MICHAEL QUINN Michael Quinn Hairdressing, Royal Avenue, Belfast.

Since Michael opened his salon doors in Belfast city nearly ten years ago, he has become one of the most highly regarded stylists in Northern Ireland. Throughout the years he has worked with a vast clientele which includes celebrities such as The Saturdays, Mischa.Barton, and our very own Christine Bleakley. Michael has a wealth of knowledge in his field and is on hand to hear your hairdressing hitches.

Q1 Leanne Reynolds: My hair has been through all the shades and colours of the rainbow and I’m finally ready to settle for my natural dark brown tone. Unfortunately, after all that dying, toning, bleaching and styling my hair is in terrible condition with split ends and breakage. I’ve been washing and conditioning my hair every day to try and sort this hair-tastrophy but it just seems to be getting worse. I know it’s not good to use a lot of shampoo and conditioner but if I don’t then my hair becomes greasy, tatty and unruly. What products would you suggest to save my locks? Michael: The first thing you need to identify is if you want to let the colour grow out naturally, which could take quite a long time depending on your hair length. Also dealing with roots can be virtually impossible for most women. There are various quick fixes you can try to get your hair back to your natural colour, but my suggestion is to get your hair condition corrected first. To sort out the split ends the only option is to get them trimmed I’m afraid. Once you’ve done that, I suggest you start using the Age Rejuvenating Conditioning treatment from Matrix Biolage which is a lightweight conditioner that internally nourishes; use this along with a fortifying shampoo for the best results. You should go through this process 8

CITY7 about 3 times per week – shampoo your hair, towel dry all over then apply the treatment and comb through. Leave for 1 hour (longer if possible) then rinse and condition with the hydrating conditioner from Biolage. The whole purpose of conditioning after all the previous steps is to seal in the treatment that you have just completed. Do this around 3 times a week in order to get the best results. As for your colour correction, book an appointment with a professional hairdresser. Your hair is what we call ‘multi-tonal’ so it is of the utmost importance, when going from light to dark, that this it is done professionally (this is to avoid any patchy green or brassy spots of colour).

Q2 Lauren Jones: No matter how hard I try, I can never get those luscious curly locks I see on all the celebs. I particularly envy Kim Kardashian and her free moving bouncy curls; she can pull off any style and her hair looks perfect all the time. My hair is quite the opposite of hers. In fact it’s dry, thin, lifeless and boring. I am looking for a product out there that’s quick and easy and can give me that supermodel style without the supermodel budget! Michael: You’re in luck, Lauren. Kim Kardashian has been seen on the red carpet with various striking hairstyles, but do bear in mind that she does have extensions in. Being Kim Kardashian of course, she has a team of highly trained hairdressers at her beck and call 24/7 but don’t worry, I’ll tell you how to get those loose curls in the comfort of your own home. Firstly, I recommend using a volumising conditioner to ensure your hair is full of life and body. You should spray Matrix Thermal-Active Setting Spray; a texturizing gel that delivers soft to medium hold for lasting control, onto your hair before using any equipment. Then, use thick ceramic curling tongs and take time to curl every section of your hair. Next, use a good

brush to loosen the curls and finally, all you have to do is seal the curls with Matrix Complete Control Hair Spray; this will also add volume and control to your curls and then you will be ready for any red carpet occasion!

Q3 Amelda Johnston: Recently I’ve noticed my hair is lacking volume, especially around the roots. I love the volume I have when I go to the hairdressers but can’t afford the up keep of going every few weeks to get my hair done. My hair routine consists of washing, conditioning, blowdrying and straightening. I have been told before that straightening my hair will take out the volume but if I don’t straighten it I look like I’ve had an electric shock! Could you recommend a product that will make my dull, lifeless hair volumized? Michael: It sounds to me like you need a real hair boost and for this there’s nothing better than the Matrix Total Results Amplify Wonder Boost Root Lifter. This gives you a really lifted effect on the root area and an added volume feel all over the hair and this will stay with you all day. Use this on dry hair by directing the nozzle applicator towards the roots and then on any other problem areas you may have. It is also good to know that all Matrix volume products contain 24 Hour Full Boost Technology to retain the look. Apply to towel-dried hair, working evenly from the roots to the ends. I recommend staying away from the straighteners unless absolutely necessary and if it is, then Cloud 9 straighteners have a nice range of settings so use them on the lowest heat setting to simply keep that ‘electric shock’ effect at bay. This will give your hair the boost of life it’s been waiting for and you won’t have to visit the hairdressers every week for that salon feel. BEHIND BARS Love and Death has been a massive success from opening, what’s the secret? We all work very hard and Anthony & Brian have some great plans for the place. I’m working alongside some of the best bar men in Belfast and we all work together to make the place what it is. We’re all mates too so although we work hard, we party harder! Do you know what the inspiration was for the name - Love and Death? I’m pretty sure the inspiration came from an interview in TIME Magazine. They interviewed head chef of El Bulli (‘the best restaurant in the world’) A chap called Ferran Adria who was quoted saying; ‘everything is done for a reason and the only thing I take seriously is LOVE AND DEATH’. Love and Death encapsulates life. Christmas and NYE has been and gone. Take us on a pub crawl of Belfast to beat the January blues? It’s hard to look past a few beers in the Garrick to get things going, then up the road to Filthy McNasty’s, pop into Love and Death for a few Jaegermeister before hitting the dance floor at Thompsons.

