Edel Doherty, Women in Business NI Chair said: “Our amazing network of ladies, involved in all aspects of commerce in Northern Ireland, provides us with a huge wealth of business knowledge and experience that, when shared, can genuinely help others succeed. Ulster Life Thirty Something… It was my birthday this month and even though only in my early thirties, Botox was heavy on mind. ention the word “Michelin” to anyone in the country and there would be a decent chance Ballymena might pop in to their minds. Possibly not on a culinary level mind you. Michelin Tyres perhaps, being one of Ballymena’s biggest employers alongside the mighty cigarette producing Gallagher’s factory would probably be the answer you find most often. However, I have a sneaky suspicion in 12 Months time you’ll possibly be referring to the River Room at Galgorm, headed up by the one and only Chris Bell. No stranger to the Limelight Chris has represented Northern Ireland in the Great British menu and has been resident in Paul Heathcote’s Longridge restaurant near Preston for about 7 years having done 2 separate stints and meeting his wife Kathryn in the process. Chris is now Head Chef at the two-AA-rosette River Room restaurant and boy is he making an impact. I’d eaten here about 18 months ago and

found it hard to complain about then. The food was excellent; the view from beautiful 22 seater restaurant over the fast flowing white waters of the River Maine isn’t only captivating but relaxing and as satisfying to gaze at as the food that was to make its way to us throughout the evening. The offering of fresh breads to get us started on a cold winter’s night was welcome and we both opted for the truffle and parmesan which was beautifully warm allowing the home made butter to melt evenly. Opting not to fill up on the offer of more bread (a lesson I have learnt over the years) our starters soon arrived. I went for the scallops with deep fried haggis and my friend the salmon. Both dishes looked stunning and the visual beauty didn’t disappoint. The salmon came delightfully poached with a sprinkling of caviar and the scallops felt fresh and were beautifully cooked. The haggis makes that dish for me.


Ulster Life Main courses followed and raised the bar further. My pork belly was crisp, bursting with flavour and again beautifully presented but not over the top. It was a clean looking plate and the food placed on it was stunning. My friend chose the Halibut which came with a seafood sauce that she wasn’t too keen on trying due to personal taste and our waiter made sure the dish came as preferred. The fondant potato that accompanied the fish was possibly one of the finest things we have both tasted in a restaurant and we’ve eaten in a few. Dessert was shared. We decided to try the cheese selection that came with a choice of flavoured crackers and a waitress who knew more about each individual cheese than I know about some members of my close family. Again a complete success and fascinating to hear about the origins of the food. The passion in the food was evident from front of house to the Kitchen and it was shared with the audience beautifully. I can’t think of a more perfect setting for a romantic Valentine’s meal or to simply spoil your other half. Holistic Therapies for Pre Pregnancy & Pre Natal Care Can Take the Childbirth Experience from Potentially Traumatic to Tranquil

I

n a busy world full of pharmaceutical drug choices and often complex medical procedures for ill health, conception and childbirth; acupuncturist and holistic therapist Maria Rafferty is a highly sought after, certified therapist who specialises in pre-pregnancy and pre-natal care using a combination of traditional Chinese acupuncture, Arvigo techniques of Mayan Abdominal Therapy and yoga to address a range of health problems and help couples achieve successful conception and peaceful births. With a firm mantra that couples are responsible for their own birth and that delivery can be stress free, Maria educates mums and dads-to-be on the holistic options they can choose both throughout pregnancy and during delivery. Maria is also a trained doula, meaning she can be on call to attend a birth for a couple up to 2 weeks prior to their due date, accompanying the medical and midwifery teams, to calm mother, birth partner and baby and provide physical and emotional support. The statistics on having a doula are a powerful testament to the benefits: a 50% reduction in the caesarean rate, on average a 25% shorter labour and 40% reduction in forceps delivery are just some of these. Maria says, “If a woman is physically and emotionally unprepared for her delivery and is scared or nervous, she produces adrenaline, the body then registers danger and makes it more difficult to birth into this stressful situation, so it is my role to prevent this stress; both through pre-birth preparation and the option of having me there at birth to calm both mother and baby and provide physical and emotional support.” She continues: “I left my job as an


