Kinglake Distillery is on its way to being the first carbon-neutral whisky distillery in Australia. gas emissions through the government program is a good start. And true sustainability is something they will keep working towards.

The pristine Kinglake water on the distillery property has a similar mineral profile to Scottish whisky-making waters. Chantal and Sam credit their water for a large portion of their whisky’s signature flavour. By Emily Friedel

n July this year, a whisky distillery in Scotland’s Western Highlands became the UK’s first to reach netzero carbon emissions. Hot on the heels of this international first, Kinglake is on track to produce Australia’s first whisky from a certified carbon-neutral distillery by the end of 2021. Kinglake Distillery is now waiting on the Australian Government’s final tick of approval to claim their carbon-neutral title. Add to this the unique aspects of Kinglake’s natural environment that are embedded in the little distillery’s handmade whisky, and you have a very special drop. Their single spirit line, O’Grady’s Stand Single Malt, embodies the Kinglake connection of distillery owner Chantal

Daniels and her family. Chantal, a third generation Kinglaker, and her partner, Sam Lowe, are dedicated to doing all they can to care for the landscape that supports their whisky production. “When you see this environment, you think, ‘We’ve got to protect this’. Even though it’s just a small part, but every part you try to protect is at least one part that’s getting better. Every bit helps,” Chantal says. Getting government carbon-neutral certification is an onerous task. Carbon output since the business’ inception must be documented and any net emissions offset. This is a difficult process for a distillery – making spirits is very energy-intensive. So while Chantal says they’re a way off being fully sustainable, offsetting greenhouse

“Because making whisky is such an energy-sapping process, people think there’s no way you can do it carbonneutral, but it’s doable, and I hope we inspire others to try. I can’t wait until we get to the point where you’re having this bottle of whisky and thinking it has no effect. But our ultimate goal is to get to the stage where every bottle you buy has a positive impact.” To minimise their carbon footprint, Chantal and Sam have powered their off-grid distillery with solar as much as possible. They are also working with the not-for-profit company Greenfleet to reforest twenty acres of their property. “We’ve donated the front paddock; we’ve just signed the contract with Greenfleet. We weren’t sure if they’d be interested because it’s only a small piece of land, but they jumped at the chance. They said with the climate here, the results they can get on twenty acres would take probably 250 acres in other places,” Chantal says. “We’re also going to collaborate with them to put a tasting room and visitor centre out the front in the reforested area. So they’ll talk about what they’ve

done, things like why they’ve chosen certain plants, and we’ll have our tasting room. It’s all happening really quickly, so I’d like to think we’ll have that all done by the middle of next year.” Being eco-friendly is something Chantal and Sam plan to chip away at continuously, improving any aspect of the business that is amenable to environmentally beneficial alterations. “Our bottles we got from France because that’s where you generally get them, but now I’m searching for bottles in Australia. We might have to change the whole look because really it’s only beer bottles that are manufactured in Australia, so we might have to go with that,” Chantal says. Switching to an electric vehicle is also on the list of changes Chantal and Sam plan to make in the near future. The distillery’s biggest emission producer, the 2,500-litre copper boiler, is not something they’ll be able to replace anytime soon. However, they’re hoping that as hydrogen energy technology improves, even the boiling process can be net-zero carbon one day. Chantal’s and Sam’s respect for the environment is rewarded with natural gifts that only Kinglake can give. A spring on their property provides a steady supply of fresh, clean water with a similar mineral profile to the waters

Chantal credits the water for much of the O’Grady’s Stand signature flavour. “When we bought this property and we were looking at what spirits to make, we tested the water, and it was spot on

for making Scotch. We really think the water is the biggest factor in the taste of our whisky,” she says. The Kinglake bush also adds its unique flavours to the whisky during fermentation. The whisky mash – a mixture of malted barley and water – is Murrindindi Guide – SUMMER 2021/22 – 15

devoting themselves to producing only whisky and only the one line, keeping it consistent so customers always know what to expect. When they have a batch of barrels ready, they combine them to distribute the flavours evenly and ensure that any bottle a customer picks off the shelf meets the O’Grady’s Stand Single Malt standard. Chantal and Sam also want to make their eco-friendly product affordable, pricing it so that it is also wallet friendly. Top: Well-used bottles of O’Grady’s Stand Single Malt in the distillery’s tasting room where customers can try the whisky while soaking up the Kinglake atmosphere. Above: The open shed ensures the whisky produced at Kinglake distillery is imbued with the unique flavours of the surrounding landscape. left open in the shed so that wild yeasts are carried in on the breeze to work their magic. “We have the open ferments, and the barrels are all ageing in the open shed, so there’s the smell of eucalyptus and the bush going around. The provenance we’ve got here is pretty spectacular. The whisky actually tastes the way it tastes because it’s made in Kinglake – we’re very open about our recipes, but if anyone tried to make it elsewhere it probably wouldn’t taste the same,” Chantal says. After fermentation, the whisky is transferred to Kentucky bourbon 16 – Murrindindi Guide – SUMMER 2021/22

barrels to age. Chantal says that due to the Kinglake climate, the wood of the barrels expands and contracts dramatically over the seasons in response to the substantial temperature fluctuations. This expansion and contraction speeds up the ageing process as the movement of the oak panels helps to impart the wood flavour onto the whisky. “Our ageing is about half that of places like the UK or Europe; anything that would be a ten-year whisky over there would be a five-year whisky here because the wood is really worked.” At present, Chantal and Sam are

