Esa es la pregunta que me hice a mí mismo, y que a su vez os hago a todos vosotros. ¿Eres NIGHT o DAY? Sí, porque a partir de este número se iniciará una nueva fase editorial en nuestra revista. Durante años habéis estado acostumbrados a leer los artículos de Ibiza por un lado, y los de Formentera por el otro.

Desde esta temporada Night&Day os dará información y consejos sobre las noches de Ibiza y Formentera (en un lado de la revista), así como artículos acerca de los mejores festivales y eventos internacionales en Europa, como siempre, y en el otro lado os contaremos del día de las dos islas Pitiüsas.

Gracias a las nuevas colaboraciones y a nuestro personal siempre atento a la noticias que se pueden encontrar en la red para informaros de la A a la Z. Por eso encontraréis nuestras nuevas secciones, divididas entre la NOCHE y el DÍA, con las que podréis orientaros entre los diversos temas.

Loco Dice hace su tan esperado regreso a la isla, y junto con HYTE Ibiza está listo para volver a jugarse su reclamación como residente de la santificada terraza de Amnesia.

Loco Dice makes his long awaited return to the island, and together with HYTE Ibiza he’s ready to re-stake his claim as a resident of Amnesia’s hallowed Terrace.

El 2014 vio Loco Dice tomar un merecido descanso de la isla, por lo que sólo hizo una aparición para las celebraciones de su cumpleaños explosivo en Space. Ahora el verdadero niño de la terraza de Amnesia regresa a su casa, comenzando con estilo y pinchando toda la noche para la apertura de la temporada de HYTE el 3 de junio.

2014 saw Loco Dice take a well deserved break from the island, making only one appearance for his explosive birthday celebrations at Space. Now Amnesia's true terrace child returns to his home, kicking things off in style by playing an all night long set for the HYTE Season Opening on 3rd June.

Vuestro equipo acaba de regresar de la gira mundial. ¿Cuánto tiempo ha durado y cómo ha ido?

En realidad, la gira de Ibiza Global Radio con su “showcase” está en constante movimiento.

A mediados de 2014 dimos un giro importante, profesionalizando y trabajando hasta el último detalle de cada evento a través de IMA (la agencia que trabaja para nosotros) y los resultados han sido muy inmediatos. Los 6 miembros del roster de Ibiza Global Radio están continuamente viajando de una ciudad a otra haciendo la mejor representación del concepto Ibiza, a través de nuestra marca Ibiza Global Radio.

¿Qué países habéis visitado?

Este último año hemos pisado todos los continentes, incluyendo países como Rusia, Alemania, Suiza, Austria, Italia, Polonia, Rumanía, Portugal, Israel, México, EEUU y Argelia, entre otros.

Sabemos que también habéis pasado por Italia.¿Cómo os habéis encontrado?

Si. En 4cento (Milán), donde Max nos hace sentir como en casa, además de tener un público super entregado, que disfruta con el sonido de Ibiza Global Radio.

¿Qué opinas de una edición italiana de N&D Magazine?

Me parece una idea genial teniendo en cuenta que las raíces y personalidad de la revista son italianas.

Volviendo a Ibiza, ¿puedes darnos algunas noticias sobre el próximo verano?

Se prevé un buen movimiento underground, con fiestas que prometen ser de mucha calidad musical y a nivel producción.

¿Algún DJ emergente que crees que este año llamará la atención?

Your team just got back from a world tour.

How long were you away and how did it go?

Actually, the Ibiza Global Radio tour with its “showcase” is in constant movement. Half way through 2014 we turned an important corner, professionalizing and working on every single detail of our events through IMA (the agency that we work with) and we have had immediate results. The 6 members of the Ibiza Global Radio roster are continuously travelling from one city to another representing the Ibiza concept in the best ways, through our Ibiza Global Radio brand.

What countries have you visited?

