Here I am hunched over a keyboard, working to deadlines to get the next cracking issue of 7 out for you. The summer is well and truly here, I’ve seen people in shorts everywhere I go. Whether they be lounging at the beach or stretched out in the park.. With the sun finally being here we’ve plenty to celebrate this issue. For some of you smarty pants all those evenings when you didn’t get drunk will have paid off as you’ll be graduating . Hoorray!! GLASGOWBURY

Glasgowbury, the small festival with a massive heart, is back. And no, it’s not in Scotland. Started by a man with a plan (Paddy Glasgow – hence the name) in the small rural confines of Draperstown – smack bang in the middle of NI, about half way between Belfast and Derry – the first festival started as a charity fundraiser over a decade ago. 12 years later and the festival has grown into Northern Ireland’s best, an award bestowed on the local event at last year’s first ever NI Music Awards – not bad for a small (but massive) festival with competition flying in from the likes of Belsonic and Open House. Glasgowbury is no ordinary festival though. Run by musicians, for musicians it quickly established a need for a showcase event for Northern Ireland’s best new and emerging talent. That new and emerging talent in the early years included acts such as Cashier No. 9, Fighting With Wire, And So I Watch You From Afar – acts who would go on to eventually headline the festival also. The festival also provided the first ever gig for a young, local band by the name of General Fiasco. This year however sees Glasgowbury taking on the might of some of the country’s best talent right now.

The 2012 edition of Glasgowbury will see an exclusive headline performance from NI rock giants Therapy?, an act with over 20 years of touring experience and stunning releases in the form of the iconic Mercury nominated album Troublegum. Glasgowbury 2012 will make history as the first NI headline appearance for the three-piece rock band. Joining them for a fellow NI exclusive will be Derry based electronic threepiece The Japanese Popstars who will take a break from playing some of the world’s largest venues to shake Eagle’s Rock to its core. The full line-up for the event has been announced and includes performances from 52 musical acts – some of who will play their first ever live gig – to those, such as Fighting With Wire, Mojo Fury, Silhouette, Psycatron, RunawayGO, Kowalski, Axis Of LaFaro and Rams’ Pocket Radio who are sure to thrill the Glasgowbury crowd. A total of six stages will house the weekend’s activity including the introduction in 2012 of a Red Bull sponsored Generator stage with some of the country’s most exciting, up and

coming DJ talent. Safe to say then that 12 years down the road and Glasgowbury isn’t just hitting auto-pilot. “Every year is like starting over again, starting afresh,” says organiser Paddy Glasgow. “Glasgowbury exists to provide a professional platform to our homegrown talent and we take pride in being able to offer that. It’s an industryrespected event where we hope some of the acts are viewed by people who can help them with their careers throughout the rest of the year. “This year’s festival feels like one of the strongest yet and it’s a hard job trying to get the balance right but I feel like we’ve hit it and I hope people climb the mountain with us to experience it for themselves.” Small but massive, eh? SNOW PATROL OLYMPICS It was announced in May that snow patrol are going to be performing at the Olympic opening ceremony in London, alongside Duran Duran and Paolo Nutini. I had a feeling that the opening ceremony at the London Olympics was going to be totes gash compared to other countries, especially with these boring bastards playing. They should invent a new Olympic sport where a competitor gets into a bed, and they play them a snow patrol album, and they person who manages to stay awakethe logest gets the gold and goes on to do Ads for Bran Flakes. #SnorePatrol.

SUFTUM During May the Ulster rugby team got through to the final of the Heineken Cup Final. They got fuckin’ chinned, but there was outrage before they even played, that airline companies had put the prices of flights through the roof for people travelling over to England to watch the match. Some of the tickets went right up to around 500 sheets each. Here’s some advice rugby jocks, next time you want to stand up for the Ulster men, stand up in a pub and watch it on TV. #SUIAPAWIOTV. Actually that doesn’t quite work. Just go watch the ball-fondling live.

