Zuppa di Pesce is a rustic seafood stew with clams, mussels, calamari, shrimp, and cod in a delicious tomato, white wine, and fennel broth. Serve with crusty bread or pasta for a full meal.

INGREDIENTS

• 1/4 cup (60g) extra virgin olive oil

• 2 medium shallots diced

• 1 medium fennel bulb sliced

• 5 cloves garlic sliced

• 1 cup (240g) dry white wine such as sauvignon blanc, pinot grigio, or chardonnay

• 2 28-ounce can plum tomatoes blender pulsed or hand crushed

• 1 1/4 cups (320g) clam juice

• 3/4 pound (340g) calamari cleaned, tubes cut into 1/2" rings and large tentacles cut in half

• 3/4 pound (340g) cod or other meaty white fish like monkfish, striped bass, red snapper, etc, cut into chunks

• 12 little neck clams scrubbed, see notes below

• 1 pound (454g) mussels scrubbed and beards removed

• 3/4 pound (340g) extra-large shrimp

• 3/4 cup lobster stock

• salt and pepper to taste

• 1/4 cup minced flat-leaf Italian parsley

INSTRUCTIONS

• Heat a large Dutch oven or heavy pot to medium-low and sauté the shallot and fennel in extra virgin olive oil. After they soften (5 minutes), add in the garlic and cook for 2 minutes more until fragrant.

• Next, add the wine, lobster stock, and turn heat to medium-high. Scrape the bottom of the pot with a wooden spoon to dislodge the brown bits. Cook the wine for 90 seconds then turn the heat to medium and add the tomatoes and clam juice. Cook the sauce at a moderate simmer for 10 minutes before adding any seafood.

• Add the calamari and cook for 15 minutes to soften. Next, add the fish and cook for 5 more minutes, then add the clams and cover with a lid. Cook for 5-7 minutes longer or until the clams just start to open.

• Finally, add the mussels and shrimp and cover with the lid. Cook until the shrimp are pink and cooked through and the mussels open (about 5-7 minutes). Any clams or mussels that do

not open should be discarded because they are most likely dead.

• Taste test and adjust salt and pepper levels. When satisfied turn the heat o and add the parsley. Serve in bowls with toasted Italian bread that has been rubbed with a garlic clove. Also, drizzle your best extra virgin olive oil onto each plate as well. Enjoy!

NOTES

• Go easy on the salt since the shellfish will have a lot of it. Season with salt and pepper to taste right at the end to get the flavors just right.

• Serve with lots of bread to mop up the sauce. Toasted bread rubbed with a garlic clove is excellent to serve with zuppa di pesce.

• Other types of clams and fish can be substituted. Use what’s fresh and available.

• Mussels are normally sold cleaned with beards removed, but scrub and look over all of them before using and remove any beards.

• Seafood should be eaten right away but leftovers can be saved for up to 3 days in the fridge and can be gently reheated over the stovetop.

A New Modern Diner with Amazing Classic Flavors

Carnegie Diner & Cafe is a Modern American Diner with flavorful dishes served up for all-day breakfast, brunch, lunch and dinner. Its Vienna location marks the first restaurant in Virginia from this classic hospitality group, and Executive Chef, Owner & CEO Stathis Antonakopoulos is thrilled to bring a taste of the city to Vienna, Virginia. Carnegie Diner & Cafe also has a location near Central Park (205 W 57th St), in the Times Square District at (828 8th Ave), and in Secaucus, New Jersey.

The interior of the diner is filled with comfortable booth seating, and sun that streams into the multiple windows. The sta sails through the floor pleasing the needs of their “guests” with ease throughout this spacious 3,200 square foot venue that accommodates groups large and small. Al fresco dining is also on the menu, o ered on the patio. Stathis insists that those who eat at his diners are guests, not just customers; he wants his guests

to feel at home or dropping by for a home-cooked meal. Crooners, jazz artists, and Rat Pack classics serenade the guests – yes, it feels comfortable and like home to many NY/NJ transplants, as well as Vienna residents.

Stathis learned to help in his family kitchen and grew up learning recipes from his mother and relatives. His menu reflects the traditional foods he knew, and he insists on quality ingredients that mostly come directly from local farmers. Carnegie Diner & Cafe features an extensive all-day breakfast menu in addition to serving a wide selection of salads, burgers, sandwiches, entrees, steaks, fresh fish, pastas, desserts and more. All-day breakfast items include a Classic Benedict with an optional addition of lobster, Avocado Toast, a BLT Quinoa Bowl with chopped bacon and poached eggs, steak and eggs, and three eggs any style served with hash browns and bread. There are a dozen types of pancakes, decadent wa les and French Toast o ered.

The restaurant also features a full page of plant-based options.

Lunch and dinner entrees include rib-eye steak, Atlantic salmon, fish n’ chips, shrimp spaghetti and spaghetti carbonara and a pretheater menu is also available for those looking for diner & a movie (at the neighboring movie theater). They’re also the first diner in America to serve a full plant-based menu, which includes items such as the Souvlaki Platter, Yeero Platter, an Impossible Vegan Burger and more.

