Lindenhurst Knights Of Columbus Host Successful Fundraiser For St. Jude’s At Pino’s

The spirit of giving was alive and well in the Village of Lindenhurst as the Our Lady of Perpetual Help (O.L.P.H.) Knights of Columbus Council held its second annual fundraiser for St. Jude Children’s Research Hospital.

The event, hosted

at Pino’s restaurant in the heart of downtown Lindenhurst, was chaired by none other than Mayor Michael Lavorata. It drew strong support from community leaders, including the Village Board, with one of the large benefactors,

Village Administrator Joseph Barone, and local business owner Anthony Cuccinella, proprietor of Pino’s, who made a personal donation of $850 to the cause.

“Every time we hold a fundraiser in our downtown, the generosity

of this community shines through,” said Patrick Corcoran, a Grand Knight. “Lindenhurst always shows up.”

The evening was filled with good food, warm company, and a shared commitment to supporting the children

and families who rely on St. Jude’s life-saving research and care. Events like these are part of a growing tradition in Lindenhurst, where civic leadership and local businesses unite to make a difference.

The O.L.P.H. Knights

of Columbus thanked everyone who attended and contributed, and expressed appreciation for the continued partnership with downtown establishments like Pino’s, which help make these charitable efforts possible.

RECIPE OF THE WEEK: Fourth Of July Cookie Cups

Makes 24

2⁄3 cup almonds

1⁄2 cup packed light brown sugar

2 1⁄2 cups all-purpose flour, spooned and leveled, plus more for the work surface

1⁄2 teaspoon baking powder

1⁄2 teaspoon kosher salt

DIRECTIONS:

1. To make the cookie cups: preheat the oven to 350 F. Spray a 24-count mini muffin pan with nonstick cooking spray and set aside.

2. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside.

3. In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes, or until well combined.

4. Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed.

5. Mix in the dry ingredients until just combined.

6. Evenly distribute the cookie dough among all 24 cups in the mini muffin pan, a little more than 1 tablespoon of cookie dough per cup. Press each ball of cookie dough into the cups and smooth it out.

1⁄4 teaspoon ground cinnamon

1 cup unsalted butter, at room temperature

1 large egg

1 teaspoon pure vanilla extract

1 tablespoon confectioners’ sugar

1 12-ounce jar raspberry jam

7. Bake for 11 to 13 minutes, or until the edges of the cookie cups are lightly browned and the tops are set.

8. Remove from the oven, and make an indentation in each cookie using the back of a measuring spoon. Allow to cool in the muffin pan, then carefully remove from the pan and set aside.

9. To make the vanilla buttercream frosting: In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter for 1 to 2 minutes until smooth. Add the powdered sugar, 1/2 cup at a time, mixing in each addition until well combined.

10. Add the heavy whipping cream and vanilla extract, and continue mixing until fully combined, stopping to scrape down the sides of the bowl as needed. Pipe the frosting into the cooled cookie cups and top with the sprinkles.

12. Store the cookie cups in an airtight container at room temperature or in the refrigerator for up to 4 days.

Quirky, Fun-Filled Things To Do This Summer

Long Island is one of the best places in the world to be in the summer. From the beaches to the restaurants, and the landmarks to the parks, Long Island has something for every resident and visitor. Here are five things you should consider adding to your bucket list for June – August.

1. Unusual Attractions & Roadside Wonders

Long Island has great, quirky landmarks. Have you been to the iconic Big Duck in Flanders? It’s a giant duck-shaped building that’s both a historic site and a gift shop and opened in 1931. In Montauk, the Montauk Point Lighthouse offers breathtaking ocean views. You should also make time to visit the Long Island Aquarium in Riverhead, where you can dive with sharks (I’m happy to be a spectator for this activity).

2. Festivals & Fairs

Summer is festival season on Long Island. The Empire State Fair returns to Nassau Coliseum from June 27 to July 13, featuring rides, live entertainment, and delicious fair food. For a cultural experience, check out the Long Island Celtic Festival & Highland Games at Old Westbury Gardens on August 23. It’s a celebration of Scottish heritage with music, dance, and traditional games.

