Resident Spa Sleuth, Cathy Martin pays a visit to Aura Day Spa. Christmas is a-coming, and this old goose is getting fat! Well, I would be if I gave in to every mince pie and rich canapé which is already being passed under my nose. Willpower is a wonderful thing, but for those of us who are on the naughty list when it comes to indulgence, we need an extra hand to squeeze into the seasonal party dress and thankfully, there are a range of treatments out there to help us to do so. This month I popped in to Aura Day Spa on Belfast’s Lisburn Road to test-drive Ionithermie. And within half an hour I’d lost an inch off my hips and half an inch off my waist - which beats a heavy Christmas lunch any day for the best way to spend lunchtime! Like most people, I am always on the lookout for treatments offering quick, visible and corrective results to achieve a desirable shape without the need for invasive surgery. With a reputation built over the past two decades, Ionithermie offers high performance, resultsdriven slimming and contouring treatments which still remain the No.1 choice both in the UK and on board luxury cruise liners. For this review I chose a one-off treatment, but the specialists at 14

Showcasing unique and experimental catwalk creations formed and manufactured from recycled and ethical materials only. A bold choice from an industry that goes hand in hand with words such as luxury, opulence and prestige on a daily basis. One man who knows all about the majestic and lavish opportunities of high-end, high fashion society is creative director, hair stylist and session stylist Connor Kerr, who recently swapped clippers and hairspray for magnificent tropical islands and spectacular oceanic views. Having spent the last few months travelling through the Singapore, Philippines and 20

Malaysia and the Bornean rainforest, and planning to continue on to the rest of Asia before the rest of the world, Connor is currently volunteering and interning with Indosole, a brand that showcases ‘soles with soul’. Stocking ethically sourced shoes and sandals for both women and men in a variety of over twelve locations worldwide. A project which began with a single pair of odd and unusual sandals, creating a product that was both fashionable and functional. Offering the most organic, chemical free and environmentally friendly production process, re-imaging and redefining waste and transforming it into something purposeful. Using only local resources and animal free materials, the Indosole

dream is to provide fashionable footwear that not only eliminates waste but invigorates and gives it in a trend savvy resurrection. Connor commented,

clothing market was once a hideous experience. Fabrics were dull and often product was lagging seasons behind. Now it seems much more fashion orientated. The lower cost and increased selection of organic dyes has improved greatly alongside the quality of the ethical fashion produced.’ Be it at home here in Belfast or off shore in Bali, whatever the weather, the words reduce, reuse and recycle are slowly but surely injecting themselves into the adventurous vocabulary of the fashionable world. Film Review: Philomena

What’s It About?

The true story of Philomena Lee, whose three-year-old son was given up for adoption in 1950s Ireland by a church-run home for unmarried mothers. Fifty years later, she and journalist Martin Sixsmith begin the search for her long-lost child.

Review

Director Stephen Frears and star Judi Dench are fairly reliable indicators of quality cinema: Dench, in particular, could probably turn a dramatic reading of the Yellow Pages into the unexpected sleeper hit of the year. It’s fortunate for Philomena, then, that she’s on board, since there are times when it’s really only her screen presence that lifts the film from bland, Movieof-the-Week sentimentality. It’s not that it’s bad, as such — 22

just slightly forgettable, playing it safe with a host of cinematic cliches when you wish it would take a few risks, maybe shout a bit louder and make its voice heard. It deals with important stuff, and the narrative treats this with the weight it deserves — it’s only that it looks a bit like every other film we’ve seen on the subject, and, with the calibre of cast attached, this feels like an opportunity missed. And, while Dench plays Lee with heartbreaking pathos, her relationship with Steve Coogan’s Sixsmith is often played for comic relief in a way that feels uncomfortably close to intellectual snobbery: he’s the urbane, lapsed-Catholic Oxbridge alumnus with the glittering career; she’s the dippy Irish dame who can’t tell the difference between a joke and a painful personal

anecdote, who gets excited about croutons, and who chatters obliviously about her trashy romance novel to an entirely uninterested captive audience of one. She comes off a little better by the closing scenes, but it’s an uneven journey to get there. That’s not to say that the movie doesn’t have its moments of profound emotional impact — the visits to Roscrea may feel like generic Big Bad Church, but the Hi-8 montages of Antony’s life are spellbinding, and demonstrate Frears’ gift for mixing sound and image to moving effect. And good luck finding a dry eye in the house during the scene where Philomena finally finds the son she’s been seeking for fifty years. It might not win any awards for originality or daring, but Philomena’s a little movie with a big heart — and it’s mostly in the right place.

Spa Sleuth Parisian Perfect Belfast beauty lovers are set to share in the secret to perfect Parisian skin, as The Spa at The Merchant Hotel welcomes luxury French skincare brand, Darphin. I was in the zone in no time.

