    FabFoodLI is ran by Sheena Colon, a wife, mother, certified growth coach and social media content creator who loves sharing fabulous culinary experiences. From fine dining, brunch spots to mom-and-pop restaurants, she has been on an exploration of the Long Island food scene, and her mission is to share as many fabulous food-finds and the hidden gems on Long Island to her followers.
She grew up in Huntington and eventually landed a job as a teenager in Huntington Village. During her time there, she lived for her lunch breaks, making each one an adventure– visiting restaurants like Little Vincent’s, Oaxaca, and places like Meehan’s. Through the years she found herself trying different restaurants and snapping pictures of what she ate along the way.
    
    Her husband would ultimately pivot her decision to make something out of her compilation of photographs that have sat in her camera roll, undiscovered. “When I was dating my husband, he noticed my habit of taking pictures of my food at dinner,” said Sheena. “He suggested that if I was going to insist my phone or camera eat first, that at the very least I should do something with all these food pictures.”
With a newfound revelation, she made the decision to start FabFoodLI on Instagram in 2020, although she had no idea about the foodie community yet or what being an influencer was at the time. Her page has seen much success and she feels the best part of what she does is the connections she’s made with business owners. “I truly love when someone tells me that they came to my page for a date night idea or where to get brunch next,” Sheena said. “Running FabFoodLI has opened doors to so many other opportunities and connections that I could not have ever imagined.     Steven and Lindsey Surico are the faces behind DrinkLongIslandNY. Steven was born and raised on Long Island, and Lindsey not too far away in New Jersey. Both currently Long Island Locals now, the two met in California, where they both lived at the time. Lindsey was amazed by all that Long Island had to offer, the beautiful waterfront bars, unique restaurants, and countless vineyards sprawling up and down the North Fork. “We found ourselves traveling all over the island each weekend visiting as many places as we could,” said Steven. “After a visit to Del Vino Vineyard in Northport, we came up with the idea to create an Instagram account to show all our fellow Long Islander's the best spots to enjoy a drink, along with any places we truly enjoy…and just like that, @drinklongislandny was born.”
“Giving back to the community was always important to us,” they said. “Many of our posts inform our followers of specials that restaurants and bars are running, whether it be happy hours, weekly specials, holiday deals, or events. Our goal is to help save Long Islander's a buck while they still have a great experience.” Additionally, the page frequently runs contests, where followers can win gift cards, tickets to events, and merchandise!               Supervisor Joseph Saladino and the Town Board recently announced that the Town of Oyster Bay will waive all fees to encourage restaurants to offer outdoor dining opportunities throughout 2024. Prior to the global pandemic, outdoor dining was limited and required establishments to pay fees and obtain certain approvals from the Department of Planning and Development. That is once again not necessary for 2024.
Supervisor Saladino said, “We’ve cut red tape and eliminated fees to encourage restaurants to offer outdoor dining throughout 2024. Street-side dining is a great way for restaurants to bring the food and ambiance closer to potential customers walking by, which can inspire more spur-of-the-moment walk-ins and support our downtown businesses.”
“Outdoor dining has become a preferred choice for many residents seeking a unique and refreshing experience in their own downtown. We’re happy to keep this trend going while supporting local businesses that invested in outside tents, heaters and covers over the past few years so that customers can enjoy the fresh air and the outdoors while dining locally,” added Town Clerk Richard LaMarca.
    
    
              NassauCounty Legislature Deputy Minority Leader Arnold W. Drucker (D - Plainview) is partnering with the Nassau County Police Department’s Office of Community Affairs and Nassau County’s Department of Traffic Safety to provide free Child Car Seat Safety Checks at the Syosset Public Library from 9 a.m. – noon on Wednesday, May 29. Certified technicians will apply their expertise toward ensuring that car seats are properly installed and providing optimal protection. Residents with children who use car seats or booster seats are encouraged to have their car seats professionally checked.
“Time spent with my grandchildren is one of the most precious gifts in my life, and I want to make sure that I am doing everything I can to keep them as safe and comfortable as possible,” Deputy Minority Leader Drucker said. “If you regularly have the privilege of transporting a youngster who uses a car seat, I encourage you to make an appointment and ensure that it is installed properly for maximum safety.”