“We’ve set our price point at $100, and that’s our best product at that price. We don’t want it to be something where you just dust of the bottle at Christmas and have a sip. We want people to enjoy it and be able to come back and buy that second, third, fourth bottle,” Chantal says. So for those who want to have a shot or two of a fine spirit this Christmas or New Year’s, O’Grady’s Stand Single Malt from Kinglake Distillery is a way to celebrate not only the occasion but also Kinglake’s magnificent natural environment. With any luck, this holiday season will also be the perfect time to celebrate Australia’s first batch of whisky from an officially carbon-neutral distillery. ucked away in a quiet backstreet in Yea is a small cheese factory that, for many years, has been scooping up big awards in state and national competitions. Just this year, the Yea Brand Dairy took out gold medals in the Dairy Industry Association of Australia Awards for Excellence with their crème fraiche, mascarpone and vintage cheese products. And it

wasn’t the first time. Since 2013, the company has been steadily accruing a host of gold and silver medals for their products. In 2014, they topped these achievements when their crème fraiche was crowned Champion Cream Product in the Australian Grand Dairy Awards, a national competition that celebrates quality, excellence and innovation in dairy produce. This was an incredibly

significant achievement, especially for a company that only has two regular employees. As Andrew Kirk, Manager of Yea Brand Dairy, explains, “Out of all the cream, any type of cream, the Yea Brand Dairy was crowned the best in Australia.” In 2019 the company was runner-up for this award. When asked for the secret of his company’s success, Andrew has no Murrindindi Guide – SUMMER 2021/22 – 19

The outstanding success of the brand is testimony to the skill and dedication of these employees who take great pride in the fact that they only use “old school” artisan methods in the production process. Of course, the raw materials used in their products are another critical part of their success. The company sources the cream for their crème fraiche and mascarpone lines from only two first-rate suppliers – one near Kyabram and the other near Warrnambool. Interestingly, their cheddar cheeses are not made from scratch in the factory. Instead, they carefully select cheddar cheese from other Australian producers and use their own special methods to produce the smooth, creamy, rounded, wax-wrapped cheeses that we see on supermarket shelves. hesitation in naming his cheesemakers, David Wareham and Kelly McLeish. “They have an excellent work ethic, really high standards and churn out consistent product. The people that you employ to do the job are the most important part of the business. And once you’ve tasted a bit of success, there’s pride, and everyone is working to the same end.” Amazingly, both David and Kelly learnt their craft on the job at the Yea factory. David was employed in sawmills before starting at the factory and Kelly was originally a cleaner at the 20 – Murrindindi Guide – SUMMER 2021/22

At the moment, the company is producing five products: crème fraiche, mascarpone, and vintage, mature and mildclub cheddars. There are plans to expand this range in 2022 with the addition of flavours to the club cheddars. The team is particularly excited about including pepper berry, an Australian bush food, in the range, as well as producing a chipotle (smoked jalapeño chilli) and a standard chilli variety. The company also produces crème fraiche and mascarpone for a private label, Wattle Valley. The Yea Brand Dairy was established in 1989 by Andrew’s father, Bill Kirk, who was previously involved in creating the COVID-19 PANDEMIC TRADING RESTRICTIONS MAY APPLY FOR ADVERTISERS/EVENTS IN THIS MAGAZINE

Liz Newman from DIAA presents Andrew Kirk, Manager of Yea Brand Dairy, with the Victorian award for highest scoring club cheddar at a ceremony in Melbourne recently. King Island Dairy brand. After moving from King Island, he was looking for a new business opportunity and stumbled across a little one-room cheese factory in Yea. Originally a partnership of three families, the company is now solely owned by the Kirk family. The company began by supplying the restaurant trade. At the time, top chefs were struggling to source products such as crème fraiche, mascarpone and clotted cream in Australia. Yea Brand Dairy decided to fill this gap, and as chefs came to recognise the quality of their products, demand grew.

However, it was not until the advent of the MasterChef program on TV that things really took off in the retail sector. “When MasterChef kicked off, the public started to see more obscure products such as crème fraiche and mascarpone being used in recipes and that pushed demand in the retail setting. It lifted the profile of these products to the point where they have now become mainstream,” Andrew says.

“Even before we started getting awards, we knew we were making the right product because we’d get good feedback from chefs,” Andrew says.

Andrew is now planning to boost distribution into the retail sector, particularly in Brisbane, Sydney and Melbourne. COVID lockdowns in two of the company’s biggest markets – Melbourne and Sydney – have seen sales to restaurants fall to 10% of original figures and Andrew acknowledges that this sector will take some time to fully recover.

