Greek Country Cooking, Grecian Spotlight, Holiday Grief Dear Readers: Last month, Greek culinary authority Diane Frosene Kochilas offered her latest taste of culinary treasures Phillips with her cookbook The Country Cooking of Greece, 384 pages filled with recipes and inviting photographs Editor by Vassilis Stenos. “The soul of Greece lives in its country cooks,” writes Kochilas in the Acknowledgements of her book. “These are the people who tend the earth, keep animals, and maintain traditions.” For the complete story and her recipe of Melomakarona me Mastiha, please see page 4. This past September 17, “Grecian Spotlight” founder Louis Vitalis quietly turned 100 years old with a few friends and family in a local restaurant, yours truly included. I use the word “quietly” loosely because as the luncheon wore on, the celebratory nature of the occasion reached out to surrounding dining guests who were also smitten by Louis, his enthusiastic spirit, and his parea. For a little taste of Louis remarkable life and the gifts he gave to the San Francisco Bay Area’s Greek community, I invite you to see page 5. With the holidays upon us and in the spirit of thanksgiving, the HJ shares tips and resources this month on an important subject – helping someone that is grieving during the holidays. NUT-AND-HONEY COOKIES FLAVORED WITH MASTIC MELOMAKARONA ME MASTIHA

Melomakarona are classic Christmas and New Year’s cookies. There are many regional variations. Typically the cookie is flavored with orange and spiced with the two most popular warm winter spices, cinnamon and cloves. Many versions also call for stuffing the center with ground walnuts. In some regions melomakarona are fried, but in most places the cookies are baked. They are most often made with olive oil, not butter. This version, with mastiha (mastic), is from the island of Chios, mastiha’s home. SYRUP 1/ ½ tsp mastiha (mastic) crystals 2 cups Greek honey 1 cup plus 1 tsp sugar 1 cup sugar 3 cups extra virgin Greek olive oil 1 cup water 1 tbsp baking soda 1 cinnamon stick ½ cup water Strained fresh juice and 1 11 cups all-purpose flour strip of peel from 1 large lemon Ground cinnamon for sprinkling 1 ½ to 2 cups finely ground walnuts Preheat the oven to 350 degrees F and lightly oil several baking sheets. Pound the mastiha and the 1 tsp sugar together in a small mortar with a pestle until the mixture is a fine powder. In the bowl of an electric mixer outfitted with a whisk, beat the olive oil with the 1 cup sugar at medium-high speed until creamy. Dilute the baking soda in the orange juice. Add the mastiha, orange juice mixture, and water to the olive oilsugar mixture and whisk for 30 seconds. Replace the whisk attachment with the paddle attachment and add the flour, 1 cup at a time, until a soft, malleable dough takes a shape. Cover with plastic wrap and let rest for 30 minutes. Shape the dough into oblong mounds, about 2 inches long and 1 inch thick. Using the tines of a fork, prick the tops lightly to form a decorative pattern. Place on the oiled baking sheets, mounded- side up, about 2 inches apart. Bake for about 20 minutes, or until lightly browned. Remove from the oven, cool slightly in the pan, and transfer to racks to cool completely. To make the syrup: Combine all the ingredients in a medium sauce-pan and bring to a boil. Reduce the heat and simmer for 5 minutes. Soak the melomakarona in batches in the hot syrup for 5 to 10 minutes and place on a platter. grecian spotlight “Grecian Spotlight” founder Louis Vitalis turns 100 years young

Journey from Tinos to Crete to San Francisco

t was an intimate gathering of old friends and local Greek media representatives on September 17, 2012, that delighted one of the community’s pioneers, Louis Vitalis. The occasion was Vitalis’ 100th birthday and the luncheon was marked by laughter, reminiscing, feasting and, of course, singing with friends and strangers, who instantly became new friends.

Louis Vitalis was the producer and host of the first Greek American radio program in the west. He founded the Hellenic Radio Hour in 1943.

Co-hosted by Dimitri Carapanos and Vasilios Glimidakis, the luncheon surprised Vitalis with the likes of Savas Delagiorgis of the Hellenic American Broadcast, Frosene Phillips of The Hellenic Journal, Elias Tsiknis of Greek Imports, vocalist Margarita of GREEK TV, Vitalis sons John and Nick, and daughter-in-law Colleen. Vitalis was the founder of “Grecian

Spotlight,” which later became “GREEK TV.” During his career, he contributed extensively to the people of his community and state through his many activities.

In 1939, Louis opened his own liquor business on Mission Street, which he had for 10 years and with a partner for another four years.

Born on the island of Tinos, Louis lived his early years with his parents in Asia Minor. Following the death of his father when he was 8, his mother immigrated to the U.S. and settled in California.

In 1943, he started the Hellenic Radio Hour, a weekly radio program in San Francisco. During the war, his program promoted the Red Cross and the purchase of war bonds, and this popular program remained on the air until 1949.

A loving Armenian family took care of him until 1922 when the Turks expelled hundreds of thousands of Greeks from Asia Minor. Louis was sent to Heraklion, Crete, to the home of a family relative where he lived until 1930 when his mother was then able to bring him to the U.S.

