Did you also know that certified organic foods are always GMO-free? Organic farms and processors continue to flourish in Vermont, so there are many farms and businesses to explore—in 2018, there were 709 certified organic farms and processors producing organic food on 154,421 acres in Vermont, and over 25% of the dairy farms in Vermont are certified organic! Those certified organic producers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find certified organic products at farm stands, stores, restaurants, through mail order, or you can ‘pick your own’ at the farm—there are so many opportunities to support Vermont’s producers. Vermont Organic Farmers, LLC The USDA accredited certification agency owned by NOFA Vermont Vermont Organic Farmers was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP), which created national standards for organic food. The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and processors of all types to achieve the highest possible organic standards. To view the complete standards for crop, livestock, maple, and food processing, please visit our website: www.nofavt.org/vof. Look for the VOF logo the next time you are shopping to support local organic producers! 2

What is “Certified Organic”? Ten things you should know Certified organic farmers & processors are committed to producing food in a way that improves soil, protects your health and tastes great. Below are some of the requirements they follow to become certified.

1

Farmers use land management practices that

2

Farmers maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing, rooting, and scratching. Animals are given daily access to the outdoors, year round.

3

For maple syrup production, sap is collected using practices that ensure the long-term sustainable management of the sugarbush and promote forest ecosystem health. Maple syrup is tested for lead levels, and synthetic defoamers may not be used when boiling.

4 5

protect natural resources, conserve biodiversity, and improve the health of their soil.

6

Livestock are fed 100% organic feed. They do not receive conventional, genetically modified corn and soybeans, hormones or antibiotics. They also must obtain a significant portion of their diet from certified organic pasture grasses during the grazing season.

7

Meat from animals treated with hormones, antibiotics, or synthetic parasiticides cannot be sold as organic. Farmers use preventive healthcare practices and only approved treatments when necessary.

8

Processed foods (such as cheese, bread, or jam) are produced with certified organic ingredients. Artificial colors and flavors, preservatives such as nitrates, and other synthetic additives are prohibited.

9

Certified organic products are randomly subject to pesticide residue tests. The allowable limit of unintentional pesticide residue on organic food is just 5% of what the EPA allows on conventional produce.

10

Organic certification is the only label backed by clear legal definitions and independent third-party verification. All certified operations participate in an annual inspection of their premises, purchases, and practices to ensure the integrity of the organic seal.

Prohibited pesticides, herbicides, and synthetic fertilizers cannot be used in crop

production. Furthermore, producers must maintain buffers that prevent contamination drift from prohibited substances and neighboring GMO crops. Organic production prohibits GMOs, including seeds, livestock feeds, and ingredients used in processed products.

What About Other Labels? Certified Organic is the only food label with a clear legal definition, a process for public input, and mandatory third-party inspections. The proliferation of various claims on food packages today can be dizzying. So, what exactly do these other labels mean?

6

Non-GMO The “Non-GMO Project” label verifies

Free Range Free range is a claim that implies a meat

that a product doesn’t contain genetically modified (GMO) ingredients (or, technically, not more than 0.9% GMOs). However, a non-GMO label does not itself indicate that a product was produced organically or without the use of substances or practices prohibited in organic such as irradiation, toxic pesticides, or synthetic fertilizers.

or poultry product comes from an animal that was raised in the open air. However, the only requirement is that an animal can access the outdoors- which doesn’t mean it actually does. The USDA regulates this label for poultry only; there are no legal standards for “free range” egg production, and it doesn’t limit the use of antibiotics, hormones, or pesticides.

Natural When shopping for food, do some research

Cage-Free Cage-free is often confused with free

before buying “natural” products - the label isn’t verified and each company can use its own definition. “Natural” foods can be made with artificial and genetically engineered ingredients. Produce can be grown with pesticides and meat can be raised with antibiotics and synthetic animal feed.

range. While hens laying eggs labeled as cage-free are uncaged inside barns, they may or may not have any access to the outdoors. There are no consistent standards or mandatory third-party auditing for this label and it doesn’t limit the use of antibiotics, hormones, or pesticides.