About fifteen years ago, in response to increasing demand, the company expanded the factory, effectively tripling the size of the footprint of the building.

One advantage of running a small, efficient company is that it can scale up or down very quickly. When demand increases for the spring racing carnival or the festive season it is quite

COVID-19 PANDEMIC TRADING RESTRICTIONS MAY APPLY FOR ADVERTISERS/EVENTS IN THIS MAGAZINE

easy to ramp up production. While cheesemakers David and Kelly virtually run the whole operation on their own most of the time, casual staff are employed for peak periods. As Andrew says, “We have a great little facility here. It’s got plenty of potential to scale up and we are only limited by what we can innovate.” Although Yea Brand Dairy doesn’t sell directly to the public, there are a number of outlets where residents of the Murrindindi Shire can purchase their products including Yea FoodWorks, Yarck Meat and Produce, and Mansfield FoodWorks and IGA. However, Andrew stresses that it is very easy for any FoodWorks or IGA store to obtain their products. All customers need to do is to ask their local store to get them in. The Yea Dairy Brand is always looking for new outlets. If you are a business that would like to stock their award-winning products you can contact Andrew Kirk on 0411 199 804 or email arkirk@ kirkfood.com.au. Murrindindi Guide – SUMMER 2021/22 – 21

estled in Toolangi’s bush at the old Demby Sawmill site, MillBuilt is breaking the mould for modular homes.

MillBuilt owners, Daniel and Jamie Pobjoy, spent over a decade in the building industry witnessing the countless problems that come with one-off builds. Among these issues was the proliferation of oversized, inefficient dwellings that created more consumption and more work for their inhabitants. “We were building one-off new houses, essentially a lot of them were designed by the client, and we just found houses were getting bigger and bigger. Clients thought they needed a lot more than they actually did. We were finishing houses and thinking there is so much wasted space here. It’s space that you’ve got to clean and space that you’ve got to cool, but it’s also space that you’ve got to fill. So we thought, there’s got to be a better way,” Daniel says. At the other end of the spectrum, modular homes are a quick and easy option but have a reputation for being slapped together and somewhat lacking in the aesthetics department. Murrindindi Guide – SUMMER 2021/22 – 23

“We saw there was a gap in the market in terms of the higherend modular buildings that can be 99% finished. I’m not aware of any modular builders that do it to this level,” Daniel says. So, the Pobjoy brothers decided to take their extensive building experience and solve the problems they saw in the building industry by designing and constructing superior-quality, eco-friendly modular homes. This led to the establishment of MillBuilt around 18 months ago. “We’ve gathered everything from our experience – all that knowledge and information – and put it into small buildings, which works really well,” Jamie says. Daniel says that in one-off builds, design issues often emerge when there is nothing that can be done to remedy them. However, with MillBuilt’s prefabricated homes, they can take advantage of accumulated knowledge to generate homes that are practical and highly livable. “The problem with niche, one-off homes is that every job is different; you’re approaching every job differently and there are different obstacles. But here, once we’ve done one, we know what hurdles there are and we can refine all those things,” Daniel says. “These modular houses that we’re building, I feel like they’re aesthetically pleasing, but because they’re based on squares and rectangles, they’re really functional. And with clever design, you can have a house feel a lot bigger than it actually is,” he adds. Now, getting a MillBuilt home is as easy as popping down to their display home, choosing a design, picking from their range of fittings and fixtures, and then sitting back while Daniel and Jamie take care of all the hard work. “We work the opposite to a normal modular builder; everything you see is included and if you don’t want it, we work backwards from there,” Jamie says.

COVID-19 PANDEMIC TRADING RESTRICTIONS MAY APPLY FOR ADVERTISERS/EVENTS IN THIS MAGAZINE

Brothers Daniel and Jamie Pobjoy have taken their many years of combined building industry experience and condensed it into highquality, eco-friendly modular homes. The whole process is streamlined so that it is possible to have a completed house on site within a matter of two or three months, depending on how busy it is in the MillBuilt factory. And while they do not provide planning permits, they now provide building permits, so there’s even less for customers to do. “Building a home should be an enjoyable experience, and we want to give that to people,” Daniel says. Another benefit of the MillBuilt method is the fixed building cost – customers know exactly what they’re getting for their money with the only variables being the cost of transport and whether a crane is needed. This is in stark contrast to many one-off builds where budgets often get blown out by unexpected expenses. And contrary to the idea that modular homes are on the flimsy side, MillBuilt homes are made tough to withstand transportation and have made journeys as far afield as Torquay and Foster. “They have to be way stronger than conventional buildings to be able to move and withstand the vibrations of transport. I think we’ve actually got the strongest building on the market with our steel portal frame, and I think our

buildings probably transport the best,” Daniel says. They are also made to a Bushfire Attack Level (BAL) of 29 as standard, which is as high as you can get for anything with external timber. “You won’t find that anywhere, most homes across the board are built to a BAL 12.5 or BAL 9 as standard,” Jamie says. Daniel and Jamie also take energy saving seriously, so their designs are inherently energy efficient, but they will also assess the building site for positioning and can alter the configuration of their designs to optimise energy efficiency. “We feel like we’ve come up with designs that can be suited to any site, it’s just a case of juggling window positions and we can also juggle bedrooms. So we look at the site and try to orientate living areas to the north so they’ll perform better in terms of energy rating. We aim to achieve a minimum rating of seven stars,” Daniel says. In the spirit of sustainability, MillBuilt also utilises recycled materials wherever possible, including revitalising old house studs that would ordinarily end