In 1982, Louis and his son John started the “GreekAmerican Greek TV Program.”

In 1983, in association with Dr. Ernest Panos from Chicago, they initiated “Grecian Spotlight” airing on KTSF Channel 26, and in 1985 Louis invited the association and contribution of Dimitri Carapanos. GRECIAN SPOTLIGHT continued on page 14

He arrived in San Francisco on his name day, July 20, 1930 where he attended High School of Commerce at night while working during the day as a grocery clerk earning $8 a week. While singing with the Annunciation Church Choir in San Francisco, he met his future wife Anna, whom he married in 1938 and had two sons, John and Nick. A true San Franciscan, he was also a member of Holy Trinity Church.

Often, friends and family members of those affected by a loss are unsure how to act or what to say to support their grieving loved one during the holidays. Hospice professionals, who are experienced at helping people deal with grief and loss, offer some suggestions: Be supportive of the way the person chooses to handle the holidays. Some may wish to follow traditions; others may choose to avoid customs of the past and do something new. It’s okay to do things differently. Offer to help the person with decorating or holiday baking. Both tasks can be overwhelming for someone who is grieving. Offer to help with holiday shopping. Share catalogs or online shopping sites that may be helpful. Invite the person to join you or your family during the holidays. You might invite them to join you for a religious service or at a holiday meal where they are a guest. Ask the person if he or she is interested in volunteering with you during the holidays. Doing

Abroad, visited the San Francisco Bay Area on September 16-17, 2012. As part of his U.S. tour, the purpose of the visit was to meet the Greek American leadership and to hear their concerns about

I am also particularly proud of our cooperation with the Getty. As you might know, the Getty is one of the few museums in the world which returned antiquities to Greece, and with whom we signed a Memorandum which gives us tremendous opportunities

of cooperation in various fields. Putting into effect this cooperation, we are preparing now a wonderful Byzantine exhibition, which will bring to LA 187 objects from various museums all over Greece, most of which have not being shown abroad before. The exhibition will take place in Spring 2014 at the Getty Villa and at the Getty Centre (manuscripts), and it covers not only the period of the Byzantine Empire, but also the transitional period before and after. It will not only concentrate on the religious life of that era, but it will also display objects from everyday life such as jewelry. Yesterday we discussed with the Getty team a series of different events before and around the exhibition, which will give us the opportunity to promote not only Greek culture, but also our tourism and our products. I am sure that it will make you feel very proud, and of course we will need your support and cooperation in these efforts. As you might know the Greek Government together with Unesco declared this year “Year of Constantine Cavafy and George Papanicolaou,” so I would love to discuss ideas for events related to them. Finally, we are planning a visit of the Chairman of Invest in Greece Agency in LA, which will give the chance to businessmen from California to explore investment opportunities in Greece. ■■■ Roz Halikis, the chairman of St. Katherine Greek Orthodox Church Foundation, and Angelo Revels, the Foundation President have announced the following: The St. Katherine Greek Orthodox Church Foundation awarded 7 merit scholarships on “Youth Sunday” following Divine Liturgy on September 9. Rev. Fr. Michael Courey presented the awards.The St. Katherine Foundation was started to establish an endowment in support of the church’s longterm goals and missions that are beyond the normal scope of the St. Katherine community.

A top priority is supporting the youth ministry. These scholarships were funded by six privately endowed scholarships and also from the general endowment of the Foundation. GREEK EDUCATORS MEET IN SAN FRANCISCO The Greek Orthodox Metropolis of San Francisco hosted a meeting of the Greek Language Educator’s from northern California on Sunday, October 7. The members of the Metropolis Greek Education and Culture Committee, along with representatives from eight schools, attended Divine Liturgy at the Annunciation Cathedral in San Francisco, CA, followed by an Artoklasia Service for the health and safekeeping of all the Metropolis Greek Language

Schools. Following the services, the attendees gathered for a reception and luncheon with His Eminence Metropolitan Gerasimos, Archimandrite Apostolos Koufallakis – Chancellor, Father Stephen Kyriacou – Dean, Annunciation Cathedral and over 25 teachers from various Greek Schools. Theodora Kounalakis, chair, presented an overview of the work of the Metropolis Committee on Greek Education and Culture

including: annual workshops for Greek Educators on Teaching Greek as a Foreign Language, the Greek Village Camp, the distribution of textbooks and resource materials from the Archdiocese, and their participation in several events including the celebration of the Three Hierarchs, Greek Independence Day, and OXI Day. Committee member Ioanna Lekkakou shared an informative presentation on the new development in teaching Modern Greek.

“There is a great need to support and expand the Greek language programs in all our parishes. This is an important educational opportunity that will benefit our children throughout their lives,” His Eminence Metropolitan Gerasimos of San Francisco remarked. “Today’s gathering adds a new level of commitment and excitement to the work of our parish Greek Schools. The Metropolis remains dedicated in its support of these efforts and looks forward to

continued collaboration for the benefit of both students and teachers.” Each of the parishes and schools represented offered a brief overview of their programs and shared ideas to strengthen the collective work of all the Greek Language schools in the Metropolis of San Francisco.
