The InterContinental Marseille - Hotel Dieu... My God, what a magnificent hotel! I had the joy and good fortune to stay in this palatial hotel for almost two long months during the shooting of my new film, Mauvaise pioche! (Bad Choice). Though if I had to find a title for a film on this hotel, it would be Bonne pioche (Good choice). What a real privilege it was to wake up each morning under the blessed protection of âLa Bonne MĂšreâ (the Good Mother), perched high up, facing my window with the old port down below, in this fabulous sunlight. Or to go down for a royal breakfast on the terrace in the care of a sensitive team⊠My work did not allow me, as I would otherwise have wished, to benefit at my leisure from the spa with its pretty pool. Regrets⊠I nevertheless managed to enjoy a few drinks in the Capian bar, so cosy, and relish the inventive cuisine of the excellent Chef, Arnaud Davin. I know, of course, that I was especially pampered, General Manager Laurent Garrido had nothing to do with that, but I do not think I was an exception to the rule. As Manager of the InterContinental Marseille â Hotel Dieu, I believe that our mission is to honour the buildingâs historic soul while offering deep contemporary comfort. This iconic setting, an 18th-century hospital and a listed historic monument, embodies a deep memory that we are keen to preserve with respect and subtlety. We have taken on the challenge of blending heritage and modernity thanks to exceptional renovation, undertaken with the support of patrimonial architects and contemporary designers. The vaults, monumental staircases, and historic facades have been restored in keeping with the rules of the art, while the interiors have been redesigned to offer the comfort and standards of an international 5-star hotel. The client experience is rooted in this permanent dialogue between a buildingâs past and todayâs demands for luxury. Our rooms and suites propose discreet elegance in which noble materials and contemporary design complement the original architecture. Is there an anecdote or a key moment that occurred in the hotel, illustrating its spirit and values?
I would say that my best memory since being at the InterContinental Marseille was the welcome and stay of the US womenâs soccer team for the 2024 Olympic Games in France... They won the gold medal a few weeks later! A stay lasting over 15 days, interaction with the hotelâs teams, we contributed to their well-being by seeing they were in top shape before their matches. The icing on the cake: we welcomed them the day after my arrival as Hotel Manager! ïź

Ideally located at the heart of Marseille, overlooking the old neighbourhood of Le Panier, just 350 metres from the old port, this 5-star hotel lays claim to a fascinating past several centuries old. The majestic building dates back to 1593 with the foundation of the HĂŽtel-Dieu, resulting from the merging of two medieval hospitals: Saint-Jacques-de-Galice and Saint-Esprit. Intended to care for the neediest, it then became a medical training centre before being transformed into an international luxury hotel. In 1753, Jacques Hardouin-Mansart de Sagonne, the grandson of Louis xivâs famous architect, Jules HardouinMansart, was appointed to design a grandiose extension. The work lasted for over a century, leading to construction of the famous monumental stairs designed by Esprit-Joseph Brun, and completed in 1785. As we can see today, the facade of the HĂŽtel-Dieu was restructured at the request of Napoleon iii in 1860. Along with exterior galleries and two majestic staircases, it was registered as an Historic Monument in 1963. The hospital ceased its activity in 1993, and the building was closed in 2006. In 2007, Axa Real Estate obtained a 99-year lease and undertook a vast restoration project aiming to respect the buildingâs heritage while incorporating contemporary features.

Listed facade & stairs. A masterpiece of 18th-century hospital architecture, the HĂŽtelDieu was listed in the Supplementary Inventory of Historic Monuments in 1963. Among its protected features: the main facade, exterior galleries on each floor, the roofs of the old wings, and two monumental interior staircases. Designed as from 1753 by Jacques HardouinMansart de Sagonne, the facade embodies classical elegance in harmony with the neighbourhood of Le Panier. The indoor staircases, signed in 1782 by architect Joseph-Esprit Brun, adorned with ramps and balustrades in wrought iron, set the accent on stereotomy, the art of stone cutting, and bear witness to exceptional expertise.