Ulster Life accountant to study a range of therapies such as acupuncture, fertility yoga and Mayan therapy as I felt very strongly that they worked and I can honestly say I have never looked back. So many people are crippled physically, mentally and socially by problems such as irritable bowel syndrome, fertility issues or menstrual pain and helping people to help themselves reclaim their lives from these debilitating difficulties inspires me every single day. I am especially passionate about the work I do with pregnant couples, just a few sessions is all it takes to empower them to take control of their own birth, give them a sense of peace and quash their fears about delivery, changing the whole experience of the most amazing event of their whole lives. I feel truly privileged to be able to offer couples this and leave people feeling energised, centered and balanced. My son was much more alert than my other babies as the birth was drug free. When you have a great birth you’re starting motherhood from a different place, a negative experience of labour takes you a while to get over. I haven’t even had a day of the baby blues; I’ve been on a high since my son arrived. Welcome to Ulster Life John! Can you tell us, what you think the outlook for the 2012 housing market is? Is it all still doom and gloom? I am delighted to say that the housing market for 2012 looks very encouraging. If we look back at what we experienced in 2011, which was a fairly substantial rise in the number of property transactions, alongside a slight lowering in price– this has resulted in an increased level of people wishing to engage in home ownership once again. The outcome is a marked increase in first time buyers, buy-to-let purchasers and those scaling upwards. The rental market remains extremely buoyant; however, we are seeing people stepping out of the rental market to purchase property. Similarly, we are seeing a huge surge in clients buying smaller houses for investments, with a buy-to-let in mind. This bodes very well for 2012, and the early evidence shows a multitude of new faces viewing houses right across the board. My feelings are that house prices have now more or less bottomed out, and as far as my predictions for 2012 are concerned, house sales will show a further increase in activity, and prices will show very little change, if any, over the next twelve months. This is a great year to buy property – prices are at an all-time low, interest rates are also at a historical low and demand for rental property

T

he break over Christmas was a chance to draw breath after a frenetic 2011. Last year brought many highlights for me personally in terms of my ceramics and sculpture work and I passionately hope for more of the same this year. The real highlight of the close season for me was a trip to Romania where I was part of a contemporary ceramics group exhibition, giving me the chance to exhibit alongside established ceramicists from other parts of the world such as America, Canada, Israel and South Korea. The style of work was as diverse as the countries of origin and gave me a real appetite and desire to exhibit internationally again. The trip gave me the chance to see a small part of a very fascinating country. Our downtime included a trip to the salt mines outside Cluj-Napoca which yielded, after a mile long tunnel a huge underground odyssey consisting of a boating lake, ten pin bowling, ferris wheel, crazy golf and theatre amongst other things, a complete surprise and delight to the senses. The other remarkable feature about the trip, apart from the wonderful food and Transylvanian black lager, was the visit to the artists’ studios.

Many tower blocks that were used as social housing during the communist regime now act as artists’ studios. From these basic surroundings, inspiring artists such as Arina Ailincai were producing work that was being exhibited on a worldwide basis. I left Romania inspired, the perfect end to the year. This trip was just the antidote I needed after the nervous wreck I became before my appearance on Out of the Blue, BBC1’s arts and culture program from Northern Ireland. The brief was to make a piece of work live on air in fifty minutes then talk about the work afterwards. Whilst it was nerve racking, being involved in a live television program was fascinating and the team involved were great at putting me at ease. The work that was made will now be auctioned for Children in Need. The final phase of my mad December was the installation of my biggest ever work, 25 heads at the F.E. McWilliam gallery at Banbridge. The chance to scale my work up was something I really wanted to do and the opportunity to be associated in any way with the surrealist sculptor F.E. McWilliam was wonderful. Back on the ground, Nepotism opened at Platform Arts, an interesting concept for an exhibition whereby four artists who were chosen by a curator had to choose someone to exhibit alongside them. Some other events worth catching are Christopher James Burns’ Soliloquy exhibition at The Naughton Gallery, Interplanetary Revolution at the Golden Thread Gallery, James Millar with Sex and Religion at the Engine Room Gallery and Street Art at the Ulster Museum. Lastly well done to Brendan Jamison who continues his sugar cube adventures at 10 Downing Street and watch this space next month for something big in Belfast!