STENA BABY During may a story came out about a woman who allegedly jumped of a Stenaline boat with a baby as it sailed into Belfast. Turns out she was a just a bit mentally mental, and the baby bit was made up. We all agree that this is totes sad, but at least I know what to do next time I’m trying to smuggle drugs into Scotland and the police get a bit suspicious, I’ll just throw them off the scent by telling them I chucked a baby into the sea, this way they’ll never find the condom filled with “Disco Rennies” I have shoved up my dot.

WILL SMITH SLAP A video came out in may that showed will smith slapping a red carpet reporter who tried to kiss him on the lips at a “Men in Black 3” premiere. You would think after training for the movie “Ali” Will would have learned to throw a punch, instead of creating arguably the most embarrassing moments of his career, second only to “Wild Wild West” – If only that wee flashy dildo from Men in black was real and Will could make everyone forget this ever happened.

STAYIN’ ALIVE This month we got the sad news that disco legends Donna Summer and Robin Gibb both pure Died. Unfortunately I had no time to mourn the death of these two, mainly because Disco music sucks knob, and also, I’m still mourning the death of Hip Hop legend MCA from Beastie Boys. I’ve been crying everyday for a month since MCA Mmmmmmmmmmmmmm DROPPPPPPPPPED! #RIPMACA

BGT There was outrage in May because a dog won Britain’s Got Talent. What was even more impressive was the fact that

she was performing with a dancing terrier called pudsy. I’m surprised she didn’t get sued by “Children in Need” for the dog’s share of the Britain’s Got Talent prize money.

SEPP BLATTERED Fifa boss Sepp Blatter, has called for all penalty shoot-outs to be scrapped. Strangely enough, this idea came around shortly after Chelsea beat Bayern Munich in the Champion’s league final on penalties. This is totes ridiculous, penalties are the only exciting part about football. There’s nothing funnier than watching a match where the teams draw, and then the stronger team on the night having their dreams shattered in penalties. If Blatter is gonnna introduce new rules, I have a couple of suggestions to make football more exciting: 1. If a player takes a shot and misses, he gets shot in the leg. 2. Once a member of the opposing team enters the penalty area, anything goes; you are able to do whatever you want to him to prevent him from scoring. 3. If you make a dangerous tackle on a member of the opposing team, and you are sure you’re going to get sent off, you have ten seconds to do whatever you want to the other player if you think he took a dive. E.g. stamp on his balls.

JUBILEE In early june the Queen celebrated 60 years on the throne or some shit. The jubilee celebration was a time when everyone, no matter what their religion or nationality, became a royalist for the day, just because the queen gave everyone 2 days of work. What people really want though is for her to die, and then we are guaranteed a bank holiday every year!! ….. And if she could die on a Monday, that would be even handier. #RecoveryMondayz

Few people are given the opportunity to influence the lifestyle of the city in which they live, fewer still can be said to have been a positive influence and in Belfast’s case you’ll only need one hand to count the ones who can a leave legacy to their endeavours. Life time achievement awards are as common as award ceremonies these days… and they are legion. However this man has got a full shelf of them for the simple reason that he’s had a life of groundbreaking achievement. It’s not the dry academic kind of achievement (not to be derided) or the fleeting kudos that comes from sport or flash bulb celebrity. His name is another word for a party.. And by fuck if he catches you in the “kitchen at parties”, he’ll bend your ear. Terri Hooley is a local musical institution. Perhaps not as old as the Ulster Hall... doubtless with a smaller organ. However his influence within musical circles on a world stage is impossible to deny. One example of the many we could discuss relates to the Beastie Boys who when visiting Belfast on tour, asked for him by name. Not “who’s that fella who owns the record shop..?” or “yer man who produced teenage kicks” but they wanted to meet Terri Hooley. So meet them he did, they went to the shop bought a few records then nipped out for a few ubiquitous pints, and when they asked him to come to the gig. He declined “coz I always met my mate for a drink on a Thursday...” Don’t get me wrong I’m not billing the Beastie Boys as a seminal act of our time it could be argued