The facial began with a Refreshing Cleansing Milk to clean my skin. Next, the therapist used a Refreshing Toner to help balance the pH of my face and a Mild Aroma Peeling Mask as a means of exfoliation. Then, while using one of my favourite products, the kiwi mask, I received a fantastic foot massage. I have to admit I did nod off at this point! The treatment took around 30 minutes to carry out; and the only downside is that it is very slightly uncomfortable, but very bearable and actually a little tickly in some places, particularly around the nose. Afterwards Judith applied the correct aftercare product and gave me the same product to take and use at home. I felt that I looked slightly pink immediately after but this quickly subsided, leaving my skin really smooth, very fresh and revived. You can apply make up just a few hours after your treatment, which can’t happen in a lot of similar treatments. The skin starts healing immediately and you could notice a difference

after one treatment, however, it is recommend that you take a six week course, which consists of one or two treatments per week. And the results? I have to say, they were truly amazing! I noticed a big difference – and even more so the following morning after I’d applied the take-home cream before bed. Judith even went over a patch of eczema on my skin and it was fine. In fact it possibly helped I think! I liked it so much I booked in for another four treatments and the overall impact was great – I definitely felt like my skin had lost that lacklustre look and was more dewy and fresh. On Saturday 23rd November the Rita Duffy Suite in The Merchant Hotel transformed into a bridal wonderland with the stunning 2014 wedding dress collection from worldrenowned designer Ian Stuart on display. Models worked the room in the stunning gowns while guests feasted on the delicious Merchant afternoon tea and awed over the dazzling creations. Organised by Blush Boutique on the Lisburn Road, this unique event was a first for Ireland and brides-to-be were 54

left full of ideas and stuck for words on the choice of gowns on display. Inside the Turner Prize Award ceremony, by local art consultant, carrie neely The Turner Prize has always been the subject of passionate debate on the subject of Contemporary Art since being established by the Tate Gallery’s Patrons in 1984, and I don’t think the Tate predicted how much art is in heart of Derry/Londonderry. The UK’s first City of Culture embraced the Turner Prize and people flocked in droves to get their sketches on the wall of David Shrigley’s gallery, and happily discussed the current market in exchange for two quid in Tino Sehgal’s room. White eyes were locked on Lynette Yiadom-Boakye’s stunning portraits depicting black figures painted on dark back-ground’s 56

swaddled in low lighting, and visitors laughed and cried Laure Prouvost’s though provoking installation from childhood memories of her Grandmother and her Grandfather. ‘Legenderry’ certainly lived up to its new nickname to play host to this years’ Turner Prize Award Ceremony, and was attended by a host of big name artists, celebrities, Journalists and curators (and me). I am not an art critic, and as there will be so many articles written on the serious side of this year’s Turner Prize and the exhibition , I thought I would leave that to the real professionals and give you some insider info on the evening itself.

As myself and my pal, artist Christine Trueman arrived at the award ceremony to lots of smoke and lights, we bumped into Micky Bradley from the Undertones who gave us the details of the after party (very important information). After a quick search for Lauren Laverne, we realised that the televised panel was on the stage behind us, so being in the background meant we could do some serious stalking over a few glasses of Pol Rogers Champagne. I was lucky enough to get a brief chat with Sir Nicholas Serota, Director of the Tate after Sugar Cube Sculptor Brendan Jamison Photo-bombed me with him in

the background. I then bumped into my old Intern from my London Gallery days, Emer Grant who introduced me to 2007 Turner Prize winner Mark Wallinger. Christine spotted Ana Matronic from Scissor Scissors, and I was delighted when she admired my nails! Our next stop was to say good luck to Turner Prize Nominee David Shrigley, a very tall and very lovely chap who commented on my arty phone cover when we asked for a quick pic. Sculptor Maurice Harron was on great form and is passionate about creating a long lasting relationship with the Tate in Derry/Londonderry. There was an air of excitement

as actress Saoirse Ronan take to the stage to announce the worthy Winner, French artist Laure Prouvost who made a short but emotional speech as Saoirse rushed back stage to bring the artists baby daughter on stage! “I’m not ready, I didn’t expect to win at all – I was sure it was not me. So thank-you everybody”. After the announcement we headed to the first after-party in Sandino’s where I had a great chat with musician Frank Gallagher, who to my surprise new my late granddad Charlie Gallagher. On then to the City Hotel where all the artists were staying for a night-cap. Some serious art debate was had

with Belfast born Director of the Walsall Gallery Stephen Snoddy in the wee hours. My last memory was standing outside the hotel with Mark Wallinger and someone coming up to him and asking if he was an artist. He said yes, and the chap said ‘did you do that big boat?’ Wallinger said no. We all laughed, and Christine and I got in a cab back to the delightful Caw Cottage B&B were two paracetamols and a glass of water each were kindly awaiting us. The Turner Prize Ceremony 2013 is certainly one night I will never forget.

