issue of the

Well, it’s Solstice as I write, and we are officially summer and the longest day. Sigh. I hope you have some lovely plans for summer and that we all get some of that beautiful golden orb in the sky shining down on us a little bit more. These next couple of months are often quiet with directories and folk taking holidays, but we have our regulars and some new businesses joining us. As you’ll see inside, there’s plenty to keep you occupied reading with a cuppa, and regular and new businesses to call on when you need. Please do remember to mention that you found a business in the Murrays Directory so that business owners know their advertising is working for them. And remember too, your feedback about the directory, with any helpful suggestions is always welcome. Until next time, happy summer days to you.

Motoring First Drive: Range Rover Evoque Convertible

Four years after its concept debut, Range Rover’s Evoque convertible has come to fruition. Its hard top sibling has already sold more than half a million units since it was launched in 2011 and over 1,500 orders have so far been placed for the convertible variant. What is it? The Evoque convertible is the world’s first convertible compact SUV. Based on the same platform as the Evoque, and featuring much of the same spec, the convertible looks luxurious. The car’s chassis has received strengthening in order to maintain the car’s torsional rigidity, despite its lack of roof. What’s under the bonnet? A 2.0-litre turbocharged Ingenium diesel engine powers the 4x4, putting out 180PS and 430Nm of torque through the Efficient Driveline four-wheel-drive system. This system varies the flow of torque between the front and rear wheels in different driving conditions. Fuel economy is a modest 49.6mpg while the diesel emits 149g of C02 per kilometre, 6

making it theoretically one of the most fuel efficient Range Rovers available. The 9-speed automatic gearbox is from the standard Evoque. The added weight of the chassis – 1,967kg compared to the coupe’s 1,690kg – is noticeable when accelerating out of corners, though switching into its semi-automatic function and making use of the steering wheel mounted paddles proves slightly more responsive. What’s the spec like? A 10.2inch touchscreen allows the driver to navigate using easy pinch and swipe motions even whilst driving. However, it can prove difficult to read when the roof is down. Safety is accounted for by hidden aluminium roll over bars, which automatically deploy in the event of an accident. The convertible is not just a summer fancy. Boasting a 251litre boot, 500mm water wade ability, all terrain progress control and a ski hatch, it is a comfortable and relatively practical drive. The roof can operate at speeds of up to 30mph and, unlike some other convertibles, neither rear visibility nor boot capacity is compromised when the roof is folded down. Any rivals? Like for like, the Evoque convertible has no rivals. It is likely to draw a customer base from fans of luxury D-segment convertibles, and drivers of the original Evoque are also expected to be tempted.

By James Baggott

What’s it like to drive? The 9-speed gearbox feels too sluggish for the convertible, due to the weight of the strengthened chassis. However, in its position as the new it-car for fashionistas, it is unlikely that the convertible will be tackling much more than the occasional country road. Acceleration to 60mph takes 9.7seconds while the vehicle tops out at 121mph and steering is reassuringly firm at both high and low speeds. Wind noise is reduced in convertible form thanks to clever aerodynamics and an optional wind deflector, meaning that noise and buffeting in the front of the cabin is limited, and audible conversations can be held even at motorway speeds. Verdict As 4x4s go, the Evoque convertible wouldn’t be the obvious choice. Practicality is seriously limited, and realistically the model would only provide a comfortable long distance journey for two. But drivers wanting the benefits of both a 4x4 and a soft top can’t go wrong. Perhaps the model could do with some refinement, but for the first of its kind it will certainly set a precedent.

GARDENING

Tackling Troublesome Weeds Why is it that weeds always seem to grow faster and more vigorously than pretty well anything you actually choose to plant in your garden?

