En ydmyg holdning til at ville skabe Bornholms bedste spisested. Det var den indledende tanke bag Kadeau, der i dag driver to succesfulde og stjernebelønnede restauranter på Bornholm og Christianshavn.
A humble aspiration to create the best dining experience on Bornholm was the initial idea behind Kadeau, which today operates two successful and star-awarded restaurants on Bornholm and in Christianshavn.
Hos Kadeau brænder de for gastronomien, for at udvikle det nordiske køkken og for de lokale, sæsonaktuelle råvarer. Alt sammen rodfæstet i Bornholm, den lille ø i Østersøen, hvorfra passionen og drømmene har ophav. Og hvor grundstenene til gastronomi på topniveau blev skabt tilbage i 2007. Bag åbningen stod Nicolai Nørregaard og Rasmus Kofoed, ligesom Magnus Klein Kofoed, direktør for Kadeau, også var med på den gastronomiske rejse fra begyndelsen. Ambitionen var et godt og ærligt spisested, der skulle tage udspring i bornholmske råvarer. I dag har Kadeaunavnet eksisteret i 17 år og tæller to Michelinrestauranter på Bornholm og i København.
ET GASTRONOMISK FUNDAMENT
Det lå ikke umiddelbart i kortene for Kadeaus medstifter og køkkenchef, Nicolai Nørregaard, at han skulle begå sig i restaurationsbranchen: ”Grundlæggende er jeg et kreativt menneske, og egentlig er det kreative en drivkraft, som kunne have taget mig i mange retninger,“ indleder han. Allerede fra sine barndomsår i Svaneke fik han dog et solidt gastronomisk fundament gennem en familie, hvor gode råvarer og madlavning var i centrum:
”Min farfar var en stor katalysator for det, jeg beskæftiger mig med i dag. Også helt uden at jeg var klar over det som barn. Hans tilgang til håndværk, måltider og kvalitet har smittet af på mig. Han var virkelig god til at lave mad, og man kunne altid finde ham i køkkenet. Så det var her, vi var samlet, og her, samtalerne var,“ erindrer Nicolai Nørregaard og fortsætter:
At Kadeau, they are passionate about gastronomy, developing the Nordic cuisine, and using local, seasonal ingredients. All of this is deeply rooted in Bornholm, the small island in the Baltic Sea from which their passion and dreams originate. It’s also where the foundation for topnotch gastronomy was established back in 2007. Nicolai Nørregaard and Rasmus Kofoed, the cofounders, along with Magnus Klein Kofoed, the director of Kadeau, were the pioneers of this culinary journey. Their ambition was to create a good and honest dining establishment based on Bornholm’s ingredients. Today, the Kadeau name has existed for 17 years and boasts two Michelinstarred restaurants on Bornholm and in Copenhagen.
It wasn’t immediately obvious that Kadeau’s cofounder and head chef, Nicolai Nørregaard, would find his place in the restaurant industry: “Fundamentally, I am a creative person, and, in fact, creativity could have taken me in many directions,” he begins. However, from his childhood years in Svaneke, he gained a strong culinary foundation through a family where quality ingredients and cooking took center stage.
“My grandfather was a significant catalyst for what I do today, even though I wasn’t aware of it as a child. His approach to craftsmanship, meals, and quality rubbed off on me. He was really good at cooking, and you could always find him in the kitchen. So that’s where we gathered, and that’s where the conversations happened,” recalls Nicolai Nørregaard, and continues:
”Det har, set i bakspejlet, haft en stor indflydelse på min respekt for mad – og vigtigheden af at spise ordentligt. Men også respekten for råvarerne; at dyrke sine egne grøntsager og gemme til vinteren, som jo i dag er nogle af grundstenene i mit køkken.“
LOKALT FORANKRET
Hos Kadeau arbejder de med to forskellige sæsoner i køkkenet: The growing season og The preservation season. En stor del af restauranternes DNA er nemlig at forlænge sæsonerne ved at præservere og hengemme, så råvarerne udnyttes bedst muligt. Samtidig er kærligheden til de lokale råvarer et centralt omdrejningspunkt. Både dem, Kadeau selv dyrker i deres store have på Bornholm, men også dem, de aftager fra små, lokale producenter på øen.
Kadeau bevæger sig i det nordiske køkken med afsæt i Bornholm, og det afspejler sig i menuerne både på klippeøen og Christianshavn: ”Vores koncept baserer sig på Bornholm og bornholmske råvarer. Derudover samarbejder vi også med en masse små producenter rundt omkring i Danmark og i Norden,“ fortæller Nicolai Nørregaard.
EN KONTINUERLIG UDVIKLING
Kadeau er et sted, hvor passionen for gastronomien skinner igennem – men også et sted for kontinuerlig udvikling og dygtiggørelse. Det afspejler sig ikke mindst i Michelinguiden, hvor Kadeaus restauranter kan bryste sig af i alt tre stjerner; én på Bornholm og to i København:
”Det er et kæmpe skulderklap og betyder også meget for mig personligt,“ lyder det fra Nicolai Nørregaard, der er glad for at kunne give noget tilbage til sin fødeø og stedet, hvor han har sit gastronomiske ophav: ”På mange måder er det, vi laver, en kærlighedserklæring til Bornholm. Så at kunne bringe én af de tre stjerner hertil var kæmpestort. Og vores ambitionsniveau er stadig højt i dag. Hver dag arbejder vi på at gøre det bedre, end vi gjorde i går.“
“In hindsight, it has had a significant influence on my respect for food and the importance of eating properly. It also instilled a respect for ingredients, growing your own vegetables, and preserving them for winter, which are some of the cornerstones of my kitchen today.”
LOCALLY
At Kadeau, they work with two different seasonal menus: The Growing Season with dishes changing through spring and summer to reflect the season change accurately and The Preservation Season which dives into their larder of preserves which are created during the summer on Bornholm. Preserving ingredients is a significant part of the restaurants’ DNA. They preserve up to 10 tons of produce, picked from their garden on Bornholm or foraged in the forests and beaches of the island.
Bornholm is the heart of Kadeau, which is reflected in the menus on both the rocky island and in Christianshavn: “Our concept is based on Bornholm and Bornholm’s ingredients. Furthermore, we also collaborate with many small producers throughout Denmark and the Nordic region,” explains Nicolai Nørregaard.
Kadeau is a place where the passion for gastronomy shines through, but it’s also a place of continuous development and improvement. This is evident in the Michelin Guide, where Kadeau’s restaurants proudly hold a total of three stars: One on Bornholm and two in Copenhagen:
“It’s a huge recognition and means a lot to me personally,” says Nicolai Nørregaard, who is delighted to give back to his native island and the place where his culinary journey began: “In many ways, what we do is a declaration of love to Bornholm. So being able to bring one of the three stars here was a huge accomplishment. And our level of ambition is still high today. Every day, we work to do better than we did yesterday.”

