Have a very merry (sustainable) Christmas

This Christmas, whatever your style, why not bring an eco-friendly theme to the celebrations. There are many ways to be sustainable during the festive season, including choosing the right wrapping paper, re-using decorations, and of course, DIY-ing where you can. With the help of a few National Pharmacies members (also self-confessed Christmas lovers) we’ve got some fantastic Christmas DIYs and sustainable Christmas ideas that you and the whole family will enjoy.

National Pharmacies member, Marg, suggests purchasing generic wrapping paper that can be used all year long.

“That way you won’t throw it out once the Christmas period is over - it may even last you for years.”

Be sure to select wrapping paper that is recyclable - this means no tinsel, foil or cellophane.

THE CHRISTMAS WRAP

DITCH THE PAPER - WRAP YOUR GIFTS WITH FABRIC

Whether you’re using specific wrapping fabric, an old scarf, a tea towel, or a scrap piece of fabric, wrapping your gifts with fabric will result in beautifully wrapped gifts without the piles of used wrapping paper on Christmas Day. We’ve put together a simple step by step guide to help you wrap your gifts in fabric this year.

DIY CHRISTMAS CRACKERS

Making your own Christmas crackers (or bon bons) is super simple, and the best part is that you get to choose the gift that goes inside. This easy DIY has been shared by National Pharmacies member Amy.

What you’ll need:

• Wrapping paper - we love using butchers paper made from 100% recycled paper (cut into A4 size)

• Ribbon or twine

• Glue or double sided tape

• Scissors

• Christmas cracker snaps (you can make without these, but you won’t have the ‘crack’)

• Empty toilet paper rolls

• Handwritten Christmas jokes

• A small gift

1. Take your piece of paper and place your toilet roll in the centre, vertically.

2. Thread one Christmas cracker snap through the centre of the toilet roll and tape it at both ends to keep it secure.

3. Place your gift and joke inside the toilet roll.

4. Place a toilet roll at either end of the centre roll (one above, and one below) leaving approximately 1cm between each roll. Make sure the cracker snap is inside all rolls.

5. Glue the paper to the rolls. You should now have three rolls.

6. Wrap the paper around the three rolls, crinkling it in the gap between the rolls.

7. Tie a piece of ribbon around each of the crinkled areas and tie tightly to keep your gift snug inside.

1. Place gift diagonally in the centre of a square piece of fabric. Fold the bottom left corner of the fabric up and over the side of the gift.

2. While holding the bottom left corner in place, wrap the top right corner over the gift and hold in place. Crease the fabric along the right edge of the gift (the same way you would with wrapping paper) and pull the edge tight.

3. Bring the right folded edge over the top of the gift and hold. Repeat on the left side and tie the two ends into a classic bow. Tuck any remaining fabric into place under the bow.

Christmas DIYs are a great way to burn some of the kids’ extra energy during the festive season, and they’re fun for adults too.

Mango Passionfruit Trifle

The quantity of ingredients will depend on the size of your trifle dish. For a big family gathering we used a large, tapered glass dish with a stand, that measured 22cm across and 13cm deep, that would ultimately feed 10 - 15 people.

Mango Jelly

Ingredients:

• 4 x packets mango jelly

• 2 x mangoes diced into cubes

Method:

1. For the first layer: Arrange the fresh diced mango, at the bottom of your trifle glass. Make up the first 2 packets of jelly and pour the mixture over the mango, then place in the fridge allowing 2 - 3 hrs to set.

2. For the second layer: Using 1 packet of jelly, make as per packet directions

and pour into a low-lying glass dish. Once set, cut into squares and refrigerate.

3. For the third and final layer: Make the fourth packet of jelly prior to finishing your trifle assembly, it will need to be cool enough to pour over the final layer.

Sponge Cake

Any sponge cake recipe will work in a trifle. Or, try making a gluten free or vegan sponge cake. Alternatively, purchasing a sponge cake, Madeira cake, Panettone or Ciabella will be just as good.

Coconut Custard Ingredients:

• 1 can full-fat coconut milk

• 1/3 cup milk. (or almond milk)

• 5 egg yolks

• 1/2 cup sugar

• 3 tablespoons corn starch

• 1 tbsp pure homemade vanilla extract Instructions

1. Add both milks to a medium sized saucepan and heat over medium-low heat - do not boil.

2. Whisk the egg yolks, sugar, vanilla and corn flour in a medium-sized bowl until light, creamy and doubled in size.

3. Remove the warm milk from the heat and while whisking, pour a little milk (about 1/2 cup) into the egg mixture & whisk thoroughly to incorporate.

4. Continue to simultaneously whisk and slowly pour the remaining milk into the egg mixture. When all the milk has been poured into the bowl, incorporate thoroughly, then pour it back into the saucepan.

5. Heat the custard mixture over a medium heat, whisking constantly, until it starts to thicken. Once the custard has thickened, remove from the heat and pour the custard through a strainer to remove any residual lumps. Return it to a bowl.

6. Place a piece of plastic wrap directly on top of the custard and cool to room temperature.

Additional Ingredients for layering

• Passionfruit Yoghurt -

We used 2 x 500gm tubs with fresh passionfruit pulp

• 1 x fresh mango largely diced

• 2 cups whipped cream or coconut cream

Assembly

1. When the first layer of jelly is set, arrange sponge pieces on top allowing a few gaps in between.

2. Drop large spoons of your passionfruit yoghurt in between sponge pieces and in the centre of trifle glass.

3. Take your jelly squares and scatter them on top of the yoghurt and sponge layer.

4. Arrange some more pieces of fresh mango and top with custard.

5. Continue layering your ingredients, leaving 1 cm at the top of your trifle dish. Chill for 30 minutes.

6. Add final layer of jelly, cover and chill overnight or for up to 2 days prior to serving.

7. Decorate – be creative here. We used: Passionfruit yoghurt, coconut flakes, dried pineapple, fresh mango and pineapple, passionfruit, lime zest and a little bit of white chocolate.