3. Offbeat Eats & Sweet Treats

If satisfying your sweet tooth is on your list this summer, head over to BonBon, a Swedish candy shop in Sag Harbor. They have colorful displays of your favorite confections. Longing for some nostalgia? Make dinner reservations at Swifty’s. They are located at The Hedges Inn in East Hampton and serve classic dishes in a charming setting.

4. Nature & Wellness Escapes

If you want to reconnect with nature, make plans to visit the North Fork’s beaches and vineyards. Wölffer Estate Vineyard in Sagaponack offers wine tastings at their beautiful vineyards. You can also plan a wellness retreat at Naturopathica Spa in Bridgehampton.

5. Family-Friendly Fun

If you and your family are looking to cool off, enjoy a day at Splish Splash Water Park in Calverton. Alternatively, there is the Long Island FunFest which

runs from June 12 to 22 and has carnival rides, games, and live performances.

If you run a business on Long Island and want to thank your loyal customers while introducing new people to your business, here are three suggestions:

1. Host Themed Events: It’s easy to organize summerthemed events or workshops that align with your business (a hardware store hosting DIY projects, a restaurant having cooking classes).

2. Collaborate Locally: Think about partnering with neighboring businesses to create joint promotions or packages. You can introduce your customers to their business and vice-versa. With the right packages or promotions, it can be a great “win-win” for everyone.

3. Use Social Media to Get and Stay Connected: With platforms like Instagram and Facebook, you can showcase your summer specials, share behindthe-scenes content, and engage with your customers through interactive posts and stories. Make them fun and memorable too!

With so many fun and interesting things to do on Long Island in June, July, and August, make sure you plan ahead to take advantage of all the things you want to do. Then you can include those spur-of-the-moment day trips to round out a perfect summer!

Did You Know?

July 4th is a day when Americans celebrate their independence, but it's also a day to commemorate two men who played vital roles in procuring that independence. Both John Adams, the second President of the United States, and his successor Thomas Jefferson passed away on July 4, 1826. The two men had an interesting relationship that became increasingly complex as the nation they helped to found developed. According to History.com, Adams and Jefferson were confidantes in the 1780s, but as time wore on, each man developed a different view of what the United States government should be, creating a rift in their relationship that was only widened by the 1800 presidential election. The men ran against each other in that election, which is still considered one of the more contentious elections in American history. Jefferson ultimately claimed victory, a result so unnerving to Adams that he left Washington, D.C. prior to Jefferson's inauguration. The two men would ultimately reconcile, exchanging more than 150 letters before dying within hours of one another on Independence Day in 1826.

Many people are eager for Independence Day celebrations in early summer. There is much to be excited about, as festivities often begin in the afternoon with barbecues and pool parties, and commence late at night after fireworks shows that light up the night sky. Still, not everyone enjoys the extra noise and busy nature of July 4th parties, particularly furry members of the family. Animal control services often report an increase in

Prepare Pets For Fourth Of July Festivities

lost animals between July 4th and July 6th. That’s because the excitement of the holiday puts pets out of their comfort zones. While pet owners need not cancel their July 4th plans, they should take heed of the many ways to keep their pets safe during the festivities.

Update identification

Be sure prior to any July 4th events that pets are wearing collars with current identification information. If an address

or phone number has changed since the last time you updated microchip records, be sure to check the account is current.

Be careful with alcoholic drinks

Party hosts typically serve beer, wine and cocktails. Alcoholic beverages have the potential to poison pets, says the ASPCA. Animals can become very intoxicated, severely depressed or go into comas if they drink alcohol. Keep spirited drinks well out of reach.

Check with the vet

Many pets are prone to anxiety from loud noises, such as thunderstorms and fireworks, and lots of commotion — something that occurs in spades come July 4th. Some veterinarians recommend a small course of antianxiety medication or a sedative to help pets cope

The American Academy of Dermatology recommends that parents avoid exposing babies younger than six months to the sun's rays. Infants should be kept in the shade as much as possible and dressed in lightweight and long sleeves, pants, a wide-brimmed hat, and sunglasses. The AAD also notes, sunscreen use should be avoided in babies younger than six months. Children six months and older can use a broad-spectrum, water-resistant sunscreen with a sunprotection factor (SPF) of 30 or higher. These sunscreens should be applied to all areas that are not covered by clothing, and reapplied approximately every two hours (or as often as the product label indicates).

with the stimuli.