COVID-19 PANDEMIC TRADING RESTRICTIONS MAY APPLY FOR ADVERTISERS/EVENTS IN THIS MAGAZINE

up in landfill to use for architraves, skirting and door frames. Reclaimed timber is also used for features such as benchtops and sliding barn doors. Other materials are sourced for their environmentally sensitive production, such as Australian plantation wood, or their ability to be recycled when no longer needed. While demand for their buildings is increasing, especially among locals, the Pobjoy brothers plan to take things slowly and focus on providing homes within Victoria. “We want to grow the business sustainably, that’s really important to us,” Jamie says. With their environmentally mindful and quality conscious spin on modular homes, MillBuilt combine the best of both building worlds: small, transportable homes that are built to last. They have not only broken the mould for modular buildings, but they have also created a new one. “I think this is going to become the norm – it’s just such a good way to build,” Jamie says. Mushrooms may bolster your mental health, with some studies finding that lion’s mane mushrooms (pictured) directly reduced depression.

By Emily Friedel ushrooms have a host of known health benefits. They are a low-calorie, fibrerich source of protein, B vitamins and the antioxidant selenium among other things. Recently, there has also been increased interest in finding out what these fabulous members of the fungi kingdom can do for human wellbeing. A study published in the Journal of Affective Disorders this November investigated the relationship between eating mushrooms and depression in a sample of around 25,000 adults from the US. The data revealed that

M

consuming mushrooms was associated with significantly lower odds of having symptoms of depression. In other words, those who consumed mushrooms were less likely to be depressed. Interestingly, consuming a moderate or large amount of mushrooms per day did not change the odds of having depression; eating some mushrooms rather than no mushrooms was what appeared to be most important. While this study found an association between mushroom consumption and depression, it is important to note that due to the research methods used, the direction of the relationship between

mushrooms and depression could not be identified. That is, either mushrooms could have lowered depression, or people who are less prone to depression had a taste for mushrooms. However, small clinical trials have found that eating a particular type of mushroom (Hericium erinaceus, commonly called lion’s mane) does directly reduce depression.

dubbed the ‘longevity vitamin’ by some scientists because of its powerful positive effects on the body. Among other things, ergothioneine protects neurons from oxidative stress, and a growing body of research indicates this oxidative stress plays a substantial role in several mental health disorders, including major depression.

Researchers have suggested that antioxidants are a potential mechanism by which mushrooms could influence depression. Mushrooms are the main source of an antioxidant amino acid called ergothioneine. This antioxidant has been

More research is necessary to understand precisely what benefits mushrooms may hold in terms of staving off depression. However, their myriad other health benefits mean there’s no harm in heaping an extre serving on your plate – improved mood would be another bonus.

he Murrindindi Food and Wine Group (MFWG) has led a campaign to encourage local and regional residents, chefs and cooks to put Murrindindi on their Tables. President of MFWG, local blueberry grower and co-owner of Sassy Sister Liqueur, Rob Mitchell, explains: “Our campaign in the lead up to Christmas 2021 is to encourage everyone to support local producers. To achieve this goal, we secured a Community Projects and Events Grant via Murrindindi Shire Council.” “The objectives for this campaign are to raise awareness of MFWG, our trademark and our wonderful growers, producers and manufacturers. It’s also about collaboration with the shire, all stakeholders and partner organisations such as the Murrindindi Winemakers, with whom we have a Memorandum of Understanding – in the spirit of reciprocal promotional activities.” Campaign co-ordinator and MFWG

secretary, Sam Hicks, has overseen the collation of the Murrindindi Supplier’s Guide and website updates which can be viewed on: murrindindifoodandwine. org.au. The Supplier’s Guide is in a flipbook and downloadable format. Website additions also include a series of online videos created to highlight our regional champions with stunning photos used to create ongoing producer highlights. According to Sam: “We wanted to recognise our 20-year Murrindindi food and wine history as an organisation, with snippets and flashbacks and a story of achievements, highlighting our members, our producers and depth of our suppliers listed in the new Guide.” “Our members are mainly boutique in scale and have been affected by the slowing or complete stopping of trade due to COVID. This campaign will give us all a boost and turn community attention to the exceptional quality of our produce and the ongoing benefits of supporting local. We also aim to

reinforce the notion that every purchase or even a shared link on social media will help to not just sustain us but continue a momentum in which we thrive.” The services of James “Turbo” Anderson from Turbo 360 were secured to create a group of videos and images that are used both on the group’s website and subsequent social media campaign. This will be underpinned with a local community radio campaign on UGFM in the immediate lead up to Christmas. “We chose James for the video and photographic productions as we had seen his work before. He is highly professional and passionate about the whole Northeast region and has worked with many of our members and affiliates. James also continues to work hard behind the scenes with lakeeildon. com,” Sam says. Rob adds: “I really want to thank all who’ve been interested, encouraging and involved and to our funding partners, Murrindindi Shire Council and to our local producers.” And the message MFWG is shouting out to everyone is: “Put Murrindindi on your Table” this year. The lead up to Christmas is an opportunity to go out shopping and support our local people and their industries.