Nestled in historic surroundings, the NH Collection Copenhagen is beautifully situated right along the waterfront promenade in Christianshavn.
Opførslen af den markante bygning tog sin begyndelse i 1957, og er oprindeligt designet af arkitekten Palle Suenson som hovedsæde for det prominente skibsværft Burmeister & Wain (B&W). Skibsværftet var dengang en af Københavns største arbejdspladser og markerede sig som Danmarks førende inden for skibsbygning på Refshaleøen, blot få kilometer fra hotellets nuværende lokation. I 1962 stod bygningen færdig, og den er siden blevet kendt som ’Ørkenfortet’ i folkemunde, hvor den har stået som et ikonisk vartegn ved indgangen til Christianshavn.
Siden opførelsen har bygningen gennemgået en mageløs transformation. Fra 2019 til 2021 blev ejendommens 33.000 kvadratmeter elegant istandsat og indarbejdet i en moderne kontekst, hvilket resulterede i NH Hotel Groups første skandinaviske hotel – NH Collection Copenhagen. Visionen for bygningen var fra begyndelsen helt klar: ATP Ejendomme og

The construction of this striking building began in 1957, originally designed by architect Palle Suenson as the headquarters for the prominent shipyard Burmeister & Wain (B&W). At the time, the shipyard was one of Copenhagen’s largest employers, leading the country’s shipbuilding industry from its base on Refshaleøen, just a few kilometers from the hotel’s current location. The building was completed in 1962 and over the years has become colloquially known as ‘The Desert Fortress,’ standing as an iconic landmark at the entrance to Christianshavn.
Since its construction, the building has undergone a remarkable transformation. From 2019 to 2021, its 33,000 square meters were elegantly refurbished and integrated into a modern context, resulting in NH Hotel Group’s first Scandinavian hotel – the NH Collection Copenhagen. The vision for the building was clear from the start: ATP Ejendomme and the hotel manage

Herunder at genbruge mest mulig af den oprindelige bygnings konstruktion og materialer.”

