Brace for impact because what I’m about to say may be shocking, bordering on offensive. But here it goes...2020 has been the best year of my life. Yep, you read it right. It has been THE BEST YEAR...EVER. Depending on how you define “best” will determine if you agree with me or not. I do not define “best” as “everything went smoothly, life was easy and I didn’t have to overcome anything hard."

Not even close. Did I experience a global pandemic right alongside you? Yes, hell yes. It was/is brutal.

Was my business, my family and my community impacted by Covid? Of course, it was. That’s likely true for each of us worldwide. Those facts are obviously not what made 2020 my best year ever. What made it my best year ever was my personal journey through it all. I’m a huge advocate for self-care and taking the time to slow our roll, maybe even meditate. From time to time, I believe we should each pause periodically to reset emotionally and mentally, so that we can be our best selves.

I’m not one to be preachy, but I am one to share any cool discoveries I come across on my journey. So, let me share a couple of “tools” with you, that helped make 2020 my best year ever.

Tool: Go Inward. During challenging times, I go inward to reconnect with ME. The person who often gets cast aside when time and energy is short...is me. So in order to restore balance to my life, I go inward and

do a little self-assessment, some personal inventory. And I do it all with kindness and patience.

Tool: Declutter. The first tool leads to a need for this second tool, which is to declutter. This usually means I give myself permission to release emotions and feelings that were not serving me. This process has been incredibly freeing and I can honestly say that after applying these two tools in my own personal journey through 2020, I am not the same person.

I'm grateful for the challenges I have faced and worked through. I believe that our success and achievements are not what define us. It is how we overcome our challenges that truly defines us.

2020 has given all of us this opportunity for personal growth.

It might sound weird, but in some ways, when new challenges present themselves, I'm almost excited to see what I’m about to learn. (key word is almost…I'm not there all the way yet ☺) We are so grateful to be part of an organization that’s mission is to share positivity and good news.

We are thankful for your continued support of Nugent Magazine and our mission. There are so many amazing stories to share and we can't wait to share yours!!

JIMMY REX Be the Hero of Your Own Life

Jimmy Rex started his career in real estate in 2005.

He has become one of the country’s top real estate agents, selling over 2,500 properties, including the most expensive home in Wasatch Front real estate multiple-listing service history. Some of his accolades include Salesperson of the Year and The Good Neighbor Award.

As the success of his business grew, Jimmy went on to develop a real estate coaching company called “Jimmy Rex, The Social Realtor” (MrJimmyRex.com).

Some of the courses he offers are “The Social Realtor” and “100K Agent Blueprint,” along with lectures on managing social media and using these platforms to build a business. Jimmy travels across the United States and Canada for speaking engagements and training sessions. He has empowered hundreds of agents who have taken his courses and seen their business grow exponentially.

Jimmy has created the YouTube channel “Jimmy Rex” and a podcast “The Jimmy Rex Show” (with over 1 million followers) as an avenue for him to share his love of travel, adventure, and designing a life that you love. He now offers a dose of daily motivation through his website. You can email subscribe to his daily dose of motivation and read his blog on the website. In the blog, he writes about his travel, social issues, life experiences and views. Through all these outlets, you can feel his energy and passion, his love of adventure, taking risks, and not letting fear hold you back.

Jimmy loves being an entrepreneur and sharing his passion, strategies, and journey.

Networking with others brings him great satisfaction, and it is a skill he has perfected. “Networking the right way will bring people into your life that you wouldn’t have imagined being connected to and, in turn, help you grow as a person and in business and bring you tremendous happiness,” he said.

In 2019, Jimmy’s first book, “The Next Wave of Influence in Real Estate,” was released, and it quickly hit the best-seller’s list on Amazon in multiple categories. In this book, he shares his daily routines, marketing tips, and how to generate leads through social media. His second book, “You End Up Where You Are Heading – The Dangers of Living a Safe Life,” hit the scene in July 2020. In this book, written with Cameron Carling, readers will learn how to shift their mindset from a “stuck settler to a curious explorer.” Jimmy gives you the tools to seek your unmet potential and helps you understand that anything in life is possible, but everything lies on the other side of fear.

Travel has always been a great love of Jimmy, and his adventures have taken him to over 70 countries. Some of his most memorable trips have included being a part of Operation Underground Railroad (O.U.R.) and The Child Liberation Foundation, helping to rescue children who were kidnapped and sex trafficked. He has been a part of several operations and played a role in saving over 100 exploited children.

One of the most fulfilling roles he has enjoyed is giving back and sharing his monetary success with others, he said. He and his team have raised funds for many foundations, and he committed to creating a community of service. During my conversation with Jimmy, he related a story that was life-changing for him.

“For the Christmas season 2011, my team and I raised over $30,000 for Sub-for-Santa for many families. It was an endeavor that brought much joy for everyone that participated,” he said. They raised the money, bought the gifts and wrapped them and had them delivered by Christmas Eve. There were many grateful families. It was a wonderful way to spread the love of the season. Late in the evening on Christmas Eve, Jimmy received a phone call from one of the families on the list. They wondered what time the gifts would be delivered that evening, it was getting later, and they had not received anything. It was late in the day, and Jimmy had plans, but he knew that he could not let this family down. He quickly drove to Wal-Mart and purchased gifts for the family. He drove to the address he had been given, but he couldn’t see a house anywhere and as he stared out into the darkness, he saw what looked like a small shed. As he got closer, he saw lights and quietly knocked on the door. The father answered the door with a look of relief and gratitude. As he investigated the home, Jimmy felt the truest form of love for his fellowman. He dropped off the gifts and apologized for not having them wrapped.

The family thanked him profusely, and he headed back to his vehicle with tears streaming down his face. “This was truly what it was all about,” he said.

Jimmy has dedicated his life and career to sharing love with all of God’s children.

“Spreading love to everyone throughout the world through acts of kindness is what I strive to do every day of my life.”

Jimmy is living a life of adventure and service, not letting fear stop him, and truly living an exceptional life.

She was inspired to create a more maintainable eating program that she could share with others.

Linzie Clawson’s passion for healthy eating and lifestyle started early in her life. “My mom always expressed the importance of eating healthy and valued good health. I was raised that way, so I guess it’s always been a part of me,” she said. What Linzie didn’t expect is that her passion would lead her down an entrepreneurial path of starting a business, Fed Up. “I was a single mom of four, waiting tables. I had no education. I dropped out of high school. "

"I had a desire to help others, and that is where it all really began.”

Being the ninth of twelve children in her family had its own set of challenges; however, those experiences shaped her into today’s powerful woman. Linzie’s mother was a great example of eating right and taking care of her physical well-being. She raised her family to understand the importance of using food as fuel to power the mind and body.

Linzie moved out of her home at 16 years old and became a mother shortly after. “It was a difficult way to start out on my own,” she said. After the birth of her oldest daughter, she moved to St. George, Utah. She got married at 19 years old and had three children by the age of 22. She found herself in a difficult marriage and divorced after 11 years. At that point, she was a single mother supporting her family waiting tables in St. George. Linzie could not have done it without her mother’s help, who was one of her biggest supporters.

