This week... From the editor Continuing on the theme of biting off (perhaps) more than I can chew this year, I’ve signed up for City2Surf. That’s right, I – the girl who’s only very recently established a five-day-aweek functional training regime – am going to take on a leisurely 14-kilometre fun run through scenic Sydney, about two kilometres of which comprises of the notorious Heartbreak Hill (the name says it all). I read in an online forum that the easiest way up said hill is to “run like you stole something”. Wise words I hope will fuel me. I’m certainly not the only Novocastrian who will be pounding the pavement – our inspirational cover star, Rachael Howard, will be amongst the pack, too. Probably much further ahead, I suspect. All of this will take place on Sunday 12 August, not 48 hours after I have abseiled down the face of McDonald Jones Stadium in the Leaders Leap fundraiser for the Westpac Rescue Helicopter Service. Oh dear. A hearty thank-you to the staff at Ribs & Burgers Charlestown for hosting me and my partner, Luke, for a complimentary lunch last weekend ahead of the store's opening on Monday. I highly recommend the sweet potato fries – again, this from the girl who keeps volunteering for strenuous activities. - Georgia Osland

news Fragment of WWI to be unearthed A time capsule buried beneath Lambton Park Memorial Gates during World War I will be unearthed on its centenary. While local men fought at the Western Front, their mothers, sisters and wives raised funds to build the memorial gates in recognition of the soldiers’ bravery and patriotism. On 19 October 1918, a foundation stone was laid at the gates, with a glass time capsule placed underneath. The contents reportedly include a newspaper, coins, a list of the names of Lambton councillors at the time and the 30 women who banded together to fund the gates through bazaars, dances, operettas, concerts and euchre parties. Community historian Robert Watson, a member of the Lambton Residents Group, says the time capsule is of great significance. “Between about 1850 and 1920, placing time capsules in, or around, major buildings happened on occasions, but they were soon forgotten,” he tells Newcastle Weekly. “The thing that struck me most about these memorial gates and the capsule was that the

gates were fully-funded by the Lambton Ladies Welcome Home Committee. “They ran fundraisers for over two years, sometimes [organising] three events per week. “The gates have the names of around 130 men who went to WWI, of which about 30 didn’t return. “We can see their names and remember them forever. “But, in my mind, the capsule adds a new dimension to the Anzac story because it contains a list of the 30 ladies who did the fundraising.” Newcastle council has unanimously backed the Lambton time capsule project, with councillor Andrea Rufo a major supporter of the push to organise a public ceremony. The ceremony, which is expected to include the burial of a new time capsule, will take place at the memorial gates in October. It is hoped the contents of the 1918 capsule can be carefully preserved and placed on permanent display, potentially at Newcastle Museum. A heritage and engineering assessment, undertaken by Newcastle council, found the

time capsule’s removal would not damage the heritage-listed memorial gates. Meanwhile, Mr Watson is also trying to find descendants of the Lambton men named on the gates’ pillars. news Air quality a top priority John Tate knows “people get frustrated at times” as two groups work to provide insights into air quality and environmental issues in the Hunter Region. The former Newcastle lord mayor, who held the position from 1999 until his retirement in 2012, chairs both the Newcastle Community Consultative Committee on the Environment and the Upper Hunter Air Quality Advisory Committee. He said quarterly reports from the NSW Environment Protection Authority (EPA) and Office of Environment and Heritage (OEH) helped the groups keep track of air quality, while an online monitoring system offered up-to-date data. “We are an advisory committee – not one that sets policy,” Mr Tate said. “The most we can do is advise the EPA and OEH on what we think

ought to be done.” Mr Tate believed last month’s dust haze in the Hunter Valley, caused by strong winds in South Australia that crossed drought-stricken farms and swept the east coast, highlighted the need for greater awareness on air quality. “It’s quite amazing – people don’t realise that [dust] can travel that far,” he said. “You might think, how could what happened [in South Australia] affect anything here? “Dust levels have gone up in the Upper Hunter, but it’ll go back down.” The Newcastle committee was formed in 2011 following a significant pollution incident on Kooragang Island. Since then, it has taken on a more proactive approach to environmental issues of concern to the community.

