Annie's Breakfast Slice

1 cup sunflower seeds

½ cup almonds

½ cup raw cashews

½ cup dried apricots

¼ cup dried cranberries

½ cup dates

½ cup sultanas

½ cup pepitas

4 drops vanilla essence

¼ cup honey and ½ cup hot water

2 eggs

½ cup gluten-free SR flour

2 tbsp coconut oil

1 drop of cinnamon essential oil

Method:

Soak all the seeds, nuts and dried fruit in water and honey for a few hours. Add the beaten eggs, and coconut oil, and mix all together. Press into a greased lamington tray with coconut oil on the base. Bake the slice for 25 minutes medium heat 180°C.

This slice needs to cool down, then store in the refrigerator. Slice up and serve when needed. Great as a breakfast bar and for action times.