“Actually, the stairway was part of the original design from the 1950s, but it was never realized—until now. Before the refurbishment, the building appeared rather elitist and closed off. It was crucial for us to change that perception and welcome the local community,” explains Anders Duelund, Director of NH Collection Copenhagen. He adds, “At the same time, renovating in a sustainable manner was our top priority. This included reusing as much of the original building’s structure and materials as possible.”
NORDISK ELEGANCE OG KUNST
I efteråret 2021 kunne NH Collection Copenhagen slå dørene op for første gang, og de luksuriøse detaljer og det smagfulde interiør har betaget gæster fra hele verden. ”Anna Bak’s artwork is part of the narrative of a historic building and a historic city. ‘Ever Mighty’ was the name of the last ship that sailed out from B&W. The piece elegantly unites past and future,” explains Duelund.

Milas Jewellery’s humble beginnings can be traced back to a small workshop in Frederiksberg, founded by Minna Lund. For years, Minna dedicated her days from dawn till dusk to transforming raw materials into miniature works of art. In 1997, the shop relocated to its current address, marking a significant milestone in its evolution. The following year, Vigga was born, and she has been intertwined with the store’s story from day one.
Today, the boutique is run by the mother-daughter duo. They have gradually expanded their business while adhering to a core philosophy: Quality over quantity, and a commitment to excellence. “We take our time and never compromise on materials,” says Vigga Lund.

Creative joy is a constant companion for Milas
Jewellery. With over 30 years of experience, Minna has refined her artistic flair, with their creations often inspired by the materials themselves. “When we handle a beautiful stone, it almost speaks to us, guiding its transformation,” explains Vigga. Everyday moments and special events also fuel their imaginative fire. For instance, a past exhibition themed around animals inspired an entire collection based on the butterfly, named Mariposa.
Moreover, they offer a range of jewelry pieces with surfaces hand-stamped directly onto Copenhagen’s cobblestones. “We literally stand out on the cobbles with a hammer,” says Vigga with a smile. This technique imparts a unique character to the pendants and rings, unlike anything found elsewhere.

“We wanted to create something that wasn’t tied to traditions—something where we could use our creativity without constraints,” explains Simon Madsen. “Pasta quickly becomes Italian, and Danish food quickly turns into ‘smørrebrød’. We wanted to break out of those molds.”
Anarki is a bistro on Frederiksberg that draws inspiration from all over the globe. Here, no ingredient is forbidden, and no cooking method is excluded. “If we think it’s good, we find a place for it at Anarki,” says Simon. This flexible approach allows Anarki to offer a unique culinary experience every time you visit.
The food at Anarki is often served as sharing plates, fostering a communal dining experience. “We want our guests to share their dining experiences and enjoy a cozy time together,” says Simon. This concept helps to create an informal and relaxed atmosphere where guests can feel at home.
Another cornerstone of Anarki’s concept is their extensive wine program. The wines origin from
all over the world and are selected without following fleeting trends but with a focus on quality.
“We have put together a diverse wine program where our guests are guaranteed to find something they like,” Simon explains. This dedication to quality wine aligns perfectly with the restaurant’s overall approach to high quality without pretentiousness.
Anarki’s informal style and high standards have been recognized with a Bib Gourmand from the Michelin guide every year since its opening, a testament to their consistent and high standards. “We place great emphasis on world-class food and wine, but in a relaxed and informal atmosphere,” Simon notes.

