As fate would have it, Ronnie and his wife, Staci, both graduates of Texas A&M, found themselves deeply immersed in the world of corporate jobs after leaving college. However, their passion for authentic barbecue led them back to the family business.

In 2007, Ronnie and Staci took the reins from Ronnie's father, commencing a new chapter in the history of Schoepf's BBQ. With a vision for expansion and improvement, they embarked on renovating the existing building and adding a backroom as well as Schoepf's Backyard in 2009, which has become the best concert venue around! Not content with resting on their laurels, the couple also revamped recipes and introduced a Tex Mex barbeque menu, satisfying a wider range of taste preferences.

Ronnie and Staci instill a strong work ethic in their children, who also play an integral role in the restaurant's operations. With five kids, three girls, and two boys, ranging in age from 9 to 21, each of them works at the restaurant. The oldest child just turned 21 and attends Texas A&M University, but when there are concerts, they all pitch in outside. The family takes pride in their children's involvement and believes it instills valuable life skills. Customers frequently comment on the kids' engagement and how comfortable they are interacting with people, fostering a welcoming atmosphere. Both Staci and Ronnie started working at a young age and try to pass on a strong work ethic to their kids.

The family also takes pride in offering a delicious, high-quality menu with a wide variety of fresh, housemade options. Their entire menu was revamped, with perfected sides and an excellent selection of Tex-Mex choices. From sandwiches to entrees, they have added a ton more options to satisfy every palate. Notably,

they upgraded their meat selection from choice to Prime, utilizing top-of-the-line prime brisket and proprietary meats. All their foods are homemade, prepared fresh every day, from freshly washed vegetables, and delicious potatoes, to their homemade sauces. They provide samples of their mouthwatering briskets. The process is interactive, as customers can watch their meat being cut to their desired portion. The extensive selection of sides ranges from traditional BBQ sides to Tex-Mex, and the dessert options, including tres leches cakes, are delightful!

One customer favorite is the homemade Brisket Queso Mac, which has a Tex-Mex flair. The mac and cheese is also made from scratch. The menu includes delicious options like nachos, tacos, and tostadas, with a special mention of the popular Brisket Tacos that originated from their outside music area. They also introduce weekly features such as Brisket Frittatas on Wednesdays, Brisket Tamales on Thursdays, Fried Catfish on Fridays, and Smoked Prime Rib on Saturdays. Schoepf's BBQ also offers great catering

options, accommodating large corporate and family events both onsite and offsite. For special meetings, they have a private dining room available. Additionally, the establishment actively participates in fundraising activities, contributing to the community.

The addition of live music was a pivotal moment in Schoepf's BBQ journey. On July 3, 2009, they hosted their first concert, which ultimately led to the well-renowned Schoepf's Texas Music series, offering family-friendly concerts, which have been hosted every spring and summer for the past 15 years. They’ve featured renowned artists like Cody Johnson, Parker McCollum, Whiskey Myers, Cody Jinks, Randy Rogers Band, Turnpike Troubadours, Koe Wetzel, Flyleaf and more, laying the foundation for the venue's subsequent success as a live music hotspot. Be sure to check their website for the latest updates.

When it comes to what they love about Belton, they appreciate the immense support they receive from the Belton community and beyond. As people think of Texas, they often associate it with barbecue, and Schoepf's BBQ benefits from the community's backing locally, statewide, nationwide, and even globally. They actively participate in charity groups and host numerous fundraisers throughout the entire Bell County community. The dedicated staff, including the owners who work alongside them, contribute to the restaurant's success. People frequently express their interest in having Schoepf's BBQ expand and open in other areas, a testament to the establishment's popularity and the community's unwavering support.

The Schoepf family's continued dedication to the restaurant, live music and the community, is what makes them a family worth knowing! Be sure to stop in and say hello, and eat some delicious brisket—all in good company!

Get to Know CULTURE

TEXAS TEXAS CULTURE

and

COMMON SYMBOLS

When you imagine Texas, what are some of the things you think about? Do you think of good ol’ smoked Texas BBQ? What about the bright endless stars at night? While Texas is known for some amazing things, our community’s immense pride for the state stands out amongst all the others. We are unique in that we not only have our own culture, but we are loud and proud about it! A large part of sharing this pride is showing and telling others the symbols that make us who we are. Texans wear and show these and many other symbols with pride, but do we know what they mean to us?

The Texas Star

The popular five-pointed star that many are familiar with is more than just a Western Americana decor item, but also a symbol for the Texan spirit. Representing patriotism, freedom, and bravery, the Texas Star signifies Texas’ independence from Mexico in the 1800s and standing alone for freedom. As a prominent component of the Texas Flag, the “Lone Star State” is known for the singular star standing strong and tall. Rooted in everyday culture, the star is seen commonly as a rustic, Texas image.

