Scouts BSA Troops 43 & 430 Of Bay Shore Remember And Honor
On Saturday, May 25, 2024, members of Scouts BSA Troop 43, Chartered by AMVETS Post 76 of Bay Shore spent the morning with thousands of other volunteers at Calverton National Cemetery placing flags for our service men
and women. On Monday, May 27, 2024, Troops 43 & 430 started their day assisting with the Bay Shore Memorial Day Ceremony at the Bay Shore Memorial near the Train Station. They then marched in
the Bay Shore Memorial Day Parade with their charter organization and all the other volunteers and groups to honor our service men and women who paid the ultimate sacrifice.

Flotteron and Samuel Gonzalez recognized the Bay Shore Marauders and Coaches Parham and Dortonne on a most impressive season, leaving the Long Island Class AAA Boys Basketball Championship on March 9th at Farmingdale College against the Baldwin Bruins with another win – making the Long Island Champions! Flotteron recognized this year’s honoree Ronnie Allen for his life-long commitment in promoting Irish culture and for his more than 35 years of dedication and commitment to St. Patrick’s Parish. For more than 50 years, he has encouraged Irish step and Ceili dancing, putting on concerts, and introducing many great Irish artists to our area.

For Warm Evenings
Lighter fare is more popular when the weather warms up, as many people don’t want to feel weighed down by their diet. Fish is a popular summertime meal for many reasons, not the least of which is that fish tends to be light but still flavorful. In addition, many meals featuring fish can be whipped up rather quickly. Such is the case with the following recipe for “Grilled Garlic Shrimp With a Fresh Heirloom Tomato Sauce” from Laurey Masterton’s “The Fresh Honey Cookbook” (Storey Publishing). Fresh and simple, this meal can be enjoyed as a change of pace at summer barbecues or simply as a light weeknight meal with the family.
Grilled Garlic Shrimp With A Fresh Heirloom Tomato Sauce
Serves 6w
For the marinated shrimp
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 garlic cloves, minced
36 large shrimp, peeled and deveined
12 6-inch wooden skewers
For the tomato sauce
3 pounds assorted large heirloom tomatoes
1 small sweet onion, minced
1 garlic clove, minced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon honey, preferably sourwood honey
1/4 cup fresh basil leaves, cut into thin strips (chiffonade is the formal name for this cut), plus more for garnish

Directions:
1. To marinate the shrimp, combine the olive oil, red wine vinegar and garlic in a large bowl. Stir to combine. Add the shrimp and allow to sit, covered, for 1 hour. Stir occasionally.
2. Prepare a medium fire in a charcoal or gas grill. Soak the skewers in water for at least 30 minutes to prevent them from burning.
3. To make the tomato sauce, bring a medium pot of water to a boil. Place one or two tomatoes at a time into the boiling water. Watch them and, as you see the skin split, remove with a slotted spoon and place in a bowl of cool water. At this point, it will be very easy to slip off the skins.
4. Cut the peeled tomatoes into a small dice. Put the cut tomatoes into a large bowl. Add the onion, garlic, salt, pepper, and honey. Stir gently to combine.
5. Skewer the shrimp, 3 per skewer. Grill the skewered shrimp for 1 to 2 minutes on each side, until they are pink. Sprinkle lightly with sea salt and a couple grinds of fresh pepper.
6. Just before serving, add the basil leaves to the tomato sauce. Taste and add more salt if necessary.
7. Ladle the tomato sauce onto a serving platter and arrange the skewers on top of the sauce. Garnish with more basil leaves and enjoy!

A Cold Beverage Ideal For Summer
Summer is a season synonymous with relaxation. Sitting poolside or relaxing on a patio with a cold beverage is a great way to escape the daily grind and make the most of a warm evening, and the following recipe for “Summer Cantaloupe” from Andrew Schloss’ “Homemade Liqueurs and Infused Spirits” (Storey Publishing) is tailor-made for summer nights.
Summer Cantaloupe
Makes about 1 quart
1 fifth (31/4 cups) 80-100 proof vodka
4 cups cantaloupe chunks
1 cup Simple Syrup (see below)
Finely grated zest of 2 lemons
Directions:
1. Muddle the vodka, cantaloupe and lemon zest with a wooden spoon in a half-gallon jar. Stir to moisten everything.
2. Seal the jar and put it in a cool, dark cabinet until the liquid smells and tastes strongly of melon, four to seven days.
3. Strain the mixture with a mesh strainer into a clean quart jar. Do not push on the solids to extract more liquid.
4. Stir in the Simple Syrup.
5. Seal and store in a cool, dark cabinet. Use within one year.
Simple Syrup
Makes 3 cups
2 1/4 cups water
21/4 cups granulated cane sugar
Directions:
Mix the water and sugar in a small saucepan until the sugar is all moistened. Bring to a boil over medium-high heat. Stir to make sure the sugar is completely dissolved, then remove from the heat and let cool. Refrigerate for up to three months.

