Growing up, my father once said to me, “most people eat to live, but my family, we live to eat.” As long as I can remember, I’ve always had an affinity for finding the best food out there, both in quality and presentation. When I met my girlfriend Victoria in 2016, she revealed to me her love of also preferring to “eat well.” After going on over hundred dates to new restaurants and creating delicious homemade meals together, we decided to create a joint Instagram account called Foodies & Fixins’ as a way to share our culinary experiences with the world.

Hi! My name is Michelle Camelotto. I am born and raised in Chatham, New Jersey. Growing up, I watched the food network instead of cartoons, and I loved to cook and help out in the kitchen whenever possible. It was then that I realized that I wanted to be involved with food somehow as my job, which eventually led me to study Food Marketing at Saint Joseph University. After I graduated in 2014, I started my food Instagram account, which slowly grew into what it is today. I currently work for Harvest Restaurant Group, at one of their many restaurants. The chef is big on the “Farm to Table” idea and everything I tried that day was made from fresh local ingredients. My top two favorites from the day:

24 oz bone in ribeye ($42) its served with a potato pave and salmoriglio sauce. Coming from someone who isn’t a meat lover, this ribeye was outstanding, and the salmoriglio sauce was a sauce I didn’t realize I needed.

50 layers of ooey gooey goodness. This lasagna parmigiana ($26) is layered with pork ragu, chili, and béchamel. It takes a few days to prep, but it is to die for.

Next up...

Spinach Chaat ($15) crispy spinach, tamarind sauce, yogurt sauce, chopped onions and tomatoes with a sprinkle of dried cranberries and crunchy sev. This was honestly the best thing ever; if you go to Spice Bazaar you need to get this dish.

It is an Indian restaurant with a modern flair. There is something for everyone on their menu. They have vegan options as well as gluten free naan. Some dishes are prepared table side, like the spinach chaat.

Up front is the garlic naan ($5) back left is the chickpea masala ($17), which happens to be vegan and gluten free. The chickpeas are cooked in a thick, spicy masala gravy. Back right is the traditional butter chicken ($26) and the rich creamy tomato sauce is seriously delicious.

Crispy Cauliflower ($14) crispy golden brown tossed in a Chinese sauce. This is very similar to a buffalo style cauliflower.

Gourmet cinnamon rolls that just so happen to be 100 vegan - all dairy and lactose free, egg free and cholesterol free. They have over 20 frosting flavors, and endless toppings to build your own cinnamon roll- or you can pick from the top selling combinations. Top left going clockwiseCookie monster, pumpkin pie roll, and a fan favorite in town. Cookie monster is topped with chocolate sauce, cookie dough crumble and mini chocolate chips. Pumpkin pie roll starts with pumpkin frosting and gets topped with marshmallows, pie crumble and cinnamon. The bottom is a cake batter frosting, topped with fresh berries, chocolate sauce and pie crumble. The town favorite happened to be my favorite as well. 07

Sergio Capdevielle is from a small town in Puebla, Mexico, called Teziutlán, in the north Sierra of Puebla and currently resides in Montclair, NJ. “Since I can remember, my parents have been making street tacos and selling them at street fairs and at their own taquerias… so that’s where my real passion started. I remember talking with my parents, while having dinner in Mexico, that someday we will have our own Taqueria in USA. So they finally retired as teachers, saved some money, moved to USA and me and my wife Lindsey put together this dream with my parents. Our specialty are tacos and we have more than 25 different tacos… Each taco that you see on our menu represents a part of Mexico. You will also find exotic tacos from Oaxaca like, Grasshopper, Homemade mole, tortillas and more. We use the term Artisanal because we use the original recipes; We keep the same traditions and everything is made from scratch.”

What made you choose West Orange for your first location? We used to live in the area and we knew from family and friends that there were no good taco or Mexican food around.

When did you know it was time to open your second location? Why Chatham?

When people starting asking if we had another location. So we decided to start looking for the best place. We choose Chatham because some customers from the town told us about a good opportunity... so we decided that it was a good market for Tacos.

What is one piece of advice you would give to a future restaurant owner?

Have love and passion for what you do, perseverance, discipline and Never Give Up! 09

Mt. Fuji Steakhouse in Hillburn, NY is celebrating 50 Years in business this December 2019. This legendary steakhouse was founded in 1969 by Tokuaki Fujita and Kazue Fujita, and is now being carried on today by their daughter, Nancy Fujita and husband, Yoshimasa Tada. Their founding goal was to bring the experience of true Japanese culture and cuisine to the tri-state area. When you arrive, you will be blown-away by the 43 acres of picturesque property and breathtaking views. Their newly-renovated restaurant offers 24 hibachi grills, a fabulous Sushi Bar and they recently opened the Y’s Lounge. If you are looking for a true, Japanese dining experience, then make your way to either location and you will not be disappointed.

