NEWPORT CHRISTMAS PARADE embracing fun movie theme Coming off last year’s successful night time Newport Christmas Parade, the Cocke County Partnership/Chamber of Commerce is gearing up for Round 2 this year as the official kickoff to the holiday on Friday, Dec. 1 in downtown Newport. To add to the fun, the theme this year for parade participants — “A Griswold Kinda Christmas” — draws upon and embraces the 1989 Christmas film classic “National Lampoon’s Christmas Vacation” that starred Chevy Chase and Beverly D’Angelo as the patriarch and matriarch of the Griswold clan and their misadventures. And of course you can’t mention the film without recalling Randy Quaid’s uproarious turn as Cousin Eddie. The partnership is asking that everyone join the fun and in the spirit of the film remember the immortal words of Clark W. Griswold: “Nobody’s walking out on this fun old-fashioned family Christmas. We’re all in this together.” Online registration and information

is now available for those wishing to participate in the parade at www. newportcockecountychamber.com/ events/christmas-parade/. Applications will also be available at the chamber office or can be printed off the website. If you need assistance with registration, contact the chamber office at (423) 623-7201. The deadline to submit applications is Nov. 27 and the cost is $10 for floats, $5 for vehicles or horses and $5 for marchers (up to 15 people). After Nov. 27 entries will include an additional $10 late fee. However, late entrants will not be included in the script. Entry fees need to be submitted with the parade application. The parade route starts at Debbie’s Drive-In at 157 West Broadway on Dec. 1 at 6:30 p.m. and continues down Broadway, heading east through downtown Newport and finishes at Lincoln Avenue Baptist Church. “We look forward to celebrating this joyous time of year by facilitating this event for Cocke County,” CCP

The 2022 Newport Christmas Parade was held at night and featured several light-up displays.

Chamber of Commerce Director Lynn Ramsey said. “Our hope is that everyone will enjoy the season by supporting our community’s parade. Ramsey noted that the event will include the Cocke County High School band, floats, antique cars and tractors, children’s groups and other organizations from across the county. “Whether you plan to be a participant or spectator, we hope everyone enjoys this year’s parade and time with their families,” Ramsey said. The parade will also again be shown