During the last year we have set foot on all the continents, including countries like Russia, Germany, Switzerland, Austria, Italy, Poland, Romania, Portugal, Israel, Mexico, USA, and Algeria, amongst others.

We know you have also been in Italy. How did you feel there?

Yes. We have been at 4cento (Milan), where Max, the owner, makes us feel at home and where we have a hugely committed audience, who enjoys the sound of Ibiza Global Radio.

What do you think of an Italian version of N&D Magazine?

I think it's a great idea, taking into account that the roots and personality of the magazine are Italian.

Back to Ibiza, can you give us some news for the upcoming Summer?

Good question. The formula "chief of m2o" could be a good summary, but perhaps not exhaustive. What about an Italian edition?

I am enormously pleased to know that soon we will read N&D even in an Italian version! I'm sure it will help to grow a movement, that we could call "of the club culture", which is still very strong in Italy.

Since then I have come to the island every year and been involved with DC10 since 2000.

What do you think are the ingredients to become a good sound engineer?

You need to enjoy the music you are working with, that may seem obvious but it's true.

Por cuarto año consecutivo seré residente en la fiesta de Marco Carola, Music On, el viernes en Amnesia, estaré incluso en el Paradise la fiesta de dc10 y también en Viva Warriors al Sankeys con Steve Lawler.

He hecho tantas bonitas e inolvidables, pero creo que el cierre en Amnesia el año pasado del Music On fue uno de los momentos más fuertes de mi vida.

¿La cosa mas loca que has hecho durante una fiesta?

En el Cocorico una vez acabé sin camiseta, una chica me la arrancó al final de la noche jajajaja locura!

Háblanos de tu sello discográfico. ¿Tienes alguna nueva versión importante por salir?

Tengo mi propia discográfica solo de vinilo llamada Chelsea Hotel Records y va muy bien, con óptimos artistas y grandes resultados, casi cada tema que sale sube a primeros de lista; también soy socio de Pirupa y Nice7, tenemos una discográfica digital llamada Dfloor Records, un disco de esta casa saldrá pronto gracias a la colaboración entre Pirupa y Dubshape, dos chicos de Sao Paulo (Brasil), el tema es fantastico; además tengo un mix con la nueva discográfica de Reboot; y mi nuevo álbum está casi, creo que saldrá a finales de verano, están ultimando el remix para el single.

I have my own only-vinyl label called Chelsea Hotel Records and it's going very well, with great artists and huge results, almost every release goes to the top of the chart; I'm also a partner of Pirupa and Nice7, we have a digital label called Dfloor Records, a record from this label is coming out soon by Pirupa and Dubshape, two guys from Sao Paulo (Brazil), the track is amazing; I also have a mix on the new Reboot label, and I expect my new album to be out by the end of the Summer, we are just finishing off the remix for the single!

Este año, el proyecto está apoyado por una gran agencia "Das Management" y seguramente va a traer buenos resultados.

TELL US ABOUT IUM, IBIZA UNDERGROUND MOVEMENT. IUM is a movement across Electronic music and with the support of several international artists that aims to promote and disseminate the foundations of the Underground, highlighting the role of music.

It is a showcase created by the label "Digital Traffik" of Jimithesun, with whom I have the luck to have worked from the very beginning. This year the project is supported by a big agency "Das Management" and will surely bring good results.

FUTURE PROJECTS? I have many future projects. First I want to develop my discography better. This year has certainly been a very good year, with outputs on bouq. Butch & Amir Bouq, Circus of Yousef, Kinektica, Monique Musique.

My philosophy is to create emotional connections between me (the artist) and the viewer. I love to bring the spirit and magic of the evenings of Ibiza, transforming and enhancing the theme of an evening that dresses itself in its most extreme and outrageous.