There may be no better way to start Mother’s Day than serving mom breakfast in bed! If she loves a traditional hearty morning meal, this recipe for “Mixed Berry French Toast” courtesy of Taste of Home (tasteofhome.com) is sure to please.
Directions:
Whisk together the first 6 ingredients. Place bread cubes in a 13 x 9-inch or 3-quart baking dish coated with cooking spray. Pour egg mixture over top. Cover and refrigerate for 8 hours or overnight.
Preheat oven to 350 F. Remove berries from freezer and French toast from refrigerator and let stand while oven heats. Bake French toast, covered, 30 minutes.
    
    6 large eggs
1 3⁄4 cups fat-free milk
1 teaspoon sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1⁄4 teaspoon salt
1 loaf (1 pound) French bread, cubed
1 package (12 ounces) frozen unsweetened mixed berries
2 tablespoons cold butter
1⁄3 cup packed brown sugar
Confectioners’ sugar and maple syrup (optional)
    
    In a small bowl, cut butter into brown sugar until crumbly. Top French toast with berries; sprinkle with brown sugar mixture. Bake, uncovered, until a knife inserted in the center comes out clean, 15 to 20 minutes.               It’sa real “dog day afternoon”! The Long Island Kennel Club welcomes families and their fur children to the Long Island Island Kennel Club Show on Sunday, May 19, from 9 a.m. - 4 p.m. at the beautiful Planting Fields Arboretum in Oyster Bay. This year’s show follows the world-famous Westminster Kennel Club Dog Show earlier in the week.
The show will celebrate everything canine, from impeccable show dogs and trick-dog demonstrations to doggie dock diving and an agility obstacle course. Plus, fun-filled events and attractions make this event a treat for everyone who attends! Read on for a list of happenings at this year's show!
• K-9 Police Dog Demonstration: On Sunday at 11 a.m., members of the NYPD Transit Bureau Canine Unit will show how their dogs take down perpetrators and respond to their handlers’ commands.