live on Facebook, compliments of the City of Newport and will be available for later viewing on YouTube and the partnership’s web page. PARROTTSVILLE CHRISTMAS PARADE set for December 2 The Parrottsville Ruritan Club will host the annual Parrottsville Christmas Celebration and Parade on Saturday, Dec. 2. Parade staging will begin at Parrottsville Elementary School at 4 p.m. with the parade getting underway at 6 p.m. sharp. The parade will head out from the school and travel through downtown. Starting at 4 p.m., you can visit with Santa Claus at Parrott-LaRue-Myers Park. The parade is organized by Parrottsville Ruritan Club and its club members. Entry is free, but to submit an entry into the parade, visit parrottsvillechristmas.com and download the application, waiver and guidelines. POTATOES ARE THE STAR OF THIS IRISH DISH St. Patrick’s Day is a time to pay homage to Ireland’s patron saint and celebrate Irish culture and cuisine. Even though corned beef and cabbage is ubiquitous on this holiday, that meal really isn’t the most authentic Irish cuisine. There are plenty of other foods to dress the St. Patrick’s table if a person wants to dabble in Irish cooking. Many cultures have a variation on the potato pancake, and the Irish are no different. Boxty is a traditional Irish potato pancake. Individuals who want to include boxty in their celebrations can try this recipe, courtesy of Chef Pádraic Óg Gallagher of Gallagher’s Boxty House in Dublin. IRISH BOXTY Makes about 10 300 grams (approx. 10 1/2 ounces) raw potatoes, peeled 300 grams (approx. 10 1/2 ounces) cooked potatoes, mashed 300 grams (approx. 10 1/2 ounces) flour 10 grams (approx. 2 1/2 teaspoons) salt 850 ml (approx. 3 1/2 cups) milk 1. Grate the raw potatoes into a muslin cloth and squeeze as much liquid as possible into a bowl. Let the liquid stand for 20 minutes. 2. Gently pour off the liquid and keep the starch that settled in the bottom of the bowl. 3. Add grated potatoes to mashed potatoes and flour. Add starch and salt to mix. 4. Slowly add 3/4 cup of the milk to form a batter of pouring consistency. Depending on the potato, you may not need to use all the milk. If the batter is too heavy, add more milk. 5. Leave the batter resting for 30 minutes. 6. Drop a ladle full onto an oiled nonstick pan over medium heat and cook on the first side for 2 minutes (this depends on how heavy the batter is and how much you use). Check color (it should be a nice golden color) on the bottom. Adjust heat if necessary. 7. Turn and cook on the other side for 2 to 3 minutes more. 8. CAJUN CORNBREAD DRESSING Cook time: 40 Min Prep time: 20 Min Serves: 6-8 Ingredients: SEASONING MIX 2 tsp salt 1 1/2 tsp white pepper 1 tsp red pepper 1 tsp oregano 1/2 tsp onion powder 1/2 tsp thyme DRESSING 1 stick unsalted butter 3/4 c onion, chopped 3/4 c bell pepper, chopped 1/2 c celery, chopped 1 Tbsp garlic, minced 2 bay leaves 1 lb smoked sausage, chopped 1 c chicken broth 5 c crumbled buttermilk cornbread 12 oz evaporated milk 3 lg eggs Directions: Test Kitchen Tips: There is a lot of red pepper in this cornbread dressing. If you’re sensitive to spice, adjust as needed. 1. For seasoning mix, combine and mix ingredients in a mixing bowl and set aside. 2. In a large saucepan, melt butter and add onions, bell pepper, celery, garlic, and bay leaves. Cook over high heat. Saute for about 2 minutes, stirring frequently. 3. Add the seasoning mix and continue cooking for 5 minutes. 4. Stir in the sausage and chicken broth. Cook 5 minutes more stirring frequently. 5. Turn off the heat and remove the bay leaf. 6. Add the cornbread and milk. 7. Add beaten eggs. 8. Spoon dressing into a greased baking dish. 9. Bake at 350 F until browns on top for about 40 minutes.

CAJUN CORNBREAD DRESSING Cook time: 40 Min Prep time: 20 Min Serves: 6-8 Ingredients:

Cook time: 1 Hr Prep time: 1 Hr Serves: 24-36 Ingredients: 3 pkg cornbread plus ingredients per package 10 c shredded bread 1 1/2 c diced onion 1/2 c diced celery 2 lg hard-boiled eggs 1 1/2 tsp rubbed sage 1 tsp salt 1 tsp pepper 4 can chicken broth (14.5 oz each) 1/2 c turkey broth Directions: Test Kitchen Tips: If you don’t have a large pan, divide the dressing among the pans you have or the veggies will not cook. If the top is brown, but the veggies are not done, cover the pan with foil and continue baking. 1. Prepare and bake all three cornbread packages according to package directions. Cool completely. 2. Shred the bread, about the size of a quarter, and measure the amount needed. Then spread on a baking tray to toast in the oven. No need to brown them. It shouldn’t take any longer than 10 minutes at 350 F. 3. Dice onion, boiled eggs, and celery. Then combine in a large mixing bowl. We don’t cook down the veggies in our family. This will later be the same bowl you’ll add your dry components. Make this a deep big bowl. 4. Break up cornbread and combine it with the diced vegetables and eggs. Then the toasted bread. Toss with your clean hands until it looks even. 5. Now pour all of your broths into the bowl. Add pepper, salt, and sage. Stir until the sage is well broken up. 6. Empty the bowl mixture into an 11 x 16 x 2.5 baking pan. 7. Level the pan out. Place the pan in the oven that’s been preheated to 350 F. Bake for 1 hour. Check toward the end, using the toothpick test. This should slice and move from pan to plate pretty solid. If it looks jiggly when you pound the bottom, cook for another 15 minutes.