SALMON CURRY WITH RICE NOODLES Delicious salmon curry which is super easy to make. Taken from our cookbook ‘ways with noodles’ You need

• • • • • • • • • • • •

tablespoon vegetable oil 2 teaspoons finely chopped shallots 2 teaspoons red curry paste * 125ml coconut milk 1 teaspoon muscovado sugar 2 teaspoons fish sauce (nam pla) Zest and juice of 1 lime 1 lime, cut into wedges 2 skinless salmon fillets, each weighing about 100g Small handful of thai basil leaves Small handful of mint leaves 100g wide rice noodles

10 dried chillies, soaked in hot water and roughly chopped 3cm piece of ginger or galangal root, peeled and finely chopped 2 lemongrass stalks, outer leaves removed, finely chopped Zest of 2 limes 1 tablespoon finely chopped coriander stems 1 tablespoon chopped shallots 1 tablespoon chopped garlic 1 tablespoon light brown sugar Salt and white pepper Vegetable oil

Instructions Heat a saute pan large enough to accomodate the salmon over a medium heat. Add the oil and shallots and cook until soft without colouring for 2 minutes Add the red curry paste and continue to cook for 2 minutes, stirring constantly. Add the coconut milk, sugar, fish sauce and the lime zest and juice. Bring to the boil, reduce to a gentle simmer for 5 minutes. Taste and adjust the seasoning. Ease the salmon fillets into the sauce and gently poach until the fish is cooked, about 8-10 minutes (depending on the thickness). Add the basil and mint. Cook the noodles according to the instructions on the packet and drain immediately. Gently stir the noodles into the pot. Serve with the lime wedges on the side. * pound each ingredient, adding them one after another in a pestle and mortar. Season with salt and pepper and stir in enough oil to form a paste

After graduating from Buckinghamshire University in High Wycombe where I studied Three Dimensional Design I went to work in London for a lighting design company . It seems like a big leap from what I do now but as my degree show had been decorative and kinetic lighting so it made perfect sense at the time.

How did you end up doing your current job? Well, after spending some time living and working in London, I decided to do a part time course in jewellery making. Despite having the opportunity to learn these skills at university I never really took to it at that time. After doing the course I decided to take things further and having spent 3 year living in London I realised that I was a country girl at heart and started looking for opportunities to develop my skills elsewhere. I was given the chance to work for a prominent jewellery company in Northern Ireland and spent 8 years there before taking the plunge into self employment. It has been an adventure so far with highs and lows but I will be celebrating my tenth year in business this November, quite an achievement.

Describe your typical working day? As I keep all the paperwork end of the business at home I spend an hour or two checking and replying to emails, making updates to my website and Face Book page and doing my best to keep up with the administration and book keeping, then it is off to the workshop for a little light relief. Designing and making is my favourite part of the business and every day is different. Sometimes I am working on my product ranges for a wholesale order destined for one of the many outlets I supply or I could be working on a unique one off design for a private commission. So after a day’s work at the bench its home for tea followed by more of the never ending paperwork.

What has been your most extravagant

purchase? I am not really an extravagant spender, although I have moved house recently and there has been quite a bit spent on soft furnishings to make my house a home.

What car do you drive? Volkswagen Polo, and it needs a wash!

Do you have any unfulfilled ambitions? I have a lot of ideas for jewellery I would like to make, all I need is a little bit of time, space and the materials, of course. Fiona can be contacted on 028 2588 2367 where she will happily chat or discuss bespoke commissions.

What is the most rewarding thing about your job? Over the past year I have come to realise the most rewarding part of what I do comes from working on private commissions. Whether it is an opportunity to restyle a client’s old gold rings into something new or working on a completely new piece, after talking over design ideas and going through the making process the best bit is seeing the client’s eyes light up when you show them the finished jewellery and you know you have got it just right, it makes my day.

Outside of work and family, what is your greatest passion? Hill walking has always been a passion with me, I have a list of hills I aim to climb this year most of them in Scotland, so it kind of depends on the weather. I also love riding my motorbike which also depends on the weather, riding in heavy rain and strong wind can take the fun out of it a little. February 2012