Cada año le toca al International Music Summit dar inicio a la temporada de verano ibicenco, en conjunción con la apertura de casi todos los locales de Isla Blanca. La edición de 2015 tendrá lugar del miércoles 20 al viernes 22 de mayo en el Hard Rock Hotel, ubicado en Playa d'en Bossa. Seminarios, conferencias, entrevistas y showcase están entre los principales elementos del IMS 2015, que en esta edición también va precedido de la tradicional cena de gala, prevista para el martes 19. Invitado de honor, Sven Väth y su criatura Cocoon, que será galardonado con el título de Ims Legends, un honor que solo ha tocado entre otros a Carl Cox, Fatboy Slim y Nile Rodgers.

Entre los personajes en el cartel de IMS 2015, tengo que mencionar a los pioneros de la electrónica Trevor Horn y Carl Craig, personas con autoridad conectados al negocio de la música, como Patrick Moxey (Ultra Records) y Alexander Ljung (Soundcloud) y los DJs y productores de referencia como Damian Lazarus y Uner. Con respecto a los argumentos sobre los que la atención será particularmente enfocada, hay que mencionar el panel de "África: La Última Frontera Del Mundo De La Música", editado por Lagos Music Conference y la película "A Short Film About Chilling: Ibiza 25 Years On".

Every year it's up to the International Music Summit to kick off the summer season in Ibiza, in conjunction with the opening of almost all the venues on the White Isle. The 2015 edition takes place from Wednesday 20th to Friday 22nd May at the Hard Rock Hotel, located in Playa d'en Bossa. Seminars, conferences, public interviews and showcase are amongst the main elements of Guest of honor, Sven Väth and his creature Cocoon, which will be awarded the title of Ims Legends, an honor obtained among few others also by Carl Cox, Fatboy Slim and Nile Rodgers. IMS 2015, this edition is also preceded by the traditional gala-dinner, scheduled for Tuesday 19th.

Amongst the characters on the IMS 2015 poster, I must mention the electronic pioneers Trevor Horn and Carl Craig, influential figures connected to the music business such as Patrick Moxey (Ultra Records) and Alexander Ljung (Soundcloud) and DJs and producers of reference such as Damian Lazarus and Uner.

Tres días y tres noches en nombre de la mejor música electrónica. Esto y mucho más es Sonar 2015, previsto desde el jueves 18 al sábado 20 de junio en Barcelona. Un cartel rico, muy rico, del que son realmente difícil de extrapolar los llamados hightlights.

La creatividad, la tecnología, la movilidad, la innovación y el negocio desde muchos años constituyen sus rasgos distintivos, que son capaces de mejorar y crecer de edición en edición. El programa de este año incluye entre otros Chemical Brothers (en la foto durante su actuación en Sónar 2010), Skrillex, Duran Duran, Hot Chip, el estimado violinista Owen Pallett y el legendario Arthur Baker (en la foto) que en las actuales circunstancias presentará su nuevo documental "808 The Movie", dedicado a la épica drum machine y que incluye entre otros aportaciones de Tiga, Goldie, 2manydjs, Francois Kevorkian y Afrika Bambaataa.

Sónar se dedica no sólo a los artistas multiestablecidos, nunca descuida nuevos talentos; este año en particular, se concentrará en el stage de SonarDome, organizado en colaboración con la Red Bull Music Academy y dedicado a lo que nos gusta llamar la electrónica global, gracias a la contribución de artistas de Eslovenia, Egipto, Rusia, México.

Además Sonar es una exposición internacional en el sentido literal del término; no sólo tiene lugar en Barcelona, sino que en su calendario anual se celebra en otros lugares de Europa, en África del Sur, en Asia, en América del Sur. Es difícil pedir más.

Three days and three nights in the name of the best electronic music. That and more is Sonar 2015, scheduled from Thursday 18th to Saturday 20th of June in Barcelona. A rich, very rich roster, from which it is really difficult to extrapolate from the so-called hightlights.

Creativity, technology, mobility, innovation and years of business constitute the distinctive features, which are able to improve and make it grow from edition to edition. Aquí estamos: Ibiza 2015 ha comenzado, a lo grande. Será una época de cambios importantes y apreciadas confirmaciones. Vamos a empezar con las innovaciones: Luciano vuelve con su Vagabundos y aterriza en la noche del domingo en Space Ibiza.