    This destination provides its visitors with a unique and wonderful opportunity to experience life in a recreated mid-19th-century American village. The 209-acre Village includes an assortment of homes, farms and businesses. Old Bethpage Village Restoration (OBVR) came into existence in 1963 when Nassau County acquired the Powell property, a 165-acre farm located on the Nassau-Suffolk border.     According to Wine Folly, when pairing wine with dessert or other foods, the secret is to think of wine as an ingredient that will add a new flavor profile. Generally speaking, when it comes to choosing the best wines for desserts, a sweet wine is preferable as the sweetness in the wine will match the sugar in the dessert, suggests the wine resource Vin Yang. Here are some additional pairing pointers.
• A darker dessert usually requires a darker wine, as the wine should have a similar intensity to the dessert.
• The wine should be sweeter than the food in most cases.
• The flavors in the wine should match the flavors in the food.
• Chocolate and caramel are best paired with sweet or fruity red wine, as dry wines may taste too bitter against chocolate due to the tannins in the wine and chocolate. Port, Sherry, Marsala, and Zinfandel are good options.
• Mild, buttery, or sweet vanilla desserts work best with white wines, including sparkling wines. Muscat, off-dry Rieslings, and Prosecco are some ideas.
• Keep in mind that very sweet desserts or those with fruits, like cobblers or shortcakes, may benefit from a burst of acidity. A drier Riesling may work or a Vouvray Brut.               Momsoften work tirelessly to care for their families, with many juggling careers and time spent at home. It’s a balance that is sometimes tricky to manage, and at times mothers need to have their loads lightened. Children or spouses who learn to cook can take some pressure off of mom. Mother’s Day is a prime opportunity for other members of the household to spend time in the kitchen! Pasta dishes generally are easy to prepare and can feed a crowd. Such is the case with this recipe for “Carbonara” from “Rachael Ray: Memories and Meals From a Sweet and Savory Life” (Ballantine Books) by Rachael Ray.
Serves 4
1⁄4 cup approximately EVOO
1⁄3 pound chunk of meaty pancetta or guanciale, cut into 1⁄4-inch dice
4 large garlic cloves, thinly sliced or chopped
1 1⁄2 teaspoons coarsely ground black pepper
1 cup white wine
6 large egg yolks
1 cup grated Pecorino Romano, plus more to pass
Salt
1 pound bucatini or spaghetti
1⁄2 cup fresh flat-leaf parsley, finely chopped (a fat handful of leaves)
    Directions:
Bring a large pot of water to a boil for the pasta.
In a large, deep skillet over medium heat, heat the EVOO, four turns of the pan. Add the pancetta or guanciale and render for about 3 minutes. Add the garlic and pepper and stir 1 minute more. Add the wine and reduce by half (about 7 minutes), then reduce the heat to low.
In a medium bowl, combine the egg yolks and grated cheeses to the liberally salted boiling water and cook to 1 minute less than al dente per the package recommendation.
Remove about 11⁄4 cups of starchy cooking water from the pot and whisk it into the egg yolks in a steady stream to temper them. Reserve an extra 1⁄2 cup of starchy water just in case.
Drain the pasta or transfer it with a spider or tongs to the pan with the pancetta and garlic. Remove the pan from the heat and add the tempered egg yolks and parsley. Toss to combine. If the sauce seems too thin, return the heat to the lowest setting and, stirring constantly for 2 to 4 minutes, until the sauce thickens. Add salt to taste.
Note: Many recipes for this dish include heavy cream. Such recipes may be delicious, but they’re not authentic. The creamy consistency here comes from tempering the eggs and emulsifying them with oil, cheese and cooking water.

    Nomatter the culture or the cuisine, the heart of many delicious dishes is a solid flavor base. This flavor base goes by many names. • Visit a local veterans cemetery. The United Service Organization (USO) notes that most states have national veterans cemeteries. Though some veterans cemeteries are open only to family members of service personnel, others are open to the general public. Visiting a veterans cemetery is a great way to honor fallen military members and ensure the memory of their service and sacrifice is not forgotten on Memorial Day.
• Celebrate veterans over Memorial Day weekend. Memorial Day weekend is now synonymous with getaways and backyard barbecues. By taking time out during the weekend to honor fallen veterans, families can ensure
the meaning behind the holiday is not lost in the midst of celebrations with family and friends. Take time out during a family barbecue to discuss a family member who served or, if traveling, make an effort to visit a veterans memorial along your travel route.
• Help raise funds for veterans organizations. Fun runs or community Memorial Day walks may benefit local veterans organizations that help service members in need. Many service members may need help dealing with the deaths of friends or family members who died while serving in the armed forces, and veterans organizations may provide such help or direct funds to groups that do. That makes participation in events that benefit veterans organizations a great way to honor current military personnel and those who have served in the past, including those who died in service of their country.
• Teach youngsters about the role of the armed forces. There’s a lot competing for the attention of today’s young people, and that can make it easy to overlook the very freedoms that make the United States such a unique country throughout world history. Parents and guardians can emphasize the role the armed forces play in procuring and protecting freedoms in the United States and emphasize the significance of the sacrifices of those who gave their lives to ensure a higher quality of life for all U.S. residents. Memorial Day commemorates military personnel who died while serving in the armed forces.     Claudio’s has a rich history and is a household name for us on Long Island. Manuel Claudio fell in love with Greenport in 1854, when the ship he was working on docked in its beautiful harbor. Sixteen years later, in 1870, he permanently set foot ashore, never to sail again. With the money he saved through his years at sea, he opened Claudio’s Tavern. Throughout the years, the tavern underwent numerous changes and in 1886 he oversaw the installation of a magnificent Victorian bar, which is still there today.
The establishment was the oldest same family-owned restaurant in the country, but was sold in 2018.
