COLLEGE AND CAREER DECISION DAY AT AMITYVILLE MEMORIAL HS
Seniors at Amityville Memorial High School recently celebrated their accomplishments during the College and Career Decision Day. Many of the students wore gear from their future colleges and they each took turns to discuss their post high school plans. Principal Dr. John Cardone addressed the students and commended them for their successes, both in and outside of the classroom. Additionally, students crafted and signed a decorative poster to recognize the Class of 2025. Photo courtesy of Amityville Union Free School District

RECIPE OF THE WEEK: Lamb Chop Lollipops with Jalapeño Mustard
Father’s
Day is an opportunity to shower Dad with extra love and attention. Special outings and heartfelt gifts typically are part of the celebration. Some children may want to go above and beyond by whipping up a meal that Dad is sure to enjoy — particularly a father who spends his fair share of time by the stove or in front of the grill. Individuals may be quick to think steaks or chicken when considering grilled fare, and these foods certainly can be delicious offerings. However, juicy and flavorful lamb also tastes great when cooked on the grill. This recipe for “Lamb Chop Lollipops with Jalapeño Mustard” from “Jon Bonnell’s Texas Favorites” (Gibbs Smith) can be eaten by hand right off the bone when tailgating with Dad or served more traditionally at home with the family.
Serves 6-8
2 frenched* racks of lamb (8 bones each)
1 sprig fresh rosemary
2 tablespoons Chinese hot mustard
3 cloves garlic, minced
11⁄2 teaspoons kosher salt
1⁄2 teaspoon freshly ground black pepper
2 tablespoons olive oil
DIRECTIONS:
Rinse the racks of lamb lightly under cold water.
Pat dry with paper towels, then cut into individual chops by cutting between the bones. Strip the rosemary leaves from the stem and chop; discard the stem. Combine the hot mustard with the garlic, salt, pepper, oil, and half of the chopped rosemary. Rub the lamb chops with this mixture and let them

marinate in the fridge for 2 hours before grilling. Grill or broil the lamb chops quickly to desired doneness. Serve hot with Jalapeño Mustard as a dipping sauce.
For the Jalapeño Mustard: Strip the rosemary leaves from the stem and chop; discard the stem. Combine the rosemary with the Dijon mustard, jalapeño, and lemon juice.

The Value Of Repeat Customers
Small business owners no doubt recognize the value of repeat customers, but few may recognize just how valuable such customers can be to their bottom lines. A study from researchers at Harvard Business School found that a customer’s eighth purchase was an average of 80 percent higher than his or her first purchase. In addition, a survey from the strategic planning, marketing and sales consultants
of these locations, please call the Suffolk County Office for the Aging at (631) 853-8200.
“For more than three decades, the Suffolk County Office for the Aging has been providing full and troublefree access to critical services,” Donnelly said. “I am glad to see their great professional community outreach program continue and hope that every senior resident will make full use of it.”
Altfeld, Inc. found that the probability of selling to an existing customer is between 60 and 70 percent, while that probability shrinks to as low as 5 percent for new customers. Customer retention strategies like offering superior customer service and seeking input from customers can help small businesses generate more repeat customers, which can greatly improve their chances for long-term success.

Leisure activities may be widely viewed as fun ways to fill up free time, but the benefits of leisure activities extend beyond beating boredom. An analysis published in the journal BBA Molecular Basis of Disease found that leisure activities have a positive impact on cognitive function and dementia. The analysis, conducted by researchers with the Aging Research Center in Stockholm who examined various studies regarding the relationship between certain activities and cognitive function, defined leisure activity as the voluntary use of free time for activities outside the home. After retirement, leisure time constitutes a large part of many retirees’ lives, and finding ways to fill that time is more beneficial than merely avoiding boredom. The researchers behind the study concluded that the existing research is insufficient to draw any firm conclusions regarding the effects of certain types of leisure activities on the risk for dementia and cognitive decline, though they did note that multi-domain cognitive training has the potential to improve cognitive function in healthy older adults and slow decline in affected individuals. A multidomain approach to cognitive training involves memory, reasoning, problemsolving, and map reading, among other activities. Aging adults who embrace activities that require the use of such skills may find that they’re not only finding stimulating ways to fill their free time, but increasing their chances of longterm cognitive health as well.