She was remarkably close to her mother, who passed away six years ago, and has contributed much of her success to her influence.

Linzie became involved in fitness competitions that pushed her to her personal limits. “I overcame the fear of standing on a stage in front of people and developed the self-confidence that I had struggled with throughout my life.”

“It was really cool for me to overcome that fear. I feel like breaking that fear opened up a door.”

A fitness coach taught Linzie about eating a macro-based diet, which is a balance of proteins, carbohydrates, and fats. “I realized that when you have the perfect breakdown of macros, results happen. I had gotten super lean, and I had done a fitness show, and these two guys came up to me and said, 'Feed me whatever you are doing.' I told them about my six meals a day, and they tried it and got amazing results. So, then one of their wives contacted me and said she wanted to try it because of her husband’s results. Then I started getting phone calls and it grew organically from there. People were getting results. So, I quit my serving job six months later and decided to take this on 100 percent. I get so much fulfillment out of helping others get results, and I love being able to create all these yummy healthy meals.”

Linzie started her business in the kitchen of her townhouse. “I didn’t have any business background, and I was fearful about starting a business. There is a saying that goes, 'When the student is ready, the teachers will come.'”

Linzie met Dave Allred in the very beginning. Dave helped her set up her business license as an S-Corp and taught Linzie a ton about running a business. "I remember him asking me about my profit margin. I didn’t know what a profit margin was! I wouldn’t be where I am today without Dave.”

Linzie’s kids, Mariah 19, Mayze 17, Maddox 15 and Mykah 9, are involved in the family business. A little over five years ago, she officially moved Fed-Up Kitchen out of her townhouse and opened up a shop in St. George, Utah. A second location in Draper, Utah, opened three years later. Daughter, Mariah, started working with her mom at the age of 14 and is now the manager of the Draper location of Fed Up. She is proud that she was able to open up both locations without getting a loan. Linzie said, “I was able to self-fund my business with the money I had saved from prepping food."

Although the success of Fed Up has been a great accomplishment for Linzie, along the way, she has discovered her true purpose. Linzie has realized that fulfillment came with being able to share her story. The story of a struggle with self-confidence, overcoming fears, and labels that others placed on her and that success can be achieved with hard work and getting out of your own way.

Overcoming the fear of speaking in front of people allowed her to inspire and influence others. Linzie enjoys spreading her love and passion for living, eating healthy and creating food plans that bring results and taste delicious.

Linzie’s morning routine is an integral part of everyday life. She says, “I get up at 5 a.m., then listen to good music, a good book or someone inspiring like Tony Robbins, I love starting my day full of gratitude. And I try to remember that we all get to choose the way we feel.”

Each day Linzie writes down her vision, putting them on paper to become her goals. She makes a delicious breakfast for her family and gets the kids to school and off to the gym with her boyfriend and partner, Aaron Jeffery. Aaron is a pro-athlete in the International Federation of Bodybuilding and Fitness and is a great supporter of the business.

According to Linzie, the rest of her day is usually spent meeting with potential clients, consulting, and coaching them while creating their plan for living their best life.

“Fed Up is a lifestyle that will help anyone reach their personal goals. The food is delicious with simple ingredients, convenient healthy meals, yummy treats and green smoothies,” Some of the recipes on the menu include tacos, chili, wraps, muffins, and more.

There are different meal plans, depending on how many meals you prefer, and they have recently introduced a new supplement called Motiv, which increases clarity and focus.

Eventually, additional supplements will be added to the product lineup.

Fed Up sources their food from fresh and organic providers, and most of the offerings are gluten-free.

Linzie has plans to franchise her business and continues to look for growth opportunities and partnerships.

She is proud of what she has accomplished in her life and the impact that she has had on others.

A Place to Call Your Own, Where Everyone Knows Your Name

As a longtime diehard fan of “Friends” (the TV show), I have been on the lookout for a place that my friends and I can regularly hang out. Where we have our seats, where we are the regulars, where people ask themselves, “Do they ever go home or do anything else with their time?” Well, let me tell you, The Wash in Provo, Utah, can and should be that place!

After running the Cougar Car Wash for a few years, the Kang family, who owned the car wash, decided to explore another business to develop on the property. With previous experience in repurposing buildings, they thought this was no big undertaking. Originally the plan was for it to become an Asian restaurant with a drink bar in one corner. At the last minute, they decided to let their son Sean take over and do with it what he pleased, and he landed on the idea of a “latenight urban eatery” to satisfy every craving.

For Sean, this was a breakthrough. The project became a way for him to put together all the ideas he’d come up with over the past few years, and he was ready to take a huge step in his life. As a recent college graduate, he was getting ready to start his day job when the project started coming together, and he decided it was something he wanted to do.

The menu at this college-town late-night eatery, started with a few “basics” like loaded french fries, pizookies (fresh baked cookies with ice cream), and churro bites, but the main draw and the “heart and soul” of the restaurant is it’s “mocktail” drinks. “The mocktail/cocktail culture is very conducive to talking to and meeting new people,” said Sean. Which is the exact culture Sean is hoping to add to Provo life, which is bursting with college students.

I have to say, I was quite curious how the mocktails or “holy spirits” would be advertised. I loved the creativity they used in naming each drink. Each mocktail name is a pun of its cocktail doppelganger. So where one could order a “mojito” at a regular restaurant, you can order a non-alcoholic “nojito” at The Wash. “Shirley Temples” become “Provo Temples,” and a “Sex on the Beach” drink becomes “Cuddles on the Beach.”

Figuring out what to include on the hand-crafted food and drink menu might arguably be one of the easiest and most fun parts of the job, according to Sean. “It’s a constant process. We are continually trying new things and searching for new inspirations for drinks and

Nojitos, Provo Temples, Cuddles on the Beach looking for ways to put our own little twist on them,” he said. What started as a small restaurant and side gig has turned into a lifelong passion that just keeps growing bigger. With the recent addition of a Saturday brunch, they are hoping their customer base will broaden to include more families. The brunch includes tasty treats like avocado toast, overnight oats, purple mochi waffle, and country fried steak. Drinks on their seasonal menu include The Poison Apple (a spiced apple cider), Pumpkin Spice Frappe, A Candy Cane Frappe, and an Affogato.

The Wash is open from 7 p.m. -11 p.m. Mondays through Saturdays and for brunch on Saturdays from 9 a.m. to 2 p.m. It is located at 1195 N. Canyon Road, Provo, and has a small performance area and a stash of board games and tables for big groups. Sadly, the coronavirus affected the business when many college students from Brigham Young University moved home sooner than expected when COVID-19 shut things down. The Wash was closed for about nine weeks, right in the middle of its busiest season. They did a “social distancing” reopen this summer when most of their student customers were still home. “It’s been an interesting year for everybody, I'm sure, but it’s been good. Students have now come back and shown good response to our marketing on Instagram,” said Sean.

