Ingredients:

• 3⁄4 pounds Acme smoked whitefish (filleted)

• 7 oz. whitefish salad (for a creamier consistency, you can skip the filleted whitefish, and just use whitefish salad)

• 1⁄4 cup yellow onion (grated)

• 3 ounces extra sharp cheddar cheese (coarsely grated)

• 1 teaspoon lemon zest (grated)

• 1 tablespoon lemon juice

• 2 1⁄4 cups panko breadcrumbs (use more, as needed, if mixture is too loose)

• 1 pinch freshly ground black pepper (to taste)

• 2 tablespoons canola oil (for frying)

Parmalee Hollow Farm is a local family-run mushroom farm located in Newtown, CT. Parmalee Hollow Farm specializes in organically grown mushrooms grown on hardwood, medium substrate logs. Their primary crop is the West Wind Shiitake. Other mushrooms from Parmalee Hollow are based on availablity.

West Wind Shiitake Mushrooms are a strain of shiitake that are popular and have some advantages over other strains. They are slightly more drought tolerant and prefer warmer fruiting temperatures and red oak trees over white oak. They fruit naturally in the spring and fall.

Shiitake mushrooms are known for their meaty texture and rich, earthy flavor, and are often used to enhance umami in certain dishes.

Orange-and-Spice Mashed Sweet Potatoes

INGREDIENTS:

• 2 lbs. orange-fleshed sweet potatoes, peeled and cut into 1-inch pieces

• 2 tbsp. olive oil, coconut oil, or unsalted butter, room temp

• 1/2 tsp. ground cinnamon

• 1/4 tsp. ground allspice

• 1/2 tsp. freshly grated orange zest

• 3 tbsp. reduced fat (2 percent) milk, or more to taste

INGREDIENTS:

• 4 cups low-sodium vegetable broth

• 1 pound whole tomatillos husked & rinsed

• 5 cloves garlic divided

• 1 jalapeno seeded & roughly chopped

• 1 tbsp. olive oil

• 1 large white onion chopped

• 1 large red bell pepper seeded & chopped

• 1 tsp. chili powder or to taste

• 1 tsp. ground cumin or to taste

• 2 medium delicata squash - about 1 1/2

pounds total peeled, seeded & diced

• 3 cups cooked posole or two 15 oz. cans hominy drained

• 2 14.5 oz. cans pinto beans rinsed & drained

• 1/2 cup raw pumpkin seeds ground, for garnish

• Lime wedges for garnish