Lobley Wines in Glenburn, and Lyn Cunningham of Wild Crust Bakeries came on board, as did many of our producers for the first photo shoot and video recordings at Grant Street Grocer in Alexandra last May. Lisa and Alan Harding, proprietors of Grant St. Grocer, set up a long grazing table highlighting wine, beer, ciders, meats, vegetables, hamper offerings and even locally grown flowers from well over twenty producers. “The table brimmed with all things local,” Sam says.

f you are out walking in the bush, particularly where there is a dense cover of ferns, bracken grasses or shrubs, you may well hear rapid, harsh, buzzing sounds coming from the undergrowth. Chances are you are hearing the calls of the whitebrowed scrubwren. Their repetitive ‘tzzt, tzzt’ calls always make them sound a bit crotchety and, while this is their normal call, they can really ramp it up if threats such as humans, snakes or other birds are in their territory. This small, brown bird is relatively common and widespread. It can be found in all states except the Northern Territory, although populations are concentrated along the eastern and southern seaboards of the other states. You can find them at sea level and above the snow line in habitats that range from woodlands and rainforest to heaths and salt marshes. Nonetheless, to keep the scrubwrens happy, there has to be one critical feature in place: dense undergrowth, for this is where the birds spend most of their time. They have also been known to venture into urban parks and gardens, providing there is plenty of thick understory. Residents of the Murrindindi Shire have observed them hopping around the bushes in their gardens, taking dips in their birdbaths, building nests in their pot-plants and even coming in through an open window to inspect their bathroom! However, out in the bush, they can be quite difficult to see and often you will only know of their presence from their calls. Even when you do see them, they can be hard to

White-browed Scrubwren (Sericornis frontalis).

distinguish from other small, brown birds. One of their characteristic features is, as their name suggests, a white line above the eye. There is another, fainter white line beneath the eye and two short, white bars on the edge of the wings. You might also be able to see a rufous tinge around the rump. Males and females are similar in appearance, although females tend to be duller. White-browed scrubwrens are busy little birds. Their high metabolic rate means they have to constantly forage for food. They do this by searching for insects in the leaf litter of the forest floor or in low, dense shrubbery. They feed in pairs, or small parties, and tend to remain in the same territory all their lives. White-browed scrubwrens breed between July and December and usually lay a clutch of two or three eggs. Their nests are built close to the ground in thick vegetation. The dome-shaped nests are constructed out of plant material such as grasses and leaves and have an opening on the side leading to a chamber lined with feathers. Because they are cooperative breeders, all members of the group help to raise the young. So, when you are next out walking in the bush, keep an ear out for some crotchety buzzing from the undergrowth. You never know, you just might be in the presence of white-browed scrubwrens.

acky Gilbee of Goulburn Valley Nurseries believes that a garden speaks volumes, and she wants to help people turn their front yards into works of art.

Goulburn Valley Nurseries recently moved from Yea to a new space at 35 Grant Street in Alexandra. Now with bigger and better premises, Jacky can pack in even more plants to give gardeners the building blocks for their own private oasis. She has created a veritable botanical smorgasbord for customers: fruit trees, citrus, colorful blooms, shade lovers, camellias, hedging plants, natives, water plants, seedlings for the veggie patch, succulents, indoor plants, vegetable seeds, and more. “We have quality plants at a good price. And we’ve got great premises here. There’s plenty of parking, there’s the nursery at the front so you can see it from the road, and then we’ve got this great indoor area – beautiful wooden floors and high ceilings – we can really show off our stock,” Jacky says. A range of gardening necessities is also available, including potting mixes of all descriptions, fertilisers and pest control. There are even supplies for four-legged friends, with a COVID-19 PANDEMIC TRADING RESTRICTIONS MAY APPLY FOR ADVERTISERS/EVENTS IN THIS MAGAZINE