Situated in a small side street off Gammel Kongevej, Mêlée offers classic French cuisine with a modern twist, crafted by owner Dan Rauhe and his colleagues.
“The name Mêlée actually comes from the sport of rugby,” explains Dan Rauhe. “Mêlée, meaning a sort of scrum or cluster, symbolized the friendship and collaboration that we three founders shared, and which was translated into our joint bistro.”
The kitchen’s philosophy is simple: quality and integrity.
“We use primarily Danish ingredients of the highest quality, but we are not hesitant to import ingredients from abroad when they are at their best,” says Dan. The menu changes with the seasons, but you can always find their beloved signature dishes like onglet and tartare. Their four-course menu and daily chalkboard specials tempt anyone looking for a complete dining experience.
Mêlée has earned the coveted Bib Gourmand from the Michelin Guide every year since 2011, a testament to their consistently high standards. “We want to offer our guests a good meal at a
fair price,” explains Dan. “It’s about quality without being pretentious. Our portions are solid but balanced.”
But what truly makes Mêlée unique is the continuity. “Our guests return because they know what they will get. A good glass of Burgundy, a solid starter, and a main course—always with high quality. They never go wrong.”

Erik Bjørn, Co-founder of the bar, explains: “In 2015, I was inspired by the aperitivo concept in Italy, where you meet with friends in the late afternoon to enjoy a small glass of wine with a little food before dinner. We wanted to bring that to Copenhagen.”
At Nebbiolo Winebar, a personalized experience awaits. Instead of a traditional wine list, guests receive a glass of water and are approached by one of their knowledgeable waiters, many of whom are Italian. “A waiter comes over to discuss what you’d like,” Erik says. “We aim to talk wine at a very down-to-earth level to find what you truly enjoy. You don’t need to know anything about wine to enjoy our bar.”
The commitment to authenticity is evident throughout the bar. “Everything in the bar is from Italy, even the sodas,” Erik notes. Partnering with
small producers across Italy ensures high-quality wines offering unique flavors not commonly found on the global market. A standout feature of Nebbiolo Winebar is their extensive selection of wines by the glass. They usually have 40-50 bottles open and available by the glass. Nebbiolo Winebar also provides complimentary small bites with each wine order. Whether it’s cheeses, olives, or charcuterie, these small plates are always included without extra cost.
Nebbiolo has proven successful, attracting a diverse clientele. “We found that people from all walks of life enjoy our space. Everyone feels welcome, and no one hesitates to ask questions,” Erik says.
Expanding their concept, Nebbiolo Antipasti in Holbergsgade follows the same wine-focused ethos, but with a broader selection of antipas-
ti dishes. This location offers a more extensive menu of Italian small plates, perfect for an elaborate dining experience.
Nebbiolo Winebar opens daily from 3 PM until late evening, only closing for holidays around Christmas and New Year. It has quickly become a beloved spot for quality Italian wine and delightful small plates, served on Italian tiles for extra authenticity. There’s no dress code here, so whether you’re in high heels or flip-flops, you are welcome. No prior knowledge of champagne is needed; curiosity will suffice. And with over 50 different kinds of champagne, there’s something for everyone.
The bar is run by Tove Brandt and her skilled and welcoming staff, and they are more than happy to guide you and share their champagne knowledge. Tirage is a wine bar with a focus on bubbles, and the atmosphere is relaxed and informal. It’s a place where you can meet with a friend, a colleague, or a loved one, have a good conversation, and unwind. The ambiance is calm, with subdued and pleasant music.
“We notice that people come here to use the bar as a sanctuary. It might be a spot for a quick drink before heading to the cinema or theater, or simply a cozy afternoon and evening filled with chat and laughter,” says Tove Brandt, who opened the inviting bar in 2023. “Guests come in and feel at home.”
On warm days, it’s also possible to enjoy the bubbles outdoors, and if hunger strikes, snacks are available—or you can order take-away from another restaurant of your choice and enjoy it
in the bar, with tableware, napkins, and clearing up all provided. If you’re on the go, the staff can assist:
“We have a selection of bottles that you can buy to take home or with you on the road. Many people come in, buy a bottle and a couple of to-go glasses, and enjoy the bubbles by the lakes. It’s a perfect option during the summer months,” explains Tove Brandt.
Although Tirage is still relatively new to Copenhagen’s wine bar scene, it is well on its way to cementing its place as a haven in the city, where you can celebrate both big and small events—or just drop by on an ordinary day.

