CHICKEN SCHNITZEL
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
2 tbsp milk
1 1⁄2 cups breadcrumbs (panko or regular)
1⁄2 cup grated parmesan cheese (optional)
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
Vegetable oil (for frying)
MUSHROOM SAUCE
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp onion powder
2 cups of sliced mushrooms (button)
2 garlic cloves, minced
1⁄4 cup dry white wine (optional)
1 cup chicken or vegetable stock
1 cup heavy cream
1 tsp fresh thyme (or 1⁄2 tsp dried thyme)
Salt and pepper, to taste
method
FOR THE CHICKEN SCHNITZEL:
Place each chicken breast between two pieces of baking paper and pound with a meat mallet until about 1⁄4 inch thick. Season both sides with salt and pepper. Set up breading stations. Place the flour in one shallow dish. In a second dish, whisk the eggs and milk together. In a third dish, mix breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, salt, and pepper. Coat each chicken breast in the flour, shaking off the excess. Dip it into the egg mixture, ensuring it’s fully coated. Press the chicken into the breadcrumb mixture, covering it completely. Set aside on a plate. Heat 1⁄2 inch of vegetable oil in a large skillet over medium heat until shimmering (about 175°C). Fry the chicken in batches, 2-3 minutes
per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.
FOR THE MUSHROOM SAUCE:
In a large skillet, melt butter with olive oil over medium heat. Add the garlic and mushrooms and cook until the mushrooms release their liquid and are golden, about 5-7 minutes. Stir in the white wine to deglaze pan (if using) and let it simmer for 1-2 minutes, scraping up any browned bits.
Add the chicken stock, thyme, onion powder, salt, and pepper. Let it simmer for another 3 minutes.
Stir in the heavy cream and cook until the sauce thickens slightly, about 5 minutes. Taste and adjust seasoning if needed. Serve with hot chips and slaw.

FOR THE BASE
4 slices of thick-cut sourdough bread, toasted
4 slices of prosciutto
FOR THE FRIED EGGS
4 large eggs
2 tbsp olive oil or butter
Salt and pepper to taste
FOR THE HOLLANDAISE SAUCE
3 large egg yolks
1 tbsp fresh lemon juice
1/2 cup unsalted butter, melted Pinch of salt
Dash of cayenne pepper or paprika (optional)
GARNISH WITH

PREPARE THE SOURDOUGH AND PROSCIUTTO:
Toast the sourdough bread until golden and crisp. Lightly warm the prosciutto slices in a dry skillet over medium heat for 1-2 minutes to enhance the flavour (optional).
FRY THE SUNNY-SIDE-UP EGGS:
Heat the olive oil or butter in a non-stick skillet over medium heat. Crack the eggs into the skillet, being careful not to break the yolks. Cook until the whites are fully set, and the yolks are still runny, about 2-3 minutes. Season with a pinch of salt and pepper.
MAKE THE HOLLANDAISE SAUCE:
In a heatproof bowl, whisk the egg yolks and lemon juice until combined.
Place the bowl over a pot of gently simmering water (do not let the bottom of the bowl touch the water). Gradually whisk in the melted butter in a slow, steady stream until the sauce thickens.
Season with salt and a dash of cayenne pepper or paprika, if desired. Keep the sauce warm.
ASSEMBLE THE EGGS BENEDICT:
Place a 2 slices of toasted sourdough on each plate. Layer a slice of prosciutto on top of the toast. Gently slide fried sunny-sideup eggs on top of the prosciutto. Drizzle the warm hollandaise sauce generously over each egg. Garnish and serve:

COOKING INSTRUCTIONS
Preheat grill to high. Place brioche rolls, cut side up on baking tray. Toast for 2 minutes or until golden. Spread mayonnaise over roll bases.

FOR THE BURGER PATTY
250g (1/2 lb) ground beef (80% lean, 20% fat)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder

FOR ASSEMBLING THE BURGER
2 brioche burger buns
2 slices cheddar cheese
1 medium tomato, sliced
4 leaves of fresh lettuce
2 tbsp mayonnaise (optional)
1 tbsp butter (for toasting buns)
PREPARE THE BURGER PATTIES:
In a bowl, combine ground beef, salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Gently mix until well combined, but avoid overamixing to keep the patty tender.
Divide the mixture into two equal portions and shape them into patties, slightly larger than the burger buns (they will shrink when cooked).
Press a small indentation in the center of each patty to prevent it from puffing up while cooking.
