USES: Potherb, vegetable, salad, flour. Lamb’s quarters, is like wild spinach and I personally allow it in my garden. It is mild as a vegetable and a worthy substitute for lettuce in a tossed salad. I use it for a spinach substitute. The tops are a tender source of edibles from spring until frost kills it in the fall. There are so many plants, shrubs and trees in our area that are edible.