Working in Love & Death, have you had the opportunity to meet any famous people? Gary Lightbody & some of the boys from Snow Patrol were in last week & we hosted a talk with Mr Nice - Howard Marks. Those guys are pretty famous! You’d not be a great bar tender without a few stories to tell. What’s the craziest thing you’ve ever seen in a bar? There are far too many stories to tell, but in Love and Death there’s always something crazy going on. The antics of the staff definitely outshine some customer stories. To be honest, most of the stories are a bit too wild for this interview. Your ‘words of wisdom’? ‘If you do anything in life do it for yourself’. I can’t even remember who told me that but it always stuck with me. What’s the worst chat up line you’ve heard being used in your bar? In Love and Death it’s always, ‘did you know I own this place?’

BELFAST BARTENDER REPRESENTS UK IN WORLD FINAL

A

Belfast bartender has beat off elite competition from The Savoy and The Dorchester hotels and some of the UK’s best cocktail bars including Milk & Honey and Nightjar to represent the UK at an illustrious competition. Judges have selected 26-year-old Robert Cooper, a full-time member of staff at Love and Death Inc. on Belfast’s Ann Street, as the UK entry in the 14th Annual International Finlandia Vodka Cup. This year’s competition will host 20 global bartenders who will travel to Finland’s capital Helsinki for the chance to be crowned champion with a prize of $25,000 US Dollars. Love and Death Inc. are no strangers to award success having won several accolades within their first year of opening including Bacardi’s Bartender of the Year at the 2011 Fate Awards; Cooley Whiskey’s inaugural Kilbeggan Whiskey Cocktail Tender of the Year and the bar is rated 2nd in MSN’s top ten coolest underground bars in the UK. Robert said, “I was delighted when I learnt that I am to represent the UK at the final of the Finlandia Vodka Cup. I’ve been a bartender for eight years now and I have entered cocktail competitions before but never got past the initial stages. Recently I have been having healthy competitions with my co-workers at Love and Death Inc. and Iguess the time and effort I’ve put in to compete against them has paid off”.

Neil Punwani, Senior Vice-President and Managing Director of Vodka at Brown-Forman said, “The Finlandia Vodka Cup is a celebration of all that is best about the creativity and skill of bartending. Making Music at Mono

C

hris Cargo has been at the forefront of electronic music, spinning discs on the club circuit for eighteen years with DJ Magazine having described his sets as ‘perfect sex machine body music’. He’s enthralled revelers from Kuala Lumper to Kazakhstan via Mexico, Siberia, Lisbon, Copenhagen, China and Athens but now he’s the resident DJ at Club Mono on Ann Street where you’ll find him behind the decks pumping out funk fuelled underground house music. Friday nights plays host to urban sounds, the Saturday sound is house and Sunday is a mish mash music policy incorporating everything from indie anthems to old skool house classics providing a winning combination for those who like to make the weekend last that little bit longer. “I couldn’t stick to one genre of music at Mono, it would just be boring plus a lot of DJs get stuck playing the same sound over and over and before you know it you’ve been left behind.

So it’s important to take risks with your music”, says Chris. Once a month Zuul rolls into Mono with guest appearances from global DJs. Recently they’ve welcomed an array of talent including Chocolate Puma, David Penn, Seb Fontaine and Bingo Players. When asked about his most-loved track Chris said, “Without a doubt the one tune that’s an all time favourite is Unfinished Symphony by Massive Attack. It may be over a decade old but it’s still amazing”. The 34 year old Belfast based DJ has amassed a vinyl collection of somewhere between 20-30,000 but these days everything is on CDs. “There is such a wealth of musical talent in Northern Ireland from musicians, DJs and producers”, commented Chris, “and probably too many clubs in Belfast for the size of the city but it’s healthy competition and it ensures clubs step up to the mark to deliver a top night out”. Adding another string to his bow Chris Cargo is also a promoter giving this advice to up and coming DJs. “Hassle, pester, knock on doors of clubs, frequent the clubs so you’re a regular recognizable face. Put out mixes of music and more importantly your own music and even look at starting your own night”. CITY7 PROFILE CATCHES UP WITH GAVIN ANNON So Gavin what does a typical day involve Gavin? Being a DJ, music is usually on the agenda. With the charts changing so quickly and new music being released at such a fast rate, I’ve got to ensure I’m fully prepared for the next gig which usually isn’t too far away! I also run a successful DJ Agency called “Atmosphere Agency” so each day I like to visit my clients and organise DJs for each venue. It’s exciting and keeps me busy! Where can we catch you through the week in Belfast? I currently hold a number of residences in some of Belfast’s finest venues including Cafe Vaudeville, Rain Nightclub, Mclub & Club Mono to name a few. I also do guest slots in other hot spots across Northern Ireland. Keep an eye on www.gavinannon.com for all the info. When did it all kick off for you? Where you always into DJ’ing? At the age of 16, and after having an ambition to one day become a DJ, i saved up to purchase my first set of decks. I researched the Internet to teach myself the skills required and also called upon a few other DJs to show me the ropes. 11 years later, I’m still here to tell the tale and very grateful to be in the position I’m in.