During the unexpected closure, Sean worked on the restaurant, revamping and deep cleaning, and he also had the chance to work on himself. He was able to learn more about himself, especially when it came to keeping sane throughout COVID-19. “It takes a certain gumption to be your own boss and do your own thing, but balance has been a word I’ve been thinking a lot about recently. COVID-19 has been a good reset for me and helped me reprioritize my life a little bit,” he said.

The Wash has the potential to be a lifelong location for meetups, hangouts, and way-overdue reunions. From the coffee shop feel to the stage used for live music, The Wash can perhaps become the real-life “Central Perk.”

Thirty years ago, Salsa Queen (Yes, that is her legal name; she was formerly known as Marhaba Zapata) came to the United States from Monterrey, Mexico, with her family, a suitcase with a few clothes and one or two pictures. She was 17.

“We didn’t speak English and we weren’t legal. I wasn’t able to finish high school due to the barrier of language because I thought they were asking me for some legal papers,” she said.

She became a single mom and her first child, a son, died of leukemia when he was under two years old. It was heartbreaking, but she honors him now on the Salsa Queen logo. “In Mexico, the sugar skull represents El Dia de Los Muertos (or Day of the Dead),” she explained.

“It is a very holy day with a lot of spiritual meaning. We believe that our ancestors come back from the dead. I wanted to remember him {my son}, which is why I chose to put the crown on top of my logo , of course.”

After her son died, she met a man at the hospital who became her husband. Together they had six children but divorced. She remarried again and had another son, but that marriage also ended in divorce.

“I found myself a single mother of seven kids with no education whatsoever and I had never really had a job. I was concerned about how I would put food on the table for them,” she said.

Then she met someone online who changed her life forever, Jim Birch, who eventually became her husband. They met because of one word: “bachata.”

“It was the secret word,” Jim said, laughing. “In her online profile, she listed liking Latin ballroom dancing, including ‘bachata.’ I had taken a class where I learned a lot of different dances, and bachata was one of them.” “And it worked!” Salsa Queen laughs.

Jim believed in her when she did not believe in herself. “He is very entrepreneurial and dragged me into this world, but for the first time in my life, somebody asked me, ‘What would I like to do?’ And I said, ‘What is that supposed to mean?’ I didn’t know what I wanted to do."

“He started throwing a few ideas out there for me, and I was game for anything. I knew that I needed to provide for my kids. We talked about several things, but I wanted to do something that speaks to my culture and fits me, so we decided on salsa,” she said.

Six years ago, Salsa Queen started making salsas in her kitchen with her children. “It was truly a family affair, from my son who was two years old at the time to my oldest son who was 15. Everybody was in the kitchen and doing their part. I started with $3,000 and now have the largest-selling local salsa in Utah. It has been an amazing road.”

They started selling salsa on Facebook first. “We became salsa dealers,” she laughs. “We’d say we were making salsa that day and take orders on Facebook.

Then we’d be at a certain parking lot in the valley at a certain time. We’d meet, exchange money, then we’d go to the next parking lot.”

Then they started selling at farmer’s markets. Salsa Queen said one of her mentors, Jorga Fierro (owner of Frida Bistro and Rico brands) told her to just take 50 containers of salsa. “He wanted me to be careful, not to take too much so my feelings didn’t get hurt. I said, ‘Oh, I am going to take a 100.’ “

Within two hours, they were sold out. “It gave me so much hope. I said, ‘Oh my gosh! This is amazing!’ “ Every farmer’s market after that, they sold out, weekend after weekend. After this success, Jim thought they should aim for grocery stores. Salsa Queen told him, “Here you go, you’re crazy.” But he put the idea in her head, and she ran with it. She went to smaller local stores first.

“I went with my product and [the woman she met with] said she wished that I had come a week earlier because

she had another brand new salsa. But she said, ‘Come back in a week.’ I did. I was wearing my crown, my apron, and had a bunch of salsas. I said, ‘When do I start?’ She said, ‘Oh, Marhaba, how can I say no to you?’ ” After that Salsa Queen started pitching larger grocery stores. Every time she went to do a pitch, she never doubted herself. “I never thought, ‘What if they say no?’

I am just going to go, present my product, and of course, they are going to say yes."

When she pitched to Smith’s Grocery Store, she did it because Jim had upset her, and she was going to “show him.” She called them. The buyer tried to put her off, but once she said her product was fresh he told her to come in a few days.

“Oh my gosh! I was so excited, but I still had no idea what I was getting myself into. I got to Smith’s, and I had my Costco bag. I have my apron, this big flower on my head, and bright colors. Here I am walking behind the buyer and I tell myself, ‘Don’t be nervous, he is just human too.’ I get there and I start opening my salsas. I put them on his desk, and I opened the bag of chips. I started telling him my story and he tried the Pico de Gallo and said, ‘You’re In.’ “

Within five minutes, there were 50 people in the office, and they were all trying the salsas. The man told Salsa Queen, “OK, let’s make some space for you. How many stores do you want? We will give you whatever you want.”

“I was like, Should I cry? What should I do? I had no idea what was happening."

She met with the administrative assistant to sign papers. The assistant said, “Marhaba, in 17 years

that I have worked here, this has never happened.

People die and wait for years to get into Smith’s. Take care of your spot.”

That was four years ago. By the end of 2020, Salsa Queen will be in over 100 stores.

“We have been very blessed,” she said. “I feel my story of being an immigrant and all the struggles I had to face to be here are very touching for people. It’s been fun. It is challenging. It has been painful. It has been all the emotions you can imagine. But my biggest accomplishment has been that I created this company to provide for myself and my kids, but now I am providing for other families. That is huge for me! It chokes me up.”

Many people ask her, “Why do you think you are successful?” She says, “I am not going to say that I’m happy I didn’t go to school, but I am happy that I was determined. I didn’t have a plan B. It happened because it had to happen. I had to put food on the table for my kids."

"We used to have food stamps and get government help, and I am very thankful for it, but it wasn’t a lifestyle I wanted. I wanted them to know that if you really want to achieve something it is totally possible. I played against all the odds. I was an immigrant, I didn’t speak the language, I never went to college, I never really held a job, and here we are. It is exciting!”

As for keeping mentally fit, Salsa Queen says one of the best ways is to have great relationships. “It is a challenge to balance work, success, peacefulness, and distress,” she said. “It is very hard to navigate. Having a good group of people who are there for you: spouse, friends, and family who are supportive is so important.”

Salsa Queen says Jim has always been a great support and she remembers a time when she was doing a taste sampling in Park City. She texted him and said, “Thank you for giving me wings to fly.” And he texted back, “You had them all along. You just didn’t know.”

“Oh my gosh, that is so true,” she said. “We all have wings, but sometimes it takes an awesome person to actually believe in you and support you [before you can fly].”

She says another way is to see your weaknesses as strengths. She doesn’t see herself as bossy or stubborn, but strong and determined.

She says it is crucial to find good mentors. “Get people to help you with things you have no idea about. You still have your own journey, but having mentors can take you to the next level faster than doing it all by yourself.”