Artwork was hand-painted and donated by renowned local artist Kathleen McElwaine, owner of quiltblockart.com

The Texas Flag

The Texas flag is the most popular and widespread state flag in the country. Like the United States flag, the colors red, white, and blue symbolize courage, purity, and loyalty. It is more than just a flag, but a symbol of where we came from. Displaying the flag in Texas culture signifies our community’s strong sense of heritage and a show of honor for anyone that is from Texas, regardless of background. We all may be different in our own way, but we are all Texan.

Texas Longhorn

As the official state large mammal, images of the Texas Longhorn can be found scattered all over the state. The Texas Longhorn is a true icon exemplifying the term “survival of the fittest.” As one of the only American adapted cattle breeds, the Texas Longhorn evolved to withstand the long droughts, food stress, and other harsh aspects of living in the area. As a model of the phrase, “Texas Tough,” the Longhorn has become ingrained into everyday culture. Many Texans look to the Longhorn as a symbol of strength and independence.

Bluebonnets

Spring in Texas is not complete without seeing bluebonnets on the side of the road. Named the state flower in 1901, the bluebonnet is an iconic symbol for all Texans. For generations, Texans have gone out into the blooming bluebonnet fields to snap photos of new memories created as a family. Texas’ love for the bluebonnet goes beyond just a pretty picture; it has become a part of the culture year-round. Images, songs, poems, and even festivals surrounding the state’s love of the bluebonnet bring the community together to share in this symbolic token of family and beauty.

NATIVE PLANTS FOR CENTRAL TEXAS

MEET TEMPLE LOCAL, NATIVE PLANT EXPERT REID LEWIS!

Reid Lewis, native plant expert. Find him at Wild Birds Unlimited, located in Temple!

We had the privilege of hearing from longtime Temple local Reid Lewis on what his top native plant recommendations are for Central Texas. Native plants are a perfect way to landscape your yard for many reasons. For those of you that don’t have a green thumb, they are almost impossible to kill and are very drought resilient. They also attract hummingbirds and other pollinators, which is great for the local ecosystem. Birds and butterflies love them! Here are Reid’s top five native plants to incorporate in your landscaping!

Reid Lewis was a U.S. Forest Service member in California and was also a park ranger and firefighter in Texas. He has served as the regional director at the Native Plant Society as well as president of the Native Plant Society Waco Chapter. He owned Sweetbriar Native Organic Nursery in Belton and went to Temple College for horticulture. He currently works at Wild Birds Unlimited in Temple as a bird feed and native plant specialist. Reid is a wealth of information; make sure you stop by and say hello. Tell him you saw him in BeLocal!

TOP 5 NATIVE PLANTS FOR CENTRAL TEXAS

1. SALVIA GREGGII (autumn sage or cherry sage)

▸ Very drought tolerant. Grows to about 2-3 feet. You will notice cherry sage in many parts of Texas; it does very well in Central Texas and is a true hummingbird magnet. Great plant to have right outside your window if you want an up-close hummingbird viewing area. Thrives in full sunlight areas; in light, moderately fertile; dry to medium, well-drained soil. Easy to grow and a big plus here for those of you in Morgans Point, Moffat or any other rural area is that it is deer resistant!

2. MALVAVISCUS DRUMMONDII (Turk’s-cap) ▸ This beautiful red flowering plant gets to about 3-5 feet tall. It blooms off and on and attracts both butterflies and hummingbirds. If you are looking for a pop of color, this is a great plant to consider. It also produces edible fruit! This is a spreading shrub; bright-red, pendant, hibiscus-like flowers never fully open, their petals overlapping to form a loose tube with the staminal column protruding, said to resemble a Turkish turban, hence its most common name, Turk’s-cap. It is especially useful in shady situations.

3. CHILE PEQUIN ▸ Known as the Texas Christmas plant. Birds LOVE this plant. It grows to 3-5 feet tall. Likes sun to part shade. All other chilis have been bred from this plant. Designated the chiltepin (chile tepin) as the official state native pepper in 1997. This native plant includes chile pequin (and it’s confusing!), but the ones you’ll find in your nurseries will most likely be called chile pequin. Chile tepins are small and round, while pequins are slightly larger and pointed. Adaptable to sun, shade or part shade, it can be a perennial in many gardens. In the coldest winters, it may be an annual, but birds may seed its fruits that they love. If it freezes back, its roots may still be alive, so cut back the brown top growth and it will sprout again.

4. FALL ASTER ▸ It blooms in the fall and is a great source of pollen. This drought-tolerant flower is a real show-stopper and adds a vivid, beautiful purple color to your yard. A great mid-layer for your flower bed designs.

5. TEXAS LANTANA ▸ A very hearty plant, this is a butterfly DREAM plant; butterflies love it. It’s a perennial that likes full sun, partial shade. Low water maintenance, salt tolerant and deer resistant. The beautiful orange, red and yellow flowers are a great addition to your yard.