that Mike D may have had the greatest impact in mainstream media consciousness’ with his VW necklace. Let us try for a second clear your mind of distractions and try if you will to imagine how on earth they knew of Belfast music man Terry Hooley. You’ve more chance of scoring Kevin Bacon while playing 6 degrees of separation. To put it in perspective, who was responsible for signing Snow Patrol? You don’t know? Neither do I, who rigged the back line for Stiff Little Fingers?.... I’m not setting a trivia test (answers on a post card to someone else) I’m trying to paint a picture of the man who only asked for £500 when the Undertones got signed. He wasn’t in the business for the money; he needed a vehicle to move the PA & back line for his

other artists when the Undertones got signed. Bear in mind that Teenage Kicks propelled these Derry men into a bidding war within the music industry. That war that won with the inclusion of a signed photo of the Shangri las. A photo that incidentally he didn’t receive until many years later. Further to that they never bought him the van either. In an industry dominated by impresarios, Terri seems totally out of his depth. He’s signed bands for reasons that wouldn’t pass muster in the corporate world of modern music. My favourite being that he fancied a band members girlfriend, I should have asked how that played out. He’s a fan, like everyone else of the “care in the community” styled auditions so familiar from the pop factory shows prevalent at the moment although he


generally loses interest when its gets too serious. When asked how he felt about manufactured groups from talent shows he has no spite or high mindedness “good on them if they’re getting a living and entertaining people, I’m not against wealth I’m against poverty.” Case in point was Terri’s donation of the £3,600 he earned in royalties when covering the Sonny Bono track “Laugh at me”. Recorded in a “Ahoghill chicken shack” they sent the tape off as a joke. It went to No1 on the alternative charts. He was “so embarrassed that they didn’t know what to do with the money so we gave it to Dr Banardos for presents for kids at Christmas “. Gary Lightbody has said that Terry has “lived a life at light speed” which brings us on to the reason why this face as craggy as cave hill has been all over the news recently.

A movie of this life light speed life (Good Vibrations read Maureen Coleman’s review on page 50) has recently been shown to an invited audience at the Ulster Hall and the high praise generated has not been restricted to his home town, word has filtered back that the screening at Cannes for global distributors was a great success. More surprisingly however was the focus group screening to a younger audience in LA who loved it. Perhaps this is testament to Terri and his life, as the best stories invariably rely on a human element. The man himself has seen it twice, the first time he was struggling with a lump in his throat. How many of us would like to watch our lives re enacted on a big screen, a life that like everyone else’s contains the sweetness of success with the bitterness of failures including bankruptcy and divorce.

However he’s looking forward to seeing it again as he says himself it’s getting better each time. There is an optimism driving him at the moment, with an unwillingness to let history be his legacy. There are plans a foot to launch an album recorded 30 years ago with a The Mighty Shamrocks. The master was lost in a bankruptcy case shortly after the album was recorded, however with a twist worthy of Hollywood blockbuster. A digital copy turned up in Portrush; watch this space for details of the launch. Perhaps Homer should start writing the sound track for a sequel, as no one seems to have been able to convince the indomitable Mr Hooley that a movie of your life should contain your life’s work.

Michael: How often you should wash your hair depends on how greasy your scalp is naturally, whether or not you’ve exposed your hair to pollutants like smoke or smog, or if you have been sweating excessively. Believe it or not, frequent shampooing can strip your hair of its natural oils, causing your scalp to over-produce oil. If you’re considering cutting back on shampooing, I would suggest washing once every other day or every three days, using a dry shampoo on off days. You mentioned that you have naturally blonde hair, which indicates a fair complexion. Violet and blue-based reds can sometimes be too strong for pale skin. A medium skin tone allows for more room to play with colours like auburns. Reddish-brown works well with this colouring, while bright coppers or orange-reds will tend to look too drastic and severe. Finally, for olive or Mediterranean skin colouring, stick to cooler reds with hints of violets and blues like a deep burgundy colour. If you’re afraid of making too much of a colour commitment, try a semi-permanent colour in a lighter shade and go darker as you gain confidence in your colour.