T

op of my weed hate list is hairy bittercress (Cardamine hirsuta), which produces a little rosette of leaves topped with a short spike with tiny white flowers, and I despise it because it spreads so quickly. Weeds are typically described as ‘any plant which is growing in the wrong place’ such as your flowerbeds, your vegetable garden, your shrubbery or your lawn. So what makes weeds such a nuisance? • They feed and take up moisture in great quantities and sometimes compete actively with nearby garden plants. • They can create shade and stunt the growth of nearby plants. • Those with a ground-cover like effect can cause the growth of garden plants to be distorted or held back. • Weeds may harbour pests or diseases. So what can you do to try to minimise the problems they cause without spending hours with a hoe or sprayer? • Get on top of weeds early in the year removing as many as possible before your garden plants start to grow strongly makes weeding easier and cuts down on the amount of competition the weeds cause. A hoe is one of the quickest ways to effectively kill off most annual weeds, but it needs to be a good one. • Disturb the soil as little as possible when you weed to prevent dormant weed seeds from germinating. • Some people avoid anything other than an early weeding and a late weeding, as they find that regular weeding seems to bring more seeds to the surface and encourages germination.

8

• Remove your weeds before they set seed. • Avoid composting any weeds which are setting seed, have set seed or have particularly pernicious and resilient roots (dock and dandelion are classic examples of these). • When removing deep-rooted weeds such as dock and dandelion, always make sure that you take out every fragment of root, as each piece left behind has the potential to form a new plant. The best tool I know for removing dandelion roots is my little redhandled weeder, see www.pippagreenwood. com/products/good-growing for more information. • Don’t take a short cut by rotovating ground which is heavily infested with weeds such as dandelions, docks, nettles or couch grass, as you’ll be chopping up their roots and helping to create more plants! • If you want to sow annuals or vegetable crops directly and minimise later problems with weeds, then try the stale seedbed technique. Prepare the area you intend to sow well in advance of your proposed seed sowing date, which allows dormant weed seeds to germinate; remove the weed seedlings and then sow or plant up as you wish. This should give you fewer problems later on. • Many weeds can be kept at bay if you cover the soil surface with two to three inches (5 – 7.5 cm) of mulch. • Use weedkillers with caution and ensure you choose one appropriate for the problem you have. Weedkillers are designed to kill off plants and they can do a lot of damage if allowed to contaminate your garden. By Pippa Greenwood www.pippagreenwood.com

Summer Reads There are few things better than relaxing on a sun lounger in the garden with a good book. If you’re looking for some inspiration for your summer reads, we have plenty to tempt you with this month. Flawed – Cecelia Ahern A book which examines the idea of perfection, Flawed focuses on Celestine, who lives in a world where nothing less than perfection will be tolerated. Infractions come with a high penalty – offenders are branded as ‘flawed’ and become second class citizens, for life. Celestine knows how to play the game, but a moment of compassion towards one of the flawed has dire consequences. Celestine could now be branded herself. Bestselling author Cecelia Ahern has delivered another cracker. This one’s aimed at a young adult market, but definitely has crossover appeal.

The Hanging Club – Tony Parsons There’s a band of vigilantes on the loose in London. With victims including a paedophile and a hate preacher, the killers are seen by many as heroes – delivering justice where the law has failed. But it’s DC Max Wolfe’s job to stop them. This is the third of Parsons’ books to feature DC Max Wolfe, and could well be his best yet. Ideal for fans of Lee Child and Patricia Cornwall, along with anyone else who loves a good crime novel, The Hanging Club will leave you questioning your own moral code. Gripping. My Name is Leon – Kit de Waal When nine year old Leon gets taken away from his mum, he thinks that’s as bad as it can get. But Leon’s little brother, Jake, is young enough to be adopted. Battling with grief for the loss of his brother, Leon finds an unlikely group of friends at his local allotments. However, this is the early eighties, racial tension is high and Leon is determined to find Jake, whatever the cost. This is one of those ‘just one more chapter’ books you’ll keep reading until the sun has gone down and the tears have left