COOK THE PATTIES:
Heat a skillet or grill pan over mediumhigh heat.
Cook the patties for 3-4 minutes per side or until they reach your desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty and cover the pan to melt the cheese.
TOAST THE BUNS:

BEER BATTERED FISH FILLETS
BATTERED FISH FILLETS
4 fillets of basa
500 grams skinless flaky white fish fillets
Plain flour
(e.g. barramundi)
Soda water
11/3 cups rice flour (divided into 2 portions)
1/2 cup all-purpose flour
TO SERVE
2 teaspoons salt (divided)
Fries/chips
11/4 tsp baking powder
Fresh herbs
1/4 tsp cayenne pepper (optional, for heat)
Lemon wedge
PREPARE THE FISH:
Salt & pepper
1 cup cold beer (such as lager)
Tomato sauce to serve
Vegetable oil, for frying
TO SERVE
TARTARE SAUCE
Fries or chips
1/4 cup baby capers, roughly chopped
Fresh herbs
1/4 cup baby cucumbers, diced
Lemon wedge
1/4 cup fresh dill, roughly chopped
Salt & pepper
1 cup whole egg mayonnaise
Tomato or Tartare sauce
1 tsp rice wine vinegar
Pinch salt & pepper
Pat the fish fillets dry with paper towels and cut them into smaller pieces (about 3–4 inches long). Season the fish with salt on both sides.
SET UP THE DRY COATING:
Place 2/3 cup of rice flour in a shallow dish or plate. This will help create a base layer for the batter to stick to.
MAKE THE BATTER:
In a large mixing bowl, whisk together the remaining 2/3 cup rice flour, all-purpose flour, baking powder, 1 teaspoon salt, and cayenne pepper. Gradually add the cold beer to the dry mixture while whisking continuously, creating a smooth and slightly thick batter.
HEAT THE OIL:
Heat enough vegetable oil in a deep pot or large skillet to fully submerge the fish.
Bring the oil to 185°C using a thermometer to maintain temperature.
COAT THE FISH:
Lightly coat each piece of fish in the reserved rice flour, shaking off excess. Dip the floured fish into the beer batter, ensuring it is fully coated. Let any excess batter drip off.
FRY THE FISH:
Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for 4–5 minutes, turning occasionally, until the fish is golden brown and cooked through. Remove with a slotted spoon and transfer to a wire rack or paper towel-lined plate to drain excess oil.
SERVE:
Serve the crispy battered fish immediately with your favourite dipping sauces like tomato, tartare sauce and lemon wedges. Pair with fries, coleslaw, or a fresh salad.

Introduction
1.1 These Terms and Conditions form the basis of the Best of the Best Foodservice Rewards Program. It is the responsibility of the Participant to read and understand them.
1. These Terms and Conditions are e ective for each Term of the Program and may be amended by NAFDA Foodservice (NAFDA FS) from time to time. The current Terms and Conditions are those available at the NAFDA FS Rewards Website located at www.nafdarewards.com.au. Participants will be provided with a copy of the Terms and Conditions at the time of joining the Program and will be noti ed of material changes.
1.3 Every Participant is bound by these Terms and Conditions and any related rules, policies or procedures adopted by NAFDA FS from time to time.
1.4 Points may only be earned and/or redeemed in accordance with these Terms and Conditions as amended.
1.5 To the extent of any inconsistency between these Terms and Conditions and any related documents, these Terms and Conditions prevail.