MIKE CALLAN Promoter & resident D.j at Eivissa nightclub Belfast So a typical day in the life of Mike Callan - tell us about it. A typical day for me is getting up around 8am &head for the gym, then at 11am I switch my phone on & its all go from there. Every Monday I’m in work all day for meetings, interviews & organising the week ahead, then from Wednesday I’m in the club until Saturday. Most of my time is spent on the phone or on social media. Where do we find you playing at the minute? I only play at Eivissa one night a week now as I had to take a step back from Djing so I could focus on behind the scenes. I play every Friday (Frisky Society) at Eivissa. How did you end up where you are today? With a lot of hard work and a bit of

blagging. At the age of 14 I became a light jock in a club I was working at, then I started collecting music & at the age of 16 I bought my first set of turntables. I was into my house music so I I focused on that. By the age of seventeen I was running my own night in my hometown of Dundalk and it was packed every Saturday as nowhere in the town played house. After that I played gigs in the pod & the system in Dublin. After that like most D.j’s I headed for Ibiza to try for gigs & was lucky to play at Bora Bora. Since then I’ve played in Aiya Napa, New York & Miami.

You have a week off work - what do you do?

You win the lottery. What’s your plan?

I have a lot of music on my ipod ranging from snow patrol to skrillex . The five most played artists on mine are Tinie Tempah, Groove Armada, Swedish House Mafia, Kings Of Leon & Chemical Brothers.

Why have I a week off what happened?? I would definitely spend some quality time with family & friends as they never see me. What’s the plans for the rest of 2012? At the moment organising freshers is at the top of my list & I’m really looking forward to it because it’s going to be amazing. Over the summer I’m promoting two new nights in another club outside of Belfast.

I don’t think I would give up work but I would definitely ease off…. sorry that’s a lie I would move somewhere warm and enjoy myself. I have a list of people who I would look after so be nice to me because you never know.

BELFAST BOOK FESTIVAL 11th - 18th June

This year’s Belfast Book Festival returns with a mix of new writing, star performers, workshops, films, lectures, launches and discussion. As with last year, the Festival will be wide ranging and typify the energy books create when they are read, written and debated. Our belief is that a Book Festival should reflect all readers, and be accessible to all. Saturday 16th June is family day with children’s writers Garrett Carr, Derek Keilty, Liz Weir, Sheena Wilkinson all appearing at the CAC and the new Laureate na nÓg Niamh Sharkey appearing at Eason’s bookshop. For adults there is Malachi O’Doherty at Ormeau Library at 2pm with his new memoir of cycling, health and mortality and English writer Jen Campbell appears at Waterstone’s with her book Weird Things Customers Say in Bookshops. Also first-time writer Alrene Hughes brings her book on Blitz-torn Belfast, Martha’s Girls to Easons. think to date it has to be one from our opening charity night. It was great we raised about 5000 pounds for the Northern Ireland Cancer Fund for Children. One of our great customers parked his ferrari in the middle of St Anne’s Square for photos. We had great weather and everyone was outside enjoying cocktails, our massive BBQ was in full swing, we had Dave Martin doing some of his great swing numbers and The Red Hot Roosters made it a smashing night for everyone. We’re still getting calls and emails about how great it was... HOWEVER the best part of the night for me was watching a slightly intoxicated guest (he’ll know who he is, we don’t even refer to him as a customer anymore, he’s become a great friend)... Chatting up John Lenaghan, who had come in full attire as May McFettridge!!!! It was one of the funniest exchanges I have ever witnessed in all my time behind bars!!!

Club night stalwarts, twitch and isodisco team up to bring a brand new type of night to belfast kicking off with Deep Space Orchestra NiTE JAMS is brand new concept and series of events presenting the very best talent from the worlds of disco, house and techno.

You’ll probably be aware of both nights for their commitment to bringing top notch acts to Belfast over the past few years.

A collaboration between Twitch and isodisco - two of the city’s leading clubnights - this series of special shows held in the Hudson Bar will feature one headline guest presenting two different sets and sides of their music and influences. isodisco will host a discobased presentation of music on the middle floor of the venue, before some peak time house & techno sounds on the club floor with the mighty Twitch. It all kicks off on June 30 with house pioneers DEEP SPACE ORCHESTRA, and continues on the last Saturday of every month.