tracks down your cheeks. The Museum of You – Carys Bray Single dad Darren Quinn’s priority is his daughter’s happiness. But what twelve year old Clover wants most is the one thing that causes Darren the most pain – the story of her mother. So Clover has decided that this summer she’ll find her own answers. Rich in description and dialogue, with endearing, believable characters, this is a very enjoyable book to while away those summer evenings. The Sudden Appearance of Hope – Claire North No one remembers Hope Ardern. Not her best friends, her parents, or the people she’s running from. Within a few seconds of encountering her, their memory is wiped clean. It’s as if she doesn’t exist. But they leave their impression on her. Now she’s on a personal mission to destroy a new computer program that’s turning people into ‘perfect’ versions of themselves, wiping their personalities in the process. A great book, which raises some serious questions about how far people will go in their quest for perfection.

Croatia

The Plitvice Lakes By Solange Hando

Set up in 1949 in northern Croatia, the Plitvice Lakes are the oldest national park in the country and the largest, covering close to 300 square kilometres.

There, on the edge of the rugged Dinaric Alps, rocks and water have created a unique landscape protected by UNESCO and one of the most impressive karst formations in the world. Yet just 400 years ago, the whole area was inaccessible, draped in mystery and legends from buried treasures to the kind-hearted Black Queen who gave water to the poor. In the 18th century, it was described in turn as ‘five beautiful lakes in the densest wood’ and ‘the devil’s garden’. But those who come here today know that neither is true: there is no devil in this natural paradise but there are 16 beautiful lakes for all to see. The twelve upper lakes and four lower lakes are all connected, divided by natural limestone barriers shaped by water, wind and plants and creating myriad waterfalls. The highest is the aptly named ‘Large Waterfall’, swollen by the Plitvica river and tumbling down 78 metres into the final section of the lower lakes. Just a stone’s throw away, the source of the Korana is said to be the most beautiful in karst country, heading through the canyon towards a bucolic village dozing in flower meadows. Meanwhile, footpaths and single-file boardwalks meander from one magical lake to 12

the next, festooned in waterfalls, canyons and caves, and whatever the crowds, little disturbs the peace but the rumbling of cascades and bird song. There are popular viewpoints and secluded corners, steps here and there and for those who want to take it easy, rides on an electric boat across Lake Kozjak or a panoramic train in the upper levels. But nothing beats a leisurely stroll where lush scenery and fresh air quieten mind, body and soul. The lakes beckon, more bewitching the closer you are. Azure, silvery grey, deep blue or emerald green, shimmering in the sun or mirroring a darkening sky, they are for ever changing as light and shade filter through the abundant foliage along the banks. The lower lakes glitter through a rocky canyon, the upper lakes nestle among forested slopes rising to 1,279 metres. Mediterranean and Alpine plants mingle with fir, spruce and beech and in the remote areas of the north-west, trees are up to 700 years old. Over 1,100 plant species have been recorded in the park, including 75 endemic and 55 different orchids. Gentians and lilies add colour in the undergrowth and grassy bells and wild hyacinths grow alongside endangered species such as the carnivorous round leaf sundew. Spring heather, beard grass and mint are also found along the lakes where maple and sumac trees turn all shades of red and gold in autumn. Wild cats, lynx, deer and wolves all live in the park but the brown bear has become the true symbol of the Plitvice Lakes. Yet visitors on a day trip from the beach are far more likely to spot the butterflies, an Orange Tip, a Painted Lady, a Red Admiral, to name just a few, and at least some of the 105 species of birds, woodpeckers, grebes, larks, finches and others, or perhaps a rare golden eagle hovering in the thermals high above the glistening lakes.