THIS EGGPLANT DISH IS PERFECT FOR A CROWD MOUSSAKA Serves 25 6 pounds eggplant 1 cup olive oil, approximately 1 pound onions, chopped 2 tablespoons garlic, finely chopped 6 pounds ground beef or lamb 1 can tomatoes (29 ounces) 1/2 bottle red wine 1/2 bunch parsley, chopped 1/2 bunch dried oregano 2 tablespoons cinnamon 2 teaspoons nutmeg 1 teaspoon salt and pepper Béchamel sauce 8 ounces butter 1 cup flour 2 quarts milk Nutmeg Salt and pepper

Directions: Slice the eggplant into 1/2-inch round slices and sprinkle with salt. Let the eggplant rest for about one hour to draw out the liquid. Pat dry, brush each slice with olive oil and arrange overlapping on baking sheets. Bake for about 20 minutes or until soft. Set aside. This step may be done in advance. If you prefer to grill the eggplant, brush both sides with olive oil or cooking oil and cook on a hot grill for about two minutes per side. Using one or two large skillets, heat about 1/4 inch of oil and saute the onions and garlic until softened and set aside. Do this in batches, as necessary. Using the same pan, add additional oil and saute the beef or lamb until lightly browned. As each batch browns, place it in a very large pot. Add the cooked onion and garlic mixture, tomatoes, red wine, parsley, oregano, cinnamon, and nutmeg to the browned meat. See MOUSSAKA | 22

GINGERBREAD WITH HISTORICAL ROOTS Gingerbread is a popular sweet that often finds its way onto holiday dessert tables. Some people bake and construct lavish gingerbread houses, while others make cut-outs of gingerbread people to turn into cookies. Legend suggests that gingerbread originally landed in Europe in 992 with an Armenian monk named Gregory of Nicopolis, who brought a honey-and-spice cake to other monks in France, where it quickly became a favorite and was considered a “food from heaven.” Historians are not really sure if the original gingerbread had any ginger in it at all. In fact, typical medieval recipes for gingerbread include no ginger and the French would later refer to it as “pain d’epices,” or spiced bread. Gingerbread once was a treat only for the elite, but as the masses discovered it, recipes evolved to include soft cakes to hard biscuits and everything in between. The following recipe for medieval “Gingerbread” produces a chewy, almost candy-like texture with potent ginger flavor. Try it for holiday gatherings, courtesy of “Tasting History” (Simon Element) by Max Miller. GINGERBREAD Makes 20 to 25 1-inch pieces 12 to 14 slices (238 g) stale white bread 1 cup (330 g) honey 1 tablespoon ground ginger 3/4 teaspoon ground long pepper (a spice similar to black pepper but with more heat that typically must be ordered online) 1/2 teaspoon sandalwood powder, if desired, for color(one drop of red food dye can be used instead) 1/2 cup (50 g) or less sugar (enough for sprinkling) 20 to 25 whole cloves Gold leaf

Directions: 1. Either with a food processor or by hand, grind the bread into coarse bread crumbs. Commercially bought bread crumbs will work as well, though the texture from homemade bread crumbs is preferable. 2. Pour the honey into a large saucepan set over medium heat, and heat to a rolling boil; the honey will become like syrup. Note that it will boil up quite a bit, so do not use a small saucepan. Slowly add the bread crumbs to the honey while stirring. The mixture should come together and begin to pull away from the sides of the saucepan. Continue to mix until fully combined. Remove the pan from the heat and quickly stir in the ginger, long pepper and sandalwood, if desired. Turn the mixture out onto a sheet of parchment and spread with a spatula. Then, place another sheet of parchment and, with a rolling pin, roll the gingerbread out to about 1/2-inch thick (1.2 cm). Wrap in plastic wrap and chill in the refrigerator until stiff, about 2 hours. 3. Once the gingerbread is cool, sprinkle sugar on top and cut into 1-inch squares or whatever shape you like. Keep in mind that each piece should be bite size, as they are very strong. They will also be quite sticky, so handle them as little as possible. Insert a whole clove into each piece of gingerbread and fleck with gold leaf. Leave the clove in until serving, then remove it just before eating.