Creating products with commitment to sustainability

Work ethic, determination, and efficiency are just some of the traits that drove April Feller, as a 13-year-old, to find success at her first job in her Idaho hometown.

Money, of course, was also a motivation. In the late 1970s, April’s job of counting and packing live worms into boxes was deemed too “gross” by her friends, but it proved very lucrative for the young teen, who worked hard and efficiently and made about $20 an hour (equivalent to making $80 an hour today) doing it.

“When the worker at the Eastern Idaho Bait Company asked if anyone in our visiting youth group wanted to have a job counting worms, I volunteered. I knew I could do hard things, and I was surprised to be the only one willing to work out of everyone in the group,” said Feller. “I used my money to buy my own school clothes and supplies. But, when I would go to bed at night, I would close my eyes and see worms!”

This work ethic continued through Feller’s life as she worked various finance and accounting jobs to pay her way through college (which may be a bit better than “counting” worms). She met her husband, Kirk, at BYU and together they have six children. In 2002, they decided to start the company NLU Products.

NLU Products started off making plastic screen protectors for the original cell phones and PDAs, like the then-popular Palm Pilot under the brand ScreenGuardz. “Our first year we grossed $5,000 and the second year about $45,000. We were selling anything of value just to make ends meet,” said Feller. “I got really good at juggling ‘zero percent’ credit cards.”

“We were so grateful when we eventually landed our first big customer, Dell,” she said. “That partnership allowed us to purchase our first office building and begin expanding our business.”

Over the years, Feller’s role has taken many forms, including co-founder, CFO, and now Chairperson of the Board, where she shares ownership of the business with her husband, Kirk.

NLU Products evolved into BodyGuardz, which was the first company to bring to market the glass screen protector for mobile devices. “There were a lot of companies out there bigger than us, but we were the first company to offer glass, which gave us the opportunity to secure AT&T as a customer and the ability to grow again,” said Feller. In 2014, over one

million glass screen protectors were sold. Two years later, over 10 million were sold.

In 2015, the company made the Inc. 500 list and expanded to a new location in Lehi. The company, which now employs about 90 people, expanded and rebranded into BGZ brands and has since added two additional distinct brands along with BodyGuardz. Lander, which includes outdoor gear, cases, cables, bags, lighting, and more, and Moxyo, tech accessories that put the “fun” in function − like glitter screen protectors, cases and colorful earphones.

BGZ works closely with device manufacturers and is involved with their partner programs to gain early access to the specifications of the next generation of devices. “These programs require confidentiality agreements and licensing agreements to keep the information secure and private,” said Feller. “We also have a category team of professionals that research data for our industry and keep us connected with the changes in consumer adoption and device appeal.”

The company just launched its newest product, the BodyGuardz Portable 5-in-1 Emergency Hub, which has five ever-ready emergency tools in one convenient device and fits in a pocket. The smart hub has a power bank for charging devices, a personalized emergency notifications application, a one-touch alert siren, a night light/flashlight, and an FM radio.

“Working together as a team of product designers and engineers, category and marketing experts, and brand advocates, we are able to not only create beautiful products that meet the ever-changing needs of our consumers but also continue to be concerned about sustainability and social issues of the day. I could not be more proud of our team’s ever-learning attitude and approach to product design,” she commented.

Feller received the Carol Campbell Women in Consumer Technology Legacy Award for her achievement in Consumer Tech. She was recognized as an impactful woman leader in business. She helped create and foster BGZ brands’ core values, which includes their commitment to sustainability. “Core values like integrity, quality, and innovation anchor everything we do,” Feller concluded.

“We have the capability to make a difference if we are willing to get our hands dirty and do whatever it takes,” April said. “Including doing gross jobs.”

Sean read my mind, and blew my mind, when he said the word “Sheltie.” Sheltie was my favorite pet, a collie I had when I was six years old. I hadn’t thought about that dog in years.We were sitting at lunch for the interview when he asked if I wanted to see how his mind-reading skills worked. He asked me to take out my phone and type the name of my favorite animal into google he couldn’t see what I was typing). He asked me to look at any images that reminded me of my favorite animal.

MENTAL ME

I come from a background of a mother who suffered with mental illness. I knew at a young age that I did not know what each day would bring. I was often scared daily in regard to how my mother's mental state would be. I’d often hide in my room to escape her manic episodes. Over the years, I learned to cope and deal with the uncertainty. I loved my mother dearly but knew I wanted to do everything possible to work on my own mental fitness. My mother chose to neglect her mental wellbeing and seek proper treatment.

It shaped me to be more aware of the importance of being proactive in our mental fitness. YES, being mentally happy, I feel, is WORK. It's worth it!

I had arrived home the day before from a New York City business trip, so I was tired, but I knew I wanted to go. I knew it would boost me mentally to give back. It is OK to seek and ask for help. Life is hard and sometimes we just need to seek help from someone else or maybe seek professional counseling. Mental fitness is knowing you will address and make it a priority. It is work to be mentally healthy. I believe we are genetically prone to be more negative than positive. You will choose daily to BUILD your thoughts in a positive way. Again, it's WORK, but you are worth it!

KNOW THIS: No one is happy, 24/7, 365 days a year. However, you can see the GREAT in every day and see the JOY despite the BAD.

I work on being HAPPY and so should you. We will have hard days, we will fall down, we will struggle, but WE will overcome the obstacles if we CHOOSE to always keep going. Remember, it's a WORKOUT, and you can't QUIT despite it being hard.

I grew my business despite having had traumatic things happen to me personally.

I grew my business from nothing to seeing my products worldwide because I NEVER GIVE UP mentally on making it happen! THE ILLUSION OF AVERAGE RETURNS

As I repeatedly attempt to explain to my young children, investing is, at its core, the art and science of taking existing money and earning a return on that money. When our clients entrust Foresight Wealth Management to be a fiduciary on their behalf and invest their hard-earned money, their portfolios’ expected return and the level of risk associated with those returns is a critical part of our exploratory discussion. Though naturally questions like “What is the expected return?” or “How much could I make on this investment?” rise to the surface, a thorough understanding of the commensurate level of risk associated with those potential returns is equally as important.

A common notion is that the stock market has generated a long-term annualized total return of approximately 10%. It’s a nice, round number, so let’s use it. Given that, how often would you guess the stock market (as defined by the S&P 500) has generated a calendar-year return of 10% plus or th minus 2% over the last century? Three-quarters of the time? Half the time?

As shown in the below chart from Dimensional Fund Advisors, the S&P 500 has posted a return of 812% (the lime green bars) in just six calendar years since 1926. That’s right, six times in nearly a century!

How does that make any sense, you might ask?

The answer is that an average return is just that: an average. Stocks tend to post some very strong years (e.g. 2017, 2019), some negative years (e.g.

2008, 2018), some flattish years (e.g. 2011, 2015), yet relatively few “normal” years. But when you string together enough calendar years, you arrive at something close to average.

