For one day only, Saturday, July 30th, food co-ops and local farmers invite you to take part in The Eat Local Farm Tour.

The tour offers an opportunity to visit sustainable Minnesota farms and to meet local farmers and producers who raise many of the local foods sold at your co-op.

“The Twin Cities’ food co-ops have led the way in connecting consumers with fresh, local foods,” says Liz McMann, Consumer Affairs Manager at Mississippi Market. “Now we want to deepen that farm to table tie by giving our co-op member-owners and shoppers the opportunity to meet their favorite vegetable, meat and/or dairy producer(s).”

The 2011 Eat Local Farm Tour highlights 11 Minnesota farms within a 100 mile radius of the Twin Cities. All tours will be self-guided—tour goers must provide their own means of transportation, whether by car or bicycle—giving you the convenience and freedom to visit the farms that interest you most.

“Our population today is far removed from agriculture,” says Dave Minar, owner

of Cedar Summit Dairy Farm. “We need to educate our next generation on the importance of sustainable local land development and how it can benefit our local food system. Moreover, it is about getting to meet the farmer and seeing what his operation is all about. It helps build trust and a positive relationship.”

The hours that farms will be open to the tour on Saturday, July 30th will differ from farm to farm. Look for a free, detailed guidebook complete with maps, hours, and tour activities at any of the participating co-op locations in early July.

In the meantime, our website will have tour information, maps and suggested routes posted in early June.

The 2011 Eat Local Farm Tour will kickoff the Twin Cities co-ops’ August Eat Local America! initiative presented by the National Cooperative Grocers Association (NCGA). The tours are sponsored by nine of the Twin Cities area co-ops: Eastside, Lakewinds, Linden Hills, Mississippi Market, River Market, Seward, St. Peter, Valley Natural Foods and The Wedge.

The hidden cost of credit cards: how they impact your co-op Gail Graham, General Manager

whole debate has had me thinking more about the fees we pay. I want to share my thoughts with you and point out the costs of using credit cards: the costs you know about, and the “hidden” costs—the fees merchants pay for accepting them.

The impact on your wallet Co-ops are self-help organizations and, by definition, exist to meet consumer needs. The help goes both ways. Co-op members help the co-op by supporting it with their purchases, by recommending it to their friends, and by making thoughtful choices. In this column I want to provide you with some food for thought about the impact your choice to use a credit card has on the co-op, and ultimately on you.

Many of you have likely read about the various consumer reform efforts being discussed in the context of the Dodd Frank Act. Some of the changes are around credit and debit cards and have to do with limiting the transaction fees banks can charge. Whether they pass or not remains to be seen. But the 2

If you don’t pay your bill in full each month, you will end up paying interest on your outstanding balance, and really, do you want to be paying next month for food you ate last month?

The hidden impact on your wallet Remember, you do own the co-op.

When we are profitable we can distribute that profit back to you. Credit card fees reduce our profitability. We actually have a fairly decent rate of 1.58% on transactions that are $10.00 or more.

Luckily 80% of our transactions fall into this category. However, we pay higher fees on smaller transactions. The rate on purchases between $5.00 and $10.00 is 4.2%: and on purchases under $5.00 it is 4.61%. This might not sound like much, but trust me, it is. We are in a business where earning 3 cents on the dollar is considered pretty good—so it hurts when we pay nearly 5 cents out of a dollar sale to pay for credit card fees! All these fees add up. In the first 9 months of this fiscal year (July 1, 2010-March 31, 2011) your co-op has already paid $189,246 in credit card transaction fees!

Please understand that your credit and debit cards are always welcome for any purchase—even that cup of coffee and morning scone. There are plenty of good reasons why people choose to reach for their credit card. We know that. However, when you do have a choice, I encourage you to think about the fact that using your card on small purchases results in added costs. Credit card fees are a cost of doing business, and ultimately consumers pay for them with higher prices.

