RECIPE OF THE WEEK: Lamb Chop Lollipops with Jalapeño Mustard
Father’s
Day is an opportunity to shower Dad with extra love and attention. Special outings and heartfelt gifts typically are part of the celebration. Some children may want to go above and beyond by whipping up a meal that Dad is sure to enjoy — particularly a father who spends his fair share of time by the stove or in front of the grill. Individuals may be quick to think steaks or chicken when considering grilled fare, and these foods certainly can be delicious offerings. However, juicy and flavorful lamb also tastes great when cooked on the grill. This recipe for “Lamb Chop Lollipops with Jalapeño Mustard” from “Jon Bonnell’s Texas Favorites” (Gibbs Smith) can be eaten by hand right off the bone when tailgating with Dad or served more traditionally at home with the family.
Serves 6-8
2 frenched* racks of lamb (8 bones each)
1 sprig fresh rosemary
2 tablespoons Chinese hot mustard
3 cloves garlic, minced
11⁄2 teaspoons kosher salt
1⁄2 teaspoon freshly ground black pepper
2 tablespoons olive oil
DIRECTIONS:
Rinse the racks of lamb lightly under cold water. Pat dry with paper towels, then cut into individual chops by cutting between the bones. Strip the rosemary leaves from the stem and chop; discard the stem. Combine the hot mustard with the garlic, salt, pepper, oil, and half of the chopped rosemary. Rub the lamb chops with this mixture and let them

marinate in the fridge for 2 hours before grilling. Grill or broil the lamb chops quickly to desired doneness. Serve hot with Jalapeño Mustard as a dipping sauce.
For the Jalapeño Mustard: Strip the rosemary leaves from the stem and chop; discard the stem. Combine the rosemary with the Dijon mustard, jalapeño, and lemon juice.
Musicians Thrive In Seaford’s Nationally Recognized Program
For the fifth straight year, the Seaford School District has earned national accolades for its music program. It was among 935 school districts nationwide to be recognized as one of the Best Communities for Music Education by the NAMM Foundation.
Coordinator for Fine and Applied Arts Dr. Patrick Kennedy said the application process for the award is extensive as it analyzes every aspect of the music program from the number of certified teachers to student enrollment to the content of music education classes. The work is worth it, he said, to get the deserved recognition for Seaford’s program.
“We put a big emphasis on the arts and on our music program,” he said. “This is validation for all of the hard work that everyone puts in.”
Dr. Kennedy explained that the district is filled with passionate music teachers
and students, whose work often stretches well beyond school hours. Seaford is also a community that values the arts, with a supportive board of education and administration.
General music instruction begins in kindergarten, and students can join the band and chorus in fourth grade. Students looking to hone their craft beyond concert groups can join other ensembles. The elementary schools offer a jazz band, and the middle school has jazz band, a woodwind ensemble and musical theater. The offerings are even more extensive at the high school with vocal ensembles such as Sweet Adelines, Treble Choir and Viking Voices, instrumental groups like chamber ensemble, jazz band and marching band, and the annual spring musical. There are also a variety of music electives including Advanced Placement Music Theory and guitar and
ukelele classes.
Dr. Kennedy said enrollment in the music program has grown steadily over the last few years. An
example, he noted, is that the sixth grade band at Seaford Middle School has about 100 students, more than half of the grade.
The Best Communities for Music Education Award, which has been presented for more than a quarter century, recognizes districts that demonstrate a high standard of excellence as well as a commitment to providing access to quality music education.
Harbor Day Brings School Community Together

Children enjoyed a comedy magic show, played sports with their parents and came together
for team competitions. Each grade level had time on the back fields, where they were joined by family members for relay races, tic-tac-toe basketball, kickball and soccer. In the gymnasium, the Human Board Game hosted by Academic Entertainment featured challenges that promoted
character building, teamwork and sportsmanship. There were hulahoop competitions, toilet paper mummies, dice-rolling games and more.
Students played bingo in their classrooms and danced to popular songs from the past few decades during lunch. Harbor Day was
organized in partnership with the PTA, which provided all students with bandanas.
“This day captures the true spirit of the Harbor – our ability to collaborate and have fun,”
Principal Jennifer Bisulca said. “It’s a team-building day for the whole school. It brings everyone together
before the end of the year.”
Ms. Bisulca added that Harbor Day fosters several of the Seaford Scholars traits such as being communicators, flexible, humorous and taking responsible risks.

Flag Day is commemorated each year in the United States on
How Flag Day Got Its Start
June 14. Though Flag Day is not an official federal holiday, the day remains
significant nonetheless, as it traces its origins all the way back to 1777.
The Second Continental Congress formally adopted the flag of the United States on June 14, 1777. That resolution noted certain characteristics of the new flag, including the alternating red and white stripes that remain part of the flag that is celebrated each June 14.
Flag Day is one of various notable events and holidays commemorated in June, a list that includes Father’s Day, Juneteenth and the summer solstice. That can make it easy for Flag Day to get lost in the proverbial shuffle, but the Farmer’s Almanac notes it is customary for the sitting president of the United States to encourage Americans to display the flag outside of their homes and businesses each June 14. The flag is flown from all public buildings on Flag Day, which the
Farmer’s Almanac reports is another rich tradition that dates back 1877 and the centennial of the flag’s adoption.
President Woodrow Wilson issued a presidential proclamation on June 14, 1916, that designated the day as Flag Day going forward. Thirtythree years after President Wilson’s proclamation, the U.S. Congress officially established June 14 as
National Flag Day.
One notable tidbit Americans can consider this Flag Day is the connection between the flag and seamstress Betsy Ross. Many American schoolchildren were taught that Ms. Ross designed and sewed the first American flag, but historians have since discredited that legend. The Farmer’s Almanac notes that many historians now believe
George Washington already had a design for a flag with 13 red and white alternating stripes and 13 six-pointed stars set in a circle when he visited Ms. Ross in Philadelphia. And while historians do not doubt that Ms. Ross sewed a flag reflecting the design George Washington brought with him when visiting the seamstress, it’s hard to confirm if she in fact sewed the first flag.
Seaford Manor Students Celebrate Their Loved Ones
An elementary school staple for generations, Special Person’s Day always brings joy to students and their loved ones. That was certainly the case at Seaford Manor Elementary School on May 9 as the springtime tradition continued.
Each grade level had a designated time for students to welcome their special guests. Children and adults gathered in the gymnasium for story and song. Students in grades K-2 sang “Skidamarink A Dink A Dink” and “You Are My Sunshine,” while third, fourth and fifth graders performed “Proud to Be an American” and “You Can Count on Me.”
After the music, children found their special guests in the audience to read books together. The visitors included parents, grandparents, aunts, uncles and siblings.
“We were so happy to have our special guests join us at the Manor,” Principal Joann Krudis said. “They are role models who make such a difference in the lives of our students. They are people our children look up, learn from and love deeply.”

2025 Relay For Life Cancer Walk/Events Scheduled On Long Island
Relay For Life is more than a walk, it's a community consisting of survivors, caregivers, thrivers, volunteers, teams, local businesses, and community organizations all to fund the mission to end cancer as we know it, for everyone.