This is a powerful reminder of the lumpy and volatile nature of the market. Despite the stock market’s exceptional long-term return, it requires patience and a multi-year perspective to obtain it.

As one’s holding period increases, the probability of generating a healthy, positive return also increases. However, the unfortunate reality is that investment horizons fall precipitously during market drawdowns. Like we saw this Spring, time horizons quickly fall to zero when fear takes hold.

Referring once again to the chart above, the S&P 500 has ended in negative territory in 24 calendar years since 1926. That means it is four times more common for the market to realize a negative year than an average year. In determining the timing of the next stock market drawdown, it’s a question of “when,” not “if.”

BUT INVESTORS WHO STAY THE COURSE AND MAINTAIN A LONGTERM OUTLOOK ARE REWARDED FOR WITHSTANDING THOSE INHERENT UPS AND DOWNS. SADLY, THAT’S NOT THE CASE FOR INVESTORS WHO BECOME PARALYZED BY FEAR DURING BOUTS OF VOLATILITY AND PULL THE EJECTION CORD.

Though there are currently many good things on the horizon, there are also ample risks, as there always is. At Foresight, we think the next 5-10 years will accompany lower-than-average returns in the stock and bond markets, given their current valuations. Valuations have very little predictive ability on short-term returns, yet they have strong inverse correlations with future returns on a 5- and 10-year basis. On most metrics, both stocks and bonds are on the expensive side of historical averages.

Few people can count the range and number of world-class accomplishments that Thurl Bailey can. He was an NBA first-round draft pick of the Utah Jazz and led North Carolina State in both scoring and rebounding in the season they won the 1983 NCAA men’s basketball National Championship, one of the most historic championship runs in basketball history. Add to that, his success as an inspirational speaker, singer, songwriter, broadcaster, and film actor, and you get the feeling Thurl has an understanding of what it takes to be successful in any endeavor.

According to Thurl, you don’t have these special moments in life without the influence of parents, coaches, teammates, friends, and others. Thurl attributes his sustained and consistent success, in part, to learning from all these people and his through his collective

experiences. and to then “decide who you want to be and how you want to treat people.”

Despite all the accomplishments of Thurl Bailey, it is who “he is” that speaks louder than what he has done. Thurl Bailey has a clarity of mind and purpose. His presence reflects a calm confidence not only in himself but in the potential of everyone else.

At an early age, Thurl learned important lessons from “parents that loved me” about what mattered in life. “My family was from North Carolina where my ancestors were brought there on slave ships.”

Seeking more opportunities for their family, his parents moved from the tobacco fields of North Carolina to a suburb of Washington, D.C., just before Thurl was born.

D.C. He said, “The Civil Rights movement was alive and well. My parents didn't hide the reality of the violence and the protests. They educated us and I learned how to live. They taught us virtues and how to treat people with respect even though we experienced racism and segregation and even though at times we were required to drink from ‘colored only’ drinking fountains, restricted to only eating around the back at restaurants or able to worship only at certain churches.”

Thurl’s Mom emphasized learning and that a good education would be “the way out and up.” Thurl remembers, “She was adamant about grades − C is average − and she didn’t tolerate just getting by.

She would tell us that she wasn’t raising average kids.” Thurl listened.

He chose to try and be the best he could be and he realized it kept him focused and away from trouble.

These important lessons in his early life shaped the man Thurl Bailey became. In addition to being a 6foot-11 athlete, he developed the mindset to not only compete at the highest level but he learned how to succeed consistently. He developed this mindset over his life at critical moments when he had opportunities to learn, when he chose to listen, and then when he took action. Thurl shared a handful of meaningful experiences that are rooted in principles that can be useful to anyone who wants to achieve the highest level of success and develop their leadership.

VISION - provides the path and drive to stay focused in the face of adversity. This lesson came most powerfully from his college

basketball coach, Jim Valvano, "Coach V". In 1980, when Coach V came to North Carolina State, he told his players that he had a dream that they would win the National Championship. He wanted them to travel forward in time and live in that moment of the championship game so they could experience how it would feel.

Coach V had the team practice cutting down the nets “as if” they were champions. “Some days, we would spend most of a two-hour practice cutting down the nets and celebrating as if we had just won the National Championship,” said Thurl.

It was that vision that willed the team through adversity in the season and resulted in one of the greatest upsets in college basketball history when North Carolina State scored the last eight points to beat

the highly favored University of Houston. The ending of the final game is one of the most famous in college basketball history, with a buzzer-beating dunk by Lorenzo Charles, off an air ball from 30 feet out by Dereck Whittenburg. Then Coach V led the team in cutting down the nets with the scissors they had used in practice years before.

TRUST AND TEAMWORK − In 1980, Jim Valvano arrived at NC State as the new head coach. He hadn't recruited Thurl or the other members of the team. There was no trust only skepticism from the players of their new coach. “But we learned that trust and teamwork are a prerequisite for world-class performance,” Thurl said. “Coach V knew it. He created it. It was part of his vision and leadership. We would have to continually work out the differences. Coach V created unity.

It was his vision for a championship that superseded our differences.”

Coach V, in a speech 10 years after the championship of 1983 said that the team had taught him to hope, dream, and love. The team continues to get together every year for a reunion despite the passing of Coach Valvano and Lorenzo Charles.

CLARITY − Thurl not only learned the importance of clearly defining what he wanted to achieve (focus) but also who he would be to achieve it. With clarity, he has been able to act decisively, persist through adversity, and consistently perform at a world-class standard. He said, “I draw from the championship of 1983 every day. Once you’ve achieved that − a championship − you are always a champion. You seek that level in everything you do whether that’s in business, as a Dad, being a husband, or just a friend.

You don’t go a day without thinking about where you can be.”

GRATITUDE − Thurl looks at most of his accomplishments and struggles as a journey and each experience as a gift. “Be grateful for the gifts life gives you,” he said. In gratitude, he takes action to make the most of these gifts and strives to pay it forward. When you are consistently grateful for your success, you are less likely to have your ego get in the way.

PERSPECTIVE − Thurl values empathy and perspective. It is key to building trust and leadership. He said, “When I encounter a challenge or conflict, I try and evaluate first rather than react. I want to see it all.

That means knowing that it can’t just be about me. I ask myself, ‘What is happening for that person? What don’t I know?’ ” In a press conference during the 1983 NCAA tournament before the UNLV game, UNLV star Sidney Green badmouthed Thurl, saying, “Bailey never showed me anything.” Thurl didn’t react and remembers, “I didn't let it bother me. My teammates made more about (the quote) than I did. I played it cool because I knew how good Sidney Green was and that he could light you up. But I knew deep inside that I had to prove myself. … then I scored the winning basket over him.”

Coach Valvano, who passed away after a courageous battle with cancer, just 10 years after the championship, will be remembered for his immortal words, "Don't give up, don't ever give up ... and never stop fighting.” The team's story was chronicled in "Survive and Advance,” an episode in the ESPN “30 for 30” series.