1.6 Subject to clauses 1.3 and 3.1, the Program is open to all Customers of a NAFDA FS Distributor.
1.7 NAFDA FS’s decision on all matters pertaining to the Program, including but not limited to any dispute as to Rewards, the identity of a Participant, eligibility to participate in the program, or Points accumulated by a Participant is nal and binding. No correspondence will be entered into. De nitions:
2.1 In these terms and conditions unless the context requires otherwise: (a) “Customer” means a customer of a NAFDA FS Distributor that is participating in the Program and includes cafes, restaurants, pubs, clubs, hotels, catering businesses, hospitals, aged care facilities, prisons and schools, but excludes government, contract customers and third party distributors, unless otherwise authorised by NAFDA FS. (b) “NAFDA FS” means NAFDA Limited ABN 25 002 953 942 t/as NAFDA Foodservice of Level 2, 100 George Street, Parramatta NSW 2150. (c) “NAFDA FS Distributor” means a company that is a member of NAFDA FS. (d) “Participant” means a Customer who has chosen to participate in the Program. (e) “Program” means the program subject to these Terms and Conditions also known as the NAFDA FS Best of the Best Foodservice Rewards Program. (f) “Points” means the points allocated pursuant to the Program. (h) “Program Catalogue” means the catalogue created and distributed pursuant to the Program for and relevant to each Term. (i) “Program Website” means the website portal build to facilitate the Program at www.nafdarewards.com.au (j) “Reward” means any vouchers, gift cards or other goods o ered to Participants pursuant to the Program from time to time. (k) “Term” means each and every term of the Program, which commences on the rst Monday of March in the current year and expires at the earlier of 31 January in the subsequent year or the date of termination of the Program by NAFDA FS in relation to the relevant NAFDA FS Distributor provided and so long as the relevant NAFDA FS Distributor is in compliance with the Program and further provided that NAFDA FS has not terminated the Program in relation to the relevant NAFDA FS Distributor. For clarity, a Participant will no longer be entitled to participate in the Program where the relevant NAFDA FS Distributor ceases its participation in the Program or where the Participant noti es NAFDA FS that it does not wish to participate in the Program. (m) “Privacy Act” means the Privacy Act 1988 (Cth), as amended from time to time. (n) “Personal Information” has the meaning set out in the Privacy Act. (n) “Terms and Conditions” mean these Terms and Conditions.
Participation:
3.1 Participation in the Program is only open to Customers. Customers who wish to participate in the Program must register through the Program Website. Participation is limited to one registration per Customer. NAFDA FS reserves the right to exclude any Customer from the Program in its absolute discretion.
3.2 Points may be redeemed by Participants for the bene t of the Participants or the Participant’s employees in the Participant’s absolute discretion.
3.3 Participant’s must ensure that their contact details are up to date and it is the responsibility of all Participants to advise NAFDA FS of any changes to their status and contact details.
3.4 Participation is valid for as long as a Participant meets the de nition of a Customer. If a Participant ceases to be a Customer or that NAFDA FS Distributor ceases to be part of the Program, then all Points will be forfeited and no further redemptions will be permitted.
3.5 Participants may cancel their participation in the Program at any time by providing written notice to NAFDA FS. Upon receipt of such notice, accumulated Points for any such Participant will immediately expire.
Participant Obligations and Responsibilities:
4.1 Participants must not: (a) act in any way which breaches these Terms and Conditions; or (b) abuse or misuse the Program or any Rewards, bene ts, services or arrangements accorded to a Participant as a result of their participation.
4.2 Each Participant is responsible for ensuring they have enough Points to redeem for any Reward they request.
4.3 Each Participant is responsible for regularly checking their Program account and must notify NAFDA FS of any omissions, incorrect entries or other discrepancies immediately.
4.4 Participants must redeem their Points through the Program Website.
Suspension or Termination of Participation:
5.1 If a Participant has committed a material breach of any of the Terms and Conditions, whether intentionally or otherwise, or in NAFDA FS’ opinion is not acting fairly, honestly or in good faith, then NAFDA FS may (upon providing the Participant with notice) do any one or more of the following: (a) suspend or terminate the Participant’s participation; (b) reverse or cancel the Participant’s Points or any part thereof; (c) cancel or refuse to honour any Rewards, bene ts or both, that have been redeemed by or provided to the Participant.
5.2 Participation will terminate automatically upon the Participant ceasing to be a Customer or the Participant’s NAFDA FS Distributor ceasing to be a part of the Program.
Earning Points:
6.1 NAFDA FS will award Participants Points for selected products purchased by the Participant from a NAFDA FS Distributor during the Term as nominated by NAFDA FS in the Program Catalogue. Participants will earn 1 point for every $1 (excluding GST) spent.
6.2 ‘Points’ will be loaded to online accounts by the NAFDA FS Distributor on a monthly basis.
6.3 ‘Points will only appear in the Participant’s account once validated by NAFDA FS administrators. Points will then be made available for redemption.
6.4 Points will not be awarded in relation to any products that are cancelled, refunded or returned. NAFDA FS may cancel or deduct any Points that have been awarded in relation to cancelled, refunded or returned products.
6.5 NAFDA FS may, from time to time, approve other ways in which Participants may earn Points or be eligible for Rewards or bene ts.
6.6 NAFDA FS may audit Participants during or subsequent to the completion of the Program to ensure compliance with these Terms and Conditions. If discrepancies are found during such an audit, NAFDA FS may, without limiting its rights under these Terms and Conditions, terminate the Participant’s participation in the Program.
