The Big Day

W

e hope that all of our Fish and Chip operators have had a real boost with the National Fish and Chip Day on June 4th. A great way to start the Summer season. Through the rapid roll-out of the vaccination campaign (and the sterling efforts of many operators), we can (hopefully) see the end of the worst of the Covid restrictions at long last with eating inside an added bonus for operators. Now is the time to start to gain the benefits from the hard work and investments that many have been making over the last 15 months by taking advantage of the “new ways of working”. Using technology, card payments and delivery and collection systems have enabled many operators to increase their average spend by encouraging customers with add-ons for their order. In this issue we make no apology for featuring Ice Cream in the hope of a few months of great weather to encourage sales and with Staycations being the buzzword this year, what better time to invest in adding or expanding this offer in your business. Very profitable and there are some great pieces of equipment to make this easy. The opportunities to meet new and existing contacts and suppliers is also on the horizon with the re-opening of physical rather than virtual exhibitions and we would encourage operators to visit these when possible as it is great to get away from your business for a day and see what has been happening in the sector whilst we have all been caged up by lockdowns. You will find details in this issue about the Restaurant and Takeaway Innovation Expo at Excel in November. We at Fast Food Professional wish all of our supporters and readers every success over the coming months. Stay safe Athol

John and Dayton both felt comfortable with this method of assessment which was new to them.”David Miller, Miller’s Fish & Chips These remote assessments allow fish friers to be assessed safely in their own working environment. The learner can study the learning materials where and when they want to and at a pace that suits them. There are also benefits for the assessor as they save on both travel time and travel costs.

Practical fish frying skills can be assessed remotely Richard Wardell, Seafish Onshore Training Advisor, analyses how practical assessments have been adapted during the Covid-19 pandemic

Jonathan France has owned the Fish Bank in Sherburn In Elmet for 18 months. In that time, he has had to adapt his business operations due to the pandemic. He realised that he could improve his skills and knowledge by studying for the Fish Frying Skills qualification. In January 2021 he was awarded with his certificate by the NFFF. He says: “I learnt a lot from the two self-study workbooks. Being assessed by award-winning fish frier Ashley Phillips of Shap Chippy was great. He made me relax and the technology for completing the exam was easy

In 2019, I worked with Mark Drummond who was representing the NFFF, to update the learning and assessment materials. The alterations reflected the fact that many shops now use ready-prepared chips and fry using high efficiency ranges. There is more focus on sustainability and the health aspects of frying medium. By 2020, fish friers were being assessed utilising these revised materials. Then the world was turned upside down by the coronavirus. Both we and the NFFF were keen to find a new way for the assessments to be conducted. Following several planning discussions, Mark conducted the first two pilot remote assessments with John and Dayton. They work at the award-winning Miller’s Fish & Chips in Haxby near York. Using Facetime, Mark was able to evaluate the preparation and cooking skills of both fish friers on separate days. Also,

New ice cream toppings After reports of a shortage of Cadbury 99 Flakes, the UK’s leading confectionery wholesaler is encouraging its customers to look for alternatives which may become just as popular in years to come. Hancocks, is encouraging its customers to look for alternatives which may become just as popular in years to come. It’s suggesting ice-cream vans, shop owners and leisure outlets look at other chocolate treats, popular flavour combinations and even consider unusual sweet toppings for something completely different. Chris Smith, Marketing Communications Manager at Hancocks, said: “Ice-cream has come a long way over recent years and customers are always keen to try new flavours, different cones and interesting toppings. “For retailers this can be challenging. It’s always difficult to predict just what customers will want to try but there are certain trends that really stand out this year and with a shortage of the traditional favourite, it’s the ideal time to try something new. “Biscoff is a massive flavour that everyone is loving and talking about. Another is the chocolate orange flavour combination which is delicious and would work so well with ice-cream. “There are slightly more traditional chocolate toppings too like mini marshmallows, and our favourite chocolate minis. “A few unusual choices could also work like a popping 10

to deal with shortage candy topping – that could be a popular choice with young ice-cream and retro candy lovers.” Here are suggestions from the experts at Hancocks for alternative ice-cream toppings: 1. Kingsway Milk Chocolate Flaked Sticks These make a great alternative to the traditional Cadbury 99 Flake for ice cream sellers. The bulk box contains 140 sticks. 2. Biscuit Crumb Toppings Biscuit crumb toppings have been growing in popularity over the last 12 months and are expected to be a big hit with ice cream lovers this summer. Try the tasty Oreo Crushed Cookie Crumbs for an indulgent treat which will leave customers wanting more. 3. Chocolate Minis Most chocolate favourites come in mini versions, perfect for ice-cream toppings. Among the options are Cadbury Crunchie Bits, Nestle Aero, Milkybar, Rolo, Smarties and Kit Kat Mix In which is crumbled wafer pieces and milk chocolate. Another great choice is Reese’s Peanut Butter Baking Chocolate Chips, a delicious sweet, creamy treat. 4. Chocolate Stick Alternatives There are lots of delicious chocolate replacements to the traditional Cadbury 99 Flake. Think about trying a Kit Kat finger or tap into the flavour of the moment, chocolate orange with an orange flavour Cadbury Twirl. For the children, a Kinder Bueno is a tempting sweet treat. 5. Toppings for Children Why not give popping candy a try for retro and young sweet and ice cream lovers? Crazy Candy Factory Popping Candy comes in three flavours, grape, cherry and cola in handy individually wrapped pouches. Marshmallows are a good child friendly treat. Let’s Bake and Decorate has flavours including strawberry, vanilla and blue raspberry. Or try Let’s Bake and Decorate Mini Caramel Fudge for a treat all confectionery lovers, young and old, will enjoy. Hancocks is the UK’s leading confectionery wholesaler with 14 nationwide cash and carry stores and an online channel www.hancocks.co.uk where customers can shop online 24/7 with delivery to the door or click and collect options. Hancocks is the one stop shop for confectionery for over 25,000 independent retailers and the partner of choice for over 250 suppliers from across the globe. 11