Thurl was drafted in the first round by the Utah Jazz in 1983. Utah was a new and different place for an African American from the south and he wasn't sure if Utah could be his home. Thinking back, “moving to a place where not very many people looked like me was a bit of an adjustment at first." However, that began to change when the focus became more about the "loving culture" rather than the "ethnic culture."

"I always remembered what my mom and dad continued to teach, even during the turbulent racial unrest going on at that time where we were raised: 'Don’t focus on the color of someone’s skin. Look past it and focus on where their heart is.'"

OWNERSHIP − We always have a choice and the opportunity to not allow our circumstances to define us or the outcomes we want. Thurl learned the power of intentionality and proactively making choices from his parents and then his coaches. The 1983 championship team personified persistence in the face of adversity, entering the 1983 NCAA tournament as a 6th seed in the West regional (23 teams seeded higher or equal in the tournament).

He has happily made Utah his home. He married his wife Sindi Southwick (from Richfield, Utah) almost 27 years ago, with whom he has three kids, BreElle, Brendan and Bryson. “Although basketball has taken us to many different lands, Utah has always been our home. I’m so grateful that years ago, Sindi focused on my heart and not the color of my skin and that this state embraced me as one of its own,” said Thurl.

As an executive coach and leadership adviser, I rarely come across people that can learn as much in success as they do from adversity and failure. In part, because as Microsoft founder Bill Gates noted, success is a lousy teacher because it seduces smart people into thinking they can't lose. However, with all his success, Thurl seems to have avoided the seduction of success. That is a key to his broad range and consistent success.

In describing what it was like to win the NCAA Men’s Basketball National Championship, Thurl described the experience as “a gift that was life-changing” rather than a trophy he conquered or achieved. Despite life’s challenges, former NFL player John Frank is happy and loves to share his joy with others.

Contrary to popular opinion, he says 2020 has been the best year. In January, he desired more chances to share his message of happiness with others and it has come true. “I believe in the law of the harvest: What you put out there, you are going to get back,” he said. “When trials come, it is easy to get down, anxious, and have doubts, but when you dig deep, you can find a way to grow through it.”

during the surgery. It sounded like a logical solution, so I gave them the go-ahead,” John recalls.

The surgeon successfully removed the cyst, but in the process, he cut John’s recurrent laryngeal nerve, leaving one vocal cord permanently paralyzed.

“I was devastated,” he said. “I couldn’t speak normally. But the worst part was I lost my singing voice. I loved singing more than I

John’s most challenging trial came in 2002 as he played professional football with the Philadelphia Eagles. He was finally healthy after a collision with a sasquatch offensive lineman tore his meniscus. They were playing the St. Louis Rams for the NFC Championship. His hopes were high, and he had tickets already booked for the Super Bowl. Unfortunately, things took a massive turn during practice when a teammate hit him in the throat during a drill.

“It hurt so bad, and I couldn’t talk very well. I got checked out at practice, but it didn’t get any better.

Then to top it all off, we lost, and I had to cancel all our plans,” said the former University of Utah player.

For months after, John still couldn’t talk or breathe very well, so he had an MRI done. Doctors found a cyst on his vocal cords, and they told John it was cancerous.

“They said they couldn’t do a fine needle biopsy because it would jeopardize too many structures in my throat. They recommended removing the cyst and doing a biopsy

to them jam. I picked up vocals, piano, and saxophone.”

The Frank family formed a band called “The Beverly Brothers.” They sang a lot of Frank Sinatra, Harry Connick Jr., and other jazz standard pieces.

“We’d perform down at the Manhattan Club in Salt Lake City.

After my football games, my friends would go to other places, but I’d go straight down to the club and perform until one or two in the morning with my mom and dad,” he remembers.

Even now, John wakes up every morning, wondering if he is going to have a voice or not. He sometimes holds a hand over his throat to make it easier to talk.

“It was a crazy, crazy thing that happened,” John says.

loved playing football. I knew one day football would be over, but I always hoped to sing.”

Singing was in his blood. His mother, Beverly Brent Frank, was a recording artist in the '50s and ‘60s who worked with Frank Sinatra. His father, Alan Frank, was a self-taught jazz pianist and vocalist who played with the popular big band leader Alvino Ray in the Navy in 1944.

“I couldn’t help it,” John says. “I sat in the living room every night listening

Unfortunately, another side-effect of the surgery was John couldn’t breathe as well. “I was never the same." It’s hard to play football when you can’t breathe,” he says. He had a run with the New York Jets, then the New York Giants and even went to Canada to play for a year, but he played with difficulty. Eventually, he had to cut his career short.

It took a long time to deal with his troubles, but he’s doing well now. “It still affects me every single day, but I’ve learned not to dwell on it. I have been so blessed. My family gives me strength. My career is going well, and I’ve been a football coach for the Utes, Dixie State College, Skyline High School, and now Olympus High School. I shouldn’t be able to yell across the field, but I can,” he said.

John says the following helped him to overcome his challenges: Commit to a Daily Regimen He feels establishing a routine helps him come to terms with the changes in his voice, and he tries to do it every day. Each morning John prays, reads inspirational literature, then exercises. “I have to do it. It sets a stage for how my day is going to be.

If I don’t do it, I feel completely out of balance,” he said.

Be Grateful for Family and Friends John says he couldn’t have made it through his trials without family. “I can’t tell you why this happened to my voice, but with the support of my amazing wife Melissa and three children; Jackson, Johnny, and Samantha, I was able to learn to stop asking ‘why’ and start asking ‘what now?’ What kind of person do I want to be?” He says the strength he gets from his wife is “indescribably powerful! Melissa is my best friend and my rock! She is the most loving, understanding, even-keeled person I know.”

Both of his sons are excellent athletes and will play college football. His daughter is also an athlete and a talented musician. His children inspire John. “I get this immense sense of gratitude when watching them play, and then seeing them be great people in the community.”

He also received emotional and mental strength from his parents.

“My mother is a member of The Church of Jesus Christ of Latter-day Saints, and my late father was Jewish, but they loved and respected each other’s differences. It is why some of my teammates called me the Jewish Mormon,” he laughs.

John is also still close to many of his teammates today and appreciates their support and friendship.

Learn to Work Hard John says if you asked his peers about his football skills in high school, they’d say he was an above-average football player, but reaching the NFL and becoming a college MVP wasn’t necessarily expected. However, after he chose to serve a volunteer mission for his church for two years in Madrid, Spain, he was a different person. “I grew up. I learned hard work, self-reliance, perseverance, dedication, and to love others. I applied it all to my college football career.” He played for the University of Utah from 1995-1999 and was a 2000 NFL draft pick for the Philadelphia Eagles.

Listen and Be Humble John says it is extremely important to be humble and to listen and learn from those around you, because you will grow.

His coach wanted him to be a defensive tackle in high school, but he told his coach he was a linebacker. “Because I was expressing what I wanted to do, instead of being willing to do what the coach wanted me to do, I didn’t start the games that year. It was a hard but important lesson for me. It’s so important to learn to be coachable.” John is grateful he learned that lesson because in college, when his coach, former NFL player Steve Kaufusi, told him he’d like him to move to the defensive end position, he said, “Of course.