Simmer slowly for about 30 minutes. Season with salt and pepper. While the meat mixture simmers, prepare the béchamell sauce. Melt the butter in a large pot until it is bubbling. Whisk in the flour gradually and continue to stir for about 8 to 10 minutes over low heat without browning the mixture. Heat the milk in a large pan or in the microwave. Gradually add the hot milk to the flour mixture, stirring continuously. Add the nutmeg, salt and pepper to taste. Bring to a boil, lower the heat, and whisk a few minutes until thickened. Taste and correct the seasoning. Oil two 9 x 13-inch baking pans or one large roasting pan. Using half of the eggplant slices, distribute them on the bottom of each pan. Top with meat mixture followed by remaining eggplant. Spread the sauce evenly over the eggplant. Bake in a moderate oven (325 F) for about one hour. The béchamel should be lightly browned. Let the moussaka sit about 10 minutes before cutting into squares. It may be served at room temperature.

GIVE A BELOVED SIDE DISH A FRESH NEW TASTE THIS THANKSGIVING A typical Thanksgiving dinner table is loaded with familiar foods. Turkey, of course, takes center stage, but side dishes also garner their fair share of attention during Thanksgiving dinner. Hosts don’t have much room to experiment when preparing turkey for Thanksgiving dinner. Though turkey can be roasted, slow cooked, smoked, or even fried, recipes for seasoning the bird are likely to feature similar ingredients. Hosts have much more leeway when it comes to side dishes. New and bold flavors can add a little something special to side dishes this Thanksgiving, and guests might appreciate a break from the norm. That’s just what this recipe for “Irresistible Basil Mashed Potatoes” from Marlena Spieler’s “Yummy Potatoes” (Chronicle Books) provides. The fresh basil can add some unique flavor to a beloved side dish.

IRRESISTIBLE BASIL MASHED POTATOES Serves 4 to 6 2 pounds floury, baking-type potatoes, peeled and cut into chunks Salt 2 to 3 cups fresh basil leaves of any type (2 to 3 ounces - a nice big bunch) 2 cups heavy (whipping) cream or half-and-half 4 tablespoons butter Black pepper Directions: 1. Place the potatoes in a saucepan and fill with water to cover. Add a big pinch of salt. Bring to a boil and cook, covered, for about 10 minutes, or until the potatoes are just tender. Drain, return to the heat and shake for a few minutes to dry them out; turn off the heat, cover the pan and keep warm. 2. Meanwhile, blanch the basil. Plunge it into a saucepan of boiling water, cook a moment or two until the leaves wilt and slightly change color and lift out of the pot using a slotted spoon, then plunge into a bowl of ice water. Leave for about five minutes or until it turns brightly colored, then lift from the ice water. 3. Heat the cream in a saucepan until bubbles form around the edge of the pan. 4. Squeeze the basil in your hands gently to rid it of excess water from cooking. Place in a food processor and whirl to purée. Slowly pour the hot cream into this puréed basil and whirl until it forms a fragrant, pale green cream. 5. Coarsely mash the potatoes with a masher, then add the basil cream and mash it in; work in the butter, and season to taste with salt and pepper. If you’re serving duck or lamb, serve the potatoes with a drizzle of the port reduction around the edge.

From POMOFORI | 26 Freshly ground black pepper 8 ounces Provatura cheese (or fresh mozzarella) 3 large egg yolks 6 to 8 medium fresh tomatoes 2 or 3 tablespoons extra-virgin olive oil Ham broth or crusty bread, if desired, for serving 1. Preheat the oven to 350 F. 2. Mix the parsley, onion, sorrel, and mint together in a medium bowl. Tear the prosciutto into small pieces, then mix into the herbs and add salt and pepper to taste. Grate the cheese into the mixture, then add the egg yolks and mix together to form a paste. 3. Slice off the tops of the tomatoes and scoop out the inside with a spoon, discarding the tops and insides of the tomatoes. Stuff the hollow tomatoes with the herb mixture until full but not packed too tightly. The filling should be flush with the top of the tomato. 4. Add enough olive oil to cover the bottom of an oven-save frying pan and set over medium heat. Pan-fry the tomatoes, bottom down, for 2 to 3 minutes, then use tongs to quickly flip them over and to prevent the filling from falling out. Panfry top down for 2 to 3 minutes. Then place the frying pan into the oven and bake for 10 minutes. Remove the pan from the oven and serve hot. The original recipe says these can be served with a ham broth, but they also can be served with a bit of crusty Italian bread, if desired. Cook’s note: The quantities of the herbs and onion can be modified to suit your preference.