Points Validity and Points Expiry:
7.1 Points are awarded during a Term. Awarded Points that are not redeemed within the Term in which they were awarded, will expire.
7.2 Points cannot be re-credited once they have expired.
7.3 NAFDA FS reserves the right to cancel any Points credited to a Participant incorrectly, or not in accordance with, or in breach of, the Terms and Conditions at any time.
7.4 Points will be calculated monthly and displayed on the Program Website.
7.5 Any Point discrepancies must be directed to the Participant’s NAFDA FS Distributor with the detail and nature of the discrepancy. If it is found that a Participant’s Point balance is incorrect, their details will be amended.
Points and Redemption:
8.1 Participants may redeem their accumulated Points for a Reward or Rewards with a corresponding Points level (as speci ed by NAFDA FS) prior to expiry or termination of this Program. For the avoidance of doubt, the Points available for redemption are displayed in the Participant’s online account and are the only register of Points recognised by NAFDA FS.
8.2 The minimum Points for a Reward that can be redeemed by Participants is 5,000 Points.
8.3 Participants will be required to redeem their Points through the Program Website.
8.4 A Participant may redeem Points at any time prior to expiry or termination of this Program. Any Points not redeemed prior to expiry or termination of the Program will be forfeited.
8.5 Participants may redeem their Points through their NAFDA FS Distributor. The NAFDA FS Distributor will complete the order through the Program Website.
8.6 A Participant is responsible for the actions of any of its employees who select Rewards on its behalf. All Rewards will be dispatched to the Participant for their own bene t. Rewards claimed by a registered or licensed club are subject to any State or Territory laws that apply, and Rewards must be claimed and used in a manner consistent with these laws. NAFDA FS and NAFDA FS Distributors accept no responsibility should the Participant not abide by these laws.
8.7 Unless otherwise speci ed by NAFDA FS, Points are not transferable and must be redeemed by the Participant to whom the Points were issued.
8.8 Points cannot be exchanged for cash.
8.9 Participants may not pool or combine Points with other Participants in order to redeem a Reward or a Reward of greater value.
8.10 Points are valid for redemption for a Reward in the absolute discretion of NAFDA FS.
Rewards:
9.1 Rewards are not transferable or exchangeable and cannot be exchanged for cash, unless otherwise authorised by NAFDA FS.
9.2 NAFDA FS accepts no responsibility for any variation in the value of a Reward.
9.3 Rewards issued may be subject to additional terms and conditions and these additional terms and conditions apply to the redemption of these speci c Rewards.
9.4 NAFDA FS accepts no responsibility for any Reward that is issued in the form of a voucher, gift card or ticket, that is lost, stolen, or that has been tampered within anyway.
9.5 NAFDA FS may in its absolute discretion require the Participant, or any person who takes a Reward, sign a legal release in a form determined by NAFDA FS.
9.6 Rewards will be generally delivered within 15 working days of claim submission, however deliveries are subject to supplier conditions and NAFDA FS makes no guarantee in regard to when a Reward will be delivered.
9.7 To the extent permitted by law, NAFDA FS makes no warranties or representations about the tness for purpose or suitability of any Reward and is not responsible for the quality or tness for any purpose of any Reward, or the failure of any Reward to be of merchantable quality. If liability under terms of any legislation cannot be excluded, the liability of NAFDA FS is limited, to the extent permissible by law, to re-supplying the relevant Reward or paying the cost of replacing it.
Changes to the Program:
10.1 NAFDA FS reserves the right to make any changes (whether material or otherwise) to the Program and the Terms and Conditions.
10.2 NAFDA FS will use best e orts to advise Participants of material changes to these Terms and Conditions by publishing the updated Terms and Conditions on the Program Website and/or emailing a copy of the change to the email address provided by the Participant.
NAFDA FS’s rights: 11.1 NAFDA FS may, in its absolute discretion, at any time: (a) change, amend or vary these Terms and Conditions; (b) change, amend, vary, withdraw or cancel any Reward or the value of any Reward; (c) withdraw, cancel, vary or change at any time, Points or the value of future Points; (d) extend the Term; and (e) exclude a Participant from, or cancel a Participant’s participation in, the Program without prior notice to the Participant.
11.2 NAFDA FS may, in its absolute discretion, at any time cancel the Program in whole (or in part) by giving not less than one week’s notice in writing to Participant. Participants may redeem any accrued Points during that notice period.