• 2019–2020 VERMONT ORGANIC FARM & FOOD GUIDE

Grass-Fed (general claim) The USDA has a

“Regenerative” (general claim) The term

good definition for grass-fed that requires 100% grass-based feed over an animal’s lifetime. However, the USDA stated in 2007 that it would not limit the use of the “grass-fed” claim to producers who meet their 100% standard. Because there is no verification, the label can’t tell you if the animal was actually raised on pasture, and it doesn’t limit the use of antibiotics, hormones, or pesticides.

regenerative is a newer label claim and is generally understood to describe farming practices that (much like organic farming) promote soil health and reduce the impacts of climate change by rebuilding soil organic matter and restoring soil biodiversity. There is no consistent standard for the term “regenerative” and use of this claim does not necessarily limit use of synthetic fertilizers, herbicides or pesticides.

Pasture Raised There is currently no legal

“Add-ons” to Organic Certification The

definition for the term “pasture-raised.” While the phrase might evoke bucolic images, and could accurately describe how an animal is raised, the label can actually mean whatever the producer wants it to mean. “Pasture-raised” has no formal definition or regulation, which means there is no enforcement behind it.

following labels require that producers must first obtain organic certification and then meet additional standards.

Local The state of Vermont defines “local” products as those that originated in Vermont or within 30 miles of the place where they are sold. However, the state does not conduct inspections or actively enforce this definition.

Split Operations Some organic producers produce both organic and non-organic products. Even if a farm is certified organic, they may offer non-organic products for sale as well. When purchasing product look for clear signage that clarifies whether all or some products qualify as certified organic. If you are confused, ask your farmer!

• Certified GrassFed This label requires that livestock producers feed only forage (no grain products) to livestock and requires that 60% (on average) of an animals diet comes from pasture during the growing season. Vermont Organic Farmers is offering this certification to our certified livestock producers which means the claim is verified by a third party.

• Real Organic Project The Real Organic Project

was creating as a reaction to the NOP’s decision to allow hydroponic crops to be labelled as organic and because the USDA withdrew the new animal welfare regulations, which would have made significant improvements to how organic is defined. The ROP is certifying farms that grow in soil and are pasture based. This label is verified by a third party.

• Regenerative Organic Certified Regenerative

Organic Certification builds upon the near 100year legacy of the organic movement but involves additional “regenerative” requirements that include pasture-based animal welfare, fairness for farmers and workers, and robust requirements for soil health and land management.

“We are just farming

the way farming was done by our grandparents, they didn’t use chemicals. Back then it wasn’t called organic, it was just practice. We are following our roots and being good stewards of the earth and trying to instill that to our next generation of farmers who will take over this land. It’s heathier for us, the plants, the animals, the water systems, and the planet.” —Amanda Bickford and Brittany Tarbox

“We have always been

Certified Organic since the greenhouse opened in 1992. Growing beautiful plants in a safe, chemical-free environment for everyone—our customers, our kids playing in the stones, our pets wandering in and out. I grew up with parents who gardened and never used chemicals. In many ways it is a family legacy.” —Heidi Racht

5 GOOD REASONS TO BECOME

Certified Organic Being certified organic is the fullest way to demonstrate the best practices and careful stewardship you have put into your product. Farmers cite many reasons to be certified organic, among them clear economic, social, environmental and family wellbeing benefits.

1 2 3 4 5

Seal of Quality

The certified organic seal guarantees certain safeguards to your customer, verified by a third party, including no GMOs. The regulations also require annual compliance inspections, have a strict list of approved materials, require documentation of organic practices, and provide guidelines for protecting the soil ecology and water quality. For consumers concerned about this level of traceability in their food, certified organic provides that important assurance.

Access to Markets

Many buyers seek out and promote organic products because of the increasing demand for organic foods. Whatever your marketing goals, there are many opportunities when you sell as certified organic.

Premium Price in Marketplace

Food labeling can be confusing and misleading, which is why certified organic is an important choice for consumers. Consumers are willing to pay a premium for food that carries the USDA and VOF organic seal. Acre for acre, growing produce organically has been shown to be more profitable than growing conventionally, and organic dairy, maple and processed product prices are higher and more stable.

Environmental Stewardship

As every organic farmer knows, organic production is more than just the avoidance of synthetic fertilizers, herbicides and pesticides. It is a whole system of soil management, protection of natural resources and enhancement of biodiversity. Organic practices have the power to increase productivity of the land over time, building fertility and biodiversity for the next generation.