What should our readers be listening to in 2012? What are the big tunes in the club at the moment? At the minute, Avicci, Rihanna and LMFAO are still the big peak time anthems. 2012 will definitely be another big year for electronic dance music. Artists such as the Rizzle Kicks, Professor Green & Ed Sheeran are providing a great alternative vibe which goes down a storm amongst students. Your career makes for a full diary, when you get some spare time, how do you like to spend it? If and when I get spare time I try to make the most of it. Usually, I’ll take a trip away somewhere to get the head showered. I find it hard to switch off though so my trusted blackberry is never too far away! Is there anything coming up in Belfast or anything you’re working on at the moment? The entertainment scene in Belfast has rocketed and provided a lot of new opportunities. I am currently working on a few interesting and very exciting projects. FRESHER APPROACH TO CRIME AGAINST STUDENTS Police, working in partnership with the Northern Ireland Office, University of Ulster, Queens University, Stranmillis University College and student unions, are keen to prevent students falling victim to criminal activity. Campus Watch is a campaign designed to offer practical crime prevention advice to students with safety messages being advertised at campuses across Northern Ireland. There are some simple steps that can be taken to avoid becoming a victim:

Personal safety q Don’t leave your drink unattended and never accept a drink from someone that you don’t know. q Don’t get so drunk that you don’t know what you’re doing. q Plan how you’re going to get home. Don’t walk home alone or go back with someone you have just met - stay with friends or use a taxi. q Would you go alone into a stranger’s house at 11am in the morning? No? So why do it at 2am drunk? Arrange to meet new acquaintances when sober. q Keep your bag zipped and held close to you. q Don’t wear headphones late at night - they may stop you being able to hear people around you.

At home q Lock all doors and windows each time you go out. q Use timer switches for lights and make your flat look occupied in the evenings and at the weekends. q Mark your property with the initials of your university and your student ID number.

Vehicle security q Always lock your car and don’t leave any valuables unattended in the vehicle whether it is parked on or off campus. q Where possible, always park your car in a well lit area. Students living off campus should remember that getting on with local residents is important. Neighbours can report suspicious activity when you are away at weekends and during the holidays. In return students should respect the wishes of their neighbours who don’t want to be kept awake half the night with rowdy parties, nor do they want to have their property damaged. Have fun without spoiling it for yourself or others.

My personal favourite though is Howard street, you have modern pin sharp fine dining on the ground floor and a bit of old world upstairs. The tasting menu on the upper floor is our tip for the perfect evening.

SALMON CURRY WITH RICE NOODLES

Delicious salmon curry which is super easy to make. Taken from our cookbook ‘ways with noodles’ You need tablespoon vegetable oil 2 teaspoons finely chopped shallots 2 teaspoons red curry paste * 125ml coconut milk 1 teaspoon muscovado sugar 2 teaspoons fish sauce (nam pla) Zest and juice of 1 lime 1 lime, cut into wedges 2 skinless salmon fillets, each weighing about 100g Small handful of thai basil leaves Small handful of mint leaves 100g wide rice noodles

Curry Paste 10 dried chillies, soaked in hot water and roughly chopped 3cm piece of ginger or galangal root, peeled and finely chopped 2 lemongrass stalks, outer leaves removed, finely chopped Zest of 2 limes 1 tablespoon finely chopped coriander stems 1 tablespoon chopped shallots 1 tablespoon chopped garlic 1 tablespoon light brown sugar Salt and white pepper Vegetable oil

Instructions Heat a saute pan large enough to accomodate the salmon over a medium heat. Add the oil and shallots and cook until soft without colouring for 2 minutes Add the red curry paste and continue to cook for 2 minutes, stirring constantly. Add the coconut milk, sugar, fish sauce and the lime zest and juice. Bring to the boil, reduce to a gentle simmer for 5 minutes. Taste and adjust the seasoning. Ease the salmon fillets into the sauce and gently poach until the fish is cooked, about 8-10 minutes (depending on the thickness). Add the basil and mint. Cook the noodles according to the instructions on the packet and drain immediately. Gently stir the noodles into the pot. Serve with the lime wedges on the side. * pound each ingredient, adding them one after another in a pestle and mortar. Season with salt and pepper and stir in enough oil to form a paste
