It is an exciting time at the Mercy Soup Kitchen of Wyandanch as it is preparing to launch its new and expanded post Covid operation.

Located in the basement of Trinity Lutheran Church at 17 South 20th Street, the Kitchen served its first meal to hungry people in 1980 and currently serves an average of 108 people per day.

During the pandemic, however, Kitchen procedures had to be modified in order to provide hot, nourishing meals safely and continuously to those in need.

Indoor sit-down dining was discontinued and only take-out dining was available.

But today the Kitchen is posing for a postCovid reopening – a reorganizational rebirth of sorts – where Kitchen procedures can finally return to again offering guests dignified, indoor sit-down dining.

garlic cloves, minced (about 2 teaspoons)

medium zucchini, diced (7 to 8 cups)

cups chicken broth

plum tomatoes, peeled, seeded and chopped, (about 1 cup)

1⁄2

cup tomato puree

tablespoons tarragon or cider vinegar

tablespoons minced fresh basil

1⁄2

teaspoon salt, or to taste

1⁄4

teaspoon freshly ground black pepper, or to taste

Cook the bacon in a soup pot over medium heat until the fat is released and the bacon bits are crisp, 6 to 8 minutes.

Add the onions and garlic. Cook, stirring frequently, until the onions are a light golden brown, 8 to 10 minutes.

Add the zucchini, cover the pot and cook until the zucchini starts to become translucent, about 5 minutes.

Add the broth, tomatoes, tomato puree, and vinegar. Bring the soup to a simmer and cook until the vegetables are very tender and the soup has developed a good flavor, 15 to 20 minutes.

Add the basil to the soup, and season with salt and pepper. Serve in heated bowls, garnished with cheddar rusks.

The warm, therapeutic effects of a delicious bowl of soup are hard to dismiss, and may sometimes work as well as the best medicines available. While zucchini may be known as a summer vegetable, this popular squash is at home in a tasty soup any time of year. Top with giant, cheesy croutons for a filling and scrumptious crowd-pleaser. This recipe for “Zucchini Soup with Cheddar Rusks” from “The Culinary Institute of America Book of Soups” (Lebhar-Friedman Books) by The Culinary Institute of America makes for a warming winter meal.

Makes 8 8 slices French or Italian bread (1⁄2-inch thick) 1 cup grated cheddar cheese

Directions Toast the bread until golden brown on both sides.

Preheat the broiler. Scatter the cheese evenly over the toasted bread and broil until the cheese bubbles and begins to brown.

Fundraiser To Support East Islip St. Patrick’s Day Parade

The Local Hibernians Inc. are pleased to announce that the annual John P. Reilly East Islip St. Patrick’s Day Parade will be held on Sunday, March 3, 2024, led by the parade’s Grand Marshal, Shawn O’Neill, and the Ladies Aide to the Grand Marshal, Mary Phalen. The parade will step off at 2:00 pm from the East Islip Public Library and travel west to the grandstand at St. Mary’s RC Church.

A fundraiser to support the parade will be held on Sunday, February 4, 2024, from 12 PM-5 PM at Harp & Hound in Islip.

A $20 donation at the door includes assorted appetizers, live music by J&D Acoustics, and a cash bar. There will also be GRAND MARSHAL SHAWN O’NEILL raffle baskets and a 50/50 raffle.

Rugby-type rules became preferential among players and spectators.

Walter Camp, known affectionately as the “Father of American Football,” transformed the rugbystyle game into the one that resembles American football today. Camp brought two key innovations to the game.

The opening “scrummage” was eliminated, and a rule was introduced that required a team to give up the ball after failing to advance down the field a specific yardage.

Camp also developed the quarterback position, lines of scrimmage, and the scoring scale used in football today.

Early games were controversial because of the high rate of injury.

Even President Theodore Roosevelt stepped in to ask

collegiate teams to revise regulations to make the game less brutal. The committee overseeing the rules would later become known as the National Collegiate Athletic Association.

Thanks largely in part to the popularity of college football, professional football began to gain traction with

the public. The American Professional Football Association was formed in 1920. That league would later become the National Football League. The first televised NFL game occurred in 1939. Eventually, American football’s popularity would explode.

Long Island State Park Dashboard Permits For 2024 Season The New York State Office of Parks, Recreation and Historic Preservation is pleased to announce the following dashboard permits are available for purchase now through March 31, 2024, for the upcoming 2024 season: 4x4 Fishing, 4x4 Surfing, Stargazing, Night/Sport Fishing, Camp Hero Fishing, Nighttime Photography, and Regional SCUBA-Diving. Permits can only be purchased online, there will be no in-person sales. All permits will be mailed to the applicant once processed.

A valid email is required, and credit card is required for payment. Orders will be processed in the order received and permit(s) will be mailed to the applicant once processed. Please allow 10 – 14 business days for your permit(s) to arrive in the mail.

External Diploma Program The National External Diploma Program offers adults 21 and over, the opportunity to receive credit for their life experiences, and earn a high school equivalency diploma without the challenge of taking lengthy timed examinations.

NEDP, is a competency based program for students who are unable to attend classes or who prefer to work at home. Successful candidates

for NEDP include former ESL students, students who have been out of school for prolonged periods of time, or students who fare better without the structure of tests. This program is an alternative to other programs.

STUDENT-ATHLETES ATTEND CONFERENCE - Bay Shore student-athletes attended the 2nd Annual Section XI Nick DeCillis “Speak Up for Change” Student Athlete Leadership Conference. The objective of this year’s leadership conference was to encourage our student-athlete leaders to find their voices to help others, not only on their teams but in everyday life. The program consisted of motivational speakers, student table discussions, and group activities and covered various topics including mental wellness, sportsmanship, leadership, and social media. In addition, two Bay Shore graduates participated in a panel to speak about their experience in college.