Your Classic Hibachi Dinner but with a Twist

When you enter the restaurant, you are immediately greeted with warm smiles from all the staff. They offer endless options of appetizers, sushi & sashimi and of course hibachi. You even have a “Banzai Ceremony” option (for an additional $3), which we were able to experience. Word of advice, come with empty stomachs… Since Mt. Fuji is a steakhouse & hibachi restaurant, we decided to go with hibachi for our main meals. Our server recommended the steak or shrimp hibachi, so we had to do both. In addition to our main meals, we also enjoyed some great sushi, a mango and Alaskan roll. DELICIOUS.

Pictured above are the two sushi rolls- the top one is the Alaskan roll ($7), a go-to of mine, and the bottom one is the mango roll ($10). These were both amazing and so fresh. Steak ($30.95) & Shrimp ($28.95) Hibachi, which comes with sautéed shrimp (in addition to the shrimp hibachi dinner) noodles, fried rice, and grilled vegetables. Domi was the Hibachi cook of the night. He had high energy and loved all types of music. This is where the hibachi with a twist comes from. He was so outgoing and entertaining and was singing songs to us as he was doing his thing. I would highly recommend going to Mt. Fuji for the amazing quality in food, but also because of Domi. The Mt. Fuji located in Hillburn, New York even has a lounge that is opened certain nights during the week. I am looking forward to going back and trying even more delicious food. GIGANTIC SLICES

We would recommend venturing to Alessandro’s in Haworth, NJ. This family owned pizza shop/ restaurant offers delicious NY style slices ranging from your classic margherita to a unique rectangular Sicilian slice, and many specialty slice options as well. Several others we would suggest checking out: Urban Tomato in Fort Lee, Sicily in Garfield, Francesca’s Brick Oven Pizza in Glen Rock, Sanducci’s Pizza Kitchen in River Edge, Bucco’s in Lodi, and ASAP pizza in Hackensack.

Benny Tudino’s is known for their plus sized slices and has been a staple in Hoboken for many years. Great late night snack if you’re near the Hoboken Scene. You can also try Tony Bologna’s, who serves unique specialty slices that are also on the bigger side. If you are closer to the suburbs, you can always check out Sopranos in New Milford. Soprano’s serves a large “boardwalk” slice as well as tasty Sicilian pies cut up in fours. 14

THIN CRUST

For those who prefer Thin Crust pizza, there are several options to satisfy your Thin Crust cravings. Star Tavern in West Orange for one, has been a New Jersey staple for over 25 years. We highly recommend trying their plain pie and their white clam pie. 2 more options for classic thin crust pizza include Knichley’s in Ramsey and Lido in Hackensack. Both very similar in regards to pizza quality, but we would say Kinchley’s is more family friendly where Lido is more of an old fashioned cocktail bar.

COAL FIRED BRICK OVEN

WOOD FIRED OVEN PIZZA

If you’re looking for some of the best pizza in New Jersey, more times than not, it will fall in THIS category. Let’s start with Brooklyn Brick Oven in Hackensack. “BBO” delivers one of the best old school margherita pies in the tri-state area. The margherita includes fresh thick mozzarella surrounded by delicious quality tomato sauce, olive oil and some seasonings. Would also recommend trying their white pie with sausage as well. There are 2 other locations, one in Ridgewood, NJ and one in Edgewater, NJ. The only other Coal Fired Pizza option we’d recommend is Cassie’s in Englewood. Very similar to Brooklyn Brick Oven, but Cassie’s is more of a pub atmosphere with several TVs, but they make an excellent Coal Fired Brick Oven Pie. Patrizia’s in Old Tappan is one of about 5-6 locations and they have some of the best pizza around. Nevermind their wood burning pizzas are super tasty on their own, they offer a pie with arugula, cherry tomatoes, and parmesan with ricotta stuffed crust! Several other options you can choose for fantastic wood fired pizza in North Jersey include Aquila Forno in Little Falls, Pazza in Franklin Lakes, Vesta Wood Fired in East Rutherford, A Mano in Ridgewood, and Wood Stack Pizza Kitchen in Pine Hills. These wood fired pies are usually between a personal and a regular pie size so you can order more and share with whoever you’re dining with.