SIMPLIFY YOUR FEAST BY SLOW COOKING YOUR THANKSGIVING TURKEY Food features prominently in many holiday celebrations, but perhaps no holiday is more closely associated with eating than Thanksgiving. In fact, Thanksgiving and food are so closely connected that many people lovingly refer to the holiday as ÒTurkey Day,Ó which is an homage to the popular main course that finds its way to millions of Thanksgiving dinner tables across the country each year. Side dishes abound on Thanksgiving dinner tables, but turkey still takes center stage. That reality can put some pressure on hosts tasked with preparing the meal for their family and friends. Unlike some other dishes that require a laundry list of ingredients and lots of prep work, turkey is a relatively hands-off main course. However, home cooks know a dried out turkey is not on anyoneÕs holiday wish list. Slow cooking can help to avoid such a result. This recipe for ÒHoliday Turkey,Ó courtesy Andrew SchlossÕ ÒCooking SlowÓ (Chronicle Books), calls for slow cooking the bird. Such an approach should result in a delicious and mouth-watering main course that satisfies anyone whoÕs anxious to sit down at the Thanksgiving dinner table this year.

HOLIDAY TURKEY Makes 15 servings 1 fresh turkey, about 15 pounds, preferably free-range 1 tablespoon olive oil 1 quart apple cider 2 teaspoons dried poultry seasoning Coarse sea salt and freshly ground black pepper Directions: Remove the giblets from the turkey and discard (or save for another use). Rinse the turkey inside and out and pat dry with paper towels. Rub it all over with salt and pepper. Refrigerate, uncovered, for at least 12 hours and up to 24 hours. During that time, the surface of the turkey will become visibly dry and the skin will tighten; this encourages a nice crisp skin on the finished bird. Remove the turkey from the refrigerator 1 hour before you plan to start roasting. Preheat the oven to 450 F. Put the turkey on a rack set in a large, flameproof roasting pan. Drizzle the oil over the top. Roast for 1 hour. Reduce the oven temperature to 175 F. Pour the cider into the roasting pan and sprinkle the poultry seasoning in the liquid. Continue roasting until an instant-read thermometer inserted into the thickest part of a thigh (but not touching bone) registers to 170 F. Transfer the turkey to a carving board, tent loosely with aluminum foil, and let rest for about 15 minutes (see tip). Meanwhile, skim the fat from the surface of the liquid in the pan. Put the roasting pan over two burners and bring the pan drippings to a boil over high heat. Cook until the juices reduce and thicken slightly, enough to coat a spoon, about 10 minutes. Taste for seasoning. Carve the turkey and serve with cider pan juices. Resting tip: Slow-roasted meats need far less resting time (pretty much

none) than those that are traditionally roasted. The reason for resting meat that has been roasted at a high temperature is to allow juices that have collected in the cooler center time to migrate back into the dryer (hotter) exterior sections after it comes out of the oven. Because slow-roasted meats are cooked evenly and at a temperature that keeps most of the juices in place, a resting period is largely unnecessary. A brief resting time does allow the meat to become a little firmer as it cools, making it easier to carve.

Children spend much of the holiday season anticipating the arrival of the man in the red suit, and that enthusiasm can be contagious. DIRECTIONS FOR DIP: Combine all ingredients except

vegetable oil, chocolate chips, and water in the base of a food processor. Blend using the high-speed setting, slowly stream in vegetable oil and water. Blend for 1 minute. Stop to scrape the sides of the blender with a rubber spatula. Add to the food processor semi-sweet chocolate chips, and blend for another minute or until hummus is smooth and creamy. Transfer hummus to a plastic container and cover. Refrigerate until ready to use.

FOR GARNISH:

Combine all ingredients in a mixing bowl.

SERVE

For one platter, spread 1.5 cups of Snickerdoodle Dip onto a shallow dish. Top each dip platter with 2 Tbsp semi-sweet chocolate chips and 1 tsp cinnamon-sugar mix. Serve with 3 oz. graham crackers, 8 oz. strawberries, and 3 oz. vanilla wafers.