section of the shop dedicated to Black Dog brand dog food products. Goulburn Valley Nurseries is also the place to go for sound gardening advice. Along with the wealth of knowledge Jacky has personally built up over almost four decades, all of her staff are equipped with horticultural know-how and can steer customers in the right direction. And for anyone who is gift hunting, there are plenty of treasures available to put a smile on a loved-one’s face. Jacky stocks Scents of Nature soaps, candles, bath bombs and diffusers, as well as decorative pots, garden ornaments, and bouquets of flowers. Of course, there is an abundance of living gifts too. “We’re going to specialise in gift boxing for plants, so you can get your gifts here,” Jacky says. Goulburn Valley Nurseries also offers garden art and accessories to add that special touch to the front yard – for a work of art within a work of art. There are windmills ranging from 30 centimetres to three metres high, garden arches, outdoor furniture, and fire pits. Jacky is keen to get more local artists on board too. “We’re also going to specialise in local art. We currently have Darryl Callander’s horseshoe art, and we’d love to hear from anyone local that’s got some really great work we could show off for a few months at a time and then change it over,” she says. While the business move has brought lots of potential for expansion, Jacky is focusing her efforts on making sure people have access to all they need to make their gardens exceptional. “We are going to work on teas and coffees, and we might even get a liquor licence too, so we’re happy to do wine tastings and things like that. But that’s for the future. We want to concentrate on what we do best for now,” Jacky says. eatwaves and extremely hot days are becoming a fact of life in Australia’s summers. They’re something most of us don’t enjoy but can live with – we humans have plenty of options for cooling down when outside temperatures become uncomfortable or even dangerous. Our wildlife, on the other hand, has fewer options and high temperatures can be deadly, especially without easy access to water. So, this summer, when preparing your house and garden for the heat, why not add some water for wildlife? If you are going to leave some liquid refreshment for the critters that visit your property, there are a few things you can do to ensure they get the most out of it. First, use shallow dishes so that small creatures don’t drown, or place rocks and sticks in bowls of water so they can easily climb out. Second, put your water offerings in shady, sheltered places that are protected from curious pets so shy wildlife feel safe to make use of them. And third, water dishes at different levels around the garden will allow land-dwellers as well as winged visitors to get a drink when they need it. If you’re lucky, you may even find that putting out water gives you the opportunity to observe more of our incredible native wildlife from the comfort of your own (air-conditioned) home. Wattles either have rod-shaped flowers (as above) or ball-shaped flowers (inset). In either case the flowers give rise to pods full of edible black or brown seeds.

By Angus Stewart

W

attles make fabulous, if relatively short-lived, garden plants that can also be used as a bush food. The seeds of a number of species were collected by Aboriginal Australians and used as a major food source when in season. Given that there are hundreds of species of wattles in Australia that flower at various times of the year this can provide an interesting project for the inspired gardener. For inland areas of Australia where heavy frost is a feature of the local climate you might like to try species such as mulga (Acacia aneura), silver wattle (A. retinodes) and our national floral emblem, the golden wattle (Acacia pycnantha). All wattles are easily raised from seed which needs to be heat treated to crack open the hard seed coat to stimulate even germination. Simply put the seed into a cup and pour boiling water over it and then let it cool before sowing it in general purpose potting mix. It is best

to put two or three seeds into a small pot and then cull the seedlings down to the strongest one once they germinate. They will grow quickly so get them into the garden as soon as the roots peek out the bottom of the pot. Once the plants are established in your garden you should tip prune them every month or two by pinching out the soft growing tips with your finger and thumb. This will cause the plant to branch out and ensure a more stable structure as well as more profuse flowering (and therefore more seeds to harvest). Wattles make great shelter plants around the edge of gardens and are great to create a quick effect in a new garden. Don’t expect them to live more than ten to fifteen years on average as they are a pioneer species in the bush that regenerate rapidly after fires and then die out to make way for slower growing trees such as eucalypts. To harvest the seed you must be

observant and watch for the pods to start turning colour from green to brown. By laying a tarpaulin out underneath the plant and shaking the tree a good percentage of the seed can be harvested at one time. Be vigilant as ants will compete with you for the precious seed as it is a suitable food source for them as well. Mature seed can then be roasted in a medium oven for about half an hour. The roasted seeds can be crushed to form a flour-like material that is used to make into dough to bake damper. The crushed seed also makes a tasty flavouring for foods such as ice cream. Seeds can also be harvested green and eaten after being boiled or steamed. The seeds reputedly have much higher protein content than wheat and a low glycaemic index. Wattles are an iconic part of the Australian landscape so why not plant some in your garden to discover the joys of growing our national flower! GardeningWithAngus.com.au

Eildon pondage will have a fresh stocking of trout for the school holidays, which will add extra to the huge amount of trout that have been stocked there as well as in the Goulburn River throughout the year. Small streams like the Stevenson, Acheron and Rubicon will be productive for small trout with small spinners and shallow divers working the best. Goulburn River will have plenty of brown trout and you still have a chance to catch a big stonker rainbow.