To make this recipe vegan or gluten free use a vegan-based jelly recipe, a vegan or gluten free based sponge cake and replace custard and cream with coconut cream.

Beetroot & Feta Mousse with Green Apple & Rösti

Serves about 15 people

Beetroot Mousse:

Ingredients:

• 1 cup of baked or boiled beetroot

• 3 tbs feta

• 1 tsp tahini

• 1 tsp pomegranate syrup

• 1 tsp olive oil

• A spritz of lemon juice

• Salt and pepper, to taste

Method:

Place all of the ingredients into a food processor and blitz until smooth and creamy.

Rösti:

Ingredients:

• 3 potatoes, par boiled & grated (boil them until still waxy and firm in the middle)

• 1 egg, whisked

• 2 tbs corn flour

• 1 tbs butter, melted

• 1 tbsp olive oil

• Salt and pepper

Method:

1. In a large bowl, mix grated potato with egg, flour and butter. Season with salt and pepper.

2. Heat the oil in a frying pan over medium heat.

3. Add heaped tablespoonfuls of the potato mixture and flatten slightly.

4. Cook for 1-2 minutes each side or until crisp and golden then drain on a paper towel.

5. Repeat with the remaining potato mixture and allow to cool slightly.

To Serve:

Ingredients:

• 5 slices smoked salmon

• 1 green apple

• Juice of 1 lemon and peel

• Fresh dill & paper thin sliced julienne lemon peel

Method:

1. Peel apple and cut into matchsticks.

2. Drain green apple and season with salt and pepper and a splash of lemon juice.

3. Tear smoked salmon into bite sized pieces.

4. Top each Rösti with a spoon full of beetroot mousse, apple and smoked salmon and finish with a squeeze of lemon and a sprinkle of dill and lemon rind.

What does Christmas mean to you?

Christmas is all about family to us. It’s about getting together. My daughter from interstate comes home with her family and we’re all together again. To me it’s about more than just Christmas Day. We spend so much time together at this time of year whether that’s going to the beach, long lunches or barbeques we’re all together as much as possible.

What’s your role at Christmas time? Food.

I host Christmas for my family every year. And with a background teaching cooking and hospitality I take the food very seriously. Everyone can tell me one item they’d like on the menu on Christmas Day and I make sure that they all have something that they like on the table. For the past 40 years I’ve been making the same Christmas Cake recipe, and each year every member of the family comes over and has a stir and makes a wish before it goes in the oven. It’s a great tradition.

How does National Pharmacies support you at Christmas time?

National Pharmacies has great gifts. I’ve already bought my daughter a perfume for her gift and the diffuser and essential oils range are always great for gift giving.

What’s your favourite thing about being a National Pharmacies member?

I’ve used my National Pharmacies membership for so many things over the years, having had it since my kids were young - at the moment I am loving the range of supplements. I take a holistic approach to health and wellness and National Pharmacies has a lot of beautiful products that really fit with my philosophy.

Are you going to the National Pharmacies Christmas Pageant this year?

I hope so! I always took my kids to the Pageant back in the day and now I’m so excited to take my grandchildren to the National Pharmacies Christmas Pageant. It’s so great that there’s an opportunity for National Pharmacies members to be involved in the Pageant.

What do you love most about being a National Pharmacies member?

I love the choice and the service provided by the National Pharmacies teams.

Each person I deal with in store from the Pharmacists to the person who shows where to find what I’m looking for, to the person who takes payment are genuinely caring about my needs and are friendly.

What does it mean to be the National Pharmacies Christmas Pageant Director?

Being the Director of the Pageant gives me the opportunity each year to meet and work with many wonderful people. To see how everyone involved is keen to do a good job of entertaining the crowds and buy in to established processes, trusting we can all deliver a great event is very humbling and I thank everyone for their support.

What’s your favourite thing about the National Pharmacies Christmas Pageant year after year?

There is something about the Pageant that I can’t quite put my finger on. It is that elusive thing that makes it ever so special. Is it the floats, is it the bands, is it the crowds, is it the flitter or the glitter or the palpable energy in South Tce or turning into King William St at the start? Or is it meeting Father Christmas each year. Too many special things on Pageant day and in the making of Pageant day to put your finger on any of them. Therein lies the MAGIC!

What are you most looking forward to at this year’s National Pharmacies Christmas Pageant?

Getting back onto the streets and seeing those thousands of faces again all with the biggest smiles. We were lucky to have had the opportunity to create special memories at the Adelaide Oval but the Parade is for everyone and this year everyone gets that chance again to experience together with friends and family and the rest of our South Australian and visitor community the joy of being back on the streets.

What’s your favourite float and why?

Now if I committed that to writing, all the other floats might get upset. Every float has a part to play in the Pageant. Part of the Magic is that there are many, many individual moments in the Pageant. There is the mini and the maxi, there is the detail and the bigger picture for the overall parade. Each float is like a theatre set. They come to life with the participants who play their characters on each float. Just those little twinkles of the nose from a rabbit character, a well place “aaah me maties” from a pirate, the wave of a wand that colours someone’s world as a float passes are the memories that can touch the soul and bring happiness and joy. It’s the diversity that makes every float special.