Festive Fayre

SPAR is focusing on a very local Christmas this year and is encouraging families to get creative with succulent fresh ingredients sourced from close to home. Here are a few delicious recipes created by local chef Paula McIntyre to whet your appetite.

Smoked salmon on mini wheaten scone with pickled cucumber, lemon and dill mayo For the mini wheaten scones: 250g wholemeal flour 50g porridge oats 35g brown sugar Pinch salt 75g self-raising flour 1 and ½ tsp baking soda 40g butter 1 tbsp treacle 325ml buttermilk

Set oven to 220ºC. Place the flours, oats, sugar, salt and soda in a bowl and mix. Melt the butter and 64

treacle and cool. Make a well in the centre of the dry ingredients and add the buttermilk and treacle mix. Mix to a smooth dough. Place on floured surface and pat out to 1cm thick. Cut out small scones and place on a baking tray. Bake for 5 minutes then lower the heat to 140ºC and cook for 15 minutes or until the scones sound hollow when tapped. For the pickled cucumber: 1 cucumber 75ml cider vinegar 50g sugar 1 tsp salt 1 tsp mustard seeds ½ tsp turmeric

Boil the vinegar, sugar, salt, mustard seeds and turmeric until the sugar has dissolved. Cool. Split the cucumber lengthwise and scoop out the seeds. Slice in half and then slice thinly. Place in a bowl with pickling liquor and leave for 30 minutes. For the lemon and dill mayo: Zest and juice 1 lemon 100ml mayonnaise 1 tsp Dijon mustard 1 tbsp chopped dill.

Mix together. Split the scones, top with smoked salmon then the pickle and a dollop of the mayo.

Brisket on a tortilla crisp with pickled red onions and smoked chilli crema For the brisket, tortilla crisps and picked red onions: 1 McAtamney’s cook in a bag brisket, cooked and shredded (available at SPAR and EUROSPAR stores) 4 soft flour tortillas 4 small red onions 50ml cider vinegar 1 tbsp castor sugar Pinch salt

Set oven to 200ºC.Cut the tortillas into bite size triangles. Place on baking trays and bake until crisp and golden - about 5 minutes. Peel and slice the red onions as thinly as you can. Mix in the vinegar, sugar and salt and leave for 15 minutes. For the smoked chilli crema: 200ml sour cream Zest 1 lime 1 tsp sweet smoked paprika 1 tbsp ketchup

Whisk together. Top a tortilla crisp with a small pile of the brisket, top with pickled onions and a dollop of the crema and a piece of coriander to garnish.

Spiced Apple glazed gammon with apple thyme stuffing balls For the gammon: 1kg gammon boiled, skin removed and fat scored 200ml apple juice 50g brown sugar 4 cloves ½ cinnamon stick

1 star anise 2 tbsp maple syrup

Set oven to 180ºC. Boil the apple juice, sugar, spices and maple syrup to a thick syrup. Brush some over the fat of the gammon and place in oven. Brush every 5 minutes with the glaze until the gammon is glistening and golden - about 20 minutes. For the apple thyme stuffing balls: 400g sausage meat 1 small onion, peeled and chopped 2 red apples, peeled, cored and chopped into ½ cm pieces 1 tbsp picked thyme leaves 100g breadcrumbs 50g butter

Cook the onion and apple in the butter until soft and golden. Place in a bowl and cool. Mix in the sausage meat, breadcrumbs and thyme. Roll into walnut sized balls and place on a lightly buttered baking dish. Bake in a preheated 180ºC oven for 20 minutes or cook alongside the ham as you glaze. 65

Ginger Puddings with white chocolate sauce, Grand Marnier candied clementines For the ginger puddings: 150g soft butter 155g brown sugar 2 rounds preserved ginger, chopped 1 egg 1 tbsp golden syrup 150g self-raising flour 80ml milk

Set oven to 180ยบC. Brush 4 pudding dishes with butter. Beat the butter and sugar until pale 66

and fluffy. Add the egg, syrup and ginger. Fold in the flour and milk in batches until combined. Divide into prepared dishes and bake for 25 minutes or until an inserted skewer comes out clean. Cool for 5 minutes before turning out of dishes. For the white chocolate sauce: 200ml double cream 150g chopped white chocolate Zest 2 clementines

Boil the cream and zest. Remove from heat and stir in the chocolate.

For the Grand Marnier candied clementines: 4 clementines, peeled and sliced in 3 100g castor sugar 2 tbsp water 50ml Grandmarnier

Place the Clementine slices in a dish. Place the sugar and water in a pan and cook on a high heat until golden amber - do not stir. Carefully add the Grand Marnier. Pour over the clementines.