NEAPOLITAN STYLE Ever since we returned from our vacation to Italy, we have been obsessed with Neapolitan style pizza. There are a few places in North Jersey that do an excellent version of the Neapolitan style pie and S. Egidio Salumi Espresso in Ridgewood is one of them. S. Egidio makes some of the best tasting gourmet pies in North Jersey, ranging from the Tirolo (fresh ricotta, speck, hazelnut, local honey) to the Genovese (basil pesto, fresh Italian sausage, bufala mozzarella). These pies are on the smaller side so you can order several if you are with a group. The hardest thing is getting in the door - S. Egidio is always packed and you are not able to make reservations, so try to come during non-peak hours. Another option for delicious Neapolitan style pizza is Aumm Aumm, with locations in North Bergen and Englewood. They offer one of our favorite types of pizza, the Mezza Luna, which is ½ calzone ½ margherita pizza. Aumm Aumm’s crust is airy and fluffy. If you’re feeling one more option, check out Circolo in Waldwick. Circolo offers a different type of Neapolitan style pizza, but it is absolutely delicious, nonetheless. Try their Pizza Circolo, which is their standard margherita pizza with garlic and oregano added. It’s out of this world! 15

BAR-SIDE PIZZA Sometimes, you’re just in the mood for a slice of pie when at the bar. You can check out Grant Street Café in Dumont. They make bar pies and include options such as the Drunken Chicken Pizza or their Grease Truck Pie. Another solid option is Bergen Brick Oven Bar and Grill in Hackensack , known for their Old John Pie out of their traditional oven, more of a thin crust bar pie with 70-30 sauce to cheese ratio. They also serve brick oven pizza as well. If you’re looking for some crazy bar pie options, check out Plank Pizza Co Beer Parlor in Saddle Brook. They offer a macaroni and cheese pie, a pulled pork pie, and a chicken avocado pie to name a few, along with an excellent beer selection. A fourth option would be Biagos in Paramus.

FRANCHISE PIZZA There are several franchises in NJ that offer very solid pizza, but three are our top choice, both are named Anthony! There are several Anthony’s Coal Fired Pizzas scattered throughout New Jersey with locations in Englewood, Fair Lawn, Ramsey, Clifton, etc. Anthony’s Coal Fired Pizza delivers several solid options, including their plain Coal Oven Traditional Pie, which is one of the best. The second option is a childhood favorite called Anthony Francos. We tend to frequent the locations in Paramus and Fort Lee, but they are many other locations within New Jersey. Anthony Francos makes an upside down pie – cheese on the bottom, tomato sauce on top – that is one of the best around. The third franchise that deserves some recognition is Foschini’s Brick Oven Pizza with two locations, one in Dumont and one in Lyndhurst. 16

Chef Spotlight Executive Chef Ruby Felix The Fox & Falcon

How did you get started in the culinary field?

It all started with my husband – I had originally gone to school to be a nurse - however, he started introducing me to different types of cuisine, we would always try and find the best places to eat that were new and exciting. Eating such incredible food inspired me to pick some of the best dishes I had eaten and try to recreate them on my own and I discovered that there was so much more to cooking than just mixing ingredients together. I then stopped going to nursing school and enrolled in the French Culinary Institute in NYC.

How do you describe your style of cooking?

People try and define cooking by French, Italian, Asian, etc. I try not to be limited to those boundaries. If I had to choose I would say Modern American which sounds vague but American cuisine is truly a melting pot of all different types of cuisine and is influenced by numerous cultures. I love bringing a mix of both my cultural background (my Filipino roots) and culinary background (inspiration from chefs I have worked with, restaurants I have cooked in and what I learned in the French Culinary Institute) into my cooking. I also find inspiration in my environment, not just the restaurant but the community as a whole as well as the local / seasonal ingredients that are available. I create dishes that are simple and familiar but that are surprisingly flavorful and bold.

Is there a secret ingredient that you love to cook with? Gochujang, a Korean fermented paste. It’s really versatile and has a unique flavor profile.

What is your favorite dish on the menu?

The Malfadine with Short Rib Ragu. I love eating a big bowl of Beef Bourguignon no matter what season and that was the inspiration behind this dish. We have a similar stew in the Philippines that my grandmother cooks called Caldereta that was always so comforting. I wanted to create something similar that would be comforting to guests and make them feel at home.

Do you have a guilty food pleasure?

A slice of cake, chocolate cake to be exact. I buy a whole cake for myself once in a while. Sometimes you just need it! 18