Some of these issues include erosion at Stockton Beach, coal dust pollution, water quality in the Hunter River and Newcastle harbour, as well as noise in the Port of Newcastle. The presence of per-and-polyfluoroalkyl substances (PFAS) at Williamtown and illegal dumping have also been discussed. “We mainly deal with air quality, but we can’t live in a vacuum – we’ve

news Mayor primed for gaol time It will be a slightly eerie and cold experience, but community members are set to sleep rough at Maitland Gaol this month for a worthy cause. The inaugural Vinnies Community Sleepout, which will take place from 6pm on Thursday 30 August, aims to raise awareness of disadvantaged and homeless people in the Lower Hunter area. St Vincent de Paul Society’s key programs focus on supporting those who require financial assistance, disadvantaged or vulnerable youth, people experiencing or at risk of homelessness, and people living with a disability or mental illness. Vinnies provided more than $250,000 in financial assistance throughout the Lower Hunter area over the past year, including about $109,000 in food vouchers

for people struggling to make ends meet. Maitland mayor Loretta Baker, who was the first to sign up for the sleepout, said she greatly admired Vinnies’ work. “I’ve been working in partnership with them in health for the last 18 years,” she said. “Long before homelessness was a part of everyday conversation and newspaper headlines, St Vincent de Paul was working as a homeless service, so I have a huge amount of respect for them. “[Vinnies] came and saw me when I became mayor and I thought: ‘This is great to have this in Maitland because they’ve been working and delivering services here.’” For more than a decade, the charity’s Hunter Homeless Conference has supported the

residents of Maitland’s Coachstop Caravan Park, in partnership with Maitland Dungog Community Health’s on-site health service. Vinnies volunteers strive to provide emotional support to those isolated in the community and offer homemade cakes to help develop trusting relationships with the residents.

news Runner ready for marathon challenge Rachael Howard isn’t running from what life throws at her – rather, she’s facing it in a positive, and healthy, way. As a teenager, Rachael didn’t know how to handle the loss of several people who were close to her. “I kind of went off track a bit and my mental health really suffered,” she tells Newcastle Weekly. Fast forward a decade, and the now 28-year-old has turned to running to achieve her goals. “By being active, getting outside and connecting with the country, I was able to get back on track,” Rachael says. “I want to show people that mental illness doesn’t define who you are, and that physical activity can have a positive impact on your health.” The Thornton local aims to spread her message through the

Indigenous Marathon Foundation – a health-promotion charity that uses running to celebrate Indigenous resilience and achievement, while also creating inspirational leaders. The foundation’s Indigenous Marathon Project (IMP) is a non-profit initiative that trials 150 Indigenous runners from across the country, 12 of whom are selected to compete in the 42-kilometre New York City Marathon on 4 November. Rachael, a Burraburra woman, was selected in the 2018 IMP squad earlier this year. Each member receives six months of training ahead of the world’s largest marathon, which attracted more than 98,000 applicants in 2017. Education is a compulsory part of the IMP program. Participants must undergo a Certificate IV in sport and recreation, a Level 1 in recreational

running coach accreditation through Athletics Australia, and CPR and first-aid qualifications. After crossing the finish line in New York, the squad members become IMP graduates and are empowered with a renewed sense of self-belief. Rachael says she has been training hard since learning of the important initiative. “I went to the Forster Running Festival last year and there was a big group of runners from the Indigenous Marathon Project up there,” Rachael says. “I thought: ‘I want in on that’, because I’ve seen how running affects me so positively and I wanted to show our community that this is such a great thing to be a part of. “I’ve been training six to seven days a week; we’re also doing the City2Surf [on 12 August] and then

news Relief on way for farmers The state government has announced a $500 million Emergency Drought Relief Package this week to support embattled farmers. The three major elements of the package include: about $190 million for drought transport subsidies; approximately $110 million for cutting the cost of farming fees and charges by waiving Local Land Services rates, waiving fixed water charges in rural and regional areas and waiving class one agricultural vehicle registration costs, among other initiatives; and $150 million to bolster the Farm Innovation Fund (FIF) infrastructure program. There is also funding for counselling and mental health; critical services in regional communities, including transporting water and droughtrelated road upgrades and repairs;

and animal welfare and stock disposal. Parliamentary secretary for the Hunter, Scot MacDonald, praised the announcement of the package. “[It] follows a successful NSW Farmer’s Conference in Sydney, where the premier committed to remain in contact with the farming community,” Mr MacDonald said. “It is important farmers don’t self-assess their eligibility.” Farmers are being urged to speak with the Hunter Local Land Services via 4930 1030 or the Rural Assistance Authority on 1800 678 593. news Drug trial for ice addiction A world-first clinical trial to treat people with ice addiction is now underway in the Hunter Region. The study will test if a high dosage of lisdexamfetamine – an existing drug used for Attention Deficit Hyperactivity Disorder (ADHD) – is effective in reducing methamphetamine (‘ice’) use, cravings and withdrawal symptoms. Hunter New England Health (HNEH)’s director of drug and alcohol clinical services, professor Adrian Dunlop, said Australia had one of the highest rates of methamphetamine dependence in the world. “We’ve consistently seen methamphetamine users presenting for treatment over the past decade in Newcastle and the Hunter region,” he said. “While counselling is quite

