Childrencommonly like to give their mothers a break from cooking on Mother’s Day. Youngsters may be eager to help out in the kitchen and whip up something that Mom is certain to enjoy. But many recipes can be complicated for younger children or others who might not be so adept with meal creation. However, with a few ingredients that families may already have on hand, it’s possible to craft a delicious Mother’s Day brunch. This recipe for “Wee Chicken & Waffles with Jezebel-Maple Syrup” from Denise Gee’s “Southern Appetizers: 60 Delectables for Gracious Get-Togethers” (Chronicle Books) utilizes commercially available miniature waffles and popcorn chicken bites to create a chicken and waffles dish with a kick. Serve alongside mini muffins, deviled eggs, cheese and crackers, and other brunch dishes that are simple for youngsters and their little fingers to prepare.
Serves 10 to 12, Three or Four Waffles Each Jezebel-Maple Syrup
2 cups maple syrup
1/4 cup pineapple preserves
1/4 cup apple jelly
1 1/2 tablespoons prepared horseradish
3/4 teaspoon ground black pepper
Directions:
1/2 teaspoon salt
40 mini waffles from a 10.9-ounce package, lightly toasted
40 pieces cooked fried popcorn chicken
Finely chopped fresh Italian flat-leaf parsley or green onion for garnish (optional)
Hot sauce for serving
To make the syrup: In a large microwave-safe glass measuring cup with pour spout (one holding at least 3 cups) or a bowl, add the maple syrup, pineapple preserves, apple jelly, horseradish, pepper, and salt; whisk to combine.
Microwave the mixture on high for 35 seconds. (You also can heat it in a small saucepan on low until the mixture is warm.) Stir and taste, adjusting the flavor if desired. Set the syrup aside.
Place the toasted waffles on a large serving platter. Top each waffle with a piece of chicken. Drizzle the chicken-waffle bites with about 1 teaspoon of the syrup. Garnish with the parsley, if desired, and serve with the remaining syrup and hot sauce.
On April 3, Forest Avenue Elementary School in the West Babylon School District participated in a teddy bear clinic sponsored by the trauma center at Good Samaritan Hospital. Students in prekindergarten through second grade had the opportunity to become doctors and nurses to their stuffed animals during the event.
During this injury prevention program, participants learned about car and helmet safety in a fun and interactive way and dressed up as medical professionals to take care of their injured stuffed animals. Health Club members from West Babylon Senior High School were on hand to assist in teaching the safety lessons and
help the elementary students in caring for their injured animals. While there, the high school students also learned about careers in the public health sector from a Good Samaritan outreach coordinator.

Members of Babylon Junior-Senior High School’s Science National Honor Society (SNHS) recently visited Babylon Memorial Grade School to teach fifth-grade students a hands-on lesson titled “Air Really Matters.” Part of the Next Generation Science curriculum, the handson lesson allowed young learners to explore the characteristics of matter while the visit provided high school students with the opportunity to step into the role of educators, showcasing their creativity and leadership skills.
The idea for the
collaboration originated during a K-12 science curriculum committee meeting, where SNHS advisor Ashley Jones saw an opportunity to combine leadership development for high school students with an enriching science experience for younger learners. The high school students planned and implemented the lesson, ensuring all fifth graders were both challenged and supported, regardless of their ability levels. The impact of the lesson was evident as fifth graders enthusiastically participated in the activities
and later expressed their gratitude through thankyou cards.
“Ms. Jones played a pivotal role in organizing and preparing for the event, ensuring its success,” said Dr. Marissa Scholl, director of science and technology at the high school. “This collaboration not only deepened the fifth graders’ understanding of science but also empowered the high school students to develop leadership skills in a meaningful and impactful way.”

Babylon Junior-Senior High School senior Ryan Polletta has been awarded a highly competitive Naval Reserve Officers Training Corps (NROTC) scholarship worth $180,000. The scholarship recognizes Polletta’s outstanding academic achievements, leadership qualities, and commitment to serving his country.
The NROTC program provides full tuition coverage, stipends for books and living expenses, and leadership training at select colleges nationwide. Upon graduation, Polletta will commission as an officer in the Marine Corps.
“Ryan exemplifies of the dedication and leadership qualities we love to see in our students,” said Principal Al Cirone. “This scholarship is a testament to his hard work, and we look forward to seeing the impact he will make in his military career.”
The comprehensive NROTC scholarship selection process evaluates candidates on multiple dimensions of excellence. Applicants must demonstrate strong academic marks, active participation in extracurricular and athletic programs, and a commitment to community service. Additionally, candidates must successfully complete a physical fitness assessment and perform well through multiple rounds of interviews before final selection.
Ensuring that your child is in the right car seat and properly installed is essential for their safety. Car seats are crucial in protecting children during car accidents, with properly secured kids being 82% less likely to suffer injuries. Selecting a car seat that matches your child’s age and size is vital, as this can be life-saving. Councilman Terence McSweeney said he “Strongly encourages everyone who transports children to take advantage of the free safety inspections available, which can significantly enhance a child’s chances of emerging from an accident with minimal harm.”McSweeney, a firefighter with over 25 years of experience, emphasized that he has witnessed children escape crashes unscathed due to the correct installation and sizing of their car seats. He urges everyone to utilize this important free service provided by qualified officers from the Suffolk County Police Department and the Suffolk County Sheriff’s Office. Additionally, McSweeney expressed gratitude to the Babylon Fire Department for hosting this important event, as well as to the Copiague Fire Department for their support on April 25th.