The Greater Outdoors The gadgets that make Summer sizzle

Let’s be optimistic and pray for a long hot summer. What gadgets can help your summer really sizzle? From making parties more entertaining to ensuring your barbecued food is full of flavour and not food poisoning, gadgets are here to help you make the most of every second of summer. One of the big trends this year is solar power - not because Britain has suddenly got sunnier, but because the combination of more efficient solar technology and low-power technology such as LED lights means solar gadgets work properly, even when it’s a bit dull. You’ll have seen endless solar lights and spotlights, but how about solar-powered water fountains, bird baths or other water features? You can spend from around £50 to several hundred pounds depending on how complex the feature is and what it’s made of: cheap ones tend to be made of resin, while natural stone takes you into the hundreds. Solar power is also very good for charging phones, which is handy if you’ve embraced streaming music and use your smartphone to play sounds in the garden. It pays to shop around: for example the PowerBee Executive charger, 14

which has an RRP of £39.99, is widely available for as little as £13.99. While you’re at it, you could buy yourself a solar powered wireless speaker too: the Gemtune Kinna speaker is £40, while the larger and longer range Jabadoo wireless outdoor solar speaker is £99. Even if you don’t go solar, a wireless speaker is an excellent investment for summertime sounds, as it means you don’t need to keep your music close to a power point. For many of us summer means outdoor cooking, and of course there are plenty of products designed just for us. The Looftlighter (£48) and BBQ Dragon (£46) use super-heated air to get your barbecue started quickly, while the iGrill Mini (£43) is a Bluetooth thermometer that tells your phone when your food is ready. If money’s no object, the SmartGrill offers voice control, recipe apps and notifications on your phone or tablet. The bad news: the smallest one is around £1,400 and the most expensive model, the 42-inch, is nearly £7,000. Gadgets aren’t just about grilling, and they don’t all require a second mortgage either. Automatic wine coolers cost from around £50 and can chill a bottle of white wine in

less than 10 minutes, while the lower-tech bottle wraps sit in the fridge until you need them, chill bottles in around 15 minutes and cost £9.99. Beer drinkers can join in too: the Xcellent Global Beer Chiller Chilling Sticks, stainless steel rods you freeze and then stick in your beer bottles, are £9.99 for two. The chillers work in some soft drink bottles too. We started off with optimism, but let’s add some realism too: the British weather being what it is, it’s a good idea to have early warning of incoming bad weather. An outdoor weather station provides just that, and you can choose from traditional clock designs with integrated barometers and thermometers from around £25 or go high-tech with a wireless weather station, which can cost from around £25 to several hundred pounds depending on the features you want to have. Or you could always go on Amazon and buy the Amscan PPP GB Umbrella Hat, which offers the protection of an umbrella with the hands-free convenience of a hat for just £2.99. Marinated Pepper Platter Serves 6 as starter or part of buffet

Ready in 1 hour, plus marinating

A really summery platter of grilled peppers with sun-dried tomatoes and mozzarella pearls. Make a day in advance and chill in the fridge until required. Serve with crusty bread for a simple starter or as part of a summer buffet.

Ingredients: • 6 mixed red, yellow and orange peppers • 1 x 280g jar sun-dried tomatoes in oil • 2 x 125g tubs mozzarella pearls, drained • 2 tbsp capers, drained and rinsed • Salt and freshly ground black pepper • 3 tbsp balsamic oil • Handful fresh basil leaves, shredded

TIP

Instead of mozzarella try another cheese, such as crumbled feta or slices of Brie or Camembert. 16

Halve all the peppers, leaving the stalks on. Remove and discard the pith and seeds. Place all the peppers, skin-side up, on a grill pan and grill under a moderate heat for 7-8 minutes, until the skins are blistered and charred in places. Leave until cool enough to handle, then peel off as much of the skin from each pepper as you can. Place all the grilled peppers, cut-side up, on a large platter. Drain and roughly chop the sun-dried tomatoes (reserving the oil). Fill each pepper half with some of the tomatoes, along with the mozzarella pearls and capers. Season with salt and freshly ground black pepper. Mix the reserved sun dried tomato oil with the balsamic vinegar and pour over and around the peppers. Cover and leave to marinate in the fridge for a few hours or overnight. Serve garnished with the shredded basil leaves.

