic bacteria that are introduced at the same time as more traditional yeast.

Huguenots may have originated the style as they traveled through France to Flanders, having first mentioned it in the 1600s. During their time, there were said to be seven hundred weissbier breweries in Berlin.

Later, in 1809, Napoleon and his troops identified Berliner Weisse as the Champagne of the North. He requested the beer be served w/syrup to cut its extreme level of acidity.

“1809” is a very traditional interpretation of the “Berliner Style” Weisse with an intense blend of lactic tartness and complex fruitiness. It is bottle-conditioned, unfiltered and unpasteurized. “1809” will age beautifully in a dark and cool location. Its complex fruitiness and tartness will most likely develop in quite astonishing ways.

“1809” is fermented in traditional open fermenters and horizontal lager tanks. The applied mashing regime is a single step decoction mash with 50 % wheat malt.The total amount of hops is added to the mash so that isomerisation takes place in the decocotion part of the mash. The wort is not boiled but only heated up to boiling temperature and then transferred to the open fermenters and pitched with yeast and lactic acid bacteria (isolated from malt) at 18°C (64°F).

Forgotten styles brewed according to their historic recipes by Dr. Fritz Briem, Munich, Germany. Grodziskie or Grätzer is a Sour Smoked Wheat Ale that was brewed in the 1900s in East Prussia and dates back to as early as the 15th century. It was named after the Polish town of Grodzisk Wielkopolski or Grätz in German.

Our historic version is brewed according to theGerman Purity Law with air-dried barley malt

& beech smoked wheat malt andhopped with Perle & Saaz. A sour mash is created using the old and forgotten technique called “Digerieren”. Finally a three monthaging & maturation processcreates a complex sour, smoky & heavily hopped wheat ale. 4% alc./vol.

[3] Caraway or Persian cumin (Carum carvi) is a biennial plant in the family Apiaceae, native to Europe and western Asia. The plant is similar in appearance to a carrot plant, with finely divided, feathery leaves with thread-like divisions, growing on 20–30 cm stems. The main flower stem is 40–60 cm tall, with small white or pink flowers in umbels. Caraway fruits (erroneously called seeds) are crescentshaped achenes, around 2 mm long, with five pale ridges.

[6] Gentiana is a genus of flowering plants belonging to the Gentian family (Gentianaceae), tribe Gentianeae and monophyletic subtribe Gentianinae. This a large genus, with about 400 species.

This is a cosmopolitan genus, occurring in alpine habitats of temperate regions of Asia, Europe and the Americas. Some species also occur in northwest Africa, eastern Australia and New Zealand. They consist of annual, biennial and perennial plants. Some are evergreen, others are not.

Around 1624 brewmasters boiled the original wort with an especially large amount of hops over an open fire. After cooling down, the wort flowed into the wooden fermentation vessels where bottom-fermenting yeast was added. After primary fermentation, Keller Bier was then taken to cellars carved deeply into the Bavarian rocks outside the village of Buttenheim using their natural coldness to mature Keller Bier. It then lagered in solid oak barrels “ungespundet” (unbunged) to let the carbon dioxide that develops during this maturation process escape. The Brewing process, the lagering cellars carved into the rocks near the village of Buttenheim and the beer garden on top of the lagering cellars are still the same as they were in 1624.

It was real detective work for Oliver Lemke, owner and bremaster of Brauerei Lemke, to revive the lost recipe of the traditional Berliner Weisse. He graduated at VLB

Berlin*** in “Brewing Engineering” and still has strong connections to the faculty. He constantly involves students in his numerous Berliner Weisse fermentation research projects. After two years of research and more than 100 test brews, Berlin got back it’s traditional Berliner Weisse with Historic Three Culture Fermentation.

His Berliner Weisse “Budike” {Berlin slang word derived from the French word for small pub/corner pub “La Boutique” }varieties are fruity, mildly sour, refreshing, balanced, complex and funky - and definitely without syrup!

