The 2019 Per Se is a blend of 76% Cabernet Franc and 24% Merlot. Built on a base of Cabernet Franc, this wine shows aromas of fresh raspberry, cherry and cocoa. The palate brings yet more red fruit flavours, along with hints of sage and star anise, and a slight toasted vanilla nuance which follows through on the long finish. Medium in body with fine tannins and fresh acidity.

2020 Per Se is showing fresh and well-defined raspberry, strawberry and red currant aromas, along with savoury herbal notes such as rosemary and fresh mint. In the background there are subtle spice and pencil shavings notes, which speak to the wines 18-month maturation in lightly toasted French oak barrels. The palate is medium bodied with a silky texture and fine elegant tannins. The brightness of acidity integrates beautifully with the fresh fruit flavours, and helps to frame a long and refined finish.

Cheese Recommendations from Perseval & Young Cheesemongers
This delicious, creamy treat is a soft, washed rind cheese made from pasteurized cow’s milk enriched with cream. It is a cross between more flavourful washed rind cheeses such as Langres or Epoisses and a soft, decadent triple cream like Chaource or Brillat Savarin. It is a very balanced, delicate soft cheese that can be enjoyed by almost anyone. Fromagerie Delin specifically made this cheese to be universally loved. It is mellow enough for white or sparkling wines but can also work with a light, fruity red.
The A.O.C. of Bleu d’Auvergne encompasses the entire region of Auvergne and is one of the most popular and widely eaten blues of the region. It has a firm texture but is still creamy on the palate and it’s flavour is full but not overpowering. It is a great eating cheese but it’s texture and medium strength also makes it ideal for many recipes. Similar to Roquefort but made with cow’s milk instead of sheep’s milk. Pairs well with fruit forward wines such as Syrah.
Produced by La Leyenda in La Mancha, the area that is famous for Manchego. This cheese is completely covered with dried rosemary, which infuses some lovely herbaceous notes in to the cheese itself. Brebis au Romarin has a firm texture but is very luxurious. It crumbles and melts away on the tongue when eaten. The sheep’s milk gives this cheese a creaminess and nuttiness that is balanced out by the rosemary from the rind. Pair with a medium-bodied red wine or an acidic white.
All the milk from Isigny Ste-Mère, in Normandy, is collected in less than 48 hours and is transformed in the traditional way upon receipt into butter, cream or cheese. Belle Saison is the latest addition to the large Isigny cheese family. It is produced in limited quantities, according to their cheesemaking expertise, with milk from Normandy cows that graze in the region’s pastures. The maturing in the cellar influences this special cheese, and allows the creation of a naturally rustic rind. Its natural rind is dotted with small holes, and its ivory-colored paste is firm and brittle. Its rind gives off a lively and earthy aroma. The flavors are buttery, salty, and there is also a delicious hint of hazelnut. Pair it with a light bodied red.