Our Jersey Luxury and Jersey Gold soft ice cream mixes are made from our own milk which comes exclusively from Jersey cows. The Jersey Dairy is a farmer owned cooperative with a unique heritage which traces back to 1763 and our herds produce a unique type of milk with a worldwide reputation for its taste and creaminess. Our pedigree Jersey cows are allowed to graze freely on natural grass and their milk contains on average 5.3% butterfat and has up to 20% more calcium and protein than other milks. It also has a higher level of vitamins and minerals. This makes it especially delicious and perfect for making ice-cream. We make this special milk into a variety of products including a soft ice cream mix for use in ice cream machines. 14

What’s more, they can be boxed up too to cater for the continued strong demand for takeaway and delivery. “Although people are looking to eat more healthily, they are also still fond of treating themselves – even more so in these uncertain times - so offering a half or smaller portion of dessert is a great way to encourage a purchase,” adds Gordon Lauder. “It’s also a simple but stylish way to upsell a coffee and a great way to encourage those with smaller appetites to opt for a dessert when they don’t feel able to eat a full-sized pudding. “Frozen pre-prepared desserts and sweet treats are a real bonus in any professional kitchen, as they help to reduce waste – even more important as operators try to recoup costs as a result of the pandemic – they are convenient, consistent, and they can help caterers to cope with unexpected demand,” adds Gordon Lauder. “And with such a wide range available, there is something in the Central Foods range to suit all types of outlet.” Central Foods is one of the UK’s leading frozen food distributors, offering a wide range of products to the fast-food sector, including

Jestic reopen development kitchens for face to face demos Following the Prime Minister’s announcement that hospitality businesses can welcome back customers for indoor dining, Jestic Foodservice Solutions will be fully reopening its development kitchens in Paddock Wood, Kent and Manchester from May 17th to continue their popular equipment demonstration and training sessions

J

estic’s Culinary Director, Michael Eyre explains: “Demonstrations and training are crucial ways in which we can help to support operators, consultants and our approved dealer network,

so we are delighted to be able to welcome current and potential customers back to our development kitchens in Manchester and Kent. Both our kitchens are completely covid-compliant and we will be controlling visitor numbers to ensure that social distancing is maintained.” “Nothing beats face to face interaction and for customers to be hands on with the equipment themselves. The really big win is that customers can once again see, taste and smell the delicious food the fantastic equipment in our portfolio can produce. We would also encourage any customers and dealers to make use of the dedicated meeting facilities at our Manchester and Paddock Wood offices if they are looking to arrange a gathering offsite.” For customers who are unable to attend either of the two development kitchens in person, Jestic is still offering demonstrations through Zoom using a multi-point live camera system. Product demonstrations are also held throughout the year at trade events like the Cedabond Forum and at customers’ own premises on request. For more information about the Paddock Wood and Manchester test kitchens or to book a demonstration on a specific range of equipment please call Jestic on 01892 831 960 or visit www.jestic.co.uk.

bottles, and with its environmental attributes, it ticks a lot of boxes for an operator.” The Multiplex albi delivers three key operational benefits to smaller cafes, bars and retailers who are now able to consider soft drink dispensing for their business: User Friendly – Easy to use with 4 buttons, low maintenance cleaning, and a quick and easy installation. The Multiplex albi dispensers require a simple BiB change, saving labour and time compared to restocking a fridge with finished product/bottles. The BiBs can be sourced locally or via Simpsons Beverages, specialists in post mix syrups. They offer an extensive range of flavours including traditional favourites and new and innovative options. Alternatively, they offer bespoke flavours by request for competitor standout (volume dependent). To really make the range easy to use, the CO2 cannister can be sourced locally or via BOC and their online ordering system. These two features make the Multiplex albi range incredibly user friendly, and easy to use for any operator looking to install leading edge drink dispensing. Profitable and Eco Friendly – 4x 10Ltr BiBs is the equivalent of approximately 720 (330ml) serves, and one CO2 cannister produces over 3,000 servings – saving time as well as making the range eco-friendly. The Multiplex albi dispensers also offer lower energy bills, with up to 30% energy reduction Vs packaged goods chillers (based on a single door chiller). Lean – Dimensions that are suitable for small spaces open up a range of possibilities for a business looking to maximise their soft drink offering. Sleek and sophisticated, the Multiplex albi dispensers fit into any décor and are a premium and professional looking range. “We’re expecting big things from the Multiplex albi range.” explains Steve, “A compact and sleek unit that is easy to use and offers good environmental benefits. It really is a game changer for drinks dispensing for smaller spaces.” www.welbilt.com