11.3 If, due to any reason whatsoever, NAFDA FS becomes aware that a Participant has not complied with these Terms and Conditions or is, at any time during the Term, in breach of the Participant’s trading terms with a NAFDA FS Distributor or has breached any law applicable to this Program, that Participant will have no entitlement to the Reward, even if NAFDA FS has announced them as a winner and the Participant will be required, at the direction of NAFDA FS, to return, refund or otherwise make restitution of the Reward.
11.4 Whilst all care is taken in the production of the Program Catalogue, NAFDA FS reserves the right to correct any misprints or errors, and to the extent permitted by law, NAFDA FS will not be responsible for any such misprints or errors.
Tax Liability:
12.1 NAFDA FS accepts no responsibility or any liability for any tax implications that arise as a result of a Participant or other person receiving a Reward. Independent taxation and nancial advice should be sought by each Participant. Where the operation of this Program results for GST purposes, in supplies being made for non-monetary consideration, Participant agrees to follow the Australian Taxation O ce’s stated view that where the parties are at arm’s length, goods and services exchanged are of equal GST inclusive market values. All taxes and any other costs related to this Reward not speci cally stated within these Terms and Conditions are the sole responsibility of the Participant.
Liability:
13.1 Except for any liability that cannot be excluded by law, NAFDA FS (including its o cers, employees and agents) exclude all liability (including negligence), for any personal injury; or any loss or damage (including loss of opportunity); whether direct, indirect, special or consequential, arising in any way out of the Program, including, but not limited to: (a) failure in performing its obligations under these Terms and Conditions caused by unforeseeable circumstances beyond its reasonable control. (b) resulting from such withdrawals, cancellations, variations or change as set out in clauses 11.1 or 11.2; (c) any technical di culties or equipment malfunction (whether or not under NAFDA FS’ or NAFDA FS Distributor’s control); (d) any theft, unauthorised access or third party interference; (e) any correspondence or Reward claim that is late, lost, altered, damaged or misdirected (whether or not after their receipt by NAFDA FS or NAFDA FS Distributor) due to any reason beyond the reasonable control of NAFDA FS or the NAFDA FS Distributor; (f) any variation in the value of any Reward; or (g) any Reward.
13.2 The Participant agrees to indemnify and release and keep indemni ed and release NAFDA FS (including its o cers, employees and agents) against any loss or damage su ered or any claim incurred by the NAFDA FS arising out of or relating to any breach of these Terms and Conditions by the Participant.
Privacy:
14.1 NAFDA FS collects Personal Information in order to conduct the Program. If the information requested is not provided, then the Participant may not participate in the Program.
14.2 By entering or participating in this Program, the Participant consents to the storage of their Personal Information on the databases of NAFDA FS and agrees that NAFDA FS may use this information for future promotional and marketing purposes regarding its products and services that may be relevant to the Participant including contacting the Participant via electronic messaging. The Participant agrees that NAFDA FS may disclose its personal information to its representatives, contractors and agents to assist in conducting this Program or communicating with the Participant. NAFDA FS is bound by the Privacy Act. For more information about the collection and management of Personal Information by NAFDA FS the Participant should refer to NAFDAFS’s privacy policy which available upon request free of charge or by visiting www.nafda.com.au.
14.3 In addition to clause 13.2, unless otherwise advised, each Information Supplier also agrees that: (a) the details provided to the NAFDA FS Distributor or to NAFDA FS including purchase history may be retained by NAFDA FS on its database and the Participant shall have no proprietary claim with respect to this database; and (b) the Participant shall indemnify NAFDA FS against any loss or damage that NAFDA FS may su er as a result of the Participant providing misleading or deceptive information or due to any infringement by the Participant of the rights of a third party in respect of the supply of that information.

General:
15.1 The NAFDA FS Best of the Best Foodservice Rewards Program is available from participating NAFDA FS Distributors.
15.2 Entering into the Program is free.
15.3 The Rewards available in the NAFDA FS Best of the Best Foodservice Rewards may vary between participating NAFDA FS Distributors.
15.4 For the purposes of the Program, the Promoter is NAFDA FS Limited (ABN 25 002 953 942 and can be contacted at the following address: Level 2, 100 George Street, Parramatta, NSW 2150.
15.5 These Terms and Conditions are to be construed in accordance with the laws from time to time in the State of New South Wales and the parties submit to the non-exclusive jurisdiction in New South Wales.
