Reality Bites Hailing from Glengormley, Andrea Magee may not have made it to the live shows, but she’s got the X-Factor in our eyes.

Making it to the final six in the Overs category of this year’s X-Factor has made Andrea Magee a household name here in Northern Ireland and further afield. The 28-year-old musician has always been passionate about her music but the sensible side of her personality took her down the path of teaching as a backup to her desire to perform. ‘I always knew I wanted to perform,’ explains Andrea. However, getting a teaching degree allowed me to do what I love, but also gave me a security blanket for venturing down a fickle path. I know it’s not easy to establish a music career, but I feel it’s time for me to leave teaching behind and take the plunge.’ Take the plunge she did, when in May she auditioned for the X-Factor, getting through to bootcamp and then on to judges houses thanks to her rendition of River Deep Mountain High by Tina Turner which won Andrea the last free seat on stage in the Over 25s category - a seat she held on to even though others eventually lost theirs in this year’s torturous seat challenge. After her audition Gary Barlow had high praise for the music teacher, telling his fellow panelists, ‘She's different from everybody else.’ Andrea was different, not only because of her musical talent, but as she tells us she also wasn’t prepared to divulge details of her private life.

‘I know the format of X-Factor and was wary of venturing down the route of reality TV because I didn’t want to share my private life on the show. It’s not that I don’t have a story, everyone has a story, but it’s not what it should be about. I wanted my music to speak for itself,’ says Andrea. ‘I was approached by talent scouts and invited to audition. I know there is a lot of negativity from musicians in the industry towards reality shows, but I decided to give it a go because I had just finished teaching to embark on my music career, so I put my album on hold to see what the X-Factor had to offer.’ ‘I was an eye-opening experience which had its positives and negatives. For me, performing in front of the crowd at Wembley and

getting a standing ovation was amazing, as was staying in Sharon Osbourne’s L.A home and meeting Robbie Williams, but negatively the edits of this performance and my other appearances on the show were disappointing.’ ‘That said, I love how the people from Northern Ireland get behind their on and they have really shown their support on my recent visits home to perform. I did a gig at the Belfast Met and all the young people that turned up were so enthusiastic about my music, which really means a lot.’ ‘As I’ve said before, the edits were disappointing and I don’t want people to just associate me with that final edit at Sharon’s house and the cracked note. While I am grateful for the platform that the X-Factor has given me, I now intend to

forge on with my debut album which I had put on hold during my time on the show. I am not striving to be a massive popstar, the whole fame thing

scares me to be honest, but I do know that I want to be on stage performing my music and that people will like what I have for them to listen to.

Who can enter?

The competition is open to girls from Ireland, North and South, aged 16-26 on 5th April 2014. There are no height restrictions for this competition. NonIrish girls resident in Ireland for 4 years or more can also enter and anyone under 18 years of age will have to have a parent’s permission. We must stress that this is not a beauty pageant – models need to show their personality and maybe a wee bit of “attitude”. Natural beauty is good.

TOP MODEL WORLWIDE IRELAND is an all-Ireland model search competition that has been officially licensed from TOP MODEL UK / TOP MODEL WORLDWIDE. Since the first prize is a guaranteed place in the Top Model Worldwide Grand Final to be held in the London, April 2014, this is a fantastic opportunity for aspiring models to fast-track into the London Fashion scene. The competition is being run by Lurgan Photographer - Avril Mawhinney and Claudia Farrell, also from Lurgan. Claudia was a contestant in last year’s TOP

MODEL UK finals and was so impressed with the experience that she decided to join with Avril to stage this year’s allIreland competition. Avril runs Finesse Photography and Finesse School of Modelling. She has been associated with TOP MODEL UK for about 8 years had the honour to be a judge at the TOP MODEL WORLDWIDE 2012 final.

So where and when is this all happening?

The competition is being staged in Brownlow House / Lurgan Castle on 22nd November. Since it’s a fashion / modelling event, we would like this to be a Black Tie event

High Cholesterol Northern Ireland’s Lady Killer

Raising awareness during National Cholesterol Week.