Christmas stocking decorating TIPS AND TRICKS Hanging Christmas stockings is just one of the many traditions that fill the days leading up to Christmas. One theory regarding the origins of stockings says the tradition began when a poor widower who had three daughters worried over having enough money for their wedding dowries to help secure the daughters’ futures. The women, who had hung their stockings by the fireplace to dry, woke up to find solid gold spheres inside. This legend suggests kindly St. Nicholas visited the home in the night and left the presents, helping ensure the daughters could marry well, after all. Christmas stockings were the first places where gifts were stowed, before under the boughs of Christmas trees became the primary spot for placing gifts. Then stockings were secondary vessels reserved for small trinkets. Today stockings are largely Christmas decorations rather than places to place gifts. Still, they’re a key component of holiday magic. When including stockings in holiday festivities, follow these tips for whimsy and more. • Utilize stocking holders. Stocking holders are either metal or wooden devices that are placed on mantels. Hooks on the holders suspend the stockings. Just be sure the holders are sturdy enough to handle the weight of a stuffed stocking if you plan on filling it with goodies. • Determine your style. There are Christmas stockings that coordinate to just about any interior design style. From farmhouse to modern to traditional, choose one that fits with your aesthetic. That isn’t to say you can’t mix and match stockings if you prefer a more eclectic, homespun feel.

• Enhance your stocking look. If stockings are strictly decorative, enhance their look with a few tricks. First, use tissue paper or balled up shopping bags to stuff the stockings and give them shape. Fill a small baggie with sand or florist glass and place in the heel of the stocking to balance it out and prevent the stocking from blowing around in the breeze. • No fireplace; no problem. Stockings are traditionally hung from the fireplace mantel, but if you don’t have a fireplace there is no need to fret. Simply use ribbons to hang them from the bannister of a staircase, or hang stockings right on walls with removable hooks, or from sturdy shelves. You also can think creatively and hang larger stockings on a door like you might a wreath. Whether they’re decorative or functional, stockings can be an integral component of holiday decor in a home.

The holiday season is a festive time of year filled with plenty of opportunities to socialize with friends and family. Parties abound this time of year, and many people may find themselves hosting everything from intimate gatherings to large family dinners. As people will be attending many different events in the weeks to come, savvy hosts and hostesses may want to set their occasions apart in different ways. One option is to pick an entertaining party theme that guests can get excited about. A fun theme can provide a break from the standard traditions. The joyous holiday season is enhanced by the beautiful and festive decorations that adorn homes and businesses during this special time of year. Twinkling lights are part of the holiday decorating equation. However, tangled lights in storage bins and boxes can sap anyone’s holiday spirit. Christmas lights can turn into a tangled mess no matter how hard people work to avoid such an outcome. Christmas lights get tangled partly because of their design. There is a metal wire inside the cord to help with the packaging of the lights, which gives the cord a natural curve. Furthermore, most light cords are made from twisted or braided wires that have spaces throughout. The lights themselves can get snagged in these pockets between the wires. Although it can be frustrating to deal with tangled lights that look like balls of

yarn in a knitting basket, there are ways to disentangle them with relative ease — and then pack them in a way that can reduce further tangles. Begin by plugging all lights into the outlet to see if they work. If most of the bulbs are burnt out or the lights do not go on at all, discard the strand. There’s no point untangling lights only to learn they don’t work. Start slowly, beginning on the plug end, when untangling the lights. Keep the strand you’re working on separate from the other lights so they do not inadvertently become entangled. Tackle this job in a space with a lot of room. Lay the lights out on a large table or sit on the floor to do the untangling. Utilize a pen or pencil to fish out more stubborn snags. One of the ways to avoid the hassle of tangled lights is to remember to store the lights in ways that will reduce their propensity for tangling in the first place. • Rather than wrap lights around your hand or arm to condense the strand, use something else. A piece of cardboard, a hanger and some PVC tubing can keep lights from becoming tangled. • Store lights in a zip-top bag to keep them from tangling with other strands stored together. • Save the original boxes and return the lights to them after each use. • Icicle lights have hanging strands of lights on longer strands, which can compound tangling issues. Use a rubber band to gather the hanging “icicles” together, or use some plastic wrap for the same purpose. • Invest in a cord reel, similar to what you might use for a garden hose. Longer light strands or wires are stored on such reels, and they can be used with
