Berries with Cashew Whipped Cream
I created this dessert one summer when I was craving fresh berries with whipped cream. Well, to avoid the high fat dairy and processed sugar (or worse yet, the processed vegetable oils and high fructose corn syrup and chemicals of non-dairy whipped topping), I decided to create a healthy yet satisfying alternative. You are sure to love this one!
Ingredients: 1 cup of raw cashews or macadamia nuts soaked in water for at least one hour 1/3 cup of dates soaked in water ¼ cup of date soaking water 2 tsp vanilla
Preparation:
Rinse and drain the nuts after soaking Put all of the ingredients into a high-speed blender and blend into a whipped cream consistency. Dollop over a bowl of fresh berries and enjoy
