Sweet Chilli Vegetables With Rice Noodles

Speedy and spicy, these quick, delicious and easy vegan-friendly noodles are ideal for a weeknight dinner.

Ingredients

75g Red Onions (sliced)

75g Courgettes (cut in half and sliced at an angle)

75g Cauliflower (small florets )

75g Carrots (peeled, cut in half and sliced at an angle)

75g Mixed Peppers (sliced)

75g Leeks (cut in half and sliced)

50g Beansprouts

5ml Sunflower Oil

250g Rice Noodles

400ml Sweet Chilli Sauce

20g Spring Onions (sliced at an angle)

25g Fresh Coriander (chopped)

Method

Wash and prepare all the ingredients as per the ingredient list.

Heat the oil in a wok or large frying pan and add all the vegetables (expect the spring onion) and stir fry for 3-4 minutes.

Add the sweet chilli sauce to the vegetables and allow to simmer for 3-4minutes.

Cook the noodles as per the packet instructions.

To serve, drain the noodles and place in a bowl or on a plate and serve the sweet chilli vegetables on top then garnish with the spring onion and chopped fresh coriander

Falafel Burger

Makes 4

SERVES 4

A delicious alternative to a fast food favourite. High in protein and flavour, give chickpeas some love!

Ingredients

500g Tinned Chickpeas (in water)

1-2x Garlic Cloves

1 tsp Fresh Parsley (chopped)

1 tsp Ground Cumin

1 tsp Chilli Powder

2 tsp Fresh Coriander (chopped)

15ml Vegetable Oil

1x Lemon (juiced)

Pinch Black Pepper Pinch Salt

Method

Drain the chickpeas and put them in a blender along with the garlic cloves. Add the fresh herbs and spices with a little seasoning and lemon juice and blend to a smooth paste.

Divide in to 4 equal burgers using your hands to shape them.

Heat the oil in a non-stick pan and fry each of the burgers for 3 minutes on each side until nice and golden brown.

Serving Suggestion

Delicious served in a warmed pitta with sliced avocado, hummus and shredded salad

Let’s start talking about menopause!

It’s no longer the taboo subject that it used to be. Over 75% of women experience menopause symptoms, including brain fog, hot flushes, and joint pain, to name a few. However, in the workplace, menopause still isn’t openly discussed, as symptoms can be personal and sometimes embarrassing. But at Norse Group, we want to start the conversation. We don’t want our colleagues to suffer in silence.

That’s why Norse Group have started to hold our own Menopause Cafés aimed at breaking down the stigma around menopause and increasing awareness of the impact of meno pause on those experiencing it, their family, friends and colleagues.

Initially started in Perth, Scotland, in 2017, The Menopause Café charity has since spread worldwide, with volunteers now hosting events in the UK, Bahrain, Mexico, USA, Austria, and India. Our first Menopause Café took place in Norwich at the end of January, and we welcomed a mix of employees and members of the local community. One of the attendees told us, “I feel less alone, and it’s nice to know that other people are going through the same type of experience as me.”

The purpose of Menopause Cafés is to offer a safe space that encourages discussion and is open to all ages and genders. There are no talks, no experts, and discussion topics are chosen by participants.

Following the success of our first Menopause Café, we’re now looking to take them around to other Norse Group locations later in the year.