Get healthy! Make new friends! Come for a walk in Inch Park. Ageing Well is a project run by Edinburgh Leisure and funded by NHS Lothian. It’s a health initiaitive that recognises the beniefits of walking for wellbeing and social connection. Walking is one of the best ways to keep body and mind in good health. It’s easy to do, it doesn’t need special skills or equipment, it can be done anywhere and anytime. Plus, if you walk in a group you meet new people and have a chance for a good “blether”, followed by a cuppa and chat at a local cafe. Ideally we should all walk for about 30 minutes most days, but many of us can’t quite manage this much - yet we would like to be more active. Wednesday morning starting from 6th April. Just come along to Cameron Toll ( meet in the Main Concourse outside Sainsburys) for a 10.30am start. It’s free, it’s open to everyone over 50, and there will be qualified walk leaders to guide your every step. If you have questions phone the Ageing Well team 0131 458 2183 or e-mail: ageingwell@ EdinburghLeisure.co.uk

GILMERTON SINGERS is the name of a community choir that meets every Friday morning at the Society Hall at Gilmerton Crossroads. It was started around 18 years ago by three ladies who loved singing, with encouragement from the Community Centre management. Our Musical Directory is Nick Hayes and the choir is made up at the moment of 20 women and 2 men. When the choir was started, one of the aims was to give something to the community and we do this by performing

at Care Homes. Community Centres, and local fairs and the like. Singing has been proved to increase health, wellbeing and quality of life. Benefits may include improved breathing, easing depression and keeping memory active. Because we are a small group, rehearsals are relaxed and friendly. Most people, when asked if they would like to join a choir, say ‘I can’t sing’. I’ll bet they sing in the shower, while washing the dishes or just for fun. Well, you don’t have to be a Pavarotti or Maria Callas to be an important part of a singing team. We do not audition prospective members and reading music is not necessary as we learn tunes by ear. If you don’t know what range your voice is you just join the group where you feel comfortable - we have a couple of ladies who sing with the tenors. If you would like to find out more about us, phone Muriel on 0131 664 1220 or email muriel.connolly@sky.com or call in at the Society Hall any Friday morning from 10amnoon. Hope to see you soon!

Captain America

By David Tibbs

Civil War

T

he current Marvel Cinematic Universe was first introduced to us in 2008 by Robert Downey Jr’s wise-cracking Iron Man and Captain America: Civil War, the 13th movie in this seemingly never-ending franchise, might well just be the best entry in we’ve seen since then. Although baring the Captain America moniker, this is as much an ensemble piece as the two Avengers films we’ve been treated to so far. James ‘Bucky’ Barnes (Sebastian Stan), the titular Winter Soldier of the second Captain American installment released two years ago, and Iron Man share top billing with Chris Evans’ Captain. A mishap during a mission in Lagos leads to the death of several civilians, which is the last straw for the UN who want to reign the avengers in and establish a panel to oversee and control them. Iron Man, seeing that the team is a weapon that needs some guidance, is on board while the Captain, who has had bad experiences with authoritative organisations in the past, thinks otherwise and is willing to go to war over it. They are each backed by some familiar faces from throughout the Marvel movieverse including Hawkeye (Jeremy Renner), Black Widow (Scarlett Johansson) and Vision (Paul Bettany), while Paul Rudd’s Ant-Man appears briefly to add some levity to proceedings. There are also a couple of new characters introduced, Spider-Man (yes, that Spider-Man) and Black Panther, who will both receive their own films in the next couple of years. This team set-up