Since taking up residency at Belfast’s Hudson Bar, the guys have brought in some great acts and had some great nights. They assure us here at 7magazine that this is only the start of some truly special bookings coming up throughout the year. We can’t wait. FRESHER APPROACH TO CRIME AGAINST STUDENTS Police, working in partnership with the Northern Ireland Office, University of Ulster, Queens University, Stranmillis University College and student unions, are keen to prevent students falling victim to criminal activity. Campus Watch is a campaign designed to offer practical crime prevention advice to students with safety messages being advertised at campuses across Northern Ireland. There are some simple steps that can be taken to avoid becoming a victim:

Don’t leave your drink unattended and never accept a drink from someone that you don’t know.

Lock all doors and windows each time you go out.

Always lock your car and don’t leave any valuables unattended in the vehicle whether it is parked on or off campus. Where possible, always park your car in a well lit area.

Don’t get so drunk that you don’t know what you’re doing. Plan how you’re going to get home. Don’t walk home alone or go back with someone you have just met - stay with friends or use a taxi. Would you go alone into a stranger’s house at 11am in the morning? No? So why do it at 2am drunk? Arrange to meet new acquaintances when sober. Keep your bag zipped and held close to you. Don’t wear headphones late at night they may stop you being able to hear people around you.

Use timer switches for lights and make your flat look occupied in the evenings and at the weekends. Mark your property with the initials of your university and your student ID number.

Students living off campus should remember that getting on with local residents is important. Neighbours can report suspicious activity when you are away at weekends and during the holidays. In return students should respect the wishes of their neighbours who don’t want to be kept awake half the night with rowdy parties, nor do they want to have their property damaged. Have fun without spoiling it for yourself or others.

When this happens I tend to do one of two things. One, pretend I am the male equivalent of Rihanna and two; create a fun, exciting, new challenge.

Karen. Confident. Calm. Collected. Beach blown hair swept wherever the gentle breeze takes it. Challenging the very concepts of traditional feminine style as she dons a variety of men’s trends. Sporting such looks way better than half the dudes walking our fair cobbled streets.

In the Woman side of the ring. Karen. A good friend of mine who frequently wears men’s clothing and tailors them to her feminine wardrobe on a daily basis. Why? Because she can.

The weapons of choice then checked shirts, denim washed cardigans, crisp clean white polos, printed T-shirts, Barbour jackets and floral print shirts.

Then came the floral print shirt and Barbour royal blue quilted jacket. A denim shirt by Diesel Jeans complete with my own gold printed jacket and a gold sea-shell medallion necklace. Also known as the MC Hammer look. A look that was both judged, disregarded and scrutinised from the word go. Luckily my opinion is the only one of any true worth. Following this controversial styling I opted for a collegiate/preppy take with a plain white gold eagle emblem polo shirt with my Grandfather’s vintage tweed adding the extra touch. Before closing with a seasonal shot with a simple yet effective print t-shirt and a brown feather trilby. Sleeves rolled up of course. Trilby tilted to the side. Unless your Karen and don’t seem to have a face deserving of a trilby. The end result? Two people defined by their contrasting genitalia. One of which literally doesn’t give a damn in conforming to the systematic rules of society. Preach girl. Looks like the female of the species really is more deadlier than the male.

JASON SHANKEY So my appearance on BBC’s The Apprentice has finally been aired. If you didn’t catch it, the teams were tasked with creating a luxury, but affordable range of products. Team Stirling consisting of Tom Gearing and (the incredibly named) Ricky Martin decided to create a range of Male Grooming products because they’re both into ‘looking good’. When doing their research, the guys came across my Male Grooming business and saw that we launched a luxury, but affordable range of men’s hair and skincare products last year. Result! So, after a quick call to make sure I was in, Tom turned up at my salon in London with Nick Hewer, to quiz me about how to create a product range that would be luxurious but affordable. Now, you probably know that filming is edited down, but Tom must have been in the salon for a good half hour, asking me everything from how I created something unique, to how we make it so affordable. Basically, he extracted my business plan from my brain in