A Growing Movement

Join the growing number of people who address erosion, pollution and soil health through holistic practices of soil and crop management. Through this choice you will join a supportive network of innovators who continue to advance organic methods and grow the success of the movement through their shared purpose.

Local Recipe

Maple Pudding “I am often asked what the best application for maple syrup in cooking is, and the answer is easy: pair with dairy. Butter, milk, cream, even yogurt, bring out the best in maple. Maple pudding is an excellent example of how much maple and cream elevate each other. Serve it with an oatmeal or cinnamon cookie and you have the best maple-dairy-nirvana delivery system I can think of.” —Laura Sorkin, co-owner, Runamok Maple

From The Vermont Non-GMO Cookbook by Tracey Medeiros (Skyhorse Publishing, October 2017)

Serves 6 2 cups whole milk, divided 1 cup heavy cream 1 cup pure maple syrup 1/8 teaspoon salt 1/4 cup cornstarch 2 large egg yolks 3 tablespoons unsalted butter 1 teaspoon pure vanilla extract Whipped cream Cookies

34

Pour 1 cup of milk, the cream, maple syrup, and salt into a medium saucepan, whisking until well combined. Cook this mixture over medium heat until it just begins to steam, about 8 minutes, then turn off the heat. Place the cornstarch in a medium bowl. In a slow and steady stream, whisk in the remaining cup of milk until the cornstarch mixture is completely smooth. Whisk in the egg yolks until well combined. In a slow and steady stream, whisk in 1 cup of the hot milk mixture into the egg mixture to temper them. Slowly whisk the egg mixture into the remaining hot milk mixture on the stovetop. Whisking constantly, cook the mixture over medium-low heat until it thickens to the consistency of a thick cake batter, about 7 minutes. Remove from the heat and whisk in the butter and vanilla until well combined. Ladle the mixture into six 6-ounce ramekins. Cover each ramekin with plastic wrap, making sure the plastic wrap is touching the top of the pudding. Let cool to room temperature, then chill in the refrigerator until completely cooled and set, at least 2 hours or overnight. Top with a dollop of whipped cream and serve with a cookie of your choice. Note: If you like skin on your pudding, do not cover with plastic wrap before cooling in the refrigerator.

How to Support Our

Vermont Organic Dairy Farmers

So how can you support the other organic dairy farmers who sell their milk wholesale? In Vermont, farmers ship their milk to four milk buyers. Please look for the following brands at your local store or co-op:

Vermont Organic Farmers (VOF) certifies just under 200 Vermont dairy farms as organic. These farmers ship fluid milk, bottle their own milk, or make various dairy products including award winning cheeses, yogurt and ice cream. The best way to support these farmers is to purchase their products. Farmers who process their own dairy products include: Butterworks Farm milk, buttermilk, cottage cheese,

If your local store does not carry these brands, ask them to. You may find that these name-brand products from family farms share shelf space with store-brand organic milk from as far away as Colorado. By purchasing the products listed above you are ensuring that your dollars support family farmers in the Northeast and Vermont.

VOF-APPROVED

Compost Producers

What does it mean to use compost approved for use on organic farms? VOF verifies all compost feedstocks or ingredients used to make compost are natural or allowed synthetics (mined minerals for example). We also verify the process and procedures involved in producing the compost and we look to ensure compost producers test their materials and manage for any unintentional residues. The following commercial compost producers have had their compost production facilities inspected by Vermont Organic Farmers and have had their compost and compost-based products reviewed and determined to be allowed for use in certified organic production.

GOOD REASONS TO CHOOSE

#4

Certified Organic, Locally Grown Tastes Great

Healthy plants and happy animals produce great-tasting food! The short distance from farm to table means that farmers can choose varieties for flavor rather than shelf life, and can harvest at the peak of ripeness.

“At Snowberry Farm we

grow organically not only for ourselves and our community, but ultimately for our environment and the generations to come. Our goal is to leave the farmland better than we found it and the only way we knew how to do this was by becoming certified organic and being the best stewards of the earth that we possibly can be.” —Jesse Poe
