know?
Legend has it that during the Yuan dynasty (A.D. 1280-1368), China was ruled by the Mongolian people. Leaders from the preceding Sung dynasty (A.D. 960-1280) were unhappy to be governed by the foreigners, and conspired to overthrow them. The leaders of the rebellion, knowing that the Moon Festival (also known as Mid Autumn Festival) was drawing near, ordered the making of special cakes. Packed into each cake was a message with the outline of the attack. On the night of the Moon Festival, the rebels successfully attacked the Mongolian leaders and won the battle. Today, the cakes are eaten to commemorate this legend and that is how mooncakes come about. For many generations, mooncakes have been made with fillings of nuts, mashed red beans, lotusseed paste or Chinese dates, wrapped in a pastry. Nowadays, there is a huge variety of mooncakes to choose from many days before the Mid Autumn Festival.
Now that you know how mooncakes come about, how about trying your hand at making your own? We dish out the recipe: Dough: 2 cups plain flour 3/8 cup milk powder 1/4 tablespoon baking powder 1/2 cup sugar 2 eggs
Filling: 2 cups red, green or lotus seed paste 10 yolks from salted eggs 1/2 egg yolk 3/8 melted butter
To make filling: 1. Bake the 10 salted egg yolks on a baking sheet for 10 minutes. 2. Divide the paste into 10 portions and press a salted egg yolk into each portion. 3. Roll these up into a ball, making sure the yolk is in the middle. To make dough: 1. Sift flour, milk powder and baking powder together. 2. Beat sugar and eggs together until the mixture is creamy and white for 10 minutes. 3. Mix in the melted butter. 4. Fold in the dry ingredients gently. 5. DIvide this mixture into 10 portions. To make the mooncakes: 1. Heat oven to 200 degrees Celsius. 2. Roll the dough out to circles with a diameter of 4 inches. 3. Place a portion of the filling in the centre and bring up the sides to encase it completely. Pinch the cracks to seal and roll between your hands to make it into a ball. 4. Sprinkle some flour onto the mould and press the ball into it, flattening it with the palm of your hand. Shake the mould to tip the mooncake out. 5. Place the mooncakes on a baking sheet, brush the top with egg yolk and bake for 30 minutes. 6. Serve warm or cold. 10 PPeople