Kuebelbier is brewed according to the historic beer style: Zwickelbier. Zwickelbier comes from the Franconia region in Germany and dates back beyond the Middle Ages. The name “Zwickelbier” stems from the sampling mug (”Zwickel” in German) mounted at the outside of the tank for assessing the brew’s progress during fermentation. The Zwickelbier style is an unfiltered lager beer (Bottom-fermenting) that traditionally is served as soon as fermentation is complete.

Kuebelbier is brewed as a pilsner and is then bottled directly from the cellars without any filtration allowing all the yeast and natural substances to enter the bottle. Unlike Kellerbier, the maturation casks of Zwickelbier are bunged (”gespundet in German) just before the end of the fermentation. This builds up effervescence in the brew. Our Kuebelbier is a very unique interpretation of this classic style to add robustness & character. It is quite hoppy at around 35 IBU and is 5.8% Alc./Vol..

Our “Original Hochzeits bier von 1810” goes back to the Original “Maerzen-style beer” that was served in 1810. Relative to today’s “adjusted” Octoberfestbiers it is much darker in color, much stronger in alc/vol, and much more full-bodied!

Just the way beers were brewed around that time!

This beer is the end result of a lot of research by the head brewer at Hofstetten. We asked him to “throw out the rulebook” and the preconceived “definition” of Maerzen/Oktoberfestbier that Spaten set well after the royal wedding that established the tradition. His research of beers of 1810 (the year of the royal wedding commemorated by Oktoberfest) led him to this beer. I have translated from German the “broad strokes”:

“Indications of color seem contradictory, but original gravity is very clear: 14 degrees Plato, resulting in a be er of 6%. IBU’s should be around 21, using Spalter Select and Tradition, the latter of which is of Bavarian origin.

Further research on color of the “original Festbier” show values as low as 7 EBC but there is lots in the high 20’s EBC that was found. The debate was whether to go just a bit darker than the U.S.-version (of their) Kuebelbier, namely 1810 at 12 EBC’s of color, or up to the darkest Festbiers of the day at 32.5 EBC’s. One thing was for sure, that Munich malt needed to be the basis. Filters weren’t used widely in Bavaria until 1900 so the beer had to have been unfiltered”.

Granit Bock

Granit Bock is brewed according to historic style “Stone Beer” (Stein Beer). Stone Beer is a unique style that comes from the Baden-Wurttenberg & Franconia regions of Germany and the Kaerten region in Austria, it dates back to the Middle Ages.

The Granit Bock is brewed in a large granite open troughs. The granite stones are then heated to be white hot and added to the wort. This casuses the sugars in the malt to caramelize around the stones and gives the beer lovely caramel and roasted flavors. It also gives the Granit Bock a unique smoked flavor.

Yeast is added about 1 hour after after the white hot rocks have been added to the wort, allowing for an open fermentation. The Granite Bock is then matured for several months on the cool cellars under the brewery.

Top-fermenting yeast {type Koelsch} . Quite intriguing as nobody appears to have used a “koelsch style yeast” to ferment strong beers such as bockbeer, barley wine, old ale, etc.

The top-fermenting Koelsch yeast has done a marvellous job in creating its distinct subtle fruity esters in this barley wine style while at the same time very successfully fighting its way through all the complex malt sugars thrown at it.

Ainpöckisch beer, mentioned in documents since 1378, is a completely natural, unfiltered Bock beer specialty from the town of Einbeck, home of the historic Bock beer style. Brewed according to traditional recipes with generous additions of hops. Left completely unfiltered.

In the 13th to the 15th century this style “Ainpöckisch bock beer” was very popular and distributed throughout the Hanseatic League, the merchant organisation founded by north German towns and German merchant communities abroad.

As you know all German lager brews were unfiltered before “the beer filter” was invented in the 1870s.

When the German engineer Carl Linde added the idea of a “cooling machine” {1870s} the door was opened for the “Pilsner” style.

The Einbecker “historic unfiltered Brauherren Pilsner” allows us to enjoy Einbecker Brauherren Pilsner at its highest level of flavors and aromas. A most unusual historic experience!