Preserving: the co-op has what you need

By Liz McMann, Consumer Affairs Manager The renewed popularity of canning, drying, fermenting and freezing is a boon for the local foods movement. But these techniques are not only about preserving food. They give us a chance to preserve our cultural traditions, food knowledge and connection to family. Those jars of pickles are filled with cucumbers,vinegar, dill and memories of grandma’s garden.

That jam connects us to local farmers and traditions centuries old. In a world of prepackaged foods, keeping this knowledge alive is important for all of

For the last two years, Mississippi Market’s Selby location has been working with the Women’s Environmental Institute (WEI) to keep our produce culls—that is, any less than stellar produce we pull off of the sales floor during our daily product rotations—out of the waste stream, contributing instead to the worm composting program being used to build the soil for the WEI CSA program. This program was introduced to WEI through Will Allen’s Growing Power training outreach program, begun in Milwaukee, Wisconsin.

This year, we are proud to take our connection to WEI a step further. Our West 7th location will serve as a Community Supported Agriculture (CSA) drop site every Thursday, beginning in mid-June. CSA’s are central to the fiscal health and well being of local farms. It helps them continue to grow by selling shares in advance of their growing season. When individuals or groups buy a CSA share, their money is paid directly to the farm growing their product. This money provides much needed capital at the beginning of the season, before cash flow begins from selling produce through farmers markets and natural food co-ops. While, as a store, we do not receive any part of the income generated by CSA’s directly, it is in line with our values—promoting local farms and local food. It also helps us to promote our triple bottom line—economic, social and ecological outcomes that are positive and sustainable.

In addition to WEI, we have also become drop spots for two other local CSA’s— Turnip Rock on Thursdays and Treasured Haven on Mondays. All three of these CSA’s will begin delivering sometime in June, and a full share will provide produce for approximately 18 weeks through November. In addition to fruits and vegetables, the different CSA’s offer diverse products from pork shares to eggs to bread and cookies.

This summer, we hope you’ll turn to your co-op for preserving supplies, classes and resources. We’ll have a wide variety of cookbooks, cases and cases of canning jars, canning accessories and deals on seasonal fruits and vegetables.

We’ll ease you into preserving season in June with a class on Quick Pickling (no canning required!), Canning 101 and Preserving Early Summer’s Fruits, to get the basics under your belt. Then in July we’ll jump into a whole month of food production and preservation classes that will continue through harvest season!

Sustainable cheese::

from the pasture to your plate

Crave Brothers Crave brothers is a family owned dairy farm and cheese factory located in Waterloo, Wis. Brothers Charles, Thomas, Mark, and George are proud to produce high quality milk and award winning farmstead cheese. Their herd of nearly 1,000 cows is truly pampered and it is reflected in their marvelous cheeses.

The Crave brothers are also leaders and innovators in the way they use energy efficiency. “Our family has a history of working with the land to produce quality milk and cheeses.” says George Crave, cheese-maker at the farm. A recurring theme in the brothers’ work is to provide opportunity for the next generation. To achieve this, the brothers look to environmental responsibility and energy efficiency to grow their business.

Three projects Crave has implemented are energy efficient lighting, low energy waterers, and a heat-recovery tank for their water heater. These projects alone save almost 36,000 kilowatt hours a year, while at the same time saving the farm over $10,000 a year.

The Crave Brothers are first and foremost cheese and milk producers, but their farms also produce clean renewable energy. Each cow may produce up to 100 lbs of manure each day. Where does all that waste go? The farm is equipped with two oxygen-free digestion systems that take in all the manure. The manure is fed into two large airtight tanks that capture the gas that it naturally releases.

The gas (mostly methane) can be used like natural gas to generate electricity.

The digestive systems produce enough clean electricity to power the entire dairy—and over 300 area homes! The brothers then use the remaining manure as fertilizer and bedding for their herds.

They are committed to using their land and cows as responsibly as possible to make mouthwatering cheese and butter that are rich in nutrients. PastureLand’s cows are always 100% grass-fed.