Luciano pinchará, después de los excelentes resultados de 2014, también en el Destino Ibiza. Los miércoles en Amnesia verán la nueva llegada del fiestón Hyte, donde los invitados principales serán Loco Dice, Chris Liebimg y Maceo Plex: debido a la llegada de Hyte, La Troya se mueve al domingo, pero la fiesta icono de la isla sigue siendo fiel a Amnesia.

For the weekend Pacha presents Insane on Friday evenings, Bob Sinclair on Saturdays and finally Solomun + 1 has been confirmed for Sunday.

From Pacha to Amnesia, on Tuesday at the party Together lands Defected in the House, while on Friday Music On is an absolute confimation: Marco Carola & team are preparing well for the fourth year of sellout.

Besides, how do you say it? Never change a winning team. Es una relación de grande amor desde mas de 10 años. Escuché hablar de una cierta energia que hay en ibiza, un cierto sentimiento. Y de hecho creo que tanit, la diosa mas adorada en la isla, me aceptó. Por qué siempre me ha ido bien.

It's been a great love for over 10 years. I heard about certain energy that there is in Ibiza, a particular sentiment. And, in fact, I believe that Tanit, the most adored goddess of the island, has accepted me, because everything has always gone well for me.

¿Cómo y cuándo surgió la idea de llevar When and how did you have the idea of una marca internacional como Hard Rock bringing such an international brand as Hard Rock Cafe to the island?

Realmente cuando me invitaron a ibiza en el 2013 para abrir un HRC, el grupo de empresas matutes ya había fijado la base del proyecto. Yo trabajaba para el HRC de Barcelona y podía traer el adn de HRC al proyecto de Ibiza. Llegué justo para la apertura y me quedé dos meses con el equipo. Estamos muy contentos de como han ido las cosas y seguimos con el reto de abrir todo el año, un reto bastante importante para nosotros.

Actually when I was invited to Ibiza in 2013 to open an HRC, the Empresas Matutes Group had already set the basis of the project. I was working for the Barcelona HRC and could bring its original DNA to the Ibiza project. I got here on time for the opening and stayed with the team for two months. We are very happy with how things have turned out and we are going to follow with the challenge of opening all year round, a very important challenge for us.

Nuestro principal proyecto realmente es el presente.

Tenemos eventos de carácter benéficos, como el de el lanzamiento de la edición super limitada de pines de HRC. Fuera de la temporada, sin embargo, es cuando tenemos mas oportunidad de dedicarnos a ibiza con un calendario de eventos y acciones para todo el año. Es positivo por qué siempre tenemos buenas respuestas del publico de Ibiza. Nuetro proyecto mas inmediato en este sentido es la fiesta de nuestro segundo aniversario, en los días 5, 6 y 7 de octubre. Habrá un concierto gratuito muy especial, para dar las gracias a toda ibiza.

Our main project is the present. We have charity events coming up, like the launch of our first super limited HRC pin edition. Out of season, however, is when we have more the chance to dedicate ourselves to Ibiza with an all-year event calendar. It's positive because we always get great feedback from the Ibiza public. Our most immediate project in this respect is our second anniversary party, on October 5th, 6th, and 7th.

There will be a very special free concert to thank everyone.

When i started working at 18 in Valencia, at Heaven, one day a customer asked me to take care of his dog. And the dog was actually a brick on a leash! So I threw it away when the client came back he fell into depression...

I came the first time for party. My first job was at pacha with Rafa and Mari Paz and then I began to work in the winter too with a photo producer.

What is respect in your work?

Talk with education and for people to understand that I'm working ...

What do you expect from this season in ibiza?

Very good prospects and good vibrations.

Future projects.

On a personal level an instructor course in February for fighting and self defense. With this i can go to the university and study everything related to security.

What do you think of n&d magazine?