record time! The result? - They won the task. Contrary to what most people think, there’s never been a better time to start a business. Yes, I know the TV and newspapers are banging on about what a poor state the economy is in, but the irony is that bad news sells newspapers. That’s why they do it. There will of course be a transitional period while we shift from an overstaffed civil service to a more balanced economy with more private sector businesses, but this is happening right now. Young Entrepreneurs are seizing the opportunities to create new businesses every day which is why the unemployment figures are now on the turn. But you’re probably asking, how do you start a business in tough times? It’s simple. Just as you would in a buoyant economy, you need to look for the opportunities that exist all around you. You need to create a business where you have something attractive to offer to your potential customers. The rules are exactly the same whether the

economy is good or bad. To give you an example, what would you like a business to offer to you? Would you like someone to open a business which saved you money? Of course you would. What about if you’re a very busy person, and someone created a product or application which saved you a lot of time. Would you buy into this? Yes, of course! There are businesses like these opening every day and becoming very successful. I mean, Martin Lewis just sold his business MoneySavingExpert for something like £87 million! Why? Because it’s great at saving people money and it has loads of customers as a result. Watching The Apprentice can give you an idea of how people can set up a business within a few days, often with just a laptop and a phone. GOOD VIBRATIONS A new movie about the life of punk impresario Terri Hooley could become the most successful film made in Northern Ireland, insiders have predicted. The much-hyped Good Vibrations, which will raise the curtain on this year’s Belfast Film Festival, is already garnering major attention and, according to crew sources who worked on the project, may be the best film ever made here. Funded by BBC Films, the Irish Film Board and Northern Ireland Screen, the indigenous movie stars Lisburn actor Richard Dormer in the role of the record shop owner and godfather of the local 1970s punk scene. During The Troubles, his record shop Good Vibrations became a focal point for the punk movement and Hooley took on the mission of getting many young bands, including The Understones, played to a platform beyond Belfast. Written by Belfast men Glenn Patterson and Colin Carberry and directed by husband and wife team Glenn Leyburn and Lisa Barros D’Sa, the film boasts a strong local cast and crew. It’s been produced by Chris Martin and Andrew Eaton, the soundtrack was provided by DJ/producer David Holmes, and Snow Patrol’s Gary Lightbody, Jonny Quinn and Nathan

Connolly are among the investors. Those who have watched a rough draft of the film, including the three Snow Patrol members, have heaped praise on the project, while crew insiders have described it as “something special”. One source said: “I’ve worked on many films now in Northern Ireland but I’d have to say this is probably the best one so far. I think it’s going to blow everyone away.” Just a few weeks ago friends of Hooley’s were treated to a four-minute teaser of the film, to rapturous applause. And anticipation has been mounting on social networking sites, with posters tweeting their excitement about the forthcoming world premiere at the Ulster Hall on May 31. Producer Martin, one of only a handful of people to have seen the final cut, said: “It’s great that there is such a buzz about Good Vibrations at the moment but we were always expecting people here to be sympathetic towards the story, as they tend to do when it’s a film about Belfast. “The real test will be when we bring it to America, to see if they get the accents and humour. Mind you, we showed it to a group of 18-21-year-old American students and they loved it.” One person who hasn’t seen it yet is

Hooley himself. “I didn’t want to watch the rough cut, I wanted to wait until it was completely ready to go, but I’m hoping they’ll give me a private screening before the premiere, so I don’t cry in public,” he said. “I’m chuffed to bits about it, especially as it’s a nice salute to all those bands. The fact that a movie has been made about me won’t change me at all. I had been planning to wear my ordinary clothes to the premiere, but my girlfriend Claire would kill me.” Hooley said he’s been told by Snow Patrol that the film would make him proud. “Jonny Quinn rang me to say it was brilliant and Gary Lightbody texted to say it was wonderful and that I’d be really proud of it. “Good Vibrations has been a long time in the making. A few years ago we were approached by two different Dublin production companies wanting to make it, but we wanted a Northern Irish company to do it. Through the looking glass we peer at this months new libation Apparently Long awaited in the UK hmmm and with a big following in the USA give it up for ‘Jack Daniel’s Tennessee Honey Whiskey Liqueur at 35% ABV’. First off, I must declare I am a serious whiskey drinker so it could be considered dangerous ground to present a flavoured whiskey for review to a man whose preference is big bourbons, few blends and yet fewer single malts but everything deserves a chance so lets drink. With any new product especially a flavoured spirit of any kind I have always adopted a process always asking why? Is there a need? What’s its purpose, the architecture of its design and ultimately its market intention? Like the influx of flavoured vodka in the late 90’s and early naughties not all of which where received well or succeeded so why flavour a Jack Daniels the synonymous rock n roll