Healthier Salad Makes Barbecues Better
WGreek Yogurt Potato Salad
Serves 6
2 pounds potatoes (Yukon Gold or red potatoes)
1/2 onion
6 eggs
1 cup plain Greek yogurt
4 tablespoons sour cream
1 tablespoon vinegar
2 tablespoons yellow mustard
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery seed
1/2 teaspoon dried dill weed or 1 teaspoon fresh
1/2 cup dill pickles, chopped
Paprika, for garnish (optional)
Parsley, for garnish (optional)

Al fresco dining offers a chance to spend even more time outdoors, and many people will attest that no outdoor gathering is complete without the requisite grilled fare and complementary sides that are staples of spring and summer dining. Potato salad is one such food that turns up regularly this time of year in many shapes and forms. Traditional potato salad is delicious, but it may not be so great for health-conscious individuals, as it’s typically swimming in mayonnaise. A lighter version featuring Greek yogurt in the dressing is ideal for those who want to eat healthy. Greek yogurt also adds gut-healthy live active cultures to the recipe, which may provide gastrointestinal benefits. Directions:
1. Peel and dice potatoes and onions. Put them and a teaspoon of salt in a pressure cooker and cover with an inch of water. Close valve. Set pressure cooker to high pressure. Set timer for 5 minutes, cook and quick release when it’s done. Drain potatoes. Cool until just warm. (If you don’t have a pressure cooker, boil potatoes in a pot of water on the stove until tender.)
2. Set eggs on a rack in the pressure cooker. Add 1/2 inch of water. Close valve, set to high pressure for 5 minutes. Cook for 5 minutes, quick release, and leave lid closed for 5 minutes. After 5 minutes, take lid off. Drain eggs and cover with ice water to stop the cooking process. Let sit in ice water bath for about 5 minutes, then peel eggs. (If you don’t have a pressure cooker, hard-boil eggs according to your favorite recipe.)
3. Add Greek yogurt, sour cream, mustard, vinegar, salt, pepper, celery seed, and dill weed to a large mixing bowl. Stir until smooth. You can taste test to see if you need to add ingredients.
4. Add cooled, diced potatoes, pickles and hard-boiled eggs. Gently stir until potatoes are coated with dressing. Adjust seasonings to taste. Refrigerate for at least 1 hour.
Notes: Yukon Gold or red potatoes hold their shape best in potato salad. White distilled vinegar is classic in potato salad, but you also can use cider vinegar, white wine vinegar or even lemon juice.

Islip Senior Advocate Schedule
Suffolk Legislator Tom Donnelly (D-Deer Park) is pleased to inform Islip residents about the local Suffolk County Office for the Aging Spring 2024 Senior Advocate Schedule. Senior advocates are County representatives who come out into the community and assist seniors with information gathering, completion of eligibility or recertification applications and referrals to appropriate community agencies.
“This is an excellent chance for senior citizens to get the assistance and information they need by connecting with the County’s senior advocates right in their own communities,” said Legislator Donnelly. “I hope all those interested in the services that the Suffolk County Office for the Aging provides will take advantage of this opportunity.”

Long Island Children’s Museum (LICM) Unveils New Community Mural
The Long Island Children's Museum (LICM) unveiled a brandnew 1,100-sq-ft public art piece that will serve as the fresh new "face" of the Museum for current and future generations of Long Islanders. Created by artist Viktoriya Basina along with Long Island children during a series of "paint parties" at the Museum over the course of three months, the collaborative process included community conversations with visitors to capture images and themes that reflect the Museum, its audience and Long Island. Feedback was shared during design review workshops before finally the process of painting the panels that make up the mural took place. The installation itself took five days.
Museum president Erika S. Floreska said, "We asked people to share their thoughts on what community means to them
and that's what we wanted the mural to convey. We're incredibly happy with the results of this collaborative community effort."

The public art piece is part of LICM's Community Voices Take Shape grant supported by the National Endowment for the Arts, with additional support from Robert & Toni Bader Charitable Foundation.

(NAPSI)-A recent online survey by Toluna/Greenfield Online, Inc. found that while most consumers try to protect their identity, many admitted to risky behavior that could put them at risk for ID theft. To help educate and protect consumers, world-renowned fraud prevention expert Frank Abagnale offers these tips:
• Shop smart: Limit the credit cards you carry.
•Keep receipts and check

your statements: Examine every charge on your statement before paying. Your receipts provide a great cross-reference check and guard against suspicious activity. You have 30 days from the date of your statement to notify your financial institution of any discrepancies; otherwise, you can be liable for any purchases.
• Protect your computer when online shopping: Make
sure your security patch and anti-virus software are updated regularly. Consider technology to protect against potential viruses.
• Watch where you shop online: Look for the lock icon on the site’s browser status bar, a sign that that site is safe. If you have never heard of a website before, see if it has security precautions in place and isn’t a fake site set up by identity thieves.
•Don’t write checks:
Give cash or gift cards. The information on a check— name, signature, address— can be used to steal identity.
•Strengthen passwords: Use passwords with at least eight characters, including a combination of letters, numbers and symbols that are easy for you to remember but difficult for predators to guess.
• Watch your wallet: Be careful at parties, restaurants, fitness clubs,
shopping carts and your car.
• Don’t take the bait on phishing scams: Also, beware of shoulder surfing (when a thief looks over your shoulder while you’re at an ATM, either directly or via a camera).