effective for many people with less problematic methamphetamine use, we currently don’t have a proven medication treatment for severe methamphetamine dependence. “Dexamphetamine has been used as a treatment for methamphetamine dependence with some initial promising results”. Professor Dunlop said lisdexamfetamine was a slowrelease form of dexamphetamine, with a slower onset of action, and was metabolised by the body in a way that was very hard to be used non-medically. “If you crush up the drug and inject it, you are not going to get a rush because it still has to be turned into dexamphetamine in your blood,” he said. news Call for flood feedback Lake Macquarie council has sought community feedback to help develop an adaptation plan for floods in Swansea. The council’s manager of planning and sustainability, Alice Howe, said the plan would outline ways that enabled people to live and build in the suburb as lake and sea levels rose. World’s fittest lie in weight Hunter athlete Judith Tynan has flown to the USA to take part in a competition that boasts some of the fittest men and women on earth. The 55-year-old mother and business owner from Chisholm, Maitland, is one of only 20 athletes from around the world to qualify in the 55-59 category for this year’s CrossFit Games. Tynan dominated the qualifying workouts to secure her spot at the Games, placing seventh overall. “I’ve had my eye on qualifying for the last few years, so this is a huge achievement for me and I’m very proud to be representing Australia,” she said. “Everyone who does CrossFit knows how hard it is to get to this level.” No stranger to elite fitness,

FODMAP-friendly bites According to the federal government’s healthdirect website, as many as one in five Australians will develop Irritable Bowel Syndrome in their lifetime. One way to alleviate symptoms is through a low-FODMAP diet – the acronym given to a group of foods known to cause gas, bloating and pain.

Once the capsicums are cooked, transfer them to a bowl and cover them with a tea towel, to encourage them to sweat. This makes them easier to peel.

Method

1 litre (4 cups) lactose-free full cream milk 370 g (1 cup) caster sugar

Preheat the oven to 180°C and grease an 18cm square baking tin.

Base 50 g (½ cup) almond meal 120 g (1 cup) tapioca flour 75g butter 2 Tbsp light brown sugar 1 egg Caramel 100g butter 1½ Tbsp light brown sugar 1½ tsp sea salt Chocolate topping 200g dark chocolate, roughly chopped 1 teaspoon plain tasting oil (like vegetable, castor or grapeseed)

Cut your capsicums in half and remove the seeds before placing them skin-side up on the baking tray. Put in the oven and cook for 30 minutes to 1 hour, depending on how big your capsicums are. Their flesh should be softened and their skin blistered.

To make the condensed milk, put the cream and sugar in a large saucepan over medium heat and cook on a low boil, whisking intermittently, for 1 hour–1 hour 20 minutes. It should first turn a grey colour, before eventually thickening to a brown, condensed-milk consistency. Be patient with it and keep watching. It might take longer than specified, or it might take less time – it depends on the cream and the cooktop.

Juice of 1 lemon

Once cool, peel the capsicums and add the flesh to your food processor along with all the other ingredients. Pulse until you achieve your desired dip consistency. Taste and adjust for seasoning and flavour, before storing in an airtight container in the fridge for up to 3 days.

To make the base, put all the ingredients into your food processor, and process until everything is combined. It will be a sticky paste of dough – transfer it to the fridge to firm up, if need be. Remove the dough from the processor and use your hands to gently press it until the mixture comes together. Scrape the dough into the greased tin and, using swift movements or lightly-oiled hands, use your palm to press the dough evenly into the tin. Use a fork to prick a few holes in the pastry base, then put it in the oven for 10 minutes until lightly coloured and slightly puffed up. Set aside to cool. To make the caramel, melt the butter with the brown sugar in a small saucepan over medium heat. Whisk constantly, allowing the mixture to darken and begin bubbling, and then add the salt and condensed milk. Continue whisking for several minutes until thick and dark before removing from the heat. Once the caramel has cooled slightly, pour it over the cooled biscuit base. Transfer to the fridge, to chill and solidify completely.

Once the caramel has set, make the topping. Melt the chocolate (using whichever method you like, I use the double boiler method), and stir in the teaspoon of oil (this will help make it easier to slice later). Pour the chocolate over the caramel layer, working quickly but gently to spread the chocolate evenly before it starts to harden.

Ladies pull off publishing coup Can too many cooks spoil the broth? Not in this case. You’d be forgiven for thinking five authors is a few too many to collaboratively pen a novel. But Sydney-based scribes Jenny Crocker, Jane Richards, Jane St Vincent Welch, Denise Tart and Maddy Oliver managed to pull it off, and land a book deal. The Painted Sky, published in 2015 by Penguin Random House, was threeand-a-half years in the making.