Create a quiet space

Allow pets to ride out the day in their comfortable, quiet and cozy retreats. If necessary, create a space in an interior room. Cover the pet crate with a blanket and offer favorite toys or bedding to create a soothing environment.

Place notes on doors and gates

While it’s best to keep pets in a locked room away from the fray, some pets like to socialize with guests and are not bothered by noises. However, alert guests with notes posted on doors and fence gates to check to make sure pets are not trying to escape behind them. All doors should be closed firmly when entering or exiting.

Pick up debris

Firework debris can rain down on properties even if

you were not shooting off the fireworks. Curious pets may pick it up or eat it, which runs the risk of an upset stomach or even an intestinal blockage. Check your yard before letting pets out to play.

Keep an eye on the grill

Pets can be opportunists,

and those burgers and chicken drumsticks smell delicious to pets. Pets that get too close to the grill can become injured. And if pets eat leftovers, they may end up with digestive distress or even be poisoned by foods that are toxic to cats and dogs.

New York Blood Center Issues Urgent Call For Donors As Blood Supply Drops 20% Ahead Of Trauma Season

Two-Day Supply Of Type O Blood Raises Concerns As Summer Surge Approaches

New York Blood Center (NYBC) has issued an urgent call for blood donations, especially from those with types O+ and O- blood. The current supply of O- blood, the universal blood type used in emergencies, has dropped to a critically low two-day level, and overall collections are nearly 20% below hospital demand. NYBC expects to collect only about 6,500 donations this week, falling approximately 1,600 donations short of what is needed to maintain a safe and stable blood supply in New York.

Spring travel, school breaks, and packed calendars have kept regular donors away—

leaving donation levels dangerously low at a time when they should be ramping up. Each year, more than 56,000 traumas are reported in New York State, most occurring between May and September when accidents, car crashes, and violent injuries rise dramatically. Blood transfusions are often needed to treat traumas, and a spike in traumatic accidents can cause a strain on the blood supply.

Type O+ is the most common blood type, representing nearly 40% of the U.S. population. Type O- is the universal blood type and is commonly used in emergency settings. A shortage of both types,

both locally and nationally, poses serious concerns for our healthcare system, and the need for donors is critical.

“Spring can be an exciting season with warmer weather on the way and fun holiday celebrations, but it’s also a critical time of year for the blood supply,” said Andrea Cefarelli, Senior Vice President at New York Blood Center. “As we start to build our inventory ahead of the traumaheavy summer season, the need is more urgent than ever. We’re calling on our community, especially type O donors, to roll up their sleeves and make a donation today. Your blood donation could be the

The foods a person eats before attempting to donate blood could affect whether or not he or she is allowed to donate. According to the American Red Cross, its staff members routinely check the level of hemoglobin in donors’ blood and platelets before they accept donations. Hemoglobin is a protein in the body that contains iron and gives blood its distinctive red color. Hemoglobin plays a

Supporting Local Businesses

Consumers who want to support local businesses should know that positive product reviews can be a great and effective way to do just that. According to Business2Community.com, 88 percent of consumers trust online reviews as much as personal recommendations. In addition, customers are likely to spend 31 percent more on a business with “excellent” reviews, while 72 percent of consumers say that positive reviews make them trust local businesses more. The 2018 ReviewTrackers Online

Reviews Stats report found that star ratings affect consumer behavior, as 80 percent of consumers say they trust 4-, 4.5and 5-star ratings the most. The good news for consumers is that product reviews need not be long to be effective. ReviewTrackers notes that the average review is now roughly the size of a tweet and has gotten 65 percent shorter since 2010. That means it’s simple, quick and effective to support local businesses via online reviews of their products.

Donating Blood

vital role in human health, carrying oxygen from the lungs to nourish all of the tissues in the body. Hemoglobin levels are checked using fingersticks, and if hemoglobin levels are low, then donors will

be asked to wait to donate until their levels return to normal. So what does food have to do with hemoglobin? Iron is a part of hemoglobin and found in many of the foods a person eats. Iron helps people maintain their strength and energy, and it’s also necessary to help the body make new blood cells to replace the ones that are lost through blood donations. The Red Cross encourages prospective donors to eat healthy foods that are rich in iron and high in vitamin C, as doing so can increase their chances of being accepted as blood donors and can aid in their recoveries after donating.