“High Cholesterol?” asks Rosemary, a fit, middle aged non-smoking tee-totaler, “Why should I be worried about that?” What Rosemary didn’t know, is that if it is allowed to increase over time, Cholesterol can cause narrowing of the blood vessels, leading to heart disease and stroke. According to the department of health, these circulatory conditions accounted for almost a third of all deaths in Northern Ireland in the last year – and they’re not the sole province of the chain smoking, fry eating, obese male; in fact, during 2012 stroke killed more women here than men. So just what is cholesterol and where does it come from? Cholesterol is a rather

unpleasant sticky yellow substance, manufactured by the body. It is often found in the foods we eat, mainly in saturated fats from animals. Although it is much maligned, at the right levels, it is actually a good thing! Cholesterol is vital for a range of functions in the body including the metabolism, production of hormones and cardiovascular health, but it is when levels rise that cholesterol becomes a problem, furring up the blood vessels, and Rosemary Cross didn’t know just how high her cholesterol was, until she had a health check: “I had my health profiled as part of a corporate package through the family business. I honestly didn’t think anything was wrong with me”, admits

Rosemary, “I wasn’t entirely happy with my weight, but show me a woman who is? I keep active – running after the grandchildren and I eat quite healthily, so I thought I was ok.” After just one simple blood test, the medics at Randox Health discovered that the Lisburn housewife’s cholesterol was very high. Dr Gary Smyth, GP at Randox Health said it was concerning: “Cholesterol is measured in millimoles per litre of blood, anything over 5 mmol/L is high, and Mrs Cross’s level was close to ten mmol/L...one of the highest readings we have taken. We looked into this further and found that her level of LDL, the bad component of cholesterol, was also very high, putting Mrs Cross at real risk of suffering a blockage in the blood vessels which can be fatal.” “The results were a real wakeup call” says Rosemary, who immediately decided to take action, “I wanted to change this, to reduce my risk of stroke and heart disease so I can be around for my grandchildren, so I went straight to my doctor. He told me to change my diet. It has been six weeks since the health check, I’ve lost half a stone, with half a stone to go, I’m out walking on the Tow Path at least once a day! I am feeling great! During National Cholesterol Week I’d encourage people to take a test…It is just so important.” Rosemary has been cutting down on saturated fat and eating lots of fruit, vegetables and whole grain cereals, but there could be more to her elevated levels than diet… Rosemary’s two daughters and Click here to continue this article

Peel skin off the mackerel and blitz in food processor with the rest of the ingredients, until you have a fine puree. Season with salt and pepper and put in fridge to set for an hour. Serve with hot toast and pickles.

Roast Loin of Pork with Gravy & Apple Sauce WHAT YOU’LL NEED • 1.5kg of pork serves 6 – make sure it has the skin on! Get the butcher to score the skin of the meat in parallel lines and tie it. • Season with vegetable oil, salt and black pepper. Cook on a rack over a roasting tray in the oven at 230c for the first 10-15 mins to get the crackling started, then turn down to 185c and cook for around 25 mins per 500 grams. • The juices should run clear when the meat is cooked. Allow the roast to rest for 10 mins with foil over it before carving.

Gravy • 2 tbsps flour • 500ml chicken stock

WHAT YOU’LL NEED • 340g smoked mackerel • 200g cream cheese • 1 tsp chilli powder

Method

Drain the excess fat off the roasting tray, leaving the roasted sediment and a little fat. Sprinkle in the flour and cook over a gentle heat for a few minutes, while stirring. Mix in the stock slowly, to avoid lumps. Simmer for 5 mins and season to taste.

Apple Sauce • 2 large Bramley apples, peeled, cored and cut into chunks • 2 tbsps caster sugar • 2 tbsps water

Method

Put all ingredients in a sauce pan and cook over a gentle heat until the apple breaks down. Blitz with a hand held liquidiser to a smooth puree.

WHAT YOU’LL NEED • Leg of Lamb (on the bone) • 3 garlic cloves cut into slivers • Fresh or dried rosemary • Oven at 180c.

With a small sharp knife make a series of incisions in the leg of lamb, pushing a sliver of garlic and a sprig of fresh rosemary into each one. If you have dried rosemary rub the surface of the meat with vegetable oil and sprinkle the rosemary on top. Season with salt and black pepper. The average leg of spring lamb should take about 1 hour and 15 mins to cook - longer if you like it well done. The gravy is made in the same way as the pork, but use lamb or beef stock. Serve with mint sauce and potatoes.

Boulangere Potatoes • 8 medium white potatoes peeled and thinly sliced • 2 medium onions peeled and sliced • 3 cloves garlic crushed

• Salt and pepper • 500ml beef or chicken stock • 1 tablespoon of mixed herbs • Butter Method

Make layers of potatoes, onion, garlic and mixed herbs in an ovenproof dish, seasoning each layer with salt and pepper, ending with a potato layer on top. Pour on the boiling stock to just below the surface. Dot the tops of the potato with knobs of butter and

bake in the oven for about an hour, or until cooked through and golden brown on top.