Which roused a passionate desire in me for cultivation.â Despite this idyllic setting, the chef began to feel the need to return to civilization. After a spell at the Christopher St Barth, then Le Renaissance in Aix-en-Provence, he took on a new challenge in 2018: opening his own restaurant. Still today, âLa Serreâ in Paimpol in Brittany, proposes French cuisine with international influences, reflecting his travels. In 2024, Arnaud Davin proudly joined the iconic InterContinental Marseille. A multiple challenge: âI have to ensure continuity for Chef Lionel Levy while bringing renewal with my own personal touch,â explains the chef, who focuses on assisting and ensuring the well-being of his team with whom he is setting ambitious goals. âI donât notice time passing, Iâm never bored.â On the menu? The Mediterranean, of course, enhanced by subtle exotic notes, dear to the chef. His signature dishes include a Sea-bream Ceviche with coconut milk, grilled avocado and strawberries, Iberian Pluma marinated Asian-style, and the much-appreciated âRis de veauâ in winter. ïź
Mix the ingredients in a blender. Place the pasta on a flat surface, place 15 to 20g of stuffing in the middle of each ravioli and fold into small triangles. Cook the ravioli for 3 mins in a steam basket.
Blanch the peas in boiling water for 3 mins. Melt the butter at low temperature and sweat the shallots, add the cream and leaves of mint, then leave to infuse for 3 mins.
Allow to cool. Mix everything cold and strain through a sieve. Add salt and pepper seasoning as required. Pour the cold pea cream into a soup plate, with 3 ravioli per dish.

It all began with my 3rd year placement in my fatherâs bar in Marseille. Enjoying the ambiance, I went ahead with a Hotel Restaurant BTS, special mention Barman. After experiences in palatial hotels on the CĂŽte dâAzur, I worked in Paris and London. In 2013, I joined the HĂŽtel-Dieu (inaugurated on my birthday) as assistant barman before becoming Head Barman.
How do you express your creative freedom in this unique setting?
Very fond of my city, I am also fascinated by the history of the HĂŽtel-Dieu. This magnificent listed building commands respect but also offers real potential with its huge terrace and the indoor bar. It is great to have a free hand when choosing the products. When creating, you have to be objective in order to please everyone. I am inspired by the cuisine and pastry making, and often share ideas with the chefs.
What are the signature and trendiest cocktails?
Absolute musts: Mojito, Spritz and also Paloma, retweaked this year with rum, thanks to our partnership with Brugal. I brought eight versions of Negroni back from Tuscany, a much-appreciated cocktail based on gin, red vermouth and Campari. My signature cocktail, âLâĂtincelleâ, won me the title of world champion for The London N°1. Gin, green apple syrup, green melon liqueur, lemonade, pineapple and lime juice, all give it a fluorescent green colour set off by a slice of apple and a strawberry carpaccio.
How does a new creation come into being?
We begin with technical data, then carry out tests before having a varied panel taste the results. We donât say anything about the contents to allow their senses to speak for themselves! I take inspiration from my travels to create unique cocktails, each blend telling a story. Flavours, textures, content and visual appeal, everything is designed to offer an immersive experience. ïź

Tell us about your career and when you knew that the field of aesthetics would be your vocation?
I am from Alençon in Normandy. At a very young age, I already knew that I wanted to work in aesthetics. I loved going to Guinot with my mother! After a Bac S, I took a BTS in Aesthetics-Cosmetics in Angers. I began my career in classic beauty institutes before leaving my region. I have been living in Marseille for the past 14 years and started out in a Guinot institute in the city centre before joining the InterContinental a year after it opened. I have climbed the ladder: practitioner, assistant Spa Manager, then Spa Manager since 2019.
What do you enjoy most here and in your role as Spa Manager?
I had always dreamt about the south of France, which is why I moved to Marseille. I love the climate and the townâs atmosphere. From the very start, my goal was to join the Spa by Clarins & myBlend at the InterContinental, a place where I feel very comfortable and where I have flourished over the past 11 years. We have a very dynamic team, and being part of the Snowgroup is a real opportunity to evolve professionally. There are now 15 of us working in the spa, a closely knit team sharing the same values and ambitions.