22

leads to one of the best action set pieces I’ve seen in a superhero film. The Avenger films sometimes suffered from having too much going on, and although there are maybe one too many characters here almost every one of them gets to showcase their skills in a very impressive way. Spider-Man is the scene-stealer here, Tom Holland seeming much more natural in the role than the older Andrew Garfield and the even older Tobey Maguire. Meanwhile, Barnes is being hunted by Daniel Bruhl’s Helmut Zemo. Their eventual meeting will reveal some hidden truths that make the climactic fist fight between him, Tony Stark and Captain America refreshingly low-key. The world isn’t at stake, there are no aliens threatening humanity and no metropolises being raised to the ground. This is personal between these three men, and what’s more, everything isn’t reset when the credits roll. This is something certain other superhero franchises (read: Batman vs Superman: Dawn of Justice) haven’t quite grasped, you need progression or nobody cares. It isn’t all good: the movie is probably twenty minutes too long, although if you asked me what I’d like to lose I don’t think I could tell you; the score does absolutely nothing for me and a couple of the characters seem rather surplus to requirements, but overall this is what a superhero blockbuster should look like. Next up, Benedict Cumberbatch’s Doctor Strange (Nov. 2016).

Beauty

A Touch of Indulgence by Kate Duggan www.kateduggan.co.uk

Work and family demands can make it pretty difficult to find time to treat ourselves. Thankfully, our top picks this month make indulgence easy. I have very dry skin, so tend to use rich body butters. But sometimes I like something a bit lighter, that doesn’t take half an hour to sink in. Odylique’s Rose Velvet Body Lotion, £29, has proven a godsend. It’s a powerhouse of botanical ingredients, including aloe, avocado, cocoa bean, coconut and rose petals, smells gorgeous and absorbs quickly. My skin just drinks it up, and feels much softer and more hydrated for the rest of the day. Plus, as it’s 100% natural (93% organic), it’s gentle enough to use on even my daughter’s sensitive skin. Continuing on with the rose theme, another of my beauty essentials at the moment is Mixtress’s It’s All Roses Toner, £10.95. I find most 24

toners too drying for my skin, but this one is really hydrating. The main ingredient is rose water, from petals that have been steamed to extract the oil and juice. Unsurprisingly, it smells beautiful and is perfect for freshening up on a hot day. I like to keep it to hand to spritz if my skin feels dried out by central heating or air-conditioning. It’s great at removing any last traces of makeup, and leaves skin feeling wonderfully soft. I try a lot of cleansers as a beauty writer, but Akamuti’s Sweet Orange Facial Cleanser, £7, is one of my all-time favourites. The sweet orange oil works as a natural exfoliator, to wipe away dead skin cells and leave me with softer, ‘glowier’ skin. Other natural oils, including sweet almond and olive oil, ‘feed’ my skin and leave it softer and plumper. It’s effective at removing makeup (including mascara), but gentle enough for even my sensitive skin. Plus, a little goes a long way, so it’s superb value for money. A new lipstick always feels like a real indulgence. More so than a mascara or pretty much any other cosmetic product. A pop of colour and I’m set for whatever lies ahead that day.

To advertise call 0131 283 2071 or email karolyne@murraysdirectory.com

Clarins’ new Joli Rouge Brilliant Lipsticks, £19.50, are a real treat. Formulated with organic marsh samphire extract and mango oil, they’re very hydrating, so leave lips feeling utterly pampered. With a choice of 12 colours, there’s one to suit any skin tone. Guava gets my vote for daytime wear, though coral tulip comes a very close second.

to remove it. Natural ingredients sourced from around the globe include Indian Commiphora, a tree resin that works to stimulate skin’s own anti-ageing Hyaluronic Acid. The mask helps to tighten, lift and plump skin, so you look fresher-faced in the morning, even if the kids/dog/partner woke you up several times in the night.

