New Mexico is famous for our cuisine, and while chile is often the focal point, there are many other products that make New Mexico’s food culture unique. This Lookbook features several exclusive recipes that I encourage you to try, and be sure to add your own unique twist to showcase your individual tastes and preferences, as true New Mexicans do!

A restaurant style salsa, with a slightly medium heat.
The Bossy Gourmet originated in New Mexico when an extremely talented chef was teaching a non-cook how to prepare food. The chef instructed and then watched as the helper attempted to dice onions, stir sauce, and prepare vegetables for cooking. The chef barked out instructions to the helper until the helper was so scared that he could no longer perform the easiest of kitchen duties. After several seconds went by, the chef could no longer use restraint and bumped the helper out of the way and proceeded to prepare the food alone. The helper named the chef, The Bossy Gourmet, because it described the chef in the most appropriate manner. Since that fateful day, the chef and the helper combined culinary expertise and business acumen to form the company now known as The Bossy Gourmet.

Summer grilling season calls for a new take on your favorite steak. Garden Herb Strip Steaks are quick and easy to prepare and are sure to earn you rave reviews.
DIRECTIONS
Serves 4 Pre/Cook Time 40 Min.
INGREDIENTS
• 2 boneless beef strip steaks, cut 1 inch thick (about 10 ounces each)
• Salt
SEASONING
Make a rub using thyme, oregano, lemon and garlic for big flavor.
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh oregano
2 teaspoons freshly grated lemon zest (lemon peel)
2 large cloves garlic, chopped
¼ teaspoon black pepper
Combine seasoning ingredients in small bowl; reserve 2 teaspoons for garnish. Press remaining seasoning evenly onto beef steaks.
1. Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 14 minutes (over medium heat on preheated gas grill, 11 to 15 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
2. Carve steaks into slices. Sprinkle with reserved seasoning and salt, as desired.

CHIMICHURRI-MARINATED STRIP FILETS
A homemade Chimichurri sauce is used as a the perfect marinade for Strip Steaks.
INGREDIENTS
4 beef Strip Filets, cut 1-inch thick (about 4 to 6 ounces each)
CHIMICHURRI SAUCE
2 cloves garlic
½ cup packed fresh cilantro
½ cup packed fresh parsley
¼ cup olive oil
2 tablespoons fresh lemon juice
½ teaspoon salt
½ teaspoon freshly grated lemon peel
¼ teaspoon crushed red pepper
DIRECTIONS
Prepare Chimichurri Sauce. Place garlic in food processor container. Cover; process until finely chopped. Add remaining sauce ingredients. Cover; process until well blended. Remove and refrigerate 1/4 cup sauce for serving. Place beef Strip Filets and remaining sauce in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator for 15 minutes to 2 hours.
1. Remove filets from marinade; discard marinade. Pat steaks dry with paper towels. Place filets on grid over medium, ash-covered coals. Grill, covered, 11 to 14 minutes (over medium heat on preheated gas grill, 11 to 15 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally.
2. Serve filets with reserved Chimichurri Sauce.
