HELLO! July has been a busy month at Springwell. (I feel like I write that every month!). We have run out of capacity on the new kit already and have new tanks arriving next week. As you read this they should being commissioned!

This month’s boxes feature some really exciting and interesting new beers. Many of the beers in the box have not been available anywhere else in the UK, and you’re getting to try them ahead of their releases on the webshop!

We have teamed up with three breweries in China for a series of virtual collaborations. After lots of voice notes over We Chat we came up with three very different beers. Our Xenia Stout brewed with Yo Hustler is an Imperial Stout based on the flavours of Tieguanyin tea. This drink is traditionally offered as a symbol of hospitality when welcoming guests to your home, so we named it after the Ancient Greek philosophy of ‘Xenia’ or ‘guest friendship’.

With our friends from Nanmen in Chengdu we brewed a No Coast IPA. Not quite West Coast, not quite East Coast, this beer sits somewhere in between. We loved the style suggestion from our Chinese collaborators, and found it a really interesting beer to brew.

Finally we headed (virtually) to Wuhan to brew with 18 Brewing. When we asked them what style they would like to see they came straight back with a request for a TFG. This TFG is brewed with Apricot, Lychee and Raspberry and sees Refold put a new twist on the TFG design. It’s a little stronger than we usually aim for with our TFGs, and we’re really pleased with how the experiment turned out.

We also did some in person collabs this summer.

We hosted both Bundobust and Queer Brewing at Springwell to brew a series of summer-y sours.

FESTIVALS ARE

WE HAVE BEEN TAKING BABY STEPS BACK INTO THE WORLD OF BEER FESTIVALS. Last weekend Alex and Kate headed to Manchester for the first ever edition of Manchester Craft Beer Festival. They couldn’t keep up with the demand for our North X Bundobust Salted Sour!

We are so excited to catch up with friends safely (we’re masking and sanitising!) and can’t wait to plan our own festival at Springwell.

Fingers crossed that this will be a reality in Summer 2022!

A fresh and juicy DIPA made a heap of tangy hops. Our signature fluffy cloud malt base bearing Yakima Chief : Cryo Pop™ Blend, taking the lead with its sherberty fizz of candy sweet and overripe mango. A big dose of Nelson Sauvin brings gooseberry and sweet chardonnay tones whilst a sprinkle of Talus propping up the affair with vanilla, coconut and lime.

Salted Lemon Sour

Hops None Too much spicy? We’ve got you. Based on Indian Lemonade aka Nimbu Pani we’ve made an incredibly tart, clean, dry and ridiculously refreshing sour beer made with unwaxed lemon zest, freshly squeezed organic lemon juice and salt. The perfect accompaniment to Bundobust’s vibrant and delicious Indian Street Food. Thank you please!

Gummy gummy gummy we’ve got love in our tummies! Hitting you with another DIPA whammy Fading Frontier builds sky high atop our recent release, Sea of The Curve.

Chewy, full of umptious gulpability with HBC 630 and Mosaic on the exchange bringing sweet bouncy gummy bear goodness, lots of cherry berry cream and zips of pink grapefruit zings!

NORTH X QUEER BREWING Style Fruited Sour + Raspberry + Passionfruit ABV

Hops None Our collab with Queer Brewing is a sessionable summer-y sour fruited with raspberry and passionfruit. We’ve gone a little lighter on the fruit and the abv than in our TFG series, resulting in a vegan sour that’s the perfect drop for a summer barbecue. Expect sharp raspberry on the nose, finishing in a jammy tartness, with the passionfruit adding a rounded sweetness to the flavour.

50% of the profits from this beer will be used to support the establishment of the Queer Brewing Foundation, which will provide beer and occasionally cider ‘scholarships’ for LGBTQ+ people. The foundation will also work to create open-source resources for bars, breweries, venues, etc for LGBTQ+ staff and customers.

Whilst this foundation is still a work in progress we feel incredibly lucky to support Queer Brewing in their work, and cannot wait to see how it develops.