The health and treatment of the animals and the land are at the forefront of PastureLand’s efforts. The family dairy farmers use only intensive rotational pasture grazing. There is a ton of benefits to using this type of feeding.

First of all, grass is a cow’s natural diet and it has been shown that grazing simply makes cows happier. Less stress, gentler handling, and group interaction makes the cows more docile and more relaxed. This all-grass diet also impacts the health of the land. Grazing prevents water runoff. It stops sediment and fecal bacteria from reaching water supplies.

Studies at PastureLand have shown that they produce less runoff, and the creeks crossing their farms are actually cleaner going out than coming in! Grazing also prevents soil erosion and returns nutrients to the soil, which makes for more lush, full, and healthy grass—the benefits of which can be clearly seen in the natural yellow (carotene) hue of PastureLand’s cheese and butter.

Picture produce at your next picnic

Supplies for an easy picnic • Handkerchief—for a placemat, napkin, clean up and to bundle your picnic • Pocket knife—for slicing • Forks or spoons—Preserve brand plastic utensils are lightweight and reusable • Containers for transporting salads • Plastic bag—to collect compost and trash

When out and about in the summer we’ll usually opt to bring some food along with us— it’s never fun to have to drop what you’re doing and go inside just because you get hungry. While it’s certainly easy to bring along a few energy bars, you can just as easily bring fresh produce with you as well. Many fruits are easy to transport—bananas, apples and oranges are all excellent for their portability. Cherries and peaches are, too, just remember to bring them in a bag or container to make sure they do not bruise. Melons, mango and pineapple are great cut up into chunks and carried in a container. (You can even bring them into Twins games this way.)

Many vegetables are just as easy and make great picnic lunches. One of

our favorites is cucumbers and hummus.

Cucumbers are great as a refreshing and hydrating on-the-go food. You can bring them pre-sliced or pack a folding pocket knife and slice them to scoop up hummus or your favorite deli dip.

Peppers, carrots, summer squash and peas also make great dippers. You can round out your meal with a nice slicing cheese such as Iberico Curado and sliced Palacios Spanish Chorizo or Molinari Salami. Why not bring a nice crusty Rustica baguette as well?

With a little planning you can make a simple vegetable salad with a vinaigrette dressing. One salad that takes little prep time is a quinoa and snap pea salad with garlic scapes. Quinoa is high in protein and easy to cook. Its slightly nutty flavor requires minimal addition.

Quinoa, Snap Pea and Garlic Scape Salad 1 cup quinoa 2 cups water 1-2 cups sugar snap peas—a good handful, cut in half 2 garlic scapes sliced into 1/4” rounds (or one garlic clove finely chopped) For the dressing: 2 Tbsp olive oil 1 Tbsp soy sauce 1 tsp vinegar or lemon juice Bring water to a boil, stir in the quinoa, cover, and simmer for 10-15 minutes. When the quinoa is finished cooking and is still hot, mix the quinoa, peas and garlic scapes in a bowl. Wisk together the dressing ingredients and then add to the salad. Serve warm or cold.

When the snap peas are out of season, switch to green beans, then to broccoli. Marinated tofu or cubed feta are nice additions as well.

Father’s Day Meat Raffle The Minnesota meat raffle is a mainstay at many of the state’s local watering holes. We thought your local co-op could join in the fun too! West End Garden Tour We’ll be sponsoring the Fort Road Federation’s 2011 West End Garden Tour again this year on June 18th, from 10:00am- 4:00pm. Maps of the tour will be available at our West 7th store on the day of the tour.

Bee the Change You Want to See in the World Vanishing of the Bees chronicles the innermost thoughts and feelings of beekeepers and scientists as they fight to preserve the honeybee and its pollination of one third of the food on our tables. Featuring experts like author Michael Pollan, the film examines the alarming disappearance of honeybees and presents a platform of solutions.