It is a magazine that I always see and read. It talks about how the island is. I respect it a lot, together with Dub it is the only magazine that really stands out.

Escribir de un golpe todo lo que se tiene que decir sobre "terraza con vistas al puerto" H sería demasiado simplista, así que voy a tratar de dividir el espectáculo diario en cuatro momentos...

We have chosen three years ago to leave Milan and to come to work and live here, on this island that is a meeting point for people from all around the world, a real Melting Pot! To write all at once what has to be told about the "terrace overlooking the port" would be too simplistic, so I will try to split our daily show in four moments...morning, afternoon (Day), evening and night (Night): in short Night&Day!

Somos de Turín.

¿Cómo y cuándo surgió la idea de abrir un restaurante en Ibiza?

En 1998 quisimos mudarnos de Italia a un lugar que nos encantara.

Hablemos de "Il Gatto e la Volpe". ¿Cómo es el ambiente que reina en vuestro local?

Es un lugar principalmente para turistas, pero con un ambiente familiar y donde encontrarse con la gente de la isla, amigos de hace años. Sentados en la terraza se tiene la sensación de estar frente a un escenario que con sus actuaciones representa Ibiza en sus múltiples versiones: desde los fascinantes y excéntricos desfiles de moda de las más famosas discotecas de la isla, a los paseos de personajes famosos a los que les encanta venir aquí a disfrutar del aire de libertad que reina en este lugar mágico.

¿Cuál es la especialidad del restaurante?

La paella mixta y de marisco es nuestra especialidad acompañado de tapas y platos locales ejecutados a la perfección. Nuestra oferta es muy amplia y ofrecemos todas las especialidades de la cocina mediterránea, como la pasta fresca casera, espaguetis con marisco, pescado a la parrilla, carne o verduras.

Cuéntanos las novedades para 2015.

Sin duda la novedad de 2015 es la apertura de la Carboneria Baccus, que además de ampliar la terraza del restaurante ofrece cócteles, chupitos mágicos, batidos,

How and when did you get the idea of opening a restaurant in Ibiza?

In 1998 we wanted to move away from Italy to a place we loved.

Let's speak of "Il Gatto e la Volpe". How is the atmosphere that reigns in your place?

It 'a place primarily for tourists, but with a family atmosphere and where you run into the island's people, old friends. Sitting on the terrace you get the feeling of being in front of a stage where with its show represents Ibiza in its many versions: from the fascinating and eccentric fashion shows of the most famous clubs of the island, to the walks of famous celebrities who love to come here to enjoy the air of freedom that reigns in this magical place.

We are starting an adventure at White restaurant in Playa d'en Bossa. The beach club known for its lovely beach breakfasts and lunches, will start a new dining concept this season called White Night.

What will await those who will go to White Night this summer?

We have a wonderful grill in front of the sea, with good music and fine wines from 8pm until 2am.

Will you have any events or special nights?

All full moons, will be special nights for us to have a party, where you can enjoy and sample the best of our cuisine in an amazing atmosphere.

Andrea: Estoy emocionado porqué escribir en Andrea: Sono emozionato perché scrivere su

Night&Day Magazine es un poco regresar a Ibiza después de tantos años... Michele ¿pero cúando fué el primer año que llegamos a la Isla? De hecho, nuestra primera vez?

Michele: Andrea, últimamente tu memoria está fallando un poco, seguro es que teníamos algunas canas menos, para mi fué en el 88 y estoy seguro pues en lugar del Paseo Marítimo había una playa y unos pocos barcos de pesca.

Andrea: Que buenos tiempos... Recuerdo que alquilábamos un apartamento en el edificio Transat y que, en frente de casa, donde hoy se encuentra el Ibiza Gran Hotel, una vez "era todo campo". Otro recuerdo: en el piso de arriba vivía un cierto Sandy Marton, la clásica "gente de Ibiza"... Así que para mí era el 1991.

