GLOSSARIO

----------------------------------------------------------------------VIN SANTO Is an Italian style of dessert wine named "holy wine" after its historic use in mass where sweet wine was often preferred ----------------------------------------------------------------------CHAUDE LUNE ICE WINE An ice wine from Valle d’Aosta. From the Prie Blanc grape harvested in December when the vineyards are swathed in snow. Unusually, it is the wine that is the vehicle for the wood rather than the other way round, and, in this case, cherry, juniper and chestnut amongst others lend their subtle tones to the finished product. It has a delicious burnished apple flavour, not dissimilar to a Tokaji. Throw a servant on the roaring log fire and sip this elixir with some hot roasted chestnuts whilst humming a few bars of “Edelweiss” -----------------------------------------------------------------------

FORMAGGI TASTING NOTES

------------------------------------------------------------------------------------------------------------MONTASIO DOP It was traditionally made by monks living in the Moggio abbey, located at the top of the Carnic Alps. It is produced in Friuli Venezia Giulia from cow’s milk, as it ages, the semi-hard cheese takes on a certain piquancy until it becomes almost granular. It is used to make frico a traditional cheese and potato bake made on open fires ------------------------------------------------------------------------------------------------------------GORGONZOLA PICCANTE DOP Italy's most famous blue cheese is bold, assertive and intensely flavourful. Legend has it that this cheese was created by accident: An inattentive cheese maker left some fresh milk out to drain for too long. Hoping it wouldn’t make a difference to the batch of cheese he planned to make, he used the resulting curd anyway. Months later, he found that some of his cave-aged wheels had a strange blue-green streak of mould. With some trepidation, he tasted the new cheese and found it was terrific. Today, most blue cheeses are injected with mould-producing bacteria to speed the process along. ------------------------------------------------------------------------------------------------------------TOMA PIEMONTESE DOP The paste is white with a tinge of yellow. This medium soft type of Toma Piemontese is sweet to the taste yet as it is ripened for 60 days, it acquires a more savoury, herbaceous spiciness which render it unique in taste ------------------------------------------------------------------------------------------------------------TALEGGIO DOP The cheese is listed among the foods served at the banquet for the coronation of Pope Clement VI in 1344, and was also served at the wedding of Francesco Sforza to Bianca Maria Visconti in 1441. Taleggio is an uncooked, soft cheese made from whole cow's milk. The cheese has a strong aroma, but its flavour is comparatively mild with an unusual fruity tang. Its crust is thin and studded with salt crystals ------------------------------------------------------------------------------------------------------------PROVOLONE PICCANTE Originally from southern Italy but now eaten all over Italy, provolone is one of the pasta filata or "spun curd" family of cheeses. Provolone is a hard cheese eaten at various stages of aging and is used primarily as a table cheese. Piccante means "spicy," which alludes to the sharpness of this cheese. ------------------------------------------------------------------------------------------------------------PECORINO TOSCANO DOP Tuscany's most extensive DOP product is probably Pecorino Toscano, a sheep’s' milk hard almost granular cheese that is considerably milder than pecorino Romano, and in many ways resembles Sardinian pecorino has distinctive walnutty bitter overtones that balance its sweetness and give added complexity to the flavour of the cheese ------------------------------------------------------------------------------------------------------------“REGGIANA” The full name of this rare breed of cows is 'Antica Razza Reggiana' and the breed's main claim to fame is that the very first Parmigiano Reggiano cheese was made with its milk. Considered the King of all Italian cheeses, it is hard almost granular as it ages with unmistakable nuttiness and richness with sweet undertones -------------------------------------------------------------------------------------------------------------

----------------------------------------------------------------------GRAPPA POLI Grappaioli since 1898 “To distil good grappa is easy: one only needs fresh grapepomace and hundred years experience ...” Jacopo Poli Distillerie Poli is a small scale artisan producer of the finest Grappa, located in Schiavon in the heart of Veneto. The Poli family have been distilling Grappa commercially since 1898 when the grand father of the current ‘maestro grappaiolo', Giobatta, built a still by modifying a locomotive steam engine. Giobatta was a rather enlightened and progressive man, he was the first person to own a car for miles around and his phone number was 2 (the number 1 belonged to the local telephone company of that time). Jacopo Poli has certainly inherited his grandfather's passion for Grappa and ‘a total love for the art' remains at the heart of the Poli philosophy today. All served in 25ml ----------------------------------------------------------------------GRAPPA SARPA POLI In Venetian "Sarpa" means pomace - the firm parts of grapes. Sarpa di Poli is distilled from 60% Merlot and 40% Cabernet Sauvignon. Young, real and dry aroma. Originally from Greece, it was known in antiquity by the name of Alpicio as the "Api" bees were very attracted to it.