T

he vision of local learn-to-swim teacher, Linda Watkins, was to have an indoor heated pool in Alexandra. Linda had taught locally at seasonal pools and at Mansfield where she built up a large clientele. At a meeting at CEACA (now known as Alexandra Community Hub) in 2014, around 80 parents squeezed into the old courthouse to discuss a new pool. I offered to lead the meeting on the condition that a huge aquatic centre worth millions was off the table, and explained that projects of that size are challenging to fund, even harder to maintain and unfeasible long term. It was best to begin small and grow with the community. The idea was welcomed and a small team was assembled including myself, Linda Watkins, Michelle Crowley, Renee Pearson, Mel Heard, Jacqui Caswell, Jason Krijt and Tiffinie Reeves. Public meetings were held at CEACA as the idea was developed. Linda and I met with Sandy Keath at Murrindindi

Shire Council and spoke about the idea and what grants may be available. The group needed a business case, an actual drawn plan, and a strategy to make it a reality. After that meeting, I had a brain wave to put in a pool in a shop. Linda and I walked all over Alexandra looking at empty shops.

Tiffinie worked on budgets and extensive modelling to allow the team to see how they could operate under an incorporated body structure based on a business model. A venue was chosen with the landlord kindly holding the property for us whilst we sourced funding for the project.

Once the team met regularly the idea was further developed as a pop-up pool, needing a venue and a requirement to gauge community interest. I began to socialise the group’s idea, presenting to as many community groups as possible and hosting many community meetings. In 2015 it was decided on an above ground mineral salted pool offering learn-to-swim classes for children of all ages, all abilities access and water therapy style classes.

The team met weekly to work on quotes, securing support letters and promises of assistance. Tiffinie began the huge task of populating a project plan and attended a project management course in Taggerty.

The group regretfully farewelled Michelle and Renee early in 2015 after they completed their reconciliation tasks, Linda relocated to Queensland in about 2019 to teach in larger pools and Mel moved interstate. The team in the meantime welcomed Meg and Rod (Linda’s stand in) and later Marg.

Pick my Project (PMP) was a Victorian State Government community nominated funding opportunity announced in 2018. It was a participatory budgeting community grant that presented a huge opportunity. Tiffinie attended the PMP workshops, the group drafted the application and local draftsperson Angelo Greco drew up the plans. The project was submitted in July with the voting commencing from August. The Pop-up Pool Project, securing the Murrindindi Guide – SUMMER 2021/22 – 51

Jason was our site manager and led the preparation prior to the builders, Stace and Newman, commencing in March. The group worked with over 30 local suppliers and businesses to ensure the

components of site preparation, solar, pool and equipment, deck and teaching aids came together. Many volunteer hours were spent on site. We have had many local families, businesses, local community groups and supporters donate funds, lend equipment and donate volunteer time to get the project stages completed, this on top of the group working around their own families, study and work.

Everything came to a standstill in March 2020. The group continued behind the scenes, restrictions permitting, and in September 2021 the building permits were finally signed off. The pool is now open, with coordinator Magenta Connolly offering learn-toswim classes, gentle exercise and, hopefully, aerobics in 2022. F

rom her earliest years, Yea wildlife artist Prue Sanchez has had a passion for plants, animals and art. This passion is strikingly evident in her detailed, watercolour paintings of some of Australia’s iconic flora and fauna. As a child, Prue enjoyed being outdoors with her friends, but once indoors, she happily turned her attention to drawing and painting, producing startlingly good portraits, still lifes and landscapes. Her combined passions for art and science were fostered by her father who regularly took her to the National Gallery of Victoria,

the Melbourne Museum and the Royal Botanic Gardens Victoria. Her maternal grandfather’s extensive collection of art books also provided inspiration and encouragement. Prue spent many hours poring over these books and, even today, has some of them in her own library. Throughout her primary school years, Prue earned praise for her art. However, as secondary school approached, she had to decide whether to focus on science or art, and science won. Although Prue was focussed on science subjects, such as biology, she found her artistic skills still came in handy when she needed to sketch one of the specimens she was studying – be it

an amoeba, a plant, an insect, or a mammal. This skill continued to serve her well when she undertook a Bachelor of Science degree at Monash University, majoring in zoology and botany. After gaining her Diploma of Education, again from Monash University, Prue became a science teacher, first at Richmond Girls High School and then at Methodist Ladies College. But art was never far away. In her spare time, Prue 56 – Murrindindi Guide – SUMMER 2021/22

continued to indulge her passion for drawing and painting, and when at school, she entertained her students by decorating the classroom blackboard with pictures. When Prue moved to Yea with her husband and family in 1989, she started teaching at a special school and discovered how useful art can be with challenging children. As she explains, “I did great things with the kids. There’s nothing better for pacifying a very naughty,

damaged teenage girl than doing her portrait.” To further develop her artistic skills, Prue studied botanical art for a year with Jenny Phillips, a worldrenowned botanical artist in South Yarra, Melbourne. Jenny Phillips specialises in watercolours and taught Prue the special techniques that she now uses to capture the texture of fur and feathers in her wildlife paintings. Looking at the intricate detail in Prue’s

birds and animals, it’s hard to believe this has all been achieved with watercolour paint. Prue’s work has received many commendations and prizes, including winning the Royal Australasian Ornithologists Union bird illustrator (pencil) title in 1992 for a drawing of wood swallows. Although Prue is best known for her wildlife paintings, she also does portraits of children, people and pets and has even

Rakali branched out into imaginative paintings of the aftermath of the Tasmanian bushfires. Prue has exhibited her work in many galleries and art shows although, with the COVID lockdowns over the last two years, these opportunities have been severely limited. In keeping with her passion for plants, birds and animals, Prue is an avid supporter of many environmental organisations. She is deeply concerned about the impact of climate change and other forces such as pollution, land clearing, bushfires and urbanisation on the landscape. In fact, her concern for the plight of threatened species is the driving force behind her wildlife art.

