Our Pretty in Pink Breast Cancer Awareness Brunch was a beautiful gathering, filled with compassion, support, and strength, as we came together to raise awareness for breast cancer. Thanks to their generosity, this event was made possible and had an incredible impact on all attendees.

Dr Saima’s words resonated deeply, reminding us all of the vital role we each play in caring for our health.

INGREDIENTS:

1 cup butter or margarine, divided

3 cups cups self-rising white cornmeal mix

1 cup all-purpose flour

7 large eggs, divided

3 cups buttermilk

3 cups soft, white breadcrumbs

2 large sweet onions, diced

4 celery ribs, diced

1/4 cup finely chopped fresh sage

1/4 cup finely chopped fresh parsley

1 Tbsp. seasoned pepper

7 cups chicken broth

DIRECTIONS:

Melt butter in a baking dish:

Place 1/2 cup butter in a 13- x 9-inch baking dish; heat in oven at 425°F for 4 minutes

Make cornbread mixture:

Stir together cornmeal and flour; whisk in 3 eggs and buttermilk

Add batter to pan:

Pour hot butter into the batter, and stir until blended Pour batter into pan

Bake cornbread:

Bake at 425°F for 30 minutes or until golden brown. Cool. Crumble cornbread into a large bowl; stir in breadcrumbs, and set aside

Sauté onions, celery, and herbs:

Melt remaining 1/2 cup butter in a skillet over medium heat; add onions and celery, and sauté 5 minutes Stir in sage, parsley, and seasoned pepper; sauté 1 minute Remove from heat, and stir into cornbread mixture.

Make dressing mixture, and add to baking dishes:

Whisk together chicken broth and the remaining 4 eggs; stir into the cornbread mixture

Pour evenly into 1 lightly greased 13- x 9-inch pan and 1 lightly greased 8-inch square pan

Bake dressing:

Bake at 400°F for 35 to 40 minutes or until golden brown.

PUMPKIN SPICE MARTINI

What You’ll Need:

2 ounces Rumchata

1 ounce Pumpkin vodka

1 ounce Vanilla vodka

1 tablespoon Pumpkin pie spice for the rim

1 tablespoon Maple butter for the rim

1 cup ice for your shaker

To a plate large enough to fit the rim of your martini glass, spread the maple butter, and dip the rim of your glass ensuring there is a thin layer of maple butter.

To a plate large enough to fit the rim of your martini glass, add the pumpkin pie spice and dip/roll the maple-buttered portion of the glass ensuring that the spice sticks to the maple butter.

To a cocktail shaker, add ice, vanilla, pumpkin vodkas, and the Rumchata

Shake for about 20 seconds, before straining and pouring into your maple and pumpkin spice-rimmed glass.

Serve immediately