DESSERT

Sticky Banana, Banana Sponge Serves 6

WHAT YOU’LL NEED • 125g plain flour • Pinch of salt • 3 tsps baking powder

Put all syrup ingredients into a saucepan and bring to the boil, making sure all the sugar is dissolved. Method for sponge.

Set oven to 180c. Sift the flour, salt and baking powder into a bowl. Add the sugar, mashed banana, milk, melted butter, egg and vanilla and whisk until well combined. Sticky Banana, Banana Sponge

• 120g caster sugar • 2 bananas - 1 mashed for the mix, 1 sliced for the dish • 70g dried Cavendish bananas chopped into ½ inch pieces • 200ml milk • 1 beaten egg • 1 tsp vanilla essence • 85g of butter melted

SYRUP • 150g soft brown sugar • 4 tbsps golden syrup • 50ml boiling water

Put the sliced fresh banana and the dried banana into a buttered Pyrex dish that needs to be about 6 inches deep, then pour the sponge batter on top. Now pour the syrup over the top of the sponge mixture and bake for 30/40 mins until golden in colour and firm to the touch. Can also be made in single serving containers. Serve with cream or ice cream.

Film Review: Diana What’s It About? Biopic of Diana, Princess of Wales, that follows her relationship with heart surgeon Hasnat Khan. Question: what would you do if, on your very first date, the object of your affections turned down your home-cooked meal in favour of a Big Mac, which he then proceeded to eat in front of you? Answer: immediately begin a two-year relationship with him and start demanding that he marry you. At least, that is, according to Diana. To be fair, the movie has already gone to some lengths to establish the late People’s Princess as a borderline bunnyboiler prepared to change herself, chameleon-like, to match the interests of the man not quite in her life: the home cooked meal has been prepared by her friend Sonia and heated in the microwave in order to dupe Hasnat into thinking Diana's a culinary goddess; she's purchased a copy of Gray's Anatomy in order to read up on his specialty; and she's made herself enjoy jazz so that she can impress him. And this is just the prelude to some serious stalking when he tries to call things off. Based on Kate Snell’s 2000 book, Diana: Her Last Love, the movie’s actually at its best when it veers away from all things romantic (never a good sign for a love story) and shows us the Diana behind

the iconic images of her life: crossing a minefield in Africa or preparing for that infamous Bashir interview. It’s not the most flattering of portraits, perhaps, but the picture it paints is of a woman attempting to take charge of her public image and — just possibly — her life. Unfortunately, the film goes out of its way to imply that Diana’s successful media ventures are the result of listening to male advice, her failures the result of trying to use her pretty head for actual thinking. It’s a

depressingly retrogressive look that turns her into a vacuous, slightly unhinged attentionseeker whose driving imperative is how to impress her guy. Maybe it’s true, maybe it isn’t — the source text continues to divide opinion. The point is that there were any number of different stories that could have been told about Diana, and the fact that this one made it to the big screen — painful dialogue intact — says more about the folks who make movies than the woman they’ve chosen to portray.

Not just curries and naan bread!

Bengal Brasserie, Lisburn Road Entering up an opulently decorated flight of stairs and into a beautifully decadent dining room, the experience of eating in Bengal Brasserie began before we even sat down. The lush fragrance of delicate spices mingled subtly with ceiling art, flower arrangements and ornaments that made one feel like you were entering a modern day Eastern Palace. The service was incredible and within minutes of sitting down our waiter had recommended a beautiful Chilean Sauvignon Blanc called Neftali after asking us what our general food preferences were and what we would be ordering. I was slightly sceptical about ordering wine with spicy food, feeling it would somewhat be too much and I am accustomed to having several large jugs of

water to go with my Vindaloo as opposed to anything more sophisticated. However this wine enhanced the different flavour elements in the food and was really smooth yet fresh. There was no need for water at any time during the meal. We sampled a range of dishes from mild to positively flaming and this combination of spice levels acted as a self balancer, bringing our taste buds on a culinary journey demonstrating how the cuisine of the East is as diverse as the region itself. It really was quite exciting to try all the different flavours and for this reason I would without a doubt recommend the mixed tapas to share for starters, in total it combined six small plates. The first plate was a lamb dish. In this dish the distinctly mild flavours of lamb enter a

new dimension amongst the rich yet delicate marinade and sauce of spices and tomatoes. Again we see the palate hit at different stages with a sweetness sourness and spice, yet retaining a distinct earthy flavour created by the fresh ginger, garlic chill and coriander accompanying the tikka marinated lamb. There were also breaded King Prawns that were delicate but revved up by the accompanying tamarind-esque dipping sauce. Lightly spiced vegetables in a wonderfully textured FILO pastry and the minature onion Bhajees retained their fresh onion taste despite carrying through the spices. Primo Gusto Hillsborough’s hidden gem