You’re right. I would love to change positions!” John went on to be a three-year starter for the Utes and still holds many records at Utah.

Find Good Mentors John says he wouldn’t have as much success in life without following the example of great mentors. “I can still hear my mentors and coaches’ advice as I go to make decisions.” He says he

strives to be as father-like when he coaches as Steve Kaufusi and as motivational and detailed as Kyle Whittingham. “I still remember Kyle kept rewinding one of my plays my freshman year to show everyone an example of how to play. It meant a lot, and it motivated me!”

Serve Others Reach out to other people and serve them. “When you do kind things for others, it helps you forget about yourself and your problems. It is impossible to serve someone and not have good feelings toward them and toward yourself.”

He has coached and mentored young people for the last 20 years and loves being able to serve them.

“There is something so amazing and incredible about helping them to realize their potential and being a small part of their journey to reaching it.”

Pursuing Hobbies and Dreams “It takes courage and faith to put yourself out there and say this is what you want to do, but if your desires are pure, then it will happen,” he says. Even though he can’t sing like he used to, he still loves music.

He plays saxophone and enjoys writing songs on the piano. His 19year-old son, 17-year-old son, and 13-year-old daughter are natural singers, songwriters, and musicians.

“I love hearing them sing and play guitar and piano. It makes me happy that although I cannot sing anymore, my children have my voice.” John has many other hobbies and especially loves to do things in nature.

Can I have your permission to share another perspective on the subject of mental well-being and hit it from a totally different angle?

Let me say, before we dive in, emotional wellness is a real issue. There are many people who face real emotional challenges. If this is you, my friend, find a professional. Get the help you need. There is no shame in asking for and receiving help.

Now, for the rest of us.

Too many of us are playing the “victim” when it comes to emotional well-being. We are giving up our power. We act like emotional health is out of our control.

My friend, this is just not the case. Your emotional well-being is 100% in your control. Take complete ownership of it. If you don’t like where it’s at now, change it.

I am not saying that it isn’t hard. I know it is hard.

2020 has been the definition of hard (and strange).

What I am saying is, you can choose happiness. You can choose to be emotionally healthy. You can choose to avoid toxic relationships.

You may remember the story of Vikor Frankl. He survived the unspeakable Nazi concentration camps.

His wife and kids were tragically killed. He went on to famously author “Man’s Search for Meaning.”

He teaches us so many insights into how to take control of our emotional well-being and find happiness, even in the hardest times in human history. Viktor Frankl wrote, “Between stimulus and response there is a space. In that space is our power to choose our response. In our response lies our growth and our freedom.”

Another of Frankl’s quotes that is powerful is: “Everything can be taken from a man but one thing: the last of the human freedoms — to choose one's attitude in any given set of circumstances, to choose one's own way.”

Stop letting the world tell you that you are “not enough.” Stop giving people's words and opinions power over you. Stop letting social media comparisons make you feel like crap.

Begin acting today the way William Ernest Henley implored in the poem, “Invictus,” when he wrote, “I am the master of my fate; I am the captain of my soul.”

You are in control of your emotional well-being. Take control of it. Own it.

Such a season of contrasts – lots of celebrations, holiday gatherings, cozy fires, comfy socks, bright lights, snow angels, and an abundance of warm beverages. And, in contrast, it gets darker earlier, the cold is on tap, holiday expectations are overblown, there are family triggers, potential loneliness, and those wintertime blues. Hmmm, contrast indeed. It’s a mix for sure for most of us with all the feelings and experiences of this season.

Let’s look at how we can proactively influence our mood and our mindset to shift those blues and create more inner peace and calm. There are certain life principles that are universal and timeless, and they apply to any human at any season of life or any time of the year. And when principles are applied in our lives, magic happens. And by magic, I mean positive progress – which is basically the same thing. ;) It’s been said that Movement Is Medicine – and how true that is. You likely already know this to be true, right? Getting our physical bodies moving has a direct influence on our mood and mindset. Are you moving on the regular? If not, would you be willing to commit to doing so? Whether we go for a brisk walk, hit the slopes, have a hot yoga session, or take up snowshoeing, what matters is we move. It changes everything for the positive.

Are you feeling connected? Our connections and our relationships have a potent influence on our mood and mindset as well. Loved ones, friends, and associations bring the juice and the joy into our lives. Are you reaching out to connect and nourish your relationships?

Set up a hot cocoa date, have friends over for dinner, or go play in the snow together – regardless of what you do, reach out and connect. Sometimes we wait for others to reach out to us. I invite you to be the one to reach out and nourish your relationships, which in turn nourishes you too.

Increase your hygge. Have you heard of hygge? It’s a concept shared from Danish culture, defined as a quality of coziness that engenders a feeling of contentment – in other words, get your cozy on. Winter is the season to increase our hygge. Ask yourself, what helps me feel cozy and content? A good book by the fire. A cup of your favorite tea. A hot soak. Candlelight with anything. Snuggled up with your love. Cozy socks and Minky cuddle blankets. You name it – get clear on what feels like coziness to you and do more of that for yourself.

Whether you’re living it up like a snow bunny on the slopes or counting down the days for Spring to return, my hope for you is to experience more joy, more light, and more of the good in this season of your life. Some of the best life advice out there is to embrace and savor the season that you’re in – to drink it up and allow it to offer you the gifts it has for you. With so much stigma around the topic of mental health, one nonprofit group wants to help shift the paradigm. Instead, they prefer to focus on mental fitness, which is something that everyone can benefit from. Trent Mano and Rachel Merrill of Room Here founded their organization on the principle that we all need to take care of our minds whether or not we have a diagnosed mental illness.

In statistics reported by the National Alliance on Mental Illness, “One in five people are struggling with mental illness, and approximately 80% of people will struggle with something in the course of their lives.”

In early 2019, one of Trent’s good friends died from suicide. He was a well-known CEO of a tech company, and as a bunch of his friends gathered to grieve, they realized they needed to do more. This served as the impetus for Room Here. They started making plans shortly after that and finally opened their doors in August 2020.

They had been planning to launch in April or May of this year, and with the upheaval surrounding the pandemic, they weren’t sure about how to move forward. But then, they realized their work was more important than ever, as people were experiencing massive changes and disappointments that threatened their mental fitness.

Their focus is twofold: First, to have employers take a pledge to create and implement mental fitness plans. After the employers take the pledge, they are given educational resources to pass on through their usual communication channels. Room Here also provides surveys to help companies measure stigma, burnout, and mental fitness in organizations.

In these efforts, they have partnered with mental health professionals and researchers.

They encourage leaders to lead out in opening conversations about mental fitness. They want to start focusing on Utah companies so that, eventually, all Utah companies would be on board. In the future, they hope to expand to other states so that it becomes a national movement.

