Based in the Premier Cru village of Jouy-les-Reims in the heart of the Montagne de Reims, the Cossy family has been growing grapes in Champagne since 1764. It was only in the 1950s that owner/winemaker Sophie Cossy’s grandparents began producing wine and bottling it under the family name.
Sophie assumed winemaking responsibilities at age 26 when her father, Francis, passed away suddenly. After conducting countless experiments with fermentation vessels, blends, time on lees, dosage, and corking, Sophie has gradually revamped and revitalized the Cossy range, bringing a decidedly feminine touch to the wines.
Embracing a philosophy of sustainable farming and respect for terroir, Sophie has also progressively transformed her domaine’s viticultural practices over the past decade and a half, continuously adopting more and more environmentally friendly farming methods. She does not use any herbicides or pesticides and employs many organic and biodynamic practices. The vineyards are plowed by horses and grass is grown between the vine rows. Hedges and trees have been planted around the vineyards, favoring biodiversity and balance in nature.
Today Sophie oversees 7 hectares of vineyards spread over 34 different plots. Her vineyards extend from Jouy-lès-Reims to Arcis-le-Ponsart, passing by Pargny-lès-Reims, Ville-Dommange, Courmas, Bouilly and Serzy-et-Prin. The Cossy vineyards are planted to 53% Pinot Meunier, 32% Pinot Noir and 15% Chardonnay.
