Kitchen Tips Worth Passing Along

By Evelyn J. Mocbeichel While I’m pretty comfortable around the kitchen, there is always something new to learn that helps make food prep or storage much easier. Over the years I’ve heard of good ideas from friends that are worth passing along. Recently chatting about our local supermarket sales a friend, Sue, mentioned fresh garlic was on sale and she stocked up to use in the coming weeks. I questioned whether I could use that much garlic before it went bad and then it wouldn’t be a bargain if most had to be discarded. With a solution to avoid waste, Sue shared what she does. After buying several sleeves of garlic she peels and dices the cloves and puts them into a glass jar. To keep the garlic fresh she pours olive oil till the garlic is covered, then closes the jar with the cap and refrigerates. Next time she is sautéing meat or vegetables she only has to take a spoon of garlic from the jar to add to the fry pan. Making cutlets extra tender, whether they are chicken, veal or pork, can be done

simply by using a meat tenderizer mallet before cooking. This task was a bit messy, whacking the cutlets with the metal tenderizer, before I learned of a better method from a TV chef. She said, “Why bother to take the meat out of the wrapper, put on a cutting board and then just pound with a meat tenderizer, and making splatters? (Tenderizing meat softens the ‘tissue” and makes it more tender) The Chef leaves on the store wrapper, not opening it before pounding with the mallet.

After she is finished, she opens the wrapper and disposes of it and the tray the meat comes on from the supermarket. Remember to wash the tenderizer as some prongs will penetrate the plastic wrapper and rinse the meat. Have you ever bought a box of parchment paper to use while baking? I use it several times a week for easy clean up when baking. Not only for cookies, but putting parchment on a cookie sheet is great for heating leftover pizza, baking piggish in the blanket or breaded chicken pieces and just about anything you want to bake on a cookie sheet. Nothing has to be wasted, when a little creativity is used in the kitchen. When bananas are starting to become too ripe and can’t be used because of their appearance, don’t throw them away. Mash up one or two of them and put in your pancake batter, adding a touch of vanilla and cinnamon to “jazz up” a typical bland pancake recipe. If you don’t need the mashed banana that day, put it in a small container and freeze until you do want to use them for either pancakes or a banana bread recipe.

Discipline: Productivity’s Elixer

As a boy I often asked my parents the same question after they told me to do something—“Do I have to?” Perhaps, it was my way of easing into the “McDonald’s Society” we live in today—you know, the convenience of having things the way we want them, when we want them, quickly, and by another’s hand. It didn’t work well then; it still doesn’t. What was missing in my approach was the discipline that parents are so good at instilling in us.

Along the way … to my wizened state, I came to appreciate and rely on this single virtue so common to parenthood. In fact, I believe that among all the things we need—food, shelter, clothing—discipline ranks as an “must have.” And while I am a planner, if nothing else, no plan; however comprehensive, cleverly constructed, or profit generating, will amount to much without the discipline to follow it through.

Not surprisingly, most organizations encourage hard work.

The institution of it was made famous in American lore by the phrase “The Protestant Work Ethic.” Popularized by Max Weber, economist and sociologist, in his book, The Protestant Work Ethic and the Spirit of Capitalism, the idea quickly became one of the cornerstones of national prosperity.

It suggested that capitalism evolved by the influence of this ethic—the attitude and ideals of the Protestant (Puritan) Ethic.

Discipline, as explained by Paul Meyer, insurance entrepreneur, philanthropist, and inspirational speaker and author, is the process of training designed to produce specific, desired patterns of behavior, intended habits, and attitudes that lead to successful performance in various areas of life. In short, discipline is what you need to get to where you want to go.

Success may simply not be possible without it.

Where it comes from To be clear, discipline is not a random occurrence; it is created. The primary reason the world around us does not change in the ways we hope for is because the change seldom begins with us (Tolstoy). We must, as Cervantes recommended, submit to discipline, not just praise it. If we were to combine the components of discipline outlined below, we would create the discipline necessary to accomplishment.

Firm Values Have some, and know that they are right and honorable.

These are what form the foundations that direct our choices, decisions, and behavior. Every good product flows from this cornerstone. No less than the venerable “good book” exhorts us: “ … whatever is noble, whatever is right, whatever is pure, whatever is lovely, whatever is admirable—if anything is excellent or praiseworthy—think about such things. As we know, thought becomes behavior.

Believing in oneself and what we are doing forms the first tenet of decision making, and the basis of our discipline. Once accomplished, we can enjoy a worry-, doubt-, and insecurity-free mind.

Setting challenging goals We are encouraged most by stories of those who have stuck doggedly to a dream of accomplishment and got there. It is a common theme among Hollywood’s finest; so too the accomplished in all other fields. Carry a dream in your heart long enough, with passion, and it will surface in reality.

It is disheartening to hear a young person complain that the work they face is too challenging. It is all too prevalent in the marketplace, where workers readily exchange results for excuses. We are challenged because it delivers the best results, and great organizations know it.

Clear priorities We all want to do the right things. Most even know what they are. But few achieve them because of yet undefined priorities. The results we seek may be clear, but until we sweep the path to them they are as mountains in the fog. Always know what you are doing and why. We are more likely to maintain the discipline required to reach our goals when we do. Consider the ant, its ways, and be wise, Proverbs advises.

Clear priorities bring focus and definition to one’s goals, making them surer targets.

Persistence The ant is a winsome personality in this drama too. There is no product from a writer that will not form words, even when they are hard to come by. This article did not happen on its own, nor will our goals should we not attend to them with discipline. Success usually comes at the heels of persistence.

A long obedience in the same direction are words that form a powerful phrase of action. Michael Jordan did not make his High School basketball team in his first attempt. We must learn the value of persistence as a key element of discipline.

Personal inspiration Motivation comes from within. However much we try to give it to another, only the willingness to act on our own behalf moves us. We must develop a sense of personal inspiration to find both good luck and good results. Luck, as we have learned, is where preparation meets opportunity.

Self-discipline is required for those who wish to be more than spectators of their own lives. To live the life you’ve imagined (as Thoreau recommended) requires personal drive.
