INGREDIENTI PER 4 PERSONE 400 G DI PANCETTA DI MAIALE FRESCA 1 VERZA 50 G DI ORZO IN CHICCHI 50 G DI MALTO D’ORZO IN SCIROPPO 1 L DI BIRRA KÖLSCH OLIO EXTRAVERGINE D’OLIVA ACETO DI VINO BIANCO SALE E PEPE

PREPARAZIONE Tagliate la pancetta in 4 parti formando 4 cubi, salateli, pepateli e rosolateli in una pentola antiaderente rovente. Sigillate la carne su tutti i lati e immergetela nella birra messa precedentemente a bollire in una casseruola. Fate cuocere a fuoco molto basso per 1 ora.

Nel frattempo lessate l’orzo in chicchi per 10 minuti in 300 ml di acqua salata, aggiungete all’acqua di cottura, da cui avrete scolato l’orzo, il malto d’orzo, mescolate bene e filtrate in un altro pentolino. Fate ridurre sul fornello fino a ottenere un composto denso. Togliete la pancetta dalla birra e fatela gratinare in forno con il grill acceso per 5 minuti, fino a che il grasso della carne non incominci a sfrigolare, ma senza fargli prendere colore.

Tagliate la verza a striscioline sottili, lavatela e scolatela. Conditela con olio extravergine d’oliva, sale, pepe e aceto bianco. Nappate la pancetta con la riduzione di malto d’orzo e appoggiatela sull’insalata di verze.

Preliminary Exercises In queste pagine verranno proposte una serie di esercizi per accostarsi all’uso della penna a punta tronca. In questa prima fase si tratta di capire come il segno del pennino possa variare sensibilmente e passare da uno spessore pieno, ottenuto muovendolo sul foglio dall’alto in basso nel senso della larghezza, a una più sottile, eseguito di taglio da sinistra a destra. Man mano che si prende confidenza con la penna è possibile osservare come una serie di spessori intermedi venga data dal disporsi della penna stessa secondo angoli diversi che possono essere di 15°, 30°,45°.

Come abbiamo visto, l’inclinazione dell’angolo della scrittura è molto importante, in quanto conferisce diversi caratteri una loro precisa fisionomia e la corretta disposizione dei -Pieni e di quelli sottili nella scrittura stessa. Iniziando a usare la penna larga e bene liberarsi dalla preoccupazione di scrivere delle lettere ed eseguire invece una serie di tratti liberi, lasciando che la penna scorre in modo fluido sul foglio.

Travel Journals Illustrations by Marisa Vestita The elegant and original series of sketchbooks inspired by travel, where you can write down your thoughts, ideas and drawings, with pages embellished by pencil sketches, have had great success and present, now, three new titles dedicated to Barcelona, Berlin and the whole world, with drawings of the most significant monuments and landscapes of these destinations.

Berlin

Marisa Vestita. Studied painting at the Academy of Fine Arts of Lecce and at the same time she did internships in comics, stage design and stage-craft. Always curious about everything regarding the world of images, she moved to Milan.

She is very interested in applying computer technology to art and completed a course in digital graphic design at the IED. She shows in major exhibitions throughout Italy. To date, she collaborated with major Italian publishing houses and magazines, including White Star Kids, for which she illustrated different books, both for the adults catalogue and the kids’ one.

Notebook Illustrations by Gabriele Genini Every journey is a fine opportunity for gathering sensations, memories, moments, colors. Having a logbook with you in which to jot down your impressions, notes, sketches and memos is a good idea, as every experienced traveler knows. An elegant new series of notebooks carefully designed to hold experiences on the road and enhanced by wonderful watercolor plates by Gabriele Genini.

The notebooks are dedicated respectively to Italy and Japan.

Italy

Gabriele Genini was born in Switzerland in 1981. After attending the School of Comics in Milan, he enrolled at the Faculty of Painting at the Academy of Fine Arts in Florence, where he graduated with honors. He lives between Florence and Pracchia. He alternates his artistic work with teaching, organizing courses of drawing, cartoon, travel notebooks, watercolor and etching. For White Star he has already published the Sketchbook series.