whiskey brand? Well down to brass tact’s it is simply a combination of regular Old No 7 and a sort of spiced honey liqueur. There’s all the usual that you would expect from our old friend, hints of vanilla, oak and cherry though seemingly the prominent chocolate notes once present are now replaced with the wildness of honey which is far from timid. But to be fair it has nice & floral airs of honey smooth and warm but not too sweet considering its ABV. Oh and guess what I found the chocolate notes and some slight spice on the finish though subtle, they are there. This hasn’t been designed in mind of the whiskey aficionado but as an introduction for those new to the world of whiskey particularly women. It can be drank neat or mixed but definitely best over ice as the dilution helps a lot. It isn’t bold or brave but it is quite pleasant and probably the best honey whiskey liqueur to come out of the states.


MICHAEL STEWART Michael Stewart is founder and proprietor of The Bar Czar Consulting and is coproprietor of The Hudson Bar, Gresham St. I am tempted to say, “It’s whiskey Jim but not as we know it, not as we know it”, there- I just said it! Jack Daniel would probably be turning in his grave at the mere thought of someone messing around with his old No 7 original recipe. Perish the thought of adding honey and reducing the alcohol content to 35%abv. The 365 employees of Jack Daniels, Lynchburg, Tennessee have developed an elixir that could quite possibly break the mould for all the non-whiskey drinkers, like me, out there. It could be the bridge to a drinks category that some folk in the past just would never have ventured into. Like flavoured vodkas and rums, it is a sign of the times and we have to realise that times are a changin’ and we have to adapt with that change or stagnate. Whiskey would not be at the top of the list for me when it comes to favourite drinks but you don’t have to like

something to appreciate its merits. On the palate it is a superbly smooth, mellow experience with overtones of honey, cinnamon, toffee, Christmas pudding and vanilla all flooding through to a final finish with surprisingly little in the way of after burn. A perfect marriage of whiskey and honey. Take as a shot or sipping over ice, I liked it long with lemonade but is equally as delicious with ginger beer. This is likely to appeal to all those, especially women, who have never ventured into the whiskey maze and we await with anticipation the concoctions our bartenders and chefs will develop. Is the Honeybomb, (Tennessee Honey and Red Bull) just around the corner, who knows? A little bit of honey and a whole lot of Jack, there will certainly be a HIVE of excitement when this product hits the shelves.

WAGAMAMA RECIPE MARINATED DUCK SALAD a tasty summer salad taken from our cookbook ‘ways with noodles’ (serves 2) you need: 1 teaspoon rice vinegar 1 teaspoon honey 1 teaspoon soy sauce 1 duck breast, sliced on a diagonal 1 tablespoon vegetable oil 200g somen noodles bunch of spring onions, sliced lengthways 1/2 cucumber, deseeded and julienned 1 carrot, julienned 2 tablespoons hoisin sauce salt and white pepper 2 teaspoons seasame seeds, briefly toasted in a hot, dry frying pan

instructions: combine the marinade ingredients in a small pan with 100ml cold water, bring to the boil and remove from the heat a soon as the honey has melted. allow to cool completely and pour over the duck slices. toss gently and set aside for 1 hour; overnight in the fridge is even better pour the marinade off the duck and discard. heat the oil in a hot wok and stir fry the duck for 3-4 minutes until cooked. set aside cook the noodles according to the instructions on the packet, drain and refresh under the cold water

combine the noodles with the spring onions, cucumber, carrot and hoisin sauce in a large bowl. add the duck and toss everything gently so it is well mixed and coated. season to taste with salt and pepper serve topped with the sesame seeds