I’m a bit lazy when it comes to skincare, so I do love a product that makes it easier. Plantscription Powerful Lifting Overnight Mask, £52, by Origins does just that. As implied by the name, you massage it into your skin before bed, then forget about it. It absorbs into your skin, so you don’t need to faff around with cotton wool pads or a muslin cloth

Tax Q&As Dividend planning

Answer

businesses and charities in helping them to grow by cutting the cost of employment. Eligible employers can claim the allowance, which reduces their Employer’s National Insurance bill. Previously the allowance has been £2,000, but from April 2016 it will rise to £3,000. Unfortunately, simultaneously the Employment Allowance will no longer be available to limited companies with a single director, and no other employees. If you’d like to discuss your personal tax affairs in more detail, please contact us to be put in touch with your local TaxAssist Accountant.

But in the Summer Budget, it was announced that from April 2016 the tax credit would be replaced by a Dividend Tax Allowance of £5,000. Dividend income over the Allowance will be liable for tax at the basic rate of 7.5 per cent, 32.5 per cent for the higher rate and 38.1 per cent for the additional rate.

Question

I’ve heard about these dividend tax changes coming in. I run my own limited company, should I be doing anything about it? Under the present rules, dividends have been the preferred way for business owners to pay themselves because they are paid net of a notional 10 per cent tax credit. This tax credit effectively meant basic rate taxpayers could enjoy their dividends tax-free.

Even under the new regime, dividends are still taxed at lower rates than other income and will continue not to attract National Insurance. But many people will see a rise in their tax bill. The effects of the dividend allowance are far reaching and planning what your company will pay you from April 2016 requires much more care and planning. I would therefore strongly encourage you to seek the advice of a professional, such as your local TaxAssist Accountant. One of the immediate things to consider, is whether it might be worth declaring some of your dividends in this tax year before the change kicks-in. Although it might meant you have a higher tax bill this year, the tax rates in force are likely to be lower.

Employment Allowance Question

What is the employment allowance for 2016/17?

Answer

The Employment Allowance was introduced in April 2014, for the purpose of supporting 28

Cake and Bake Chocolate Mousse Brownies Take the classic rich and squidgy chocolate brownie recipe a step further with a creamy milk chocolate mousse topping for the ultimate chocolate lover’s dessert!

Ingredients: BROWNIE BASE

• 150g dark chocolate, broken into pieces • 225g unsalted butter, diced

• 350g light muscovado sugar • 4 medium eggs, beaten • 1 tsp vanilla extract • 225g plain flour

MOUSSE TOPPING

• 100g milk chocolate, broken into pieces • 100ml double cream

• 1 large egg, separated

• Fresh raspberries, chocolate drops and mint sprigs, to decorate

Makes 12 Ready in 1hour 30mins plus cooling and chilling

TIP

Add a few drops of mint extract to the chocolate mousse mixture for an after dinner mint flavour. 32

1. Preheat the oven to 180C/fan 160C/Gas 4.

Grease an 18 x 28cm tray bake tin and line the base and sides with baking paper.

2. Place the dark chocolate & butter in a large

heatproof bowl set over a pan of simmering water & leave until melted. Remove from heat and stir until smooth. Leave to cool for 10 minutes, then whisk in the sugar, eggs & vanilla extract.

3. Sift over the flour and fold into the chocolate

mixture with a metal spoon. Pour the mixture into the prepared tin and level the surface. Bake for 45-50 minutes or until just firm to the touch - it should still be a little squidgy in the centre. Leave to cool completely in the tin.

4. To make the mousse topping, melt the milk

chocolate in a heatproof bowl set over a pan of simmering water. Remove from the heat, cool for 5 minutes then stir in the cream until smooth. Cool for a further 10 minutes, stirring occasionally, then beat in the egg yolk.

5. Whisk the egg white in a clean grease-free bowl

until holding stiff peaks, then gently fold into the chocolate mixture. Spread the mousse in an even layer over the top of the cold brownie and chill in the fridge for 3-4 hours (or overnight) until set. Remove from the tin and cut into 12 squares. Serve topped with fresh raspberries, chocolate drops and mint sprigs.