It started with a weekend away in the Blue Mountains. The BookSluts – who’d named themselves so because, as a book club, they’d read just about anything – had gathered to discuss Crime and Punishment. Set in the Russian snow, one friend quipped that they ought to be reading the novel on the Trans-Siberian railway. One thing led to another, and, as all bright ideas are formed (over vodka), before they knew it, the five women had resolved to write their own novel, under the pseudonym Alice Campion. All of the book’s major characters were developed that afternoon, Tart tells Newcastle Weekly. The plotline started out as a Mills & Boon-style romance, and evolved into a quintessential Australian family drama with a driving love story. “We just wrote what we would want

to read,” Tart says. And, if you’re envisioning the five authors writing together in the same room over the years, that wasn’t the case. “We’d come up with scene suggestions together and we’d each go away and write one,” Tart adds. “Then, we’d swap and read over them. If you had an issue with something, you’d have to bring an alternative to the table. That’s how we dealt with conflict.” The book was a roaring success, and, in 2017, the Alices (minus Oliver), published their second novel, The Shifting Light. “By then, the process was almost

seamless; we just knew Alice’s voice,” Tart says. Alas, the fact that a book club pulled off such an unlikely publishing coup – not once, but twice – still perplexes many. Well, good news for Hunter Region bookworms: the Alices are hosting free author talks at Rutherford Library tomorrow (Friday 3 August) from 6pm, and at Speers Point Library on Saturday 4 August from 10am, to answer all your burning questions. WALLSEND VILLAGE GR AND PAR ADE The Wallsend Village Grand Parade is the official start to the Wallsend Winter Fair and is the only existing street parade in the Newcastle LGA. Attracting more than 30 local businesses, community and sporting groups, local schools, talent schools and marching bands, the Wallsend Village Grand Parade is always a popular event, with people crowding the streets to find the best vantage points. Feeding time in the garden August has arrived, which is feeding month, prior to spring. Let’s begin with citrus, which is often grown in large pots. Container-grown citrus is fertilised differently than groundgrown plants. Do not use granulated citrus food, as this can cause defoliation. Use a pelleted product and water well on application. Regular fertilisation with a water-soluble product will also help to produce fruit. Citrus growing in the garden should be fed with poultry manure, out under the drip line, not close to the trunk. The soil should be watered prior to application and again afterwards.

A couple of weeks later, follow up with citrus fertiliser, using the same method, out under the drip line and water as with the poultry manure. This winter has delivered many frosts, even to coastal areas, so wait until the frosts are over before pruning roses. Don’t prune climbing roses at this time of year, but certainly fertilise to give you a summer flush. Standard roses should be pruned back to a soccer ball size and bush roses need any dead wood removed; a heavy prune at this time won’t hurt. After pruning, spray with lime sulphur, which attacks scale and prevents fungal and scale attacks for several months. Note this can’t be sprayed once growth has started. Apply a bucketful of poultry manure to each rose, followed three weeks later by a handful of granulated rose food.

Like citrus, pot-grown roses should be fed with a slow-release pelleted product. Sasanqua camellias need attention now they have fi nished flowering – trim any dead growth and, if espaliering, prune off frontal growth to encourage side cover and give them a kick with cow manure. It is wise to cover the root’s surface with peat moss in preparation for the heat of summer. August jobs include deadheading Japonica camellias and fertilising with cow manure – again, container-grown plants are treated differently. Use a slow-release fertiliser and regularly apply a water-soluble product specifically for camellias and azaleas. In a nutshell, this entire month should be used for fertilising.

Natives prefer blood and bone; acidic-loving plants such as gardenias and murrayas like cow manure; but when in doubt, use a neutral product. Most importantly, don’t fertilise lawns until they are actively growing or else the grass won’t absorb the fertiliser. Wait until you have mown. Don’t count weeds on this occasion – they should have been sprayed by now. If grass is growing and requires the mower, then fertilise and topdress if needed.

My favourite things FAMILY With my mum being one of 15 children, there was never a shortage of family around growing up. Time spent with any family member is precious and needs to be enjoyed.

SPORT I’m a bit of a sports tragic. My favourite teams are the Boston Celtics in the NBA and of, course, the incomparable All Blacks (it’s in my DNA).

WALKING THE DOG Izzy, our Shih Tzu-Toy Poodle cross loves joining me for a walk along Bagnalls Beach, although she has way more energy and personality than I do.

Paul Ellmers is what’s known as a KLIO (Kiwi Living In Oz). When he first visited the Hunter while hosting a group of VIP clients for a Fairfax NZ newspaper, Paul thought: ‘What a great place this would be to call home.’ A few years later, when the opportunity arose to move here, there was little hesitation. Having spent what seemed like a lifetime working in newspapers, experiencing the many ups and downs within the industry, he considered his media days behind him. However, when the chance to be involved with Newcastle Weekly came along, Paul knew he wanted to be part of what he deemed the print media future – a unique magazine for a unique region. 66