As can be seen in the picture as soon as you walk in the diner, desserts are over-the-top! Favorites include a decadent 24-layer chocolate cake, pies, cupcakes and, again, overthe-top milkshakes to satisfy anyone’s sweet tooth.

Specialty beans from local Vienna Roastery are used for Carnegie Diner & Cafe's bottomless co ee in addition to having espresso and cappuccino, herbal, black and green teas, hot chocolate and over the top milkshakes like the Chocolate Pancake Strawberry Milkshake, Brownie Extravaganza and Oreo Cookie Cake Milkshake. Stathis Antonakopoulos is the restaurant’s Executive Chef and Owner. He has a long history in the hospitality industry, which began at the age of 18 working at his grandfather’s hotel & restaurant in his native country, Greece. Stathis went on to become the Director of Operations at Kellari, which has locations in Midtown West and Washington D.C., and then opened his own restaurant, STIX, in 2012. In addition to his position at Carnegie Diner & Cafe Hospitality which owns and operates Carnegie Catering. Stathis also operates three ghost kitchens for delivery including Organic Burger House, NYC Pancake House and NYC Pastrami House.

So, why open such a unique diner in Vienna? Stathis replied that he had options in the Washington area (DMV). However, when he came to our town, it felt warm and welcoming. As the diner was renovated in two weeks – right before last year’s Memorial Day weekend, townspeople couldn’t wait for the doors to be opened! Stathis 'sta is well-trained; he brought down a crew from New York and had them stay for two months. Good service and making guests relaxed and comfortable are very important to Stathis – it goes back to making guests feel at home.

Since Stathis opened Carnegie Diner & Cafe last year, he has ingratiated himself into the Vienna community. He has been the Title Sponsor for the Vienna Halloween Parade and will

do so again this year. Stathis is the Food Court Sponsor for Vienna’s Oktoberfest (2024-25), and he had a unique idea this year to host the first cake eating contest at the Taste of Vienna – a contestant had to eat 1/4 of the infamous 24-layer cake! Last fall, year, Carnegie Diner & Café showed the town their long-standing tradition of community support by raising $2,000 as a gift for the Madison Hight School Senior Class of 2025. Carnegie Diner & Cafe hosted a Pumpkin Fundraiser, surrounded the diner and sold pumpkins for $4, $6, and $8. It created a new Vienna tradition because Stathis is doing it again this year!

Something extraordinary is baking in kitchens across our community. The Northern Virginia chapter of Cake4Kids, a national nonprofit delivering free, custom birthday cakes and celebration treats to underserved children, is celebrating a remarkable milestone: 10,000 cakes delivered to youth in need. Since its 2010 founding in Northern California, Cake4Kids has been on a mission to provide at-risk children with a simple but powerful gift: a personalized birthday cake made just for them.

For many of these children, it’s the first time they’ve been celebrated in such a personal and joyful way.

The Northern Virginia chapter serving our region has grown into a strong force for good, delivering around 300 cakes each month with nearly 1,000 volunteer bakers

This summer marks a major achievement for the organization and the thousands of families whose lives have been touched by its work.

The concept behind Cake4Kids is beautifully simple: volunteer bakers create custom birthday cakes for children facing di icult circumstances. These include kids in foster care, group homes, homeless shelters, transitional and low-income housing, domestic violence or human tra icking shelters, substance abuse programs, and refugees.

Cake4Kids partners with a network of human and social services agencies in Northern Virginia to facilitate cake requests for the families and children they serve. Volunteer bakers sign up to bake and decorate cakes based on each child’s preferences, from soccer to Minecraft to princess-themed creations. The cakes are delivered directly to the agencies and shared with the children on their special day.

Every single cake is baked in a volunteer’s home kitchen. Volunteers not only bake and decorate the cakes themselves, but they also donate all the ingredients and supplies and handle the delivery. The model’s e ectiveness and inspiration come from the dedication of volunteers who give their time, talents, and resources to make sure every child is celebrated.

Though volunteers never meet the children they bake for, each cake is personalized based on the child’s requested theme and favorite flavors. These thoughtful touches help children feel seen, valued, and loved.

10,000 Moments of Joy

The 10,000th cake is far more than just a number. It represents 10,000 birthdays made brighter, 10,000 children who felt special, and 10,000 memories cherished by families.

Behind the scenes, the scale of e ort is impressive. Managing hundreds of volunteers, coordinating cake requests, ensuring timely deliveries, and maintaining strong partnerships with agencies takes careful organization. But at the heart of it all is the belief that every child is worth celebrating.

Volunteers are not required to commit to a minimum number of cakes. They can bake as often or as infrequently as their schedules allow, selecting requests that match their availability, baking preferences, and comfort level. Whether you bake once a week or once a year, every cake matters.

Volunteer bakers receive detailed information about each request, including flavor, allergies, delivery dates, and favorite themes, to prepare a personalized creation that brings joy to a child’s birthday.

Building a Sweeter Community

As Cake4Kids Northern Virginia reflects on this milestone, the program’s success lies in the community’s strength and compassion. Every cake delivered is an act of kindness, and every child celebrated is a reminder of what happens when people come together to uplift one