Koala

“My main interest in painting is to record and transmit the exquisite nature of our animals and plants so that people realise what we are losing,” Prue says. While her primary focus is on Australian native flora and fauna, she also does intricate paintings of other threatened species such as the tiger. Over the years, Prue has built up an impressive body of work all of which is testimony to her ability to combine art and science and to shine a spotlight on the plight of plants, birds and animals in a changing world. ocal author, counsellor and artist Bev Aisbett is no stranger to burnout – the topic of her 20th self-help book is for people with anxiety and depression, which she is about to undertake at the request of her publishers, HarperCollins. Despite – or perhaps because of – Covid and Victoria’s lockdowns, Bev’s productivity has remained undiminished and in the past year she has produced a solo exhibition of artworks at Rennies at Acheron, created an online store of her clothing and household goods designs on the printon-demand site Redbubble, created a cartoon strip The Muse (‘just for fun’) which she intends to publish as a blog, has conducted training and counselling Before I met LITTLE IT, I didn’t know anything Before I met LITTLE IT, I didn’t know anything about him! about him! I have certainly personally researched the subject of burnout with all that I’ve crammed into the past thirty years, but as a creative, when the Muse strikes, you tend to follow and I love what I do, which overrides being sensible sometimes!’

In amongst her busy schedule, perhaps Bev’s greatest achievement of the past two years has been the realisation of a long-held dream to produce a book specifically for children with anxiety, which has now been realised with the kind assistance of Friends of the Library Alexandra (FOLA) and the Murrindindi Shire Council grants program. Meeting Little IT – How to Make Friends with Anxiety is designed to assist children to understand and manage their anxiety, based on the highly effective principles and techniques that have assisted adults who have read Bev’s Murrindindi Guide – SUMMER 2021/22 – 59

‘Anxiety has loomed large during Covid and even very young children are being greatly affected by current changes and demands,’ Bev says. ‘I saw the need to produce a resource that will be of help to parents, teachers and the children in their care through this time. The book is aimed for children of pre and primary

In this book, children are introduced to a smaller version of the ‘IT’ cartoon character derived from Bev’s first title Living with IT - A Survivor’s Guide to Anxiety and Panic Attacks, which in 2021 is in its 29th year in print. The ‘IT’ character was developed to give an identity to the ‘voice’ of anxiety,

In other words, if you tell IT that there is a cause for worry, ITs role is to find a source of danger – whether real or imagined – and in doing so, IT remains on ‘high alert’, causing a state of agitation and anxiety. Conversely, if thoughts are of a positive, soothing and reassuring nature, IT can stand down. By introducing children to their faithful servant ‘Little IT’, children can learn to associate the nature of their thoughts with the degree of anxiety the thoughts produce. By learning to develop and master ‘thought-power’ (as instructed by Little IT) children are then more easily able to identify anxiety triggers and better manage their response. The aim of this work is to promote in children self-regulation, self-reliance and resilience. Meeting Little IT also contains a section of educational notes for parents and guardians to help with the explanation and guidance of the key lessons of anxiety management featured in the book. Meeting Little IT is written, illustrated and self-published by Bev and is available for sale at several local venues, including FOLA’s bookstore Goulburn Valley Books (5% of sales to go to FOLA) and 20 free copies will be donated to local services. Retail price $20.

elcome to our new normal! We’re taking small steps to reopening as the restrictions on our movement within the state eases. We’re now also waiting on the density quotients to be more relaxed, so that we can invite more people in to enjoy our quirky store. In the meantime, we’re delighted to be opening from 10am-ish Saturdays in December, in conjunction with offering a street stall out front of Rustic Simplicity, featuring different weekly makers’ artisan wares. We will have one of our makers, Nelena Piu of Wintu (affectionately known as

‘The Bag Lady’), with us on 23 and 24, 27 and 28 December. Wintu is renowned for its repurposed blanket and vintage/new fabric skirts, tops and repurposed blanket hoodies as well as handmade scarves, handbags, face masks (men’s, women’s and kids – including Christmas designs). Handmade Christmas fabric purses and pouches are great for teacher gifts and stocking stuffers. We also have the regular Christmas range of scrunchies. Tie-dye is back in too – socks & tops! And after venturing into health and beauty products with her all-natural hand sanitiser, Nelena has been inspired

to continue developing this range, with a whole host of new products, coming soon. My 2022 Calendar with local images is out now and a wide range of mounted local image prints are available in store too. I look forward to seeing you soon!