Michele: Bravo, recuerdas bien, desde la terraza de nuestra casa veíamos la "Meca" para todos los que se hacen llamar DJ, el PACHA, y cada noche nos volvíamos locos para encontrar una forma de superar la dura selección en la entrada por el temido Julio el Portero...

Andrea: ...Julio ¡Peor que Caronte! Pero no podemos no contar que nosotros, dos chiquillos de 16 años, podíamos entrar gratis en Pacha, sin tener que hacer ninguna cola, gracias a nuestro pase personal , escrito a mano por el legendario Werner, dueño del bar "Bolero" en Marina Botafoch y padre de nuestra amiga Sacha, bailarina de Pacha.

Michele: Parece imposible, pero lo que nos abrió las puertas de las noches de Ibiza y todas sus maravillosas sugestiónes, que pronto hicimos nuestras, fué un simple pedazo de papel con escrita esta frase a la que, sin duda, debo parte de mi amor por el clubbing en todas sus formas: "Julio, dos amigos por favor" Hasta la próxima vez A&M

Night&Day Magazine è un po’ un ritorno a Ibiza dopo tanti anni… Michele ma in che anno siamo arrivati sull’isola la prima volta? Anzi, la primera vez?!

Michele: Andrea tu ultimamente stai perdendo

qualche colpo, di sicuro avevamo qualche capello bianco in meno, per quanto mi riguarda era l’88 e sono sicuro perché al posto del Paseo Maritimo c’era una spiaggia e qualche barca di pescatori.

Andrea: Bei tempi… Io mi ricordo che affittavamo un appartamento all’Edificio Transat e che, di fronte a casa nostra, dove oggi c’è l’Ibiza Grand Hotel, una volta “era tutta campagna”. Altro ricordo: sopra di noi abitava un certo Sandy Marton, la classica “gente di Ibiza”… Quindi per me sarà stato 1991.

Michele: Bravo, ricordi bene, dalla terrazza di casa nostra vedevamo la “Mecca” per tutti quelli che si definiscono DJ, il PACHA e tutte le sere impazzivamo per trovare un modo per superare la “malefica” selezione all’ingresso del temutissimo Julio el Portero…

Andrea: …Julio. Peggio di Caronte! Ma non possiamo non raccontare che noi, due pischelli di 16 anni, riuscivamo a entrare GRATIS al Pacha, senza dover fare nessuna fila, grazie al nostro pass personale, scritto a mano dal mitico Werner, proprietario del bar “Bolero” a Marina Botafoch e papà della nostra amica Sacha, ballerina del Pacha.

Michele: Sembra impossibile, ma ad aprirci le porte dell’Ibiza notturna e di tutte le sue meravigliose suggestioni che ben presto avremmo fatto nostre, fu un semplice foglietto di carta con scritta questa frase alla quale devo sicuramente parte del mio amore per il clubbing in tutte le sue forme: “Julio, dos amigos por favor” Alla prossima A&M

¿A qué te dedicas?

Soy un empresario en la industria del entretenimiento de la noche, el Tipic en la actualidad es mi orgullo y alegría.

Primer lustro del Tipic, ¿quieres hacernos un balance de estos 5 años?

Han sido años muy agotadores pero llenos de emoción y satisfacción. Al día de hoy el local es un club reconocido a nivel internacional y una referencia para los amantes de la música electrónica y no solo.

Cada año invertimos mucho en el club, tanto en términos de programación que en la estructura que siempre se renueva.

Entre todos los invitados que han pasado por tu local, ¿cuál ha tocado tu corazón?

Sven Väth ha sido sin duda un gran artista que ha pasado por nuestro club, gran empresario, así como gran artista de la escena techno.

Acabáis de volver de vuestro tour invernal, ¿puedes hablarnos de ello?

También este año, con alrededor de 20 fechas en los mejores clubes italianos, concluimos nuestra gira de invierno, año tras año tenemos más fans que nos siguen con pasión! Siempre es un placer llevar nuestra energía y nuestro sonido, incluso en suelo italiano.

