Steven Smith is the Chef Owner of the highly acclaimed Freemasons at Wiswell, the top NW pub in the Top 50 Gastropubs and one of the only pubs to make The Sunday Times Top 100 Restaurants.

Rupert joined Fischer’s Baslow Hall as Sous Chef in 2002, and was appointed Head Chef in 2003. Since then, Rupert has been crucial in Fischer’s holding a Michelin star for 22 continuous years.

Luke is the chef and co-owner at JÖRO in Kelham Island, Sheffield, where the cooking style is New Nordic cuisine. Luke began JÖRO as a pop-up restaurant to test the water with the locals in April 2016, and then opened the permanent restaurant in December 2016.

Born in East Yorkshire, Adam began cooking at an early age and always thought opening a restaurant would be a nice thing to do. Having cooked extensively in London, France, under fellow Yorkshire man Richard Guest at the Castle in Taunton and in Australia, Adam took the plunge in 2005 and Arras was born.

Ryan and Liam Simpson-Trotman are the chefs and co-owners of Orwells. Since launching in 2010, the restaurant has won The Good Food Guide Restaurant of the Year 2017, been included in The Good Food Guide Top 50 UK Restaurants, and become one of only 39 UK restaurants to hold 4 AA Rosettes.

Ahead of new Manchester restaurant Tast, the world-renowned Catalan chef Paco Pérez – current holder of five Michelin stars – will be cooking live and then in conversation with NRB CEO Thom Hetherington about his ambitions for the King Street restaurant and his views on the industry.

Paco is the renowned international patron-chef of two Michelin 2* restaurants - Miramar, in Llançà, (Girona) and Enoteca at the Arts Hotel in Barcelona. He is also behind the Michelin 1* Restaurant Cinc at the Hotel Das Stue in Berlin.

Lisa Goodwin-Allen is Executive Chef at Northcote and has taken sole command of the kitchen since Nigel Haworth took an Ambassadorial role. Lisa worked alongside Nigel Haworth from when she joined Northcote aged 23 in 2001, gradually rising up the ranks and helping to maintain the Michelin Star that Northcote has held for the last 20 years.

Ellis Barrie’s passion for cooking began when he participated in a junior cookery class at the age of 12 and by 19 he was running his own restaurant. Now, Ellis, who originally hails from Liverpool, has transformed a potting shed on his parents’ campsite from a café that served all day breakfasts into award-winning restaurant, The Marram Grass.

It contains oysters. Now, you won’t find one at the bottom of the glass but you may get a touch of sweet minerality in the flavour that comes from the freshly shucked lads that get put in during brewing.

Not a bad way to go, even for a bivalve.

Delicate and toasty, it also has slightly bitter, fragrant twist, thanks to East Kent Goldings.