Prior to my visit I had heard great things about Primo Gusto’s lunch and breakfast dishes so naturally I was very excited to try their evening menu – and I was not disappointed. The Restaurant has a chic modern feel about it and it would not have looked out of place in London or New York – surprising considering it has a relatively isolated location just outside of Hillsborough. The menu had a rustic charm about it yet a sophisticated edge offering dishes such as lamb shank and belly pork. The wine list is modest but extremely reasonably priced – around £13

for a nice bottle of Pinot Grigio. Due to its location, however we were driving so decided to stick with a soft beverage. For starter we went for the Prawn and Chorizo risotto and the Goats Cheese and Beetroot Salad. Both of which were wonderfully flavoured. The Goats Cheese and beetroot complimented each other perfectly, the leaves were well dressed and the wheaten bread croutons added an earthy bite to the creamy goats cheese and sweet beetroot. As for the Prawn and Chorizo risotto I was sold before I even tried it! The dish had an element of Spain about it, nodding towards

punchy paella yet the flavours were subtle and delicate giving it an Italian twist. The portion sizes were more than generous and one starter would have been ample between two of us. For main I decided to go for the steak – and my oh my what a steak it was. I’m pretty sure it was larger than my face. It was cooked medium and the onion rings that accompanied it were the star of the plate – crisp, large and perfectly seasoned the were the nicest onion rings I’ve had to date. The pepper sauce was creamy and rich and together the accompaniments of the dish made for a gorgeous steak dinner. Finely grate over the zest of half a lemon, then squeeze in a little juice. Toss to mix then put the pan on a medium low heat. Simmer gently for 5 minutes or until the apples are just tender. Remove from the heat and allow to cool completely

Jamie Oliver’s Apple Pie An all-time classic dessert, apple pie is perfect at this time of year. Serves 6 I ngredients, for the pastry

•2 50g plain flour, plus extra for dusting •5 0g icing sugar •S ea salt •1 lemon •1 25g cold butter, plus extra for greasing •1 large egg, preferably freerange or organic •A splash of milk for the filling

•1 large Bramley cooking apple •4 eating apples (try Cox’s or Braeburn) •3 tablespoons Demerara or muscovado sugar •½ teaspoon ground ginger •A handful of sultanas or raisins •½ a lemon

To Make Your Pastry Preheat the oven to 180ºC/350ºF/ gas 4 . You can make your pastry by hand, or pulse it in a food processor. From a height, sieve your flour into a large mixing bowl. Add the sugar, a pinch of salt, and finely grate over the zest of the lemon. Cut the butter into cubes, then add to the bowl. Use your fingertips to gently work the butter into the flour and sugar until the mixture resembles breadcrumbs. Crack the egg into the bowl with a tiny drop of milk and gently mix with your hands until the dough comes together. Wrap it in clingfilm and pop in the fridge to rest while you make the filling To Make The Filling Use a speed peeler to peel all of your apples. Cut the Bramley apple

To Make & Cook Your Pie Dust a clean work surface and rolling pin with flour. Divide your pastry dough into two and roll out one half until ½cm thick. Carefully roll your pastry around the rolling pin, then unroll it carefully over a 20cm pie dish. Ease the pastry into the dish, making sure you push it into all the sides. Don’t worry if it tears or breaks – just patch it up – it will look nice and rustic. Pack the apple mix tightly into the pie dish. Separate your remaining egg and beat the yolk with a splash of milk and brush over the pastry rim. Roll out the other piece of dough until ½cm thick. Carefully roll the pastry around the rolling pin, then unroll it over the top of the pie. Fold the excess pastry back in then pinch and crimp the edges together using your finger and thumb. Brush the top of the pie with more egg wash, then using a small sharp knife, make a couple of small incisions in the centre of the pie to let steam escape as it cooks. Bake in the hot oven for 40-45 minutes until golden and firm to the touch. Serve with good-quality custard or ice cream TOP TIP: Use both cooking and eating apples in the filling.