¿Puedes anticiparnos algo para esta temporada?

Este año hay muchas novedades, empezando con djs internacionales, donde veremos el gran regreso de luciano a la fiesta pwp (punks wear prada) que a partir de la mitad de julio será protagonista de todos los viernes noches y una nueva cita con el hip hop y r'n'b todos los lunes por la noche que verán en cabina a Dj Herca.

¿Hay algún dj emergente que quieras recomendar a nuestros lectores?

Nuestros recursos internos están creciendo mucho, Roberto Navarro es nuestra punta de lanza. Al final del verano estará lista su primera producción.

Anche quest'anno con circa 20 date nei migliori club italiani abbiamo concluso il nostro tour invernale, anno dopo anno sono sempre di più i nostri followers che ci seguono appassionatamente! Sempre un piacere portare la nostra energia ed i nostri suoni anche in terra italiana.

Molte le novità di quest'anno, a partire dai dj internazionali, dove vedremo il grande ritorno di luciano al party pwp (punks wear prada) che da metà luglio sarà protagonista di tutti i venerdì notte, ad un nuovo appuntamento con musica hip hop e r'n'b ogni lunedì sera e che vedrà in consolle Dj Herca.

Le nostre risorse interne stanno crescendo molto, roberto navarro è la nostra punta di diamante. A fine estate sarà pronta la sua prima produzione.

¿Cómo surgió la idea de abrir un Com'è nata l'idea di aprire un ristorante restaurante en la isla? sull'isola?

Nació para convertir una pasión en un estilo de vida.

Empecé trabajando como skipper, pero en los yates donde trabajaba me ocupaba incluso de el aspecto de Catering a bordo.

Fué entonces, gracias al contacto con los clientes más exigentes, personas extremadamente difíciles y Sofisticadas, que descubrí mi idea personal de la oferta de restauración.

Desde allí, el paso fue corto ya que, después de haber navegado mucho tiempo, sabía exactamente donde Poner las bases para mi proyecto.

È nata per trasformare una grande passione in uno stile di vita.

Nasco lavorativamente come skipper, però sugli yacht dove ho lavorato curavo anche l'aspetto della ristorazione a bordo.

Ed è proprio lì, grazie al contatto con gli ospiti più esigenti, persone estremamente stimolanti e ricercate, che ho individuato una mia personale idea di offerta ristorativa.

Da lì il passo è stato breve perché, avendo navigato a lungo, sapevo benissimo dove porre le basi per il mio progetto.

Spiegaci il vostro concept.

El Marea nace de mi amor por el mar y el deseo de unir el arte y la tradición de mi país con una idea de libertad.

Quería liberarme de la oferta clásica, creando un menú interactivo donde la participación y libertad de Elección de nuestros invitados fueran dominantes.

Todo gira en torno al mostrador de pescado, suministrado a diario por barcos de pesca del mediterráneo, una materia prima de alta calidad y la capacidad de nuestro chef y nuestro ostrero para traer su experiencia en los platos.

Será el cliente el que cree su plato, nos encargaremos de proporcionar la materia prima y los diferentes Sistemas de preparación de la misma.

Todo elegido y recién cocinado.

Il Marea nasce dal mio amore per il mare e dalla voglia di unire arte e tradizione della mia terra con un’idea di libertà.

Volevo svincolarmi dalla classica offerta creando un menù interattivo dove la partecipazione e la libertà di scelta dei nostri ospiti facessero da padrone.

Tutto girerà intorno al banco del pesce, rifornito giornalmente da pescherecci provenienti dal mediterraneo, una materia prima di altissima qualità e la capacità del nostro chef e del nostro ostricaio di riportare nel piatto un esperienza.

Sarà il cliente a costruirsi il piatto, noi ci occuperemo di fornire la materia prima e svariati sistemi di preparazione della stessa.

Tutto scelto e cucinato al momento.