„Vi har ligget på vores nuværende adresse i 29 år – og fik så for et par år siden NH Collection Copenhagen som nabo. Det har vi været rigtig glade for,” fortæller Benny Christian, som er head of front house og events. Rosforth & Rosforth er ikke alene kendt for deres passion for naturvin, men også for at skabe en stemning, der emmer af kultur og unikke avantgarde oplevelser. Fra april til september forvandles området under broen til et intimt eventsted med ballet, jazzkoncerter og gastronomiske oplevelser – lige foran NH Collection Copenhagen.
Rosforth & Rosforth står for det autentiske havnemiljø og bringer det industrielle præg til live. „Vi elsker at skabe liv og begejstring. Vi arrangerer alt fra foodtrucks til koncerter med nogle af verdens bedste performere,” forklarer Benny, og tilføjer, at de også har vinbar, når vejret tillader det.
En særlig tradition, der skaber liv på havnen, er ankomsten af sejlskibet fra Fairtransport. „Tre gange om året kommer der en gammel hollandsk rig med 16.00020.000 flasker vin til os og lægger til ved kajen foran hotellet i en uge, og det fascinerer virkelig gæster og lokale i området,” siger Benny, der over årene har udviklet et stærkt venskab med hotellets direktør, Anders Duelund. Et venskab baseret på fælles værdier og en passion for at skabe exceptionelle oplevelser.
”We have been at this location for 29 years, and a few years ago, NH Collection Copenhagen moved in next door. We’ve been very happy with this,” says Benny Christian, head of front house and events. Rosforth & Rosforth is renowned not only for their passion for natural wine but also for crafting an ambiance brimming with culture and unique avantgarde experiences. From April to September, the area under the bridge transforms into an intimate event space featuring ballet, jazz concerts, and gastronomic delights right in front of NH Collection Copenhagen.
Rosforth & Rosforth brings the authentic harbor atmosphere to life with an industrial touch. ”We love creating excitement and vibrancy. We organize everything from food trucks to concerts with some of the world’s best performers,” explains Benny, adding that they also run a wine bar when the weather permits.
A special tradition that livens up the harbor is the arrival of the Fairtransport sailing ship. ”Three times a year, an old Dutch rig with 16,00020,000 bottles of wine arrives at our quay in front of the hotel for a week, captivating both guests and locals,” says Benny. Over the years, he has developed a strong friendship with the hotel’s director, Anders Duelund, a friendship based on shared values and a passion for creating exceptional experiences.
„Hos Rosforth & Rosforth har vi været med fra starten, selv under byggeprocessen af hotellet. Vi var med på alle rundvisningerne og har hele tiden haft et tæt samarbejde,” siger Benny. „Når vi har vinbønder på besøg fra hele Europa, er det helt naturligt, at de bliver booket ind på hotellet. Det er dejligt tæt på, og Anders og hans personale er altid hjælpsomme. Vi har en gensidig forståelse, og vi hjælper hinanden på alle mulige måder – for nylig lånte de os for eksempel en scene til en balletopvisning med Maria Kochetkova.”
Og hotellet nyder samtidig godt af Rosforth & Rosforths evne til at fange gæsternes fantasi og bringe liv til hele området. „Hotellets gæster opdager, at de ligger ud til en ægte, levende havnefront, og de bliver nysgerrige, når de ser, de mange anderledes ting, vi laver hernede,” afslutter Benny.
”At Rosforth & Rosforth, we have been involved from the very beginning, even during the hotel’s construction. We participated in all the tours and maintained a close collaboration,” says Benny. ”When we have winemakers visiting from all over Europe, it’s natural for them to stay at the hotel. It’s conveniently close, and Anders and his staff are always helpful. We have a mutual understanding and support each other in every possible way—recently, they lent us a stage for a ballet performance by Maria Kochetkova.”
The hotel, in turn, benefits from Rosforth & Rosforth’s ability to captivate guests and breathe life into the entire area. ”Hotel guests discover that they are situated on a genuine, lively waterfront, and they become curious when they see the many unique activities we host here,” Benny concludes.