Room Here wants to focus on the workplace and changing the conversation there, because this is where many people spend the majority of their waking hours, and where they encounter many of their stressful situations. If they are able to improve the work place environment, they believe the effect will trickle down to both individual families and entire communities.

Secondly, not only do they approach businesses, but they encourage individuals to take a pledge to become a “roomie”. As a roomie, they show they are an ally to those struggling with mental issues.

“Once I identified myself as an ally,” Rachel said, “there have been so many people who have opened up to me.”

“We take a holistic approach,” Trent said. “There is a large physical component and a mental component. Your mental health is completely connected to your physical health.”

Rachel continued. “You have to ask yourself, what are you doing to focus on your mental health? Of course, meditation and breathing exercises are great, but you need to consider other things you do with your body as well, such as eating well, sleeping enough, and making regular exercise a part of your routine. You can’t separate physical wellness and mental wellness. The one affects the other so much.

We’re disagreeing on much these days, but one thing more prevalent than ever that we can all agree on is that 2020 has been a great disruptor to our mental well-being. The uncertainty has caused new stresses and anxiety for so many that some professionals believe its effect on mental health may prove to be the true pandemic.

With travel [basically] at a halt for the greater part of this year, I was curious to learn how its impact is affecting people’s mental and emotional health. I reached out to several travel junkies; some who would normally travel once or twice a year and those who travel several times in a year, in search of answers (and maybe a little commiseration).

I asked if they thought travel played any part in their mental well-being, and if so, how have the imposed restrictions affected them personally?

Some shared very personal stories of the special trips and celebrations that had to be canceled or postponed.

Another described how she thinks not being able to travel has had an impact on society as a whole, stating, “Without international travel, we are living in an insular world and have forgotten what it has taught us; that we are more alike than different.”

I loved reading the varying responses as to how travel plays such an important role for many and what they believe is lacking in their lives without it. But there was one common theme that stood out, as it was iterated in nearly every response. Something that I, like most of you, have also felt this year: Without plans to travel, we are feeling as though there is nothing to look forward to.

Through the many responses, it would seem that the mere plan to travel can relieve stress and boost mental health.

Multiple studies on happiness have shown that those who have a trip planned were generally happier than those who did not. In fact, several mentioned that the research, planning and anticipation of an upcoming trip is almost as much fun as the trip itself.

From these responses, I learned that I am in good company as it relates to missing travel. We know of the many

benefits that come from travel, but especially healing is travel that includes time near the ocean. Years of research show that those near the ocean tend to experience more feelings of calm, clarity and creativity, and there is an actual physiological response to the ocean. The sound alone can change the frequency of brain waves and the blue hue of the water instantly settles the mind. Many refer to this as “blue health.” If you’re looking to improve your mental and emotional well-being, your “blue health,” how about trading in those winter blues for the ocean blue?

CUBBY'S restaurant is a household name with 11 locations around the Wasatch Front, but it was only eight years ago Cubby James began with a single location in a low-end strip mall in Provo. It was a "destination location," as most diners who appreciate a high-end gourmet burger would not necessarily frequent this area next to a Big Lots. Within a few months, the counter-service restaurant had garnered a substantial following as Utah County began to turn from low-cost food to quality food. The restaurant concept was inspired by an Italian beef sandwich, which originated in Chicago in the 1930s.

It was in these early months I first visited Cubby's to write a restaurant review for Utah Valley Magazine. Years later, Cubby pulled me aside at his brother's (Josh James) wedding to tell me about the impact of that article. "Mary, one day all of a sudden we had all these new customers in the restaurant, so I finally asked how everyone had heard of us. I was surprised to learn that Cubby had been fired from four restaurants before deciding to open his own. He and his wife had traveled extensively after graduation from Brigham Young University. They were exposed to the joy of local quality food and the difference made in food. They would never again be satisfied with the frozen preservativeladen food available at other fast-food restaurants.

Cubby found himself butting heads with owners and managers at other restaurants, as he had his own vision of company culture. He had decided there would be no one playing “Gordon Ramsay” in HIS restaurants! (Ramsay is a restaurant owner/TV personality known for his fiery temper and frequent use of expletives.) Cubby has created a powerful, positive team spirit, especially in promoting equality for male and female employees.

I asked Cubby about the transition from "just a burger joint where you can get the best burger in town" to a full menu with burgers, chicken, salads, and so much more. He said his wife, Amanda, had mainly pushed this. She wanted to create a place where both men and women could find just what they wanted. She began to create a host of the most delicious salads and healthy options. I personally attest to this as my boyfriend was used to eating at his favorite guy’s burger place, but I suggested Cubby's as I wanted something other than a burger.

Much to his surprise, he loved the Cubby's "Chicago Beef" burger and discovered sweet-potato fries while I munched on my salad. That is a successful testimonial of the variety of Cubby’s offerings.

What's in the future for Cubby's restaurants? More growth? New concepts? Cubby told me he was not driven by money but rather by creating more opportunities for his employees and focusing on their families and his. Stand by − creative minds are never at rest for long!

LUSCIOUS PUDDING CAKE RECIPE! Winter Has Arrived!

I recently took a trip to Scotland with a group from the Salt Lake City Chamber of Commerce. It was a fantastically beautiful trip. I was excited to taste some original Scottish cooking and baking to see how our recipes compared. One of my favorites has always been the Sticky Toffee Pudding Cake. We have worked on developing the ultimate recipe and it has been one of our go-to recipes for years. When I finally tasted the original Scottish pudding cake, I was very pleased to find out that we had actually improved on the authentic Scottish version! Your family is going to love our new and improved version of this traditional holiday dessert. I hope you enjoy it as much as we do!

STICKY TOFFEE PUDDING CAKE INGREDIENTS 1 cup plus 1 tbsp all-purpose flour 1 tsp. baking powder 1/4 cup pitted dates, finely chopped 1 cups boiling water 1 tsp. baking soda 1/4 cup unsalted butter, softened 3/4 cup granulated sugar 1 large egg, lightly beaten 1 tsp. vanilla

TOFFEE SAUCE 1/2 cup unsalted butter 1/2 cup heavy cream 1 cup packed dark brown sugar 1 tsp. vanilla Garnish | Whipped Cream

DIRECTION Preheat oven to 350 degrees. Butter a 10-inch round or square baking dish. Sift the flour and baking powder onto a sheet of waxed paper. Chop the date's pretty fine. Place in a small bowl and add the boiling water and baking soda; set aside. In a bowl of electric mixer beat the butter and sugar until light and fluffy. Add the egg and vanilla; beat until blended. Gradually beat in the flour mixture. Add the date mixture to the batter and fold until blended with a rubber spatula. Pour into the prepared baking dish. Bake until pudding is set and firm on top, about 35 minutes. Remove from oven to a wire rack.

DIRECTION Combine the butter, heavy cream and brown sugar in a small heavy saucepan; heat to boiling, stirring constantly. Boil gently over medium low heat until mixture is thickened, about 8 minutes. Add vanilla and and serve immediately. Drizzle with toffee sauce and garnish with whipped cream.