NORTH X YO HUSTLER Style

Xenia Stout

Hops None Brewed in collaboration with our friends, Yo Hustler in Changsha, we’ve created a rich and and aromatic 10% Imperial Stout. We laid out a robust grist consisting of Fawcett’s speciality Mild Ale malt as the base and reinforced with Chocolate and Brown malt and finished with Roasted Wheat making a smooth and decadent body. We added fresh peeled ginger to the boil and infused Tit Kun Yam Tea at flame out so as not to burn the tea.

We finished the beer by recirculating it through toasted sesame and unsalted peanuts. The result is an Imperial Stout that sings a melody of vibrant and colourful flavours that journey through your senses with each sip.

NORTH X NANMEN Style

No Coast IPA

Kohatu + Nelson Sauvin + Talus

Brewed in collaboration with our friends, Nanmen in Chengdu, we’ve cooked up a tasty and crushable No Coast IPA. Combining the sharpy piney and bitter aspects of a West Coast IPA and the highly juicy and fleshy tropical notes of an East Coast IPA, this No Coast IPA is dry hopped with New Zealand Kohatu, Nelson Sauvin and US Talus hops. The result is a plethora of crushed pine needles and sharp unripe pineapple jabbing with an opening bitterness. Soft, ripe and slightly tart gooseberry swarm the mids whilst Talus finishes with sweet and creamy coconut, vanilla and lime.

NORTH X 18 BREWERY Style

TFG: Apricot + Lychee + Raspberry

Hops None Our signature thick, slick and salty Triple Fruited Gose recipe made up of a big dose of oats, ale malt, salt and lactose infused with organic Apricot, Lychee and Raspberry. Apricot brings its soft fleshy tropical stone fruit characteristic making this a bellini esque affair. Lychee adds a distinct, gentle and aromatic sweetness whilst raspberry rounds it all of with a zap of tartness and earthy tone.

Hops Sabro Wandering through tall grassy fields, seeing what is around us. A metallic green insect you’ve never seen before, babbling brooks wash over stones, the sun glares and the wind brushes the tops of trees. It’s these moments that we sit back and take note. This beer is a recording of one of those moments.

Starting with a light grist built with lots of soft wheat, we steeped chamomile flowers into cooling wort. Kveik Yeast works it’s magic and feathers the edges and fluffs an already soft haze.

A gentle dose of Alphonso Mango elevates with its sweet and rounded character and a dusting of Sabro hops finish the beer with herbaceous and coconut notes.

A beer for sitting back and taking it all in.

FULL FATHOM 5 Style

Coffee + Coconut Porter

Hops Magnum Rich, roasty and slick. Full Fathom 5 boasts a complex malt bill with coffee and coconut infused in the mash to bring even more flavour than before. Balanced sweetness and a dry finish build the perfect beer for a second cold infusion of coffee and coconut to stand on and shine.

Flowers are given in love and joy, celebration and commemoration, or just for the sake of it. Our wheat beer is as bright and vibrant as the most beautiful bouquet. Balancing the bold flavours of coriander seed and curaçao orange peel with the gentle snap of Saaz and Tettnang hops, Flowers is a modern twist on a classic style, for any occasion.

When your very existence is in some way radical in itself, sometimes all you want is an easygoing beer. This Pale Ale is just that. Hopped with Citra and Simcoe and fermented with Kveik yeast, it sings with mango, passionfruit, and ripe tangerine. This beer is for taking up space, and standing tall. We’ll be right there beside you.

This summer we had the pleasure of welcoming Lily from Queer Brewing to Springwell. It was our first in person collaboration in a very long time.

We spent a sunny Friday brewing beer, eating lunch from Bundobust, catching up on the past 18 months, and sampling some of her beers as they poured from the taps at Springwell that evening.

Lily founded The Queer Brewing Project to provide visibility for LGBTQ+ people in and around beer. She is working to build community, advocate for LGBTQ+ rights, and raise funds for vital LGBTQ+ charities.

Lily initially started Queer Brewing as a series of collabs with her peers in the industry. She has brewed over 30 different beers in 5 different countries. In 2020 she was selected as the first beneficiary of Cloudwater’s Wayfinder Project. This three month project enabled Lily to develop Queer Brewing’s core range, and we are so excited to include two of her beers in this month’s gold subscription boxes.
