Finding their roots Food-truck owners translate success from mobile kitchens to full-fledged restaurants

T

he most apparent—and for some food lovers, the most welcome—restaurant trend the last few years, both in Chico and nationally, has undoubtedly been the rise in prevalence of street-food vendors. Though long home to a number of mostly stationary taco trucks, the city’s fleet of mobile food trucks and carts has boomed to include a multitude of sweet and savory culinary delights from around the globe. Now, it seems the movement is

coming full circle, with a growing number of these gallivanting gourmets establishing brickand-mortar headquarters. That’s certainly true in Chico, where several formerly mobileonly vendors have recently made the move to more permanent locations. Cupcake Crusader made the move early, opening an East Avenue storefront in 2012 after peddling pastries on the go for

two years. Pie purveyor Sweet Cottage made the leap more recently, opening a downtown store in February to complement the mobile gypsy wagon, which has been a Saturday morning and

Thursday night farmers’ market mainstay for six years. At least two other street food vendors—Pop’s Pizza and Inday’s Filipino Food—are also in the process of planting roots, with the former scheduled to open on Forest Avenue in November and the latter hoping to open on West Eighth Street in early 2015. “I think a lot of the food truck guys dream of owning a restaurant,” said John Geiger, a mover and shaker in the local meals-onwheels scene. Geiger has long operated the Crazy Dog cart and his wife, Ethel, oversees the Inday’s Filipino Food trailer. The two also run a snack cart called Ethel’s Sweets, often with the help of their children Geo and Ally, and John is a primary organizer of Fork in the Road, the monthly street-fleet meetup. He also runs the “Street Food, Chico” Facebook page, which offers a daily directory of where Chicoans can find their favorite mobile eateries. “Every single time we go out, multiple people ask where our restaurant is, or when we are going to open one,” Geiger continued. “After a while, it’s hard to resist not doing it.” He also explained establishing some street cred food trucking can be a good, albeit still risky, way to ease into the notoriously fickle restaurant racket: “If you start a truck and it’s a hit, you know it might translate into a successful restaurant. On the other hand, it can be hard to transition from relatively low overhead costs [of a food truck] to something that requires a much greater commitment.” Andrew Shepherd, who with his father started Pop’s Pizza—a trailer complete with a woodburning, stone oven—in spring 2012, said he’s hoping the portable pizzeria’s street success translates. “The jury’s still out because we haven’t opened yet, but I think we’ve established a pretty good base,” he said. “We have a regular following of customers that know we make everything fresh and have a good product. We also like to hang out with our customers and get to know them personally, and we’re confident a lot of them will come check it out.” 12 Dining guiDe

Shepherd said the Pop’s crew didn’t necessarily have a longterm plan to parlay the trailer into a storefront: “This journey we’ve been on has been about making a lot of decisions as we go, and determining what next step is the right step,” he said. “We’re still just a family with a pizza truck, but now were also a family starting a restaurant based on a pizza truck.” Shepherd sees the move to a kitchen without wheels as an opportunity to expand Pop’s existing services. When the trailer is operating, their pizza menu includes a handful of standards and a weekly specialty (the most recent being The Ambrosia, an olive oil, feta and garlic-based pie topped with Greek-herbed chicken, mozzarella, olives, spinach and homemade tzatziki sauce). He said having a full kitchen and storefront will allow them to offer

all of their specialty pizzas all the time, as well as other dishes like sandwiches and wings. Pop’s pies from the truck come in 6- and 12-inch sizes, but the store also will carry larger family-size pizzas, individual slices and offer delivery. Although they’ve opened set locations, both Cupcake Crusader and Sweet Cottage still take to the streets regularly. Shepherd and Geiger added they also intend to keep operating mobile kitchens. In the case of Pop’s, that means maintaining the current two fulltime employees, and hiring an estimated eight more to run the store. “We definitely want to keep doing the truck,” Shepherd said. “I really like doing the events that happen around town, music festivals, and weddings and other catering gigs.” When asked about the ongoing health of the local street-food scene, Shepherd said, “I think it’s

going great. Fork in the Road and the downtown market are great ongoing events. I think we’re in the midst of a culinary revolution.” “There are a lot of trucks now and I’m always excited to hear about new ones, especially diverse ethnic-type things,” Geiger said. He also emphasized the importance of variety to avoid over-saturation, and the fact that food trucking is sometimes harder work than many newbies assume. “Summertime is great because there are plenty of events, and a lot of the trucks are booked solid,” he said. “It’s a bit harder to stay afloat in the winter, especially if you keep moving and don’t have a regular spot. That’s part of the reason taco trucks are so long-lived, because they set up in one location, but it can be much harder for trucks that move around a lot.” l
